Christmas stockings The history of
A
long with the excitement of opening presents under the Christmas tree, children and adults alike discover that there are more treats to be had nestled inside of stockings hung on the mantle. The hanging of Christmas stockings is a tradition with an extensive history. Several legends attribute the hanging of stockings to different people or events. Here is a look at some of the stories that have made Christmas stockings so popular.
st. niCholas DaY Rather than hanging stockings on Christmas, many countries celebrate Saint Nicholas Day on Dec. 6, and this is when stockings are proudly left out for treats. The small, inexpensive trinkets are later unwrapped and enjoyed on Christmas Day. DUtCh heritage One tradition says that, in 16th century Holland, children kept their clogs filled with straw in front of the hearth for Santa’s reindeer to find. They also left treats for Santa Claus. In return, Santa would leave gifts in the clogs. Over time, stockings were swapped out for clogs. merChant’s FamilY storY A popular tale tells the story of a merchant, his wife and three daughters. After the wife falls ill and dies, the man becomes devastated and squanders all of his wealth on frivolous things to mask his sadness. When it comes time for the daughters to marry, the man does not have money for a dowry. St. Nicholas hears of the plight and knows the man would be too proud to accept charity. Therefore, St. Nicholas anonymously
tosses three bags of gold coins down the chimney. The man’s daughters had done the laundry prior and left their stockings hanging by the fireplace to dry. The gold landed in the stockings, thus starting the Christmas stocking tradition. italian gooD WitCh One stocking story does not attribute the tradition to Santa, but to a kind-hearted Italian witch named ‘La Befana.’ La Befana arrives on a broomstick the night of Jan. 5 and fills the stockings of good children with sweet treats and toys. Bad children are awarded lumps of coal. La Befana is also credited with being the old woman who the wise men ask for directions to Christ’s manger in the Christ child’s story. After turning down an offer to accompany them, La Befana later carried gifts in search of Christ. Christmas stockings have become part of holiday traditions, and this beloved tradition has its own unique history.

Christmas cards made easy and more efficient

estive greetings sent to family, friends, coworkers, and business associates are an enjoyable element of the holiday season. The first Christmas card was sent in England in 1843. Despite the popularity of online cards and social media posts for other occasions, and a greeting card industry that is declining at a rate of about 5 per cent per year according to an IBISWorld analysis, when it comes to Christmas cards, many people still choose to write out and mail their cards. The amount of money spent on holiday greeting cards is substantial, accounting for roughly 25 per cent of total annual greeting card sales, according to the Greeting Card Association. Around $2 billion is spent on the 1.6 billion Christmas cards people send each year. Although millions of people are still buying boxed cards, signing and mailing them, there is no denying that the process of choosing, addressing and mailing cards can take a considerable amount of time. Streamlining the process and starting card preparation early can make sending Christmas cards that much easier. Here is how to get started. Choose YoUr CarD Photo greetings remain fashionable, particularly among families who may want to show how much their children have grown over the last year. Carefully review your holiday card list and see if anyone can be removed from the list. Opt for electronic greetings for those people on your list who you are not close with, such as coworkers. ome the end of the often hectic holiday shopping season, many people resolve to begin shopping earlier in the following year. While such resolutions can be hard to keep, shoppers would be wise to consider the myriad ways they can benefit by starting their holiday shopping earlier than they’re typically accustomed to doing. Deals The more time shoppers give themselves to find gifts for their loved ones, the more time they have to comparison shop and find the best deals. Retailers often offer steep discounts during the holiday season, but such deals may pale in comparison to those that can be had throughout the rest of the year. Holiday shoppers who begin shopping early can always skip buying in late summer or autumn if they think better deals can be had once the holiday season begins. Shipping By shopping early, shoppers can choose the least expensive shipping option offered by online retailers, potentially saving substantial amounts of money as a result. In addition, shoppers who start early won’t have to worry about items failing to arrive on time, a common source of stress for lastminute holiday shoppers. Credit score Another advantage to shopping early for holiday gifts is it allows consumers to protect their credit scores by spreading their spending out over several months instead of doing so in the handful of weeks between Thanksgiving and Christmas. In a survey examining debt associated with the holiday season, MagnifyMoney found that the average holiday debt in 2016 was slightly more than $1,000. Credit card debt can negatively affect consumers’ credit scores, especially if balances are not paid in full when bills are due. Shoppers can avoid such situations entirely by shopping early using only disposable income to make purchases instead of credit cards. Such financial flexibility may not be possible for shoppers who wait until the holiday season has begun to start shopping.
Time Shoppers can save more than money by starting their holiday shopping in advance of the holiday season. In spite of the popularity of online shopping, many people still visit traditional brick and mortar retailers to do their present buying. Such stores can be overwhelmed with shoppers between Thanksgiving and Christmas, leading to long lines and lengthy searches for parking. Shoppers are far less likely to encounter big crowds and crowded parking lots if they get their shopping done before the dawn of the holiday season, saving themselves substantial amounts of time as a result. Shoppers who commit to getting their holiday shopping done early can save money and time and protect their financial reputations as well.

Spinach and bacon turkey ro� (Makes 8 servings as an appetizer or 4 servings as a main)
ingreDients • 1 boneless turkey breast (about 1 kg/2 lbs.) • 2 tbsps. vegetable oil • 12 bacon strips • 450 g (12 cups) fresh spinach • Salt and pepper
DireCtions 1. Preheat the oven to 190 °C (375 °F). 2. On a cutting board, use a rolling pin to flatten the turkey breast until it is approximately 1 cm (1/2 inch) thick. Cut off the sides to get a 12 x 12 inch cutlet. Chop up the excess meat and place everything in the fridge. 3. In a large skillet, heat the oil and fry eight slices of bacon until nice and crispy. 4. Remove the bacon (making sure to leave the cooking grease behind), coarsely chop and set aside. 5. Add the spinach to the reserved skillet and cook for two to three minutes, until wilted. 6. Remove the spinach with a pair of tongs or a slotted spoon to let the excess cooking grease drip, then set aside. 7. Cook the chopped turkey pieces in the skillet. Once done, remove with a pair of tongs or a slotted spoon, set aside and remove the pan from the heat. 8. On a cutting board, spread the remaining four slices of bacon and place the cutlet on top. Next, cover the cutlet with the spinach, chopped bacon and turkey pieces.

9. Season with pepper and a bit of salt (there’s already quite a bit in the bacon). Carefully roll the cutlet, using the bacon strips as a “blanket.” Use butcher’s string or toothpicks to keep everything in place. 10. Sauté the cutlet on all sides for four to five minutes. Add a bit of vegetable oil as needed. 11. Finish cooking in the oven for 15 to 20 minutes, or until a meat thermometer inserted into the thickest part indicates 170 °C (338 °F). 12. Slice and serve.

Turkey and mushroom ca�erole (Makes 4 to 6 servings)
ingreDients • 3 garlic cloves, crushed • 1 cup milk • 2 tbsps. vegetable oil • 1 onion, chopped • 2 tbsps. butter • 2 tbsps. flour • 1 (8 oz.) package of white or brown mushrooms, quartered • 4 cups cooked pasta or egg noodles • 1/2 cup diced turkey leftovers • Salt and pepper • 1-1/2 cups grated cheese (mozzarella, cheddar or Swiss)
DireCtions 1. One hour before you start cooking, mix the garlic and milk together, then refrigerate. 2. Preheat the oven to 190 °C (375 °F). 3. In a large skillet, heat half of the vegetable oil and sauté the onions for five to seven minutes on low heat, but don’t let them brown. 4. At the same time, melt the butter over low heat in a small pot and add the flour. Cook for one to two minutes while stirring with a whisk. After removing and discarding the garlic from the refrigerated mixture, slowly add the milk and continue to whisk until you obtain a smooth béchamel-like sauce.
5. Remove the onions from the skillet and slightly increase the heat. Add the rest of the vegetable oil and the mushrooms. Sauté for five to seven minutes, until the mushrooms look golden brown. 6. Throw the onions back in the skillet. Add the noodles, turkey and béchamel sauce, and mix well. Remove from heat and season with salt and pepper, to taste. 7. Pour the contents into an oven-safe casserole dish and sprinkle cheese on top. 8. Place the dish in the oven for 15 to 20 minutes, or until the cheese has melted and browned, then serve.

ingreDients • 2 cups flour • 1 tsp. baking soda • 1 tsp. baking powder • 1 cup white sugar • 1 tsp. salt • 1/3 cup butter (at room
temperature) • 1 egg, lightly beaten • 1 tbsp. orange zest • 3/4 cup orange juice • 2 cups chopped cranberries (fresh or frozen)
DireCtions 1. Preheat the oven to 175 °C (350 °F). 2. Grease a regular 23 x 13 x 7.5 cm (9 x 5 x 3 inch) loaf pan. 3. In a large bowl, mix the flour, baking soda, baking powder, sugar and salt. 4. Add in the butter and lightly mix. Next, add the egg, orange zest, juice and cranberries, and mix until nice and smooth, without beating too hard. 5. Pour the mix in the loaf pan and bake for 65 to 70 minutes. Insert a toothpick to make sure the bread is fully cooked. Remove from the pan while the bread is still hot. 6. Slice and serve.

he holiday season is rife with tradition, from Christmas trees to lighting displays to visits with Santa Claus at the local mall. Families reunite come the holiday season to exchange gifts, enjoy meals together and do a little catching up along the way. But the holiday season also is synonymous with parties. Whether it’s to enjoy an office holiday party, a gathering with family and friends or a more intimate gathering at home, such celebrations are a big part of the holiday season and a main reason why this is such a festive and beloved time of year. As this is a season of celebrating, it’s good to remember that no holiday party is truly complete until eggnog has been served. Enjoyed almost exclusively during the holiday season, eggnog is as much a staple of holiday celebrations as stockings hung by the chimney with care. This year, impress your holiday guests with the following recipe for “Excellent Eggnog” from A.J. Rathbun’s “Good Spirits” (Harvard Common Press).

serVes 8
8 large eggs, preferably organic 2 1/4 cups superfine sugar 8 ounces brandy 8 ounces rum 4 ounces bourbon 1 quart milk Freshly grated nutmeg for garnish
1. Separate the egg yolks from the egg whites, setting the whites aside for a moment. 2. In a large mixing bowl, beat the yolks with a hand mixer until completely combined. Add the sugar and beat until it reaches a creamy consistency. 3. Add the brandy, rum and bourbon, and then the milk, beating well. 4. In a medium-size mixing bowl, beat the egg whites with a hand mixer until soft peaks form (be sure before beating the whites that you have cleaned and thoroughly dried the beaters). 5. Fold the egg whites into the yolk-sugaralcohol mixture. Refrigerate the mix until well chilled (at least 3 hours). 6. Stir to recombine as needed. Serve the eggnog in mugs, topping each serving with some nutmeg.
