BEST OF DORNBIRN “Do you believe that happiness is just lying out there in the street, and that you only have to pick it up when the mood takes you?” Didn’t we just answer that one? OK, maybe happiness isn’t just lying in the street, however in Dornbirn it can be found on virtually every street corner. Moments of sensuous pleasure can be best found in Dornbirn’s superb taverns and restaurants, with their uncompromising conceptions of culinary delights that declare war on some contemporary cooking ideologies. With great success, may we add. When the weather outside is fine, the most important question is of course: “The door is open, do you really want to go?” We can also answer this question with a resounding ‘yes’. To be more precise, we want to get out in the fresh air by bike or on foot, to explore the magical natural environment that surrounds Dornbirn. To the Ried, up on the Bödele and to Ebnit, where the vigilant hiker can find all sorts of herbs and berries to enhance their own home-made cuisine, until late in the summer months. We have asked enough questions and given enough answers. We will leave the final words to Roberto Blanco: “A little fun must be had, then happiness comes all by itself.”
Dornbirn is fun at any time of the year. The vibrant variety of its shops, the rich choice of cultural and leisure offers and its diversity of restaurants, cafés and bars all entice passers-by on a daily basis. The old German hits, the ‘Schlager’, sometimes pose deep, meaningful questions. Let’s see what answers Dornbirn has prepared for us. “Will you drag yourself around the bars and pubs with friends like you used to?” asked Michael Holm back in his day in the mega-schmaltzy weepie ‘Tränen lügen nicht’ [Tears Don’t Lie]. Our answer is quite simple: Yes! In the nightlife section of this magazine, eager readers will discover all they need to know about both the classic hotspots and promising newcomers to Dornbirn’s nightlife scene — unavoidable, inescapable, unmissable! The old Holm Michael, not to be confused with the old German folk song ‘Holzmichel’, has yet another essential question. “What are you going to do with your freedom, that appears so precious to you now?” Hmm… Well, how about a downtown shopping spree, maybe — just for a change — without any particular agenda or destinations, simply in order to discover something new. After all, freedom also means breaking away from the beaten track as the whim takes you and reinventing yourself every once in a while.

unimaginative things that the digital search engines automatically place right under your nose? Sure, the large concerns and internationals are also represented in the city centre. However, it is the smaller shops that provide the real charm, irrespective of whether traditional or modern, sophisticated or wild and crazy. Clothes, shoes, media of all kinds, toys and games, furniture, sport and leisure clothing and equipment, beautiful and practical things for the home and of course food, drink and services of all kinds. Between Eisengasse and the Europapassage, from Marktstraße to Schulgasse, those looking to discover something new and exciting will find everything that their shopping hearts desire. It can also be highly recommended to leave the main thoroughfares every once in a while in order to explore the smaller streets and alleyways. It is precisely here that the rarer gems can be discovered, which enrichen the living diversity of downtown Dornbirn with their quite special allure and style.

Dornbirn is anything but a desert, yet right in the centre is the place in question with a relatively large amount of water and exceptional features: the municipal swimming pool. Behind the huge glass façade of the imposing cube-shaped building, it is not just shimmering blue pools which entice you … The adapted and extended municipal pool was reopened in 2005 and has been hugely popular ever since. Its outward appearance alone encourages you to come in and enjoy the water in the centre of the city, indoor and in the park at the same time. The municipal swimming pool is one of the most modern and attractive pools in the region. Swimming, sauna, massage and a visit to the public restaurant – the climate is always heavenly. Bathers of all ages have fun splashing about in the sports and multipurpose pool equipped with diving platform. The non-swimmer and
parentchild area with own baby pool and the popular fountain are ideal for families. The biggest crowd puller is the so-called ‘Black Box’: inside is the spectacular 46-metre tube slide with water, light and sound effects. ARTISTIC RECREATIONAL ISLAND Where there is an oasis, there may also be a fata morgana: the media artist, Ruth Schnell, created the magic pulsating lightbar ‘LOUD and QUIET’ on the inner façade as an ‘Art on Building’ project. Its rhythm reflects the acoustic level in the swimming pool, forming imaginary word creations. Weekends and holidays can considerably accelerate this pulse – the oasis in Dornbirn’s centre becomes a holiday island: it is not just the clear water which is tempting, but also the banks, with their additional attractions of massage, sauna, steam bath and lying in the sun.

The way in which life functions in a city and the atmosphere created is largely dependent on the structure of its buildings, which either prescribe clear functions or mark out free space. The ‘construction of a city’ is a task that is never completed and sometimes the recognition of the qualities of interim spaces and waste land in their imperfection and the retention of creative leeway is just as important for the concept of coexistence as complex construction projects. Dornbirn has both of these aspects and is rich in high-quality buildings, plazas and locations that function equally well in their petiteness as in their grandness. There people live, work, teach, learn, play, stroll, communicate or consume, movement or quietness must reign — and in some places people must also park. Join us on a small tour through the city.
VAI VOR ARLBERGER ARCHITEKTUR INSTITUT The vai Vorarlberger Architektur Institut was founded in 1997 and is an interface for the field of construction culture in Vorarlberg. Architects, craftsmen, entrepreneurs, politicians, scientists and those interested in cultural themes meet here in order to discuss and exchange views on architecture, urban and spatial planning and building culture, to visit constantly changing exhibitions and events and to put forth their own ideas. RAIFFEISENBANK AM RATHAUSPLATZ
Hardly recognisable to guests as a renovation, the headquarters of the Raiffeisenbank lends the city a distinctive urban appearance. Originally constructed in 1956, the building that houses the bank was significantly extended in the 1970s and again in the 1990s. In the years 20092010 it was raised by an additional storey, thermically insulated and brought up to modern standards. Architects
Rene Bechter and Michelangelo Zaffignani conceived the transparent shell, which overlies the existing facade. Vertical revolving shutters made of naturally oxidised aluminium provide rhythm to the building. The inside space was supplemented by a large new meeting room, with floor to ceiling windows that enable wonderful panoramic views of the centre of Dornbirn and the surrounding landscape. 18

ATRIUMHAUS ROSENSTRASSE
It is possible to have the quality of life offered by a detached family home in an apartment complex — this is demonstrated by the Atriumhaus on Rosenstraße, a private building designed by Roland Gnaiger and Udo Mössler and which has been an unparalleled paragon of design since the end of the 1990s. The apartment sizes in the building vary by module, which can also be combined. Public and private zones are intermingled. Generationally compatible living is made possible on the one hand by free spaces that can be used for various requirements,
on the other hand through thoughtfulness and consideration. The three storeys are incorporated into the extensive building in such a way that large green areas remain. Balconies are annexed to the residential units, which extend living areas into the outdoors and lend the building an additional rhythm. The architectural ambiance of the building is characterised by wood and exposed concrete. The integration of ‘Art on Building’ projects is also crucial to the atmosphere within the building.

BRIDGES IN EBNIT Ebnit on the outskirts of Dornbirn is home to the Schanerloch and Schaufelschlucht bridges, signalling a cooperation between the city of Dornbirn and architects Marte.Marte and structural engineers Josef Galehr Infrastrukturbauten. These two arched bridges, which are soon to be followed by a third, have the quality of sculptures in the landscape, with their massive yet elegant structures standing proudly before the spectacular scenic backdrop of steep cliffs and tumbling waterfalls. On the
one hand crucial to the continued existence of Ebnit as a settlement and on the other hand vital for the supply of Dornbirn with water and agricultural products, the preservation of this mountain road is of huge cultural significance and at the same time a sensitive issue with regard to the encroachment on the breathtaking natural surroundings. In these two bridges, the architects and structural engineers behind this project have achieved a tectonic masterpiece.

HOTEL MARTINSPARK MOZARTSTRASSE
Overnight guests in Dornbirn seeking an upmarket architectural experience might choose to stay at the Hotel Martinspark in city centre – the first ‘design hotel’ in Austria and constructed between 1992-1996 on the basis of plans drawn up by the architects Baumschlager Eberle. Art and architecture are today still a central focus of dayto-day business here, whether through the ‘Art on Building’ projects of FLATZ or through artistic decoration with the paintings of Ingmar Alge jun.. As well as the hotel, the building also houses businesses, apartments and meeting rooms. The restaurant area ‘floats’ above the hotel entrance. Supported on four pillars and covered with a sheet copper facade, its narrow, slotted windows reveal glimpses of the steel construction behind.

STADTBAD DORNBIRN SCHILLERSTRASSE
The city’s public baths, the Stadtbad Dornbirn, are located directly beside the busy Stadtstraße, however still giving the feeling of being surrounded by greenery. This has been a popular facility ever since it was first constructed in the 1960s and was totally rejuvenated in 2001–2005 by Cukrowicz Nachbaur Architekten and encompassed by a new structural shell. The original roof shape was retained and a new hall added with a flat-roofed profile. From outside the building has an elegant, transparent
overall form, bringing sport to the city and bringing the city to the world of sport. The interior design is convincing in its clarity. Multimedia effects optically and acoustically outline each area and separate the sports areas from the family and infant areas. The services area, with changing rooms and sanitary facilities, has been renovated to modern standards and extended with restaurant and guest garden, opening up to a small square where guests can sit and relax.

STADTGARTEN DORNBIRN JAHNGASSE
The Stadtgarten Dornbirn city park is one of the most beautiful areas of the city. A former centrally located engineering works, it has become home to an exhibition centre on the theme of nature and the natural world. This sensitive revitalisation of a historical industrial inheritance has been masterminded by architects Dietrich/ Untertrifaller, Hermann Kaufmann and Christian Lenz in the years between 1997–2003. Opposite is the un-
touched assembly hall of the former Rüsch steel works, which is today used by the Kunstraum Dornbirn art gallery for exhibitions of the works of contemporary artists. Not far from here, in the grounds of the Stadtgarten, is a prototype from the early days of the wooden module construction of Oskar Leo Kaufmann and Albert Rüf, which is today used by the Vorarlberger Architektur Institut as an architecture workshop for children. 23

LCT ONE FĂ„RBERGASSE
The LifeCycle Tower ONE (LCT ONE) is the first eightstorey wooden building in Austria. The basis for the prototype, which was conceived and erected by the companies Cree, a subsidiary of Rhomberg Bau, together with architects Hermann Kaufmann, was a research project on wooden construction systems. Since then the building has been a worldwide reference and paragon for several construction projects for high-rise buildings using wood as the construction material. The individual office areas were attached around the concrete staircase core of the building and construction using this method progressed at a sensational rate of one storey per day. Visitors can expect to see an exhibition in the entrance hall of the building explaining the construction methods and other possible uses of this technique.
CITY GARAGE RATHAUSPLATZ
People in high-rises, more space for cars. When looking at it seriously, the car parking policies of the last decades have been absurd. Modern urban planning provides space for people and provides infrastructures that enrichen public life. These infrastructures include centrally-located parking garages. Planned by Dietrich Untertrifaller and colour-designed by Monika Heiss, the City Garage Dornbirn is in many ways a showpiece project. Location, size, infrastructure provision, facilities and connection to public zones such as the town hall, the Marktplatz and the Dornbirn Tourism Information offices have been optimally selected.

A culinary tour of the mountains and marshland surrounding the city of Dornbirn with biologist Ruth Swoboda.
It may be hard to believe, but the most wonderful culinary ingredients, such as herbs, berries and fruits, can be found growing wild in the natural landscape surrounding the city. One simply has to know where to look! We go foraging with biologist Ruth Swoboda. And chef extraordinaire Gabi Strahammer from Restaurant Schulhus in Krumbach will be cooking up a fabulous menu from the fresh, natural ingredients that we find. At the same time, we will be rambling along some of the prettiest hiking trails in the Dornbirn region. Ruth Swoboda is a woman of many talents. She has a strong character and an equally strong breadth of knowledge. The former international-class handballer is a qualified biologist and since 2011 has been the scientific direc-
tor of the inatura nature museum in Dornbirn, where one can literally get in touch with nature. Contrary to the philosophy at many other museums, inatura does not believe in ‘do not touch’, preferring to encourage interaction with the exhibits with a guiding principle of ‘please do touch!’ Ruth, who is responsible for nurturing this guiding principle, is a tactile person. Outside of inatura, she knows the meadows and forests of Dornbirn like the back of her hand and will today be our guide, taking us to places where we can touch, taste and gather. Where the unexpected awaits us! She will tells us about blueberries, thyme and wild mint. Together we will seek and find - and one of the best cooks in the region will then conjure up dishes for us using genuine Dornbirn ingredients.

UP ON THE BÖDELE INGREDIENTS: SLOES AND BLUEBERRIES
Our trail starts at the valley station of the Hochälpele lift and takes us in the direction of the Lustenauer Hütte (Lustenau Hut). Ruth knows the way and makes that very clear with her confident strides. After an initial branch to the left, we start going uphill for the first time and soon enter the forest. On the edge of the forest we discover the first of today’s ingredients, a blackthorn bush laden with dark blue sloes, which first develop their flavour after the first frost, our mountain guide explains. The extremely well-marked path to the Lustenauer Hütte takes us past the Hochälpele alp, where a large well filled with natural mountain water provides refreshment. There is also a small chapel, built in 1921, bedded into the idyllic green surroundings. The path is clear and easily
manageable. After a few small ascents we reach the Lustenauer Hütte, where we are greeted by a traditional ‘Brettljause’ (a platter of traditional meats, cheeses and garnishes) and fabulous views over the Bregenzerwald region. Because there are still other ingredients that we need to find, we continue onwards towards the Bregenzer Hütte (Bregenz Hut). This path leads us through boggy meadows, which are ideal conditions for blueberries. Ruth is pleased to come across a particularly good find, which we appear to have tracked down before the local birdlife. Upon arrival at the Bregenzer Hütte we find the tavern typically filled by a jolly group of singing nature lovers. A little tipsy from beer and song, it is twilight before we make our way back down to Dornbirn.
TO EBNIT INGREDIENTS: MOUNTAIN THYME AND WILD MINT
As our bearded and extremely affable bus driver snakes his way masterfully between the high rocky walls of the valley carrying his five passengers to their destination of Ebnit, Ruth Swoboda is already explaining the Schöner Mann alp hiking path to me. Once at this old Walser village we are greeted by the Holy Maria Magdalena parish church in its innocent white dress. Passing through this tranquil village, we soon come across the steep path up to the ‘Pfarrer’s Älpele’ (Pastor’s Alp) and on to Fluhereck, where to our right we pass up on our first opportunity to stop for refreshment. After all we are supposed to be foraging for the fresh ingredients for our main course — wild mint and mountain thyme. According to Ruth these
two plants favour an arid environment, but here in Ebnit everything seems so lush and green. The walking seems almost effortless, at least up to the point at which we succumb to the delicacies on offer at the Schönermann-Alpe. Reinforced, we climb to the highest point of the hike, the ‘Wendkopf’, where we finally find a healthy crop of mountain thyme. Before we turn left to the Hinterbergalpe and from there back down to our starting point, Ruth climbs up a few hundred metres onto the grassy mountain ridge by the old crucifix summit marker. There are two surprises waiting there: firstly, a wonderful view across the entire Rhine Valley and foothills of the Alps and, secondly, the wild mint that we have been searching for. 28

TO THE DORNBIRNER RIED INGREDIENTS: ACORNS AND BOG BILBERRIES
path is flat and well-marked, but for our second ingredient we will have to dismount and walk across the fields. This is because bog bilberries grow low to the ground amongst the grasses and are sometimes easy to ride past. The thought of our delicious sorbet makes us hungry and we remount and pedal towards ‘Möcklebur’. The nature conservation area starts here and there are strict regulations controlling the reed beds and the gathering of plants. To reach Armin Schwendinger’s wine tavern one must cross the bridge and turn right, with the reward of food & drink on offer. From here we choose to continue towards Jannersee lake in Lauterach. It is still a good hour from here to the lake. If you want a shorter trip, there is always the road back towards Haselstauden railway station. And just for the record, the meal cooked up at the Schulhus using the ingredients that we foraged was, of course, simply divine!
The ingredients for the final course, that Gabi Strahammer will be preparing for us, can be found on the reed-bed marshlands of the Dornbirner Ried. This area is not all that far away, but most inhabitants of Dornbirn would recommend taking a bicycle. Our starting point is St. Christoph church in Dornbirn’s Rohrbach. From here it should take about half an hour to the Ried on our twowheeled steeds. At the first fork in the path a weathered wooden sign at the roadside points to the renowned ‘Möcklebur’, a wine tavern with lots of farm animals to stroke and traditional regional fayre. The marsh landscape is full of life, with a huge variety of flora and fauna. As a biologist, Ruth is visibly excited, however even the layman can feel the harmony of this place. The road along which we pedal is lined by several oak trees. We fill our rucksacks with their fruit and, as if we had returned to childhood, enthuse about the mouth-watering prospect of our acorn flour tarts. The
GABI STR AHAMMER The owner and chef at the Restaurant Schulhus in Krumbach in the lower part of the Bregenzerwald loves the taste of purity. She gathers and picks the delicious ingredients for her dishes herself. Gabi creates menus from often nearly forgotten products, convinced by their originality and naturalness.

SOFT GOAT CHEESE WITH PRESERVED SLOES AND BLUEBERRY BREAD
SO F T GOAT CH EE SE WITH PRE SERVED SLO E S 4 x soft goat cheese, 4 tbsp. sloes preserved in olive oil, a good handful of mixed salad leaves. FO R TH E D RE S SIN G 1 tbsp. sweet woodruff syrup, 2 tbsp. white wine vinegar, 4 tbsp. olive oil, 1 tbsp. water, a pinch of salt. B LU EB ERRY B RE AD 150g blueberries, 180g lukewarm water, 20g yeast, 300g fine spelt flour, 60g rye flour, a pinch of salt.
For the soft goat cheese with preserved sloes, arrange the salad leaves decoratively and place the goat cheese in the centre. Sprinkle with the preserved sloes and drizzle with dressing. For the blueberry bread, work all the ingredients together into a dough with a wooden spoon. Cover with foil and leave overnight at room temperature to rise. Knead
the risen dough again the following day and place on a floured work surface to shape into a loaf. Leave the loaf again for approx. one hour to rise and then bake at 220°C degrees for between 30 and 45 minutes, depending on size of the loaf. Allow the sweet-smelling bread to cool on a wire rack before serving.

BRAISED SHOULDER OF LAMB WITH MOUNTAIN THYME AND WILD MINT, MOUNTAIN PINE RISOTTO
SH O U LD ER O F L AM B 4 lamb shanks or 2 shoulders of lamb, salt, pepper, thyme, a bayleaf, rosemary, 4 onions, peeled and chopped,
1 garlic bulb, whole, 100g carrots, root parsley, celeriac, 2 tbsp. olive oil, 1 tbsp. butter, 500ml lamb stock, 250ml red wine. M O U NTAIN PIN E RI SOT TO 120g carnaroli rice, 1 tbsp. butter, 4 tbsp. white wine, ca. 350ml clear poultry or vegetable soup, 1 tbsp. finely
chopped mountain pine needles, 50g freshly grated parmesan, 50g cold knobs of butter.
For the shoulder of lamb, season the meat and, in a pan, seal on all sides in the olive oil. Take the meat out of the oil and add the butter to melt. Add the onions, garlic and vegetables and allow to cook through. Afterwards deglaze the pan with red wine and pour in the lamb stock. Add all the herbs, bring to the boil and season well. Place the meat in the pan, transfer to an oven and braise slowly at 80°C (approx. 3 hours.). Take the meat out of the oven. Reduce the sauce over heat until it reaches the desired
consistency and sieve. Carve the meat and serve. For the mountain pine risotto, heat the butter and allow the rice to sweat briefly. Deglaze the pan with white wine and allow to steam. Now pour in the hot soup a little at a time, until the grains of rice are ‘al dente’. This takes approx. 18 – 20 minutes. Finally, add the finely chopped mountain pine needles, the cold butter and the freshly grated parmesan. The risotto should have a smooth and creamy consistency. 35

ACORN FLOUR TARTLETS WITH BOG BILBERRY SORBET
SH O RTCRU ST PA STRY 120g cornflour, 200g flour, 150g butter, 1 whole egg, 1 egg yolk, 120g icing sugar, a pinch of salt. ACO RN FLO U R PA STE 100ml milk, 100ml cream, 50g acorn flour. ACO RN FLO U R TARTLE TS 90g butter, 60g sugar, 250g acorn flour paste,
4 egg yolks, 4 egg whites, 1 tsp. vanilla sugar, 60g sugar, 2 tbsp. cornflour, a pinch of salt, 160g ground almonds. BO G B ILB ERRY SO RB E T 300g bog bilberries, 150g sugar, juice of half a lemon, 100ml water.
a little at a time. Beat the egg whites with salt and fold in slowly to a mixture of the remaining sugar and cornflour. Combine both mixtures and add the ground almonds, then pipe into the pre-baked shortcrust tartlet cases. Bake for approx. 15 minutes at 180 degrees. Depending on size and shape of the tartlets, the cooking time may be slightly longer. For the sorbet, bring all the ingredients to the boil, simmer and then allow to cool. Freeze in an ice cream maker.
For the shortcrust pastry, quickly mix all the ingredients together into a dough, roll until thin and line the tart tins with the dough. Bake at 170 degrees until light brown in colour (approx. 8 minutes). For the acorn flour paste, boil together the milk and cream and carefully stir in the acorn flour. Cover the paste and allow to swell. Set aside until cool. For the acorn flour tartlets, whip the butter, sugar and acorn flour paste until frothy and stir in the egg yolks 36

MESSE DORNBIRN ATTRACTS VISITORS THE NON-STOP CONSTRUCTION ON THE NEW TRADE EXHIBITION- AND MULTIPURPOSE FUNCTION HALLS ARE DOMINATING WHAT IS HAPPENING ON THE SITE. NEVERTHELESS, MESSE DORNBIRN STILL OFFERS A FULL PROGRAM WITH MANY AT TRACTIVE EVENT– HIGHLIGHTS IN 2016 WITH NUMEROUS INDIVIDUAL FORMATS.
With the ongoing construction of the new exhibition halls, 2016 is year of renewal for Messe Dornbin. Existing formats are being further developed and new ones introduced. Messe Dornbirn is again the central hub for the regional economy and an important social meeting place. In previous years there were approximately 200.000 visitors at the eight in-house trade exhibitions and the 150 other events.
Entrepreneurs Club in the ‘Haus der Messe’ [House of Trade Exhibitions] is introduced. KARL is a club in true Vorarlberg style, where the leading questions of industry are talked about. The second premier to be celebrated is the specialist trade exhibition SALTEX, a community platform for smart textiles as well as composites, which takes place on 5th and 6th October. The Vier-Länder Lieferantenbörse [Four Countries Suppliers Exchange] on 2nd June, the Art Bodensee from 8th to 10th July, the Herbstmesse as well as Hochzeit und Event, the Wedding and Events Exhibition, are further trade exhibition attractions this year. Gustav, on 29th and 30th October, is a highlight for visitors as well as the exhibiting companies. It is an international salon for consumer culture, showing design, pleasure and sustainability and presenting outstanding handcrafted and durable products.
THE NEW BUILDING IS TAKING SHAPE In autumn 2015, the construction of the new trade exhibition and multi-purpose function halls, with the demolition of the old infrastructure, began to take shape. The building was designed by the architects Marte.Marte and is the ringing in of a new era in the history of Messe Dornbirn. In addition, the building opens up new opportunities in the whole region and emphasises the importance to the economy. It is estimated that the building will be completed at the beginning of 2017.
EVENTS WITH PUBLIC APPEAL Although the continual construction has a big impact on further development of the events sector, several highlights have been organised despite that. For example on 11th June thousands of enthusiastic party fans will be celebrating the HOLI Flash, a Festival of Colour. Two top international musicians, Simply Red, on 5th August as well as Zucchero, on 2nd October, will be performing in the ‘Haus der Messe’.

When invited to a party in the 80s, the hostess served sparkling wine cocktails and apfelkorn schnapps. On the buffet table were devilled eggs, chicken salad and a cheese hedgehog. Then the cholesterol brigade took up arms. Fitness food and salads laid siege to our plates. And Jakob Blank was born. Today he is 33 and, together with his father, runs the Restaurant Firstblick in Kehlegg. Here he guides us through five of Dornbirn’s more traditional restaurants, in which dishes long-since believed forgotten are still firmly part of the menu.
THE WILD ONE
Smoked liver sausage with sauerkraut and barley cakes wrapped in bacon
Jakob goes by the name Jack, is a passionate snorter of McChrystals snuff and has been cooking since he was thirteen. Back then he dreamt of a career as a ski jumper and went to the local sports academy. On the menu were frogs’ legs. His father had brought them back from Paris. One time Jack was allowed to go there with him — to the largest market in the world. He gave up ski jumping after matriculation, briefly studied mechatronics and eventually dedicated himself to cooking. Liver and tripe are
fixed items on the menu at the Firstblick all year round. As a child he didn’t like either, however the taste buds change over time. “Roast, in with the cumin, simply delicious!” Smoked liver sausage with sauerkraut is one of Jack’s particular favourites. He makes the sausages from the meat of Alpine sows. Smoked and then fried, they are plump and crispy. For Jack this is a genuine taste sensation. He happily blends the old with the new — duck is the perfect complement to sour turnips.

Jack doesn’t particularly like recipes, he prefers to cook by feel. “Just add a little bit of this and that and off it goes” He remembers the thick recipe book that his parents own. The ‘Handlexikon der Kochkunst’ has more than one thousand pages. Many innkeepers find this standard tome fantastic. Including Gerhard Heinzle, the landlord of the Vorarlberger Hof. He even owns two copies — one for home, one for work.

‘Alt Dornbirner’ flour soup with fried potatoes
The Vorarlberger Hof has a turbulent history. As a social democratic working men’s club, it was a place for exercising, singing and sewing. It was the target of a Nazi terrorist attack. After the war it was home to Moroccan soldiers, who shared their accommodation with chickens, mules and cats. The dung ate its way through the walls. The house has since been renovated and leased several times. In the year 2000 it was taken over by Gerhard and Gabi Heinzle. Gerhard completed his apprenticeship in the kitchens of the former Parkhotel in Dornbirn. In his notebook he wrote: roast young game animals, braise old game animals, Trichinella examination of wild boar
and bears. Gerhard loves old things. That was also the case back in September 1981. ‘Nostalgic gourmet tour’, was the headline in the newspapers. “Gerhard Heinzle cooks like our great-grandmothers. Traditional dishes such as ‘Sure Kuttla mit Grumpara’ [Tripe in a sour sauce with potatoes], Krutspätzle [spaetzle noodles with sauerkraut], Gerstasuppa mit Speack [barley broth with bacon] — at the new café-Restaurant Loacker in Schwarzach nostalgia is currently the big thing.” Gerhard has since refined his art and serves eight lunch menus, including Brennsuppe [flour soup] — not always but occasionally.

Jack’s ninety-year-old aunt grew up on flour soup. Jack picks her up every Wednesday. She is a little unsteady on her feet now and only ventures out with Jack. They always go to the regulars table, where the playing cards are already shuffled. Jack prefers poker. He leaves the jass (local card game) to others. To Waltraud Lercher for example, landlady of the Gasthaus Helvetia.

place,” explains Waltraud. “Today I love my work, but at the beginning I was just a stopgap, as the youngest sibling.” Back then she was pregnant with her second child. A third followed, all in quick succession. Nowadays her grown-up son helps her in the kitchen. If he decided to move on, Waltraud would understand. She knows what this job brings with it – plenty of work, not much time off. The retractable roof needs renovating. It belongs to the garden that her father constructed on the occasion of the 100-year anniversary. Her children consider Waltraud to be old-fashioned because she still stuffs her own peppers and Berner Würstel. But her guests like that. Szegediner goulash is always on the menu when the weather is cold outside.
A lot of jass is played at the Helvetia and Waltraud Lercher is always in the thick of it and before she goes to bed she has to read for instance a crime novel by Elisabeth George. One of her guests recently gave her a sackful of books. When Waltraud’s great-grandfather first bought the guesthouse back in 1876, it was called ‘Zum Wilden Mann’. He rechristened it, calling it Helvetia because it was the last tavern in Dornbirn on the road to Switzerland. Horses were changed in the stables. Then one would ride over the covered smelting works bridge and across the border. For Waltraud’s father there was great disappointment when his second eldest child, who should have taken over the tavern, decided not to tread in his father’s footsteps. “Many of my guests believe that I was born to run this

Jack claims that he has never been in the Helvetia, but his friends tells him that the prettiest waitresses in the whole of Dornbirn work there. He has nothing against a relationship, he just doesn’t have the time to meet anybody. Today he is going to an ice hockey game. Walter Greber, landlord of the Gasthof Schwanen, is also certain to be there.

Devilled eggs with homemade mayonnaise
Walter Greber is a passionate ice hockey fan. He doesn’t miss a game. Then his daughter covers for him — when she finally takes over the Schwanen she will be the fourth generation. In the fifties Walter’s grandmother served food and drink at the trade exhibition and sample fair. Walter remembers that ox tongue was a popular dish back then. At the Hungarian stall he smelt cevapcici and schaschlik for the first time. There were skewers and toasted sandwiches. Whilst the adults enjoyed themselves in the trade
fair marquee, Walter helped out in the Spar kindergarten in the Jahnturnhalle sport hall. He already knew that he wanted to go into catering when he was in secondary school. He served his apprenticeship in a hotel in Salzburg and he ran an establishment called Tandem together with his cousin. The d’Süoßlar theatre troupe has found a home in the Schwanen. The seniors dance in the hall every Tuesday. “The people create the menu. We merely chalk it up”, says Walter Greber. Many come especially for the devilled eggs.
