Stainless Steel Stainless steel is a common material used in various housewares and cookware. There are different grades of stainless steel, the most common of these are 18/0, 18/8 and 18/10. These 3 types of stainless steel have 18% chromium making the metal more resistant to corrosion. The main difference between these 3 grades is the level of nickel in the metal. 18/8 and 18/10 stainless steel have a high % of nickel meaning they are more resistant to corrosion than 18/0, a feature which is very beneficial in cookware. Stainless steel is non reactive with highly acidic foods like tomatoes and is usually the first choice among professional chefs due to the many cooking techniques that it is suited, such as searing, to achieve caramelization and stir frying. By itself however, stainless steel is a poor heat conductor. Because of this an aluminum or copper plate/core is added to the base during the manufacturing process which ensures an even heat distribution and prevents â&#x20AC;&#x2DC;hot spotsâ&#x20AC;&#x2122; from occurring. Unlike traditional heating methods like gas and electric, induction burners heat cookware by transferring energy via an electromagnetic current, which in turn creates heat when it comes in contact with the pan or pot. Cookware must have the necessary magnetic base in order to be compatible with induction burners. All of the Curtis Stone stainless steel cookware items are induction compatible. The Curtis Stone stainless steel cookware (SteelWorks) can be used on all cooktops and is oven safe up to 450Â° Fahrenheit. Remember to always use protective gloves or oven mitts when removing pots and pans from a hot oven. Stainless steel is dishwasher safe.

Hard Anodized Aluminum Hard anodized aluminum is much harder than stainless steel. Aluminum conducts heat quickly and evenly without ‘hot spots’ which makes it an excellent surface for cookware. An electrochemical process hardens or anodizes the surface to make it more durable and non-reactive to highly acidic foods, like tomatoes. Hard anodized aluminum is dark grey in color and does not have the shiny surface that stainless steel has, which means there is no need to polish the exterior to keep the pot or pan looking clean. Our hard anodized cookware collection (HardStuff) also has a Quantanium non-stick cooking surface. The non-stick surface requires less oil for cooking which means healthier cooking at home. The non-stick surface is great for cooking delicate foods which normally stick, such as fish or eggs, and makes the inside of the pots and pans very easy to clean. The Curtis Stone hard anodized cookware (HardStuff) can be used on all cooktops and is oven safe to 450° Fahrenheit. Remember to always use protective gloves or oven mitts when removing pots and pans from a hot oven. Hard anodized aluminum is not dishwasher safe, hand wash only.

Bamboo Bamboo is an extremely versatile building material which is tougher than many other types of wood and is eco friendly due to its fast growing nature. Unlike other trees which are used for timber it can be harvested many times in the same spot without destroying the entire plant. Another benefit of bamboo is that like other wood species, it is completely biodegradable. Cutting boards made from bamboo are lightweight, durable, will not damage knives and are safe for the preparation of any food. The flat surface of the board allows for easy cleaning and quick drying. Bamboo cutting boards absorb a minimal amount of moisture when being used which makes them less prone to warping and splintering like traditional wooden chopping boards. A key characteristic of bamboo is its natural color properties. The wood comes in many different shades and is highly resilient when it comes to fading. By combining various shades or by using an end grain finish, stunning designs can be created to give every piece a unique look. It is important to note that like other wooden cutting boards, bamboo cutting boards are NOT dishwasher safe. They cannot be soaked or submerged in water as this can cause them to warp and sometimes crack. Always wash your cutting board by hand using warm soapy water, ensure the board is dried immediately after washing and store in a clean dry place, allowing air to circulate around the board. A great way to keep your bamboo cutting board looking and performing at its best is to use a natural mineral oil to treat the board. It is best to wipe the board with mineral oil before the first use and again after cleaning (when dry). It is recommended to do this every couple of weeks, depending on the frequency of use.

Porcelain This clay mixture is fired and glazed at very high temperatures to expel all air and water molecules to give a very strong and durable material; firing temp is 2282Ë&#x161;-2372Ë&#x161; Fahrenheit. Because of the very high temperature it is non porous so it cannot be color glazed. However it can be decorated with many decal designs. The decals can be in-glaze or on-glaze. In the Curtis Stone brand we utilise on glaze decal technology as the decal firing temp is a bit lower than in-glaze, therefore you can use more vibrant colours without the risk of them burning out during the firing process. Vitrified Porcelain is fired even higher at 2552Ë&#x161; Fahrenheit. Vitrified Porcelain is very durable and long lasting; it is a favorite with hotels and restaurants. It has high mechanical, chemical and thermal shock resistance which make it the perfect product in this environment.
