The name ‘Tim Noakes’ is on the tip of everyone’s tongue these days as South Africa takes to his new ‘low-carb-moderate-protein-andhigh fat’ diet. Best known for his extensive research into the link between exercise science and medicine, world-renowned books such as The Lore of Running and Waterlogged, and more recently his thought-provoking and rather controversial nutritional theories, one can argue that Tim Noakes has made an indelible mark on the world of sport science and nutrition. Born in Harare, Tim moved to South Africa at an early age and quickly developed a passion for sport, with a particular love for cricket. After earning an MBChB and MD in medicine, Tim was tasked to start a course in sports science at the University of Cape Town and later went on to head the MRC/UCT Research Unit for Exercise Science and Sports Medicine. It was here that Noakes began researching a condition found in endurance athletes known as ‘exercise-associated hyponatraemia’ (EAH), or ‘over-drinking’. Inspired by the world’s first such case in a female runner in the 1981 Comrades Marathon, Noakes soon proved that drinking too much during an event can lower blood sodium levels to a life-threatening degree. In the early 1990s, Noakes co-founded the Sports Science Institute of South Africa with former South African rugby player Mornè du Plessis where he began work on his complex ‘central governor’ model of exercise, in which he argues that the brain is the primary organ 8

that dictates how fast, how long, and how hard humans can exercise. Much of Noakes’ work over the past decade has provided further support for this model. This expert ability for challenging common and old paradigms in the discipline of exercise physiology has led to world-renowned recognition and a plethora of awards. In 1996 he was honoured by the American College of Sports Medicine and in 2002 he was awarded a Doctorate in Science (DSc), the highest degree the University of Cape Town can award. In 2005 he was afforded an A1 rating, the highest, by the National Research Foundation and in 2012 that same organization recognized his work with a Lifetime Achievement Award. In 2005, Tim transferred his insatiable desire for knowledge from land to water and undertook a series of pioneering experiments in the Arctic and Antarctic on South African swimmer Lewis Gordon Pugh to understand the full range of human capability in extreme cold. He discovered that Pugh had the ability to raise his core body temperature before entering the water in anticipation of the cold and coined the phrase ‘anticipatory thermogenesis’ to describe this phenomenon. In 2007 he was the expedition doctor for Pugh’s famous ‘Ice Swim’ – a one kilometre swim at the geographic North Pole in water of -1.8OC wearing only a Speedo, googles and swim cap. In his latest quest to change the shape of South Africa, Tim has caused something of a stir in health circles by refuting his own nutritional advice by blaming food containing
carbohydrates for the rise in obesity, diabetes and heart disease. “I would like to help South Africa become more productive through proper eating,” he says and aims to make South Africa the first country in the world to reverse the nutritional cause of diabetes, a disease from which over three-and-a-half million South Africans (about 6% of the population) suffer. When he first spoke out about how he had personally found dieting salvation by eating a high-fat, low-carbohydrate diet, he was met with a barrage of criticism. However three years down the line, the criticism is more muted whilst Noakes continues to maintain his belief that an excess amount of carbohydrates is behind many of the diseases of lifestyle from which so many people suffer nowadays, including diabetes and that ‘a diet high in fat is actually far healthier than we’ve all been led to believe, and is life-saving for those with diabetes and related conditions.’ He introduces the concept of ‘carbohydrate intolerance’, a condition that constitutes a reduced capacity safely to metabolize carbohydrates. He argues that many people suffer from this condition without even knowing. Based on theories summarized by Gary Taubes in Good Calories, Bad Calories and Why We Get Fat and What to Do About It, Noakes believes the condition derives from defective insulin signalling in the body especially on the liver. Noakes is himself profoundly carbohydrate resistant to the extent that he now has Type 2

diabetes. But since adopting a new diet that is high in fat and contains less than 25 grams of carbohydrate/day, he has lost 21 kg and his blood glucose control is almost ideal. “Some people, like me, are carb-resistant. We cannot metabolise carbs, so most of the carbohydate we eat is changed into fat and can lead to obesity and diabetes if one does not change to a low-carbohydrate diet.” “The people who have tried everything to lose weight, but cannot, are more than likely carbohydrate-resistant and the results they will achieve when adopting this diet can be utterly remarkable. One subject lost 83kg in 7 months on the diet. Importantly every other diet that he had ever tried had ultimately failed. One of the key reasons for the success of this eating pattern is that reduces hunger.
By contrast, the conventional calorie-restricted, low fat diet increases hunger and so most usually fails”. Joining forces with expert nutritionist SallyAnn Creed and chef-athletes, Jonno Proudfoot and David Grier, Noakes has launched a new cookbook called The Real Meal Revolution that offers an array of mouth-watering recipes that echoes his aim of ‘changing the world, one meal at a time.’ More than just delicious meals, the book also contains research which backs the high-fat, low carbohydrate style of eating, graphs documenting its success in studies, testimonials from professional sportsmen such as Gary Player, and case studies of ordinary people who have had phenomenal success with the diet.
When asked what was next on the cards for him, the 64-year old says that he has developed a family foundation, The Noakes Foundation, to raise funds for independent research of low carbohydrate eating. Whether you are for or against his out-of-thebox way of thinking, it has to be agreed that Tim Noakes has made a significant impact on sport and exercise science in South Africa and continues to do so.

– A Man of Multiplicity
With a voice like honey, fetching good looks and a captivating boyish charm, it’s no wonder Loyiso Bala is one of South Africa’s favourite musicians. Best known for his smooth and sexy R&B tunes, Loyiso or otherwise known as LB, is a man of many talents with a plethora of nominations and music awards under his belt. Sharing the stage with the likes of John Legend, Brian McKnight and Elton John, to name but a few are just some of the accomplishments this talented young singer has achieved and he is still going strong. he released his first live, gospel DVD, ‘Love Complete’ and at the end of May 2014 his latest gospel offering, ‘Power, Love, Sound’, will be released. Born in Uitenhage, Loyiso struggled through his teenage years to graduate at the top of his class from the prestigious Drakensberg Boys Choir, where he and his brothers spent their school years after being awarded full bursaries. It was here that his love for music flourished and he was able to develop his natural-born talent. His musical avocation began when he joined the legendary Kwaito act, TKZee who was taking South Africa by storm at the time, which would help to lay the foundation for his solo career. He then made the move from Kwaito to R&B and went on to release his own singles, ‘Musukukhala’ and ‘Silky Soft Skin’ in 2001, followed by the release of his first solo album ‘Wine Woman and Song’ in 2003. Commanding the stage as South Africa’s king of R&B, Loyiso is no stranger to the international arena. At the end of 2002, he embarked on a world tour that saw him performing in London, America, Asia and the Middle East, alongside the likes of Jamelia, Corinne Bailey Rae, Will Smith and Akon. He has also performed for some of the world’s greatest dignitaries, including Nelson Mandela, Bill Clinton and Oprah Winfrey. Some of the many awards he can lay claim to include three Metro FM awards

(‘Best R&B album’ of 2007), five SA Music Awards (SAMAs), including ‘Best R&B’ and ‘Best Producer’ in 2008, and nominations for best song of 2009 and 2010 for ‘Blow Your Mind’ and ‘Maybe’. He was also nominated at the MTV awards alongside Alicia Keys, Rihanna, Akon and P Square, and has received numerous style awards, such as GQ’s most stylish male in the country. Already an ambassador for the ‘46664’ campaigns, the Smile Foundation and Afrika Tikkun, LB was recently appointed as the national goodwill ambassador for the joint United Nations Programme on HIV/Aids (UNAids). Aiming to speak out about the stigma and discrimination suffered by HIV-infected people, gender inequality and gender-based violence, Bala is excited about his new and challenging role. “I believe passionately in young people and making a difference in their lives. This new partnership with UNAids provides me with a way to speak to them about issues which affect them,” he said. He has also recently been appointed to the board of directors for SAMRO (South African Music Rights Organisation) Loyiso attributes his upstanding morals, principles and solid work ethic, which have ultimately contributed to his huge success, to his cousin Lwando Bantom, who played a vital role in his upbringing. Taking him, his brother and sister under his wing when their father died at an early age and their mother could no longer support them, Lwando introduced them to a life of love and support and was a father figure and role model to them both. An extremely hard worker and perfectionist by nature led to
Lwando winning an award for petrol jockey of the year and it was on the back of this recognition that he was able to secure full study bursaries for Loyiso and his brother. In 2011, another one of Loyiso’s dreams were fulfilled when he married his long-time girlfriend and soul mate, entertainment manager and publicist, Jennifer Odjidja. “I first met Jen at her place in London, where a mutual friend had organised for us to stay over at her place for a few days as we were on a self-promotional tour. The first time we locked eyes was at her front door, but I was involved at the time and didn’t want to look at her in that way.
But during our late-night talks I started to get attracted to her in a spiritual manner. After a few more tours to London and us spending time together, I knew that I’d found my soul mate. The rest, as they say, is history.” Last year, the happy couple became parents to a beautiful daughter, Kenzie. Loyiso always has time for his fans, saying,
“Live performances are where I am able to bring everything I love about music together on one great platform. I am where I am today because of the guidance I received from people who loved me and guided me as a young person. I hope I can provide the same inspiration to my audience.”

Best known for her role as Lolly van Onselen in the popular SABC3 soap opera Isidingo, and more recently for Schwarzkopf ’s stunning new advert that went viral on YouTube, Kim Engelbrecht is one of SouthAfrica’s rising stars. Kim began her career at the early age of 12, when she was chosen out of hundreds of girls to star in in the 1994 feature film Sarahsarà, based on a true-life story about a 12-year-old Sudanese girl who swam a 35 km race from the Isle of Capri to Napoli in Italy. Kim’s strong swimming ability and natural acting skills won her the role, which sent her to Namibia and Italy for a 3 month shoot. “The swimming part of the audition was easy,” Kim recalls, “but I was so nervous when we had to read for the part that I started tearing up, which was perfect because the scene called for it, so it all worked out” Working with a physiotherapist to learn how to limp for her portrayal of a disabled girl in the movie and being privately tutored, so as not to fall behind on her school work, it was during this time that Kim realised she wanted to be an actress. After school whilst working at her local gym, Kim was asked to audition as a presenter for Craz-E, a children’s programme airing on the then fledgling free-to-air channel, e.TV. Kim spent nine months on the programme before moving to Johannesburg in 1999 to host the SABC’s educational show,Take 5. In 2002, Kim took up the role of troubled teenager, Lolly van Onselen in the SABC3 soapie, Isidingo and fast became a household name. Portraying the focussed and rather cynical character of Lolly, characteristics quite the opposite of her own adventurous and versatile personality, presented a challenge for the actress. “I remember the producers saying to me to stop trying so hard and just go with the character in the beginning.” However, she handled the job with flair and in 2010 was awarded the ‘South African Film and Television Award for Best Supporting Actress’ as testament to her talent. During her years playing Lolly, Engelbrecht took on a number of other challenging and exciting television roles, joining the Pure Monate Show as a writer and performer on
the hit comedy show as well as taking on the role of Sadika, a lesbian dancer on the cop drama Zero Tolerance. Her film career also began to take off- she stepped into the shoes of Nancy, a Cape Town prostitute and lover of Bill Sykes in the 2004 production of A Boy Called Twist, as well as appearing in the 2005 Film The Flyer. However, it was the multi-award winning movie entitled Bunny Chow (2006), a film directed by John Barker that examines urban living in contemporary South Africa character that highlighted Engelbrecht’s innate ability to bring a character to life on the big screen. After twelve years, Kim sadly said goodbye to Isidingo. Kim absolutely loved her theatre experience and after playing a lead role, she believes that certain people are just made for the stage. “Theatre is tough,” she says, “as there is no other take than the present. But acting is an ongoing learning experience and that is something I have learned to love.” Kim made the move back from stage to screen with ease and went on to star in number of international television series opposite some big names. She made an appearance in two episodes of the British-produced series Mad Dogs with Max Beasley and John Simm and then went onto to star alongside Dolph Lundgren and Texas Battle in SAF3 (Safe) in which she plays a fire-fighter. Kim attributes her success in landing a variety of roles in her expert ability to produce different accents, something which she has worked on since the beginning of her career. In her latest big screen role, Kim stars opposite Louw Venter, Nico Panagio and Casey. B. Dolan as Bianca in the romantic comedy Konfetti, which is being released on 18th of April this year. A long-standing television career, international movie débuts and her recent flight to even further fame via YouTube haven’t affected the actresses’ friendly, down-to-earth nature ,she enjoys spending downtime with family and friends and attributes her solid work ethic and moral principles to her mother, who has been a pillar of support throughout her career. The green-eyed beauty continues to rise as a star on both screen and stage and has these wise words for up-and-coming hopefuls...

Creating a Stir
G
ustaaf Boshoff, Executive Chef of Stir Food, one of the most popular and widely used catering companies in the Cape Winelands, is creating a stir in culinary circles with his extraordinary combination of international experience and natural ‘foodie’ flair. Years of travelling around the world and cooking with a vast repertoire of tastes and flavours has contributed to his unique approach to fusion and flavour and it’s deliciously evident in his food.
Gustaaf ’s love of cooking began at an early age where he learnt about Dutch culture and fare from his grandmother and keenly followed in the footsteps of his mother who was a talented cook herself. While he loved sport at school, he soon realised he needed to pursue his natural talent for cooking and went onto on to study at the Institute of Culinary Arts (ICA). While completeing his studies at the ICA, Gustaaf was selected to assist renowned BBC Food
celebrity chef, Alan Coxon, in his South African TV series, Coxon’s Sporting Feast, which involved cooking in the homes of some of the world’s sporting legends, including golfer Gary Player, runner Zola Budd and rugby legend François Pienaar and to investigate how food played an all important role to their physical fitness and success. cooking, Coxon offered him a position at the Michelin-starred restaurant, ‘Bohemia’ in the Jersey Channel Islands, where he was exposed to chic café lunches by day and fine-dining cuisine by night, gaining invaluable experience and growing from strength to strength. Following his culinary dream, he went on to travel around the world where he cooked for some of the world’s elite across six continents, baking delights in France, diving for crayfish in the Caribbean and cooking for the rich on super yachts in Dubai. It was during his

travels that he learnt the value of using only the freshest ingredients and the difference they can make to any dish. “Foraging in fresh food markets around the globe sparked an inherent desire to always source the freshest, most seasonal ingredients available.” It wasn’t all glitz and glamour though - the industry is tough and Gustaaf has never believed in taking shortcuts. “In Europe your career begins at 16 in one position and by the time
you turn 24, you are a specialist. Most British chefs only peak when they are 28 years old, so if you don’t have at least 10 years’ experience or more, you won’t become a head chef. In South Africa, it’s totally the opposite because of us being an emerging market you have a small stint in a restaurant, then you rocket to stardom.” Ultimately making his way home to South Africa and the Cape Winelands, he found himself working for StirFood, one of Cape Town’s top catering companies and went on to to join The Aleit Group, one the
country’s leading events coordination companies.Using his broad knowledge base and expert palette, as well as drawing inspiration from some of his favourite chefs, such as Margot Jansen, TheTest Kitchen’s Luke Dale Roberts and Bertus Basson, Gustaaf successfully pairs South Africa’s top wines with a fusion of tastes and flavours, with Cape Malay spices being some of his favourites, to create unique and bespoke dishes for high-end events and functions. One of the highlights of his career thus far has been catering for a
dinner for the foreign minister at the time, to which 800 guests were invited. He led a 6-chef team with two second-year culinary students shadowing him and being a perfectionist, he expected nothing less from his team. Superb service, innovative and delectable cuisine and some of South Africa’s finest wines guaranteed a winning formula and the evening was a huge success. When asked what his next challenges are, he says he’d like to see Stir Food ‘grow sideways’, growing and developing as a business and catering
for and covering all types of food events. “Food is one of life’s greatest joys and making people happy through food inspires me every day.” With his fresh style and relaxed approach to cooking, Gustaaf Boshoff iscreating a culinary stir that is certainly leaving us wanting more.

or the Fondant
Ingredients 2tbls butter 2tbls cake flour 2 whole eggs 2 egg yolks 85g dark chocolate (70%) 88g unsalted butter 100g brown sugar 2 tbls corn flour

Method
or the figs 6 black figs 1 tablespoon of honey ½ teaspoon of cinnamon for dusting
Method Cut a cross in the top of the fig and drizzle with honey and cinnamon. Place under a grill for 5 minutes and keep an eye on them incase they start to over grill and burn.
Firstly prepare your baking dishes, which can be a muffin pan or individual ramekins about 6cm in diameter. Line each dish with unsalted butter and dust with flour. Beat together the whole egg and the yolks, set aside to room temperature. Melt butter in a saucepan over low heat, set aside. Place chocolate in a mixing bowl, add the
melted butter and whisk till the chocolate has melted. Add the brown sugar and the corn flour. Finally add the eggs and mix together. This can now be placed in the fridge until the figs and ice cream are ready. Bake at 180°C for 8-10 minutes. Chef ’s tip: all ovens heat distribution is different so bake one as a trial run to get the timing right. To Assemble and Serve Use good quality vanilla bean ice cream, fresh berries and shards of honey comb. Edible flowers add elegance and colour to the plate. Recipe By
