In viaggio con il panettone In Italia Si sa, il Natale si fa annunciare anche nel profumo che gonfia l’aria scura dell’inverno: ci raggiunge un sentore di arancio e cannella, cioccolato e fichi, pane lievitato dolce, uvetta, vaniglia e cardamomo e sappiamo che è tempo di dare forma al dolce della tradizione natalizia di famiglia.

Ritorniamo bambini schiacciando il naso contro le vetrine delle pasticcerie, cercando ispirazione.

Internazionalmente rappresentata da pandoro e panettone, l’Italia nasconde tra le sue balze un presepe di piccoli laboratori che producono un microcosmo di dolci profondamente legati al territorio, accomunati da ingredienti e aromi, chiamati con nomi che spesso richiamano quello del pane e ne ricamano la ricetta.

Giallo come il sole Il Natale era anticamente definito il giorno del pane. Ecco che l’excursus nella tradizione dei pani natalizi si trasforma in un viaggio che incrocia tanti soli quanti sono i riti con cui l’uomo ha tentato di propiziarsi la grazia del cielo e la prosperità.

Il pangiallo, per esempio, nasce nel Lazio e ha radici che affondano addirittura nell’età imperiale romana, quando vigeva l’usanza di distribuire dolci dorati durante il solstizio d’inverno per favorire il ritorno del sole.

Ad oggi la ricetta ha subito numerose trasformazioni. Tra gli ingredienti ancora presenti: farina, frutta secca, miele e cedro candito, il tutto messo a cottura dopo lievitazione ricoprendolo di una pastella d’uovo. Ecco perché si dice pangiallo o forse perché in origine lo si impastava con la farina di granturco.

Out and about with the panettone AROUND ITALY We know that Christmas makes its presence known in the perfume that inflates the dark winter air. We catch a whiff of orange and cinnamon, chocolate and figs, sweet leavened bread, sultanas, vanilla and cardamom and we know that it’s time to make this traditionally festive family cake. We become children again, pressing our noses against the bakery windows to seek inspiration.

Represented worldwide by the Pandoro and Panettone, Italy belies a nativity scene of little workshops that produce a microcosm of desserts with close local ties, grouped together with ingredients and essences, called by names that often bring bread to mind, embellishing the recipe.

the tradition of festive breads turned into a journey that encounters as many suns as the customs with which man has tried to endear himself with the mercy of the heavens and prosperity.

The Pangiallo, for example, came about in Lazio and has roots that actually date back to the era of the Roman Empire, when it was customary to hand out bronzed cakes during the winter solstice to encourage the return of the sun. The recipe has now undergone numerous changes.

Amongst the ingredients that are still used are flour, dried fruit, honey and crystallised citron, all baked after leavening covered with an egg wash; hence the name Pangiallo or perhaps since it was originally made with cornflour.

On the other hand, there’s the Nadalin, a unique Christmas leavened bread from Verona, an eight-pointed star sprinkled with toasted pine nuts and almonds. Soft and compact, it appears to be the forefather of the Pandoro, even though it actually dates back to 1260, when the Della Scala family, lords of Verona, for the first Christmas following their settlement, hired a local baker to invent a cake to symbolise the city’s grandeur.

The star shape of the Nadalin brings several myths to mind. The most common tale is of a soldier of fortune belonging to the centuriae of the Landsknecht, who, being kitchen experts and homesick as they were, put together ingredients to create a cake resembling a star. The other myth attributes its reputation to the comet of the Magi, whereas a third legend returns to the pagan rites in which the sun with its rays was a symbol of light and energy.

To recall the poetics of the eternal return, with the idea of the cyclicity of time, there’s the Bussolà or Bossolà, a cake in the shape of a snake-like ring typical of the Brescia area. The most accredited version to retrace

Soffice e compatto, pare sia il progenitore del pandoro, anche se ha origini che risalgono addirittura al 1260, quando i della Scala, signori di Verona, nel primo Natale che seguì al loro insediamento, diedero l’incarico a un pasticcere locale di inventare un dolce simbolo della grandezza della città.

La forma stellata del nadalin richiama numerose leggende: quella più diffusa racconta di un soldato di ventura appartenente alle centurie dei lanzichenecchi, che come cuciniere, preso dalla nostalgia, mise insieme ingredienti di fortuna per dare forma a un dolce simile a una stella; un’altra ne accosta la fama alla cometa dei Magi e una terza ritorna ai riti pagani in cui il sole a raggi era simbolo di luminosità ed energia.

A richiamare la poetica dell’eterno ritorno, con l’idea della ciclicità del tempo, ci pensa invece il bussolà o bossolà, dolce a forma di anello-serpente tipico del bresciano. La versione più accreditata per

Ingredienti per 4 persone Per gli gnocchi > 2 patate di media grandezza > 100 gr di panettone > 100 gr di farina bianca > Grana Padano > sale Per la salsa allo zafferano > 1 dl di panna fresca > 1 bustina di zafferano > burro > 20 gr di uvetta sultanina del panettone

Ingredients for 4 people For the gnocchi > 2 medium potatoes > 31/2 oz (100 g) panettone > 31/2 oz (100 g) plain flour > Grana Padano cheese > Salt For the saffron sauce > 31/2 fl oz (100 ml) cream > 1 sachet of saffron > Butter > 1 tablespoon sultanas from the panettone

Fai bollire le patate con la buccia, scolale, sbucciale e passale subito, ancora calde.

Riduci in briciole abbastanza sottili il panettone e uniscile alle patate passate; impasta il tutto con la farina e un pizzico di sale. Ricava gli gnocchi e tienili da parte.

In un padellino versa la panna, lo zafferano e una noce di burro; fai ridurre il tutto in padella e spegni la fiamma. Cuoci gli gnocchi scolandoli appena salgono in superficie; versali in una padella con del burro e falli saltare per pochi istanti con l’uvetta del panettone.

Quindi servi il tutto nei piatti guarnedo con la salsa allo zafferano.

Boil the potatoes with the peel on. Drain, peel and mash them immediately while hot.

Finely crumble the panettone and mix into the mashed potato. Add the flour and a pinch of salt and mix well.

Shape into gnocchi and set aside.

Pour the cream into a small saucepan.

Add the saffron and a pat of butter.

Reduce the sauce and turn off the heat. Cook the gnocchi for a few minutes. Drain and add to the pan with the butter. SautĂŠ for a few seconds with the sultanas from the panettone. Serve with the saffron sauce.

Tartelletta di panettone e lamponi Panettone and raspberry tartlet

Ingredienti per 4 persone > 250 gr di panettone > 500 ml di panna fresca > 1 cucchiaio di zucchero a velo > 4 cestini di lamponi freschissimi > 1 cucchiaio di zucchero semolato

Ricava 4 fette molto sottili di panettone, chiudile su se stesse e posizionale all’interno di 4 stampini monoporzione cilindrici. Quindi cuocile in forno a 160° per 6 minuti circa. Sfornale e falle raffreddare su una placca.

Nel frattempo in una ciotola monta la panna con lo zucchero a velo e conservala da parte.

Lava i lamponi e tieni 3 cestini da parte. Frulla i frutti del quarto cestino nel mixer con lo zucchero semolato fino a ottenere una crema vellutata; passala al colino e mantienila al fresco.

Disponi un cucchiaio di coulis di lamponi sul patto, adagiavi sopra una tartelletta di panettone e riempila a strati con panna e lamponi. Servi subito in tavola, prima che la panna smonti.

Cut four very thin slices of panettone, place them on top of one another and arrange in four individual cylindrical moulds. Bake in the oven at 315°F (160°C) for about 6 minutes.

Remove from the oven and leave to cool on a tray.

Meanwhile, whip the cream with the icing sugar in a bowl and set aside.

Wash the raspberries and set aside three boxes. Blend the fruit in the fourth box in a mixer with caster sugar to make a smooth puree. Strain through a sieve and keep cool.

Place a spoonful of raspberry coulis on the plate and top with a panettone tartlet. Fill it with layers of cream and raspberries. Serve immediately while the cream is still stiff.
