THE HIDDEN GEM IN INTERIOR DESIGN

I

NTERIOR ARCHITECTURE AND DESIGN FIRM MCYIA has an impressive list of awards, accomplishments and high-profile clients – yet, when we speak to the firm’s founder and principal Chuen Yee, one of the first things you notice is her quiet humility and lack of bluster. Even though the firm’s accolades can be credited to her keen creative eye and sophisticated taste, she says it’s never been about the prestige, recognition or even the money – it’s about creating something meaningful and making her clients’ vision come alive. Yee had an inclination for creativity and design even as a child. She remembers having fun making tiny kitchens, furniture and homes out of cardboard and colored paper. The Bangkok-born and raised designer lived a few years during her childhood in Honolulu while her mother pursued a PhD at the University of Hawai‘i at Manoa. After college, she put her interior architecture degree to work for a large international firm before earning a Fulbright Scholarship for graduate study at the prestigious Rhode Island School of Design. “There’s this sense of old tradition in Hawai’i, and Thailand is similar where there are design elements that remain from ancient times. When people ask me to design a project that has history and meaning behind the work, I am familiar with the importance of that,” she says. Her strength in contemporary modern design and appreciation for tradition combined with her experience working in Bangkok, San Francisco and New York – three metropolitan cities at the forefront of design – bring a blend of sensibilities to her work that’s both innovative and respectful. She’s passionate about design and helping her clients, so she’ll put in the long hours and go the extra mile to help the client complete a beautiful project within budget. It’s all about thinking outside the box, she says to make the client’s dollar go further.

The firm also prides itself in opting for sustainable materials and environmentally friendly products. Yee is particular about clients breathing volatile organic compounds (VOC) and its harmful health impacts. These harmful off-gases are found in paint, flooring and most other building materials so she looks for products that have low or no VOC. “Where affordable, I choose products that promote healthy and sustainable living,” she says. And, at the end of the project, she donates salvaged and extra items to Reuse Hawaii. When asked what makes all of this work worth it, she says, “That’s simple: it’s when I see that my clients are happy with the final built project. That’s what’s the most important for me.” Recently, Yee completed Central Pacific Bank’s “WE by Rising Tide” cohort program for women entrepreneurs as part of the inaugural class. The program, sponsored by CPB Foundation and aio Foundation, in partnership with the Patsy T. Mink Center for Business and Leadership, empowers women business owners to become better leaders and gain tools to grow their businesses. “I’m honored to be selected for this opportunity and am especially grateful to CPB’s Chair Catherine Ngo, who has been a valuable mentor to me as a fellow businesswoman,” says Yee.

What a Year HONOLULU is working to strengthen its digital wherewithal amid turbulence in the media industry.

it’s like that for everyone. Every year. Everyone is on a roller coaster, he said. We think our ride makes sharper turns or goes higher and lower, but it’s just perception. So with this lens, I’m reflecting on the past months differently, focusing on what I’ve humbly learned and recognizing the value of a year of movement and change. On the work front, our HONOLULU team continues to become stronger digitally, while simultaneously producing 10 issues of the print magazine a year. This has meant adding tasks to already full plates of responsibilities to continuously create content on various platforms. Our editorial and art teams have come up with creative new ways to showcase stories both in print and online, and are now shooting and editing Instagram Reels. We’ve also delved deeper into discussions about SEO,

10 HONOLULUMAGAZINE.COM February 2023

back-end WordPress development, data and overall digital strategy. With Scott Schumaker’s impending retirement, we also have a new publisher, Donna Kodama-Yee, a two-decade veteran with HONOLULU, who in Scott’s own words “has been both the heart and soul of the magazine” with a deep understanding of both publishing and Hawai‘i’s culture. Donna is wonderful to work with, and there’s no one more deserving than her to lead HONOLULU in this capacity. It’s not an easy time to take the reins. The media industry is like a tornado, twisting and moving in unpredictable ways. For brands rooted in print products, like magazines, it’s even more tumultuous. But what draws journalists and others to it, at HONOLULU too, is a desire to communicate. We love telling or sharing stories that inform, inspire, surprise and have an impact. This core goal hasn’t changed, but the platforms and preferences of our readers

have, so we’re continuing to explore ways to carry on a meaningful conversation. It is a privilege to be in this line of work. On tough, exhausting days, it’s sometimes easy to forget that. But there’s a reason why amid all the challenges, we are still reporting and writing stories, shooting photos, creating graphics, posting on social media every day, as well as organizing events and marketing our brands. We want to connect. So as we look to this new year, we as a team want to sincerely thank you, especially our longtime print readers, for trusting us to be your guide to our beloved city. ➸ STEP INSIDE MAUI-BASED NATIVE HAWAIIAN ARTIST Noah Harders’ fantastical world by visiting his

premiere exhibition at the Honolulu Museum of Art, Moemoeā. Flowers, leaves, shells and other organic and found materials are intricately woven, shaped and sculpted to create extraordinary masks and headdresses in a stunning surrealist showcase that’s part fashion, part fantasy. The exhibit features selfportraits of Harders donning his designs, and several mask sculptures are also on display. “These pieces are a way for us to step out of the harsh reality we are consumed by every day, and simply have a moment to dream and feel inspired by what surrounds us on this earth,” Harders says. Getting to Know Kanoa Goo The Honolulu-born-and-raised actor on the ABC drama The Rookie is hardly a newbie when it comes to show business. Here, he shares his own life script and his sources of inspiration, both on and off the stage.

Cool Operator Uncle’s is building a new production facility in Las Vegas to help distribute its beloved ice cream sandwiches to the West Coast and beyond. BY MARIA BURKE

T STARTED WITH LETTUCE. Almost

a decade ago, Paul Logan and his wife, Barbara, brought their hydroponic lettuce to the Waimea farmers market. While there, he noticed a dearth of desserts and started dreaming up something sweet and simple: ice cream sandwiches. The former marine engineer began working on flavor combinations outside of vanilla. Honey peanut butter ice cream in between chocolate chip cookies. Seasonal apple pie ice cream sandwiched with oatmeal cookies, with crumbled, scratch-baked Honeycrisp apple pie folded into it. Vegan baked banana ice cream between cinnamon-y Snickerdoodle cookies. Starting in 2013, the Logans began peddling their homemade sandwiches to local shops and restaurants, and Uncle’s Kū Aloha Ice Cream Sandwiches took off. “No one ever took an Instagram [photo of ] my lettuce,” Paul says. Since 2016, sales at the North Shore-based company have grown sixfold and its treats are now prominently displayed at local Whole Foods and many other stores and restaurants. Through crowdfunding and investors, the Logans raised more than a million dollars to expand Uncle’s Waialua factory, and they recently began building a new production facility in Las Vegas to help distribute their ice cream to the West Coast and beyond. What’s made Uncle’s such a cult favorite is its variety of flavors. Paul has crafted more than 100 combinations that focus on natural ingredients, with an exception for sprinkles. “When kids beg for long enough for something with sprinkles, sometimes

you have to bend,” he says. The mainstays include North Shore coffee (rich Hawaiian coffee ice cream on dark chocolate cookies, dusted with sugar for crunch), as well as liliko‘i, which offers a tangy pop paired with old-fashioned sugar cookies. Honey lavender is also a seasonal favorite, with floral Maui lavender lingering between a set of sugar cookies. While Paul has been the mastermind behind the menu, customers can also suggest flavor and cookie combinations on Uncle’s website (unclesicecream.com). One customer suggestion—ube ice cream on sugar cookies—is now a staple. A few years ago, Uncle’s also debuted mini ice cream sandwiches, which have been a huge hit. But as with all their treats, there’s nothing mini about the flavor.

February HONOLULU Magazine emerged from Paradise of the Pacific, a publication commissioned by King Kalākaua that began in 1888, making it the oldest continuously published magazine west of the Mississippi. Each month we take advantage of its enviable archive with a nostalgic dive into the past. For this issue, we flipped back 40 years to see what the city was buzzing about in February 1983. had Mannix. San Francisco had Ironside. And back in the ’80s, Honolulu got its very own crack private detective in the form of the mustachioed, short shorts-loving investigator Thomas Sullivan Magnum IV. Launched in 1980, the original Magnum, P.I. television show, and star Tom Selleck’s chest hair, took the Islands and the country by storm. To find out what all the fuss was about, Paradise of the Pacific writer Win Anderson did some investigating, spending some time on set to observe the actors and 125-person production team at work. “Along the shoulders of Kalanianaole Highway, are the equipment trucks,” Anderson notes, watching a scene being filmed at the fictional Robin’s Nest mansion. “Two uniformed cops stand at the entrance gate; a crowd of tourists has gathered across the highway. The owner of the estate says there are often as many as 200 people gathered outside. They sometimes climb over the gate or up on the walls. Many

tourists believe Selleck actually lives in the 52-year-old house. They toss gifts over the walls to him, they leave packages and boxes of food at the gate.” Anderson continues: “On the Magnum set Selleck is in command. ... When he is working under the lights, he receives absolute attention from the company. Crew members and extras often crowd together so they can see him deliver his lines.” The series catapulted Selleck “into a position of grandeur unprecedented in show business history. His likeness appears and reappears on the covers of tabloids and national magazines. Interviews and feature stories about him have been distributed by major wire services and by every major syndicator in the world. Ten thousand letters a week pour into his Los Angeles office.”

Tokyo Vice The issue’s cover image was taken during the filming of the third season’s “The Arrow That Is Not Aimed” episode, in which Magnum must recover a rare antique Japanese plate brought to the Islands, thwarting samurai, yakuza and ninjas. Oh my!

Kaua‘i’s Coolest and Chicest Shop Here—and So Do We Shipwrecked Kaua‘i is a welcome breath of fresh (and fashionable) air for quaint Kapa‘a, brimming with coastal-casual fashions, home décor and lifestyle goodies.

Besides running the shop, she’s a busy mom of three boys and co-owner of a coffee shop with her husband. I WAS ALWAYS INTO FASHION ... so, when I graduated from Fashion Institute of Design and Merchandising in Los Angeles, I started designing women’s clothing. It was great, however, I wanted to have my hands on all types of fashions and accessories. Opening my own boutique gave me that opportunity. A LOT OF MY INVENTORY COMES FROM … stalking designers on Instagram. Who doesn’t do that? I also go to markets in L.A.; the West Coast vibe agrees with my Hawai‘i customers. When I travel, I always have my eyes open. If I’m drawn to something, I know my customers will love it. I WOULD DESCRIBE THE SHOP AS … island-modern lifestyle. We choose classic pieces with a twist that women (and men and kids) want to wear on vacation, and everywhere else. MY FAVORITE ITEMS IN THE SHOP ARE … Agolde denim. It’s an easy classic jean, made with organic denim, and pairs great with a tee. Clare V bags stand out with a pop of color or stripes or checkers—they’re always fun. Me and my staff all use Leahlani skin care, which is locally made by a woman on Kaua‘i. She uses locally sourced ingredients, and the 3-in-1 cleanser with honey leaves our skin glowing.

People also comment on how surprised they are at all the unique brands we carry; they love coming in and discovering something new. But we’re still making things work even when the news of the day is a little bizarre. Over the years, we’ve noticed some recurring themes: politicians, crime, politicians accused of crime, and the antics of monk seals and other creatures. At HONOLULU Magazine, we’re here to help keep you informed, tell the stories of our community and find common threads that connect us. We call this longtime feature Sour Poi, knowing that many of us prefer our poi a few days old so it’s got that tang that can make it taste even better than fresh. Our award recipients this year include some perennial targets—we call them the Sour Poi Alumni Team or SPAT—as well as new targets and stories to watch. The Coast Guard in Honolulu discovers nearly 13,500 pounds of illegal fireworks in a shipping container at a local port. Officials announce in September that the explosive cargo, with an estimated street value of $2.7 million, has been removed and safely destroyed.

ACTOR EZRA MILLER, BEST KNOWN FOR PLAYING THE FLASH IN THE JUSTICE LEAGUE MOVIES, is arrested twice in a few weeks on Hawai‘i Island. First, Miller pleads no contest to disorderly conduct at a Hilo karaoke bar in April and is fined $500. Weeks later, Miller is arrested for second-degree assault after allegedly throwing a chair that strikes a woman at a private home. No charges were filed.

Living on the Edge Ò A North Shore house tumbles onto the beach, showing the power of coastal erosion, which scientists expect will worsen as sea levels rise. Seven months later, in September, state-commissioned drones show more homes “teetering on sandy soil just above the beach” as homeowners and state officials scramble for solutions.

Ò Dr. Rudy Puana of Hawai‘i Island begins serving a 7.5-year federal prison sentence after the prominent former pain specialist is convicted of conspiracy and distribution of oxycodone and fentanyl. His sister, disgraced former Honolulu deputy city prosecutor Katherine Kealoha, is serving a 13-year federal sentence for crimes that include trying to use her position to steer suspicion away from Puana. The judge considers both Puana’s ability to stay clean and sober over the previous four years as well as the violation of his doctor’s oath in sentencing.

Ò Two Hawai‘i lawmakers face the consequences of pleading guilty to public corruption charges: Former state Sen. J. Kalani English and former state Rep. Ty Cullen admit to accepting bribes from a business owner in exchange for preferential treatment tied to cesspool legislation. English, the onetime majority leader of the state Senate, is ordered to serve 40 months in prison and pay a $100,000 fine. It’s also revealed that English stuffed $5,000 in cash under the floor mat of the car that investigators stopped him in. Cullen admits to receiving $22,000 in casino chips from the business owner during a wastewater conference in New Orleans.

Ò Former Hawai‘i U.S. Rep. Tulsi Gabbard, who made national news in 2020 when she left a safe seat in Congress to run as a longshot candidate for president, issues a “breaking news” alert in October 2022 to announce she’s leaving the Democratic Party (and starting a podcast). Gabbard says the party is run “by an elitist cabal of warmongers driven by cowardly wokeness.” She then spends time campaigning for a dozen Republicans who include prominent supporters of Donald Trump. After most of them lose in the midterms, she’s hired by Fox News as a paid contributor.

Ò Former Kaua‘i Council member Arthur Brun is sentenced to 20 years in federal prison for drug trafficking, assault of a law enforcement officer, witness tampering, evidence tampering and firearm offenses. Earlier, he pleaded guilty to leading a drug ring that distributed methamphetamine. Prosecutors say that when a public official traffics in meth, the seriousness of the offense is magnified. The U.S. Attorney says Brun fled a police stop, then “personally assaulted a law enforcement officer in the course of his criminal conduct [which] adds to the corrupt nature of his offense.”

A MOTHER MONK SEAL NAMED ROCKY,basking with her pup at Kaimana Beach in Waikīkī, apparently thinks a woman swimming nearby is getting too close to her little one, so she rushes over and attacks. The pup’s fine and the swimmer recovers. That was in July. Months later, Rocky crashes a luxury private picnic in ‘Ewa Beach. She throws some pillows around, according to the surprised host, before settling in for a few hours, then leaves the next day.

Oral and maxillofacial surgeon Dr. Cameron Y.S. Lee knows all about the latest advances in his surgical specialty of dentistry. “To replace missing teeth, dental implants have improved the quality of life in our patients. Made of titanium alloy, it has proven to demonstrate excellent mechanical properties, is biocompatible with the jaw and gums and has an excellent long-term track record of success”, quotes Dr. Lee. “But, due to the increasing demand for metal-free crowns and bridges by patients, there has also been much interest in replacing missing teeth with dental implants that are also non-metal and made of zirconia”, says Dr. Lee. Titanium has long been the standard material for dental implants for the past several decades. Its material properties are the reason for the success of implant treatment. A graduate of Johns Hopkins University Advanced Biotechnology and Columbia University’s Information and Knowledge Strategy programs has allowed Dr. Lee the opportunity to intensively research and study zirconia as a suitable dental implant material. “One thing is certain, zirconia is a ceramic material that has the strength of metal”, states Dr. Lee. For patients who desire metal-free dentistry, zirconia dental implants are a non-metal alternative to the titanium metal implant. In addition, “it’s white color may also be an advantage in the esthetic zone of the front upper jaw”, Dr. Lee adds. Zirconia is slowly becoming one of the dental materials that may rival the traditional titanium implant predicts Dr. Lee.

HOW WE CREATED THIS LIST

Professional Research Services, a Detroit-based company that administers peer-review surveys of professionals including doctors, lawyers and dentists. WHO WAS SURVEYED?

PRS contacted more than 3,000 licensed general dentists, dental specialists and referring physicians (including family medicine, oral and maxillofacial surgery, pediatrics, head and neck plastic surgeons) in Hawai‘i and asked them which dentists they would recommend across seven geographical areas within the Islands. Each dentist was allowed to recommend up to three colleagues in each given dental specialty. Once the ballots were complete, each nominee was carefully evaluated on the basis of the survey results, the legitimacy of their license, and their current standing with the Hawai‘i Dental Board. Dentists who received the highest number of votes in each specialty are reflected by specialty and in alphabetical order. WHAT INSTRUCTIONS WERE THEY GIVEN IN COMPLETING THE SURVEY?

Voting was done online in the summer of 2022. Dentists who visited the site were instructed to vote by clicking on a nomination field and selecting a dentist, organized by specialty. All licensed dentists in the state were available for selection. Dentists were able to recommend up to three colleagues in each given dental specialty and were able to manually nominate three physicians if they did not appear on the drop down list. Respondents were allowed to modify their ballots until the closing date. DID SPECIALISTS VOTE ONLY ON THEIR OWN SPECIALTY, AND VICE-VERSA FOR GENERAL-PRACTICE DENTISTS?

Digital technological advancements have been evolving, and our office has acquired many, resulting in more precise, predictable and pain-free or less painful procedures. A valuable addition is a CT scanner to assist in planning and executing minimally invasive implant surgeries. We also use digital X-rays that emit 80% less radiation than traditional X-rays. This allows us to find cavities earlier, resulting in smaller fillings and preservation of healthy tooth structure. Intra-oral scanners combined with CAD/CAM technology can now be used to fabricate porcelain teeth or fillings in one appointment. The scanners are also used to take digital impressions instead of using traditional materials that can be very uncomfortable and messy for patients. The Tek-Scan is a new and powerful tool for digital bite analysis. After putting new crowns or fillings, dentists check patients’ bites with blue paper or ask patients how their bites feel. With the Tek-Scan, the computer analyzes exactly where patients are biting down harder, so there is no guessing when adjusting bites. The information gathered from the Tek-Scan is also combined with our BioPak Electromyography to analyze and treat many muscular dental problems such as TMJ, resulting from severely worn-down or broken teeth, missing teeth, and other problems. This dual technology has greatly improved our patients’ bites, resulting in less tension in their facial muscles, decreased headaches and TMJ complaints and more comfort. Technology can certainly make our work very satisfying. Stephen Sueda, D.D.S. Local boy Dr. Stephen Sueda is proud to be part of the close-knit team at Honolulu Keiki Dental. The pediatric dentist completed his residency at the University of Michigan before joining the family practice in 2020. brunch mashup of honey walnut shrimp on waffles, and shrimp and chile crisp over chawanmushi. And then, izakaya-style for dinner—small plates of abalone Rockefeller, and cold-smoked tomatoes flooded with ume ponzu. It’s as if Jason Peel, after decades of running restaurants for other chefs, couldn’t hold it all in anymore and just let loose in his first place of his own. Let’s say our excitement matches his. Brunch is Nami Kaze at its best, more casual and drawing on some of the best breakfast traditions from across cultures, like the played-straight Japanese breakfast or labneh toast. But more often, cultures collide, as with the eggs Benedict, which swaps out listless English muffins for crisp Hong Kong-style shrimp toasts, cut into finger-sandwich lengths to be dipped into the poached eggs and hollandaise. And soon, you learn that Peel’s menu is not at all what you’d expect. The so-called omelets are silky-smooth chawanmushi topped with anything from mapo tofu to mentaiko cream, the latter’s richness offset with ikura. And then that honey walnut shrimp waffle: It’s the best thing to happen to waffles since fried chicken.    Though it seemed that Peel, born and bred on Kaua‘i, would have been content being the righthand man to chefs for many more years, when the pandemic hit, it distilled his priorities. As Hawai‘i turned inward, Peel turned to Hawai‘i—to the chefs and cooks who worked for him, to the farmers he worked with—and wanted to build a home that didn’t yet exist. That meant creating a more nurturing environment than the work culture of many kitchens and focusing on seafood and vegetables. The latter is more evident at dinner, where you’ll find wasabi okra and shishito peppers with preserved calamansi and black sesame. Corn beignets are puffs of air

brought down to earth with a dredging of Japanese curry salt and Kewpie mayo. And there are two dishes of ‘ulu, one of which is ‘ulu tots (again, misdirection!) made with ‘ulu flour and fried, and though they’re paired with his grandfather’s recipe for barbecue sauce, the effect is surprisingly Italian, like fried polenta in tomato sauce. Like a lot of Peel’s food, it is our local culture returning to us by way of another. While the vegetables are local, the seafood combines the local and imported. The local: Kona abalone dressed up oysters Rockefeller style, doused in butter and topped with garlicky kale and Sweet Land Farm’s goat cheese tomme. The imported: hamachi crudo with ají amarillo and fried ogo. Recently, Peel became one of the first chefs to buy fish from Paepae O He‘eia’s restored Hawaiian fishpond, which has yielded barracuda, toau (blacktail snapper) and Aussie mullet, which he has fried and served whole. Sometimes, though, like with pāpio, there isn’t enough for dinner service, so he fries it up for the cooks. But it’s all part of Nami Kaze as a teaching kitchen—Peel was a Kapi‘olani Community College culinary instructor for six years. And maybe one day, those fish will find a place in future omakase dinners alongside the à la carte menu. Because yes, there’s more to come. So much more. –MC

on Kawaiaha‘o Street hides Hawai‘i’s first mozzarella factory and a wonderland of Italian delights. On the shelves are specialty imports including colatura di alici, an Italian fish sauce from the Campania region, and single-barrel Giuseppe Giusti balsamic vinegars, which have been around since 1605. In the deli case: truffle mortadella and capocollo. But the

real draws are the made-to-order Roman-style pizzas and rustic, yet elevated, sandwiches. The most popular sandwich so far? The Bolognese, featuring thinly sliced mortadella dotted with pockets of fat, draped over schiacciata—a light and fluffy cousin of focaccia—and smeared with pistachio crema. It’s topped with stracciatella (hand-pulled shreds of mozzarella soaked in heavy cream) and more chopped pistachios. It’s heavenly.   Honolulu has its share of Italian restaurants, but Bocconcino, which references the small balls of mozzarella but also any tasty nibble or snack, is different. Take the ’nduja pizza, which combines spicy, spreadable salami with Corbarino tomatoes (an ancient variety), cured red onion, more stracciatella and fresh basil on a hand-formed crust coated with a thin layer of semolina flour, giving it an addictive crunch. The tomato is bittersweet, yet bold enough to support the intense ’nduja.   Owner Donato Loperfido wanted to make fresh mozzarella on O‘ahu many years ago. He was born and raised in Alberobello, Puglia, in southern Italy, where he watched his grandmother make varieties of fresh cheese at home. He spent decades cooking Italian food in kitchens around Honolulu and making his own mozzarella in-house. He wanted to make more mozzarella, but “Hawai‘i was not ready.” Now it is, he says. In 2005, he started Flavors of Italy, an import business, and in 2021, with Hawai‘i obsessed with specialty goods, he began the mozzarella factory. Head cheesemaker Simone Orlandini spends an average of eight hours a day making five kinds of mozzarella: burrata, bocconcini, stracciatella, fior di latte and zizzona—the last a onepound bulb of pure mozzarella. The cheese, like most of what you’ll taste at Bocconcino, is comforting, delicious and supremely decadent in its simplicity. –MB

OMAKASE BY AUNG “​​W HAT DO YOU CALL A DOOR THAT’S REALLY CUTE?” The question pops up in the middle of a $130 omakase sushi dinner—posed to 12 diners at the sushi counter by the chef, Aung Lawalt, who’s giggling at his own dad joke. “I’ll give you 10% off if you get the right answer.”   A typical sushi meal at Omakase by Aung is anything but typical. The chef, first: Born in Myanmar and raised in Thailand, he arrived in the United States as a gregarious political science major intent on becoming a diplomat. But he fell in love with sushi when he landed a part-time job at Akiko’s, a Michelin

Guide restaurant in San Francisco. His youth: Only 28 years old, Lawalt opened his sushi counter last summer because he loves the back-and-forth with diners as much as he loves sushi. He chose Kapahulu Avenue and not New York City, where he’d been working at a sushi bar in the East Village, because Hawai‘i’s pace seemed less frenetic, and because his brothers live here.   Then there’s the sushi. It’s mostly traditional, some pieces like ​akami​ of bluefin tuna hinting at the intensified flavors and s​ anmi​, or acidity, of Edomae-style aging and curing techniques—but then it veers. A scallop is folded into crisp nori atop a pat of rice, its silky, cool sweetness a pleasant contrast with the warm, vinegared grains. A slice of A5 Miyazaki wagyu arrives lightly torched and sprinkled with truffle salt and lime zest. And uni, which crescendos across three appearances: first as a glistening garnish atop ​hirame​nigiri, later in the 15 courses as exuberant golden heaps slathered and mixed into warm sushi rice topped with caviar, and finally, because Lawalt, shaking his head, can’t stop admiring them, as naked lobes laid simply on plates with nori that the chef hands out around the counter. “I don’t want to follow other people. If I fail, I fail. I want to create my own stuff,” he says. “And I want a really interactive sushi bar. I want people to feel at home when they come to my restaurant.” Which brings us back to the dad joke. No one guesses the correct answer, which makes Lawalt giggle harder. “​​Adorable!” the chef crows. –MT

RECYCLING. As in lit-

erally, hauling bottles and cans in his truck to the recycling center as we talk on the phone. But as we talk, I realize recycling is what Simeon does. Like with his smash hit Tin Roof Maui, bringing touched-up plate lunches to a former okazuya space, or with his latest, Tiffany’s, taking over a Wailuku dive bar.   The building housing Tiffany’s has a deep history. In its most recent 20 years, it was one of Wailuku’s most beloved bars. From the 1950s to the ’70s, it was Wing Sing, a chop suey restaurant. And in years between, it was a hostess bar. Enter Simeon, with his own deep history, some of it overlapping with Tiffany’s. After finishing culinary school on Maui, he’d head there with friends, “trying to feel like an uncle, ordering too much food and watching uncles drinking Coors Light on ice,” he says. His order: “Steak bites, automatic. And crispy pork. It wasn’t good, but it’s something we always ordered. Just the Filipino in me, I guess. When I drink and eat, I gotta have fried pork belly.” And so, when he took over the space in summer of 2022 and pared down the menu of more than 150 (yes, really) dishes, he kept the steak bites and the pork belly, improving the latter, of course, by letting more of the fat render and making it crispy. His Tiffany’s has a somewhat more manageable 50 dishes on the menu, and most are holdovers, just slightly tweaked. Like the salt and pepper shrimp, head-on, battered and fried and tossed with chile flakes and Thai basil. And the beef broccoli cake noodle, with copious oyster sauce gravy. My favorites, though, are his additions. He axed the surprisingly extensive sushi menu, but the hamachi sashimi, flooded with finadene, a Chamorro sauce that Simeon adapts with ponzu and plenty of onion and shiso, is all I need to be happy at Tiffany’s. The menu is still a work in progress as Simeon decides how much of the past to keep. But whether it’s a huge crispy pata that you need to pull apart with your hands or a simple clear saimin, Simeon continues to bring to the table the foods that locals like to eat. –MC

LE’S BANH MI IT’S RARE TO hood Ba-Le shops are disappearing. And you’re even less likely to stumble across one like the minimalist Le’s Banh Mi, where Chi Lam bakes her own bread. Vietnamese baguettes are in their own wonderful category. Lam knows this. When she moved from Ho Chi Minh City to Honolulu six years ago, she tried a lot of baguette recipes, “but none of them taste exactly like the [ones] I used to eat in Vietnam, so I decided to learn how to bake,” she says. She now creates her own version every morning, and the results are airy and chubby loaves with delicate crackly crusts.   And what she and her husband, Minh Tuan Le, do with them is just as lovely. The sandwiches are as restrained as the shop’s sleek white interior, which lets the details pop, like in the roast pork banh mi, with its delicate, soft center giving way to curly-cue green onions, seeded jalapeños, morsels of roast pork mixed with bits of fat and crackly skin. Even in the Saigon special, with all the fixings of cha lua steamed pork roll, ham, char siu, house-made pâté and mayo, cucumbers, jalapeño, pickles and cilantro, the bread still shines through. The vegetarian options include a lemongrass tofu as well as a mushroom banh mi. The entire menu consists of just four sandwiches and four drinks, including a coconut coffee—rich and strong, poured over a sweet and frothy coconut slush like a Vietnamese affogato. juane or picarones in Honolulu until Miguel Gutierrez and Marlene Paucar bought a food truck. Out of a retired Handi-Van, they run El Gallo, making the food they grew up with in Peru. First, the anticuchos: Traditionally, they’re grilled skewers of beef heart, but here, flank steak makes a fine and tender substitute. The meat is marinated overnight in ají panca, a Peruvian red pepper, and covered in a thick green ají huacatay, a creamy and bright condiment made of huacatay, or black mint, scallions, cilantro and jalapeños, just one of a few peppers that Gutierrez grows himself. In Hawai‘i, most of what we know about Peruvian food revolves around ceviche or maybe Peruvian-style rotisserie chicken. But El Gallo serves up dishes that I’ve only read about, teeming with deeply satisfying sensibilities—a balance of full-bodied flavors and textures. Proof that threads of commonality circle the globe, Gutierrez takes juane, already like a Peruvian lau lau, and turns it even more Hawaiian, wrapping it in a taro leaf filled with teriyaki flank steak, turmericand cumin-scented rice, boiled eggs and olives, then

steaming the package. It’s a twist on the main dish enjoyed in Peru during the Festival of San Juan, patron saint of the Amazon. Gutierrez and Paucar met in Honolulu and discovered their common roots in the inland city of Ayacucho, Peru. They noticed that while there was some Peruvian coastal cuisine to be found in Hawai‘i, no one was cooking food from the inland. Weaving in as many local ingredients as possible, Gutierrez serves up the regional cuisine at Mother Waldron Park in Kaka‘ako and at markets across O‘ahu. More wish-we-had-this-sooner items include the desserts, like the fried picarones, light and bouncy doughnuts made from butternut squash, their crispy exteriors drizzled with fig syrup while still hot. Gutierrez even makes his own potato starch for the mazamorra, a shiny, purple, corn-scented pudding dotted with fresh pineapple. “The goal is definitely to have a restaurant eventually,” he says. But in the meantime, “we just want to keep sharing Peruvian food with people. That’s the main thing.” –MB

HONOLULU HOTPOT HALE YOU PAY A PREMIUM Hale, where meat is displayed on wooden paddles and other ingredients are arranged like artful mise en place. Forget those colored plates of vegetable and fish balls wrapped in cling film. For once, hot pot feels upscale without the fussiness of fine dining. Protein options range from $19.99 for Kurobuta pork belly to a whopping $79.99 for 4 ounces of A5 wagyu rib-eye from Miyazaki, Japan. Sets of vegetables and bean curds suited for sharing, of which there are many, range from $9.99 to $12.99. For each customer at the restaurant tucked inside the lobby of Pacific Guardian Tower on Kapi‘olani Boulevard, the premium DIY experience starts with an individual-sized pot and a butane burner. While most hot pot restaurants in town tend to lean Japanese, Hotpot Hale features the bold flavors and numbing spices of interior China. Your choice of soup, five beef-based broths listed without descriptions, includes a dish of dipping Like artful mise en place: ingredients at sauce or seasoning. Just go with your Honolulu Hotpot Hale gut. I opt for the mild house broth with a sweet sesame dip. My friend goes for the recommended Chinese sauerkraut broth with cumin- and chile-flecked seasoning. Loaded with pickled mustard cabbage and with an herbal finish, it reminds her of her popo’s hot pot. Other choices include a spicy broth loaded with dried chiles and spices, plain beef and a rich tomato soup. Next is the fun part: selecting ingredients for your bubbling vat. Thin strips of rolled marbled prime beef short rib, brisket and Angus chuck roll are served by the half- or full yard. Other meat selections are Kurobuta pork belly and New Zealand lamb—or you can splurge on a wagyu rib-eye. Remaining items are grouped in sets like the “B1,” which has beef tendon, book tripe, throat and luncheon meat; and the “S1” with Kaua‘i shrimp, fish fillets, abalone and squid. We skip the braised duck feet and beef stomach in favor of the mushroom, leafy veggie, and bean curd sets to go with our half-yard of short rib and plate of pork belly. The Little Fried Pork, or xiao su rou, and a scallion pancake make for great snacks as you wait for the soup to boil. Dip the breaded pork in the chile spices and eat with the flaky pancake for maximum effect. Also, get your own scallion pancake—it’s too good to share. –TO

This focus, forward- and upward-looking, makes it easy to forget that owners Michael and LeiAnne Jones opened their first eatery after the pandemic ​​forced the closure of their pain management and recovery shop in Waikīkī. Nana Ai, named for their daughter, drew immediate crowds to its ‘Ohana Hale Marketplace stall for juicy, crispy-soft Nana Ai’s signature tonkatsu, top left, and other dishes tonkatsu made with seven layers of thinly sliced Berkshire pork. Spam katsu musubi joined a growing menu that fueled a move to Wai‘alae Avenue, Kaimukī’s mecca for eclectic upstarts. N THE FRINGES OF CHINATOWN, where foot traffic dies off with daylight, Hanale by Islander Sake proves again the adage that if you build it, they will come. The vision of a $120 omakase sushi bar in this part of the city was no less unlikely than Chiaki ​ Takahashi’s earlier​one—to build Hawai‘i’s first sake brewery in 30 years in industrial Kaka‘ako, which the Islander Sake brewer and partner achieved in March 2020. Then the pandemic made available Takahashi’s favorite sushi chef, Restaurant Suntory veteran Tetsuzo Yao. That was the path that led to Chinatown’s sole high-end sushi bar, where traditional nigiri like fresh saba and torched salmon belly mix with tofu salad and tsumami appetizers. Sake drinkers can pre-purchase bottles of Islander Sake—now flown in from Kohala on Hawai‘i Island, where the ever-visionary Takahashi has moved her brewery and is opening a second restaurant.

HERE YAO NEVER FORESAW HELMING A SUSHI BAR

in Hawai‘i, Atsushi Kumagai forged ahead with his dream despite the unlikeliest of settings. Kumagai, who trained under chef Takeshi Kawasaki of Maru Sushi, took ​inspiration from​‘Ohana Hale Marketplace—​where ​10-by-10-foot spaces rented for $900 to $1,200 a month—to open a six-seat sushi counter. Fans ignored (or reveled in) the swap meet ambiance, which afforded exquisite omakase lunches priced around $100, and @sushi, the original name of the enterprise, expanded with table seating. Now at Waterfront Plaza in a proper restaurant of polished blond woods, Kumagai finally reigns in his own space at Atsushi. The omakase is $150 now, still a mix of mostly traditional nigiri and rolls with a nod to the modern and local, like inari bombs with diced salmon and other seafood​. And it’s ​still offered at lunch only.

A

BUDDY OF MINE FROM ANCHORAGE visited Honolulu for

the first time a few weeks ago and I showed him around. He loved it here and, after he left, asked me how he could learn more about Hawai‘i history and culture. All right! Of course, I referred him to HONOLULU’s “50 Essential Hawai‘i Books” by Don Wallace and his staggering follow-up, “The Next 134,” plus a list of excellent locally made features and short films. I also threw in some Hollywood productions that ring true from my 2019 list of the 10 best films and TV shows shot in the Islands (bit.ly/hnbest-films). My friend followed my advice and, one afternoon, sent me a screenshot from an episode of the original Magnum, P.I., that featured Murphy’s Bar & Grill, asking if it was where he and I drank beers one day (it was). On the show, Murphy’s was a stand-in for a fancy restaurant named “One Horse Chez.” In real life, I knew the location had a more interesting backstory, but I didn’t know what it was. Our conversation inspired me to dig into the history of 2 Merchant St., home to the Royal Hotel, which opened in 1855 and was frequented by the likes of King Kalākaua and writer Robert Louis Stevenson. (The present building where Murphy’s is today was constructed in 1890 by Walter Peacock, who also opened the Moana Hotel.) Watching the episode later, I recognized the actor playing a bartender in one scene but couldn’t remember from where. My friend solved the mystery by checking the Internet Movie Database: It was the late radio personality and Nā Hōkū Hanohano Awards founder

Krash Kealoha, making a cameo. In a way, our experience echoed this particular episode of Magnum, P.I. (season eight’s “Innocence... A Broad,” if you’re interested), which revolves around an aspiring private eye who’s joining Magnum on a case. Magnum’s trying to show her the ropes but he ends up getting everything wrong. Meanwhile, she’s figuring it out on her own and is mostly solving things for the both of them. Here I was, telling my friend to read books and watch movies and TV shows to learn what I thought I already knew about my home. But in reality, there are gaps in my knowledge too. Somehow, this TV show that was meant to share fictional stories set in Hawai‘i four decades ago is still inadvertently educating visitors—and locals like me—in the present day. Not through car chases and shootouts, but by inspiring us to dig up actual stories about the real-life places and even the people featured. There’s no single source material that can teach people everything they need to know about Hawai‘i. If Magnum, P.I., is all people watch, their mental image of Hawai‘i will likely be crawling with hitmen, secret agents, KGB spies and clueless wealthy socialites (though these might not be too far off from reality). But if you’re curious like me, it can inspire you to find out more about the history behind what you’re seeing on-screen. Magnum might seem an unusual choice to appear on a “best” list about Hawai‘i because it isn’t nonfiction or locally produced. But good pop culture that’s set in Hawai‘i can teach us more about this place. It’s our responsibility to continue to educate ourselves.
