CHRISTMAS DIALOGUE WITH A BARBADIAN/ BAJAN We are so pleased that you and your family have chosen to spend your holiday at Ocean Two Resort & Residences in warm and sunny Barbados ! To make you feel even more welcome, we have decided there is one way to make you a “Bajan” for the duration of your stay and that is, giving you a taste of our world with the terms/language that is most used around this time of the year. Remember, once you use these terms here on the property or anywhere in the world any Barbadian would recognize your language. You are now officially a part of our Ocean Two Team! Black Cake- This cake is similar to a fruit cake, with a lighter texture and consists of fruits and alcohol. Traditionally, dried fruit is soaked in rum for three months that added to the mixture at the time of baking. It is believed that if too much consumption of the cake is taken you can get intoxicated.

Dooflicky- a thing or celebration E.g . Sam, are you going to the “Dooflicky” at Ocean Two for New Year’s Eve?

Falernum- a sweet syrup use in Caribbean and Tropical Drinks. It contains almond, ginger and our lime and sometimes vanilla or allspice. The syrup form can be either alcoholic or non-alcoholic Jug-Jug- is a traditional Barbadian dish with pigeon peas as the major

ingredient The green peas are boiled with small amounts of salt meat and pork, with the stock-poured off. The meat, peas and seasonings are minced and a quantity of guinea corn flour is added and then cooked for about half of an hour.

Sorrel- a drink made from a deep red sorrel. Barbados ginger ale or falernum is added to the sorrel to give it a smooth taste.

Sweet Bread- This oven baked bread is usually seen throughout the year. It was a popular option for Sweet bread to be baked before holidays but more regularly on Christmas. Sweet bread should be served warm, sliced and accompanied by a tall glass of iced Mauby drink (a local beverage made from


mauby bark) or for the Christmas holiday Mauby can be substituted with a glass of iced Sorrel drink.

Salt Bread- This traditional bread made in Barbados, is one of the only breads that isn't very sweet. However don't let the name fool you. This bread is definitely not salty. This bread can be used to accommodate almost any filling. This local delicacy is the housing for the popular bread & two which consists of salt bread filled with two fish cakes.

Ginger Beer- first introduced as an alcoholic drink. Today, however, it is sold as a soft drink. This drink is sweetened with sugar/artificial sweeteners and is primarily flavoured with ginger.

Ham-Cutter- islander’s favourite sandwich. It is often served with spicy Bajan pepper sauce.

Cassava Pone- A delicious traditional sweet treat introduced by the island’s earliest settler made with cassava and coconut.

Puncha- Crema- an addictive drink served on Christmas Day in Barbados. It is often referred to as the ‘addictive drink that sneaks up on you when you least expect’.

Mauby- a bitter-sweet cold beverage made from the bark of the Mauby tree. Pepperpot- festive food often eaten on Christmas Day in Barbados. It is a stewed meat dish with flavoured spices, cassareep (a syrup made from cassava) and hot pepper.

Christmas worm-This is the name that it is given locally to a worm which emits a coffee scent. Children usually take a stick and let the Christmas Worm climb onto it while it performs a balancing act.
