Paddock de la Boutana style

Ingredients (serves 6): 1.5 kg venison, 2 medium onions, 1/2 cup raisins, 1 can coconut milk, diced apples, bananas, 4 cloves garlic, Herbes de Provence dried herb blend (typically includes rosemary, marjoram, thyme, oregano, basil, savory & chervil), curry powder (hot or medium, as preferred), salt, pepper Preparation: Cut meat into medium cubes. Heat oil until sizzling and sear meat in batches (add only a small batch at a time, brown on all sides and reserve. Bring oil back up to sizzling and brown next batch. Do not overcrowd the pan.) Add more oil to the pan if necessary and gently fry the chopped onions until soft. Return the meat to the pan and cover with water. Add the diced apples, raisins and Herbes de Provence blend, garlic & curry powder. Season to taste with salt and pepper. Taste and adjust seasoning if necessary. Leave to simmer over a low heat. The meat is done when it is fork tender - you should be able to pull a piece of the meat apart easily. Turn off heat when done and leave covered. Reheat before serving and stir in the can of coconut milk. Serve with white rice and top with grated coconut, sliced bananas, crushed peanuts and spicy tomato chutney.
