It’s beginning to look a lot like Bikefest
he sound of bikers revving up their engines and the sight of leather-clad men and women can mean only one thing. Leesburg Bikefest has arrived. Now in its 20th year, I still remember the first time I attended this magnificent event. At that time, I was in my mid-20s and had just started my career in the media as an account executive at the Daily Commercial. My boss said my new position required me to attend social functions and perform volunteer work in the community. I wasn’t sure what that meant, but I was open to the idea nonetheless. In 1999, I was asked to volunteer at Bikefest by manning the information tent and passing out itineraries to festivalgoers. It was the first time I heard about this event. Trying to envision what it might entail, I pictured a small street parade of bikers showing off their motorcycles in a small, sleepy downtown area. Boy, was I wrong. After several hours of working the booth, I was absolutely amazed by the festive atmosphere. Never in my life had I seen downtown Leesburg flooded with so many people, and lining the streets was an astonishing collection of motorcycles. On top of that, there were plenty of food and beer

vendors, stellar entertainers, and friendly, down-to-earth bikers. To say I was hooked would be an understatement. Today, I am a business owner with an office housed in downtown Leesburg. We are right in the middle of all the action. So much so, that we made Bikefest Friday a company holiday. Our employees are encouraged to take the day off, visit the downtown area, or volunteer at one of the local charitable booths, serving refreshments to visitors. Kudos to the Leesburg Partnership and the city of Leesburg, their wonderful staff, and volunteers who help organize this event. I’d be remiss if I failed to mention that it has become the largest three-day motorcycle and music event in the country. In the spirit of this wonderful event, our editorial staff has put together our very first “Event Guide.” Whether you are a visitor or a resident, you will find many exciting things to do during Bikefest weekend and continuing through the next several months. Welcome bikers and visitors. We hope this issue will show you why Lake and Sumter counties are the place to be! Until next month,

$189K grant to benefit Beacon makeover Thanks to a $189,375 grant from the Edward C. Fogg III and Lizbeth A. Fogg Charitable Trust, Beacon College will undergo an extreme makeover of the school’s academic buildings in downtown Leesburg. The grant will help defray an exterior re-facing of the one-block strip of storefronts the college acquired two decades ago to serve as the school’s academic mall. The nearly 12,000-square-foot space houses around 90 percent of the college’s classroom and laboratory space, and more than half of faculty offices. In line with the Americans with Disabilities Act and Beacon’s distinctive educational mission, the renovation distin i includes installing an elevator. Pending permitting and blueprinting, school officials expect renovations b to begin this spring.
Time to make a splash! The children’s splash park in Tavares, a seaplane-themed attraction at Wooton Park, 100 E. Ruby St., opens for the 2017 season from 10am to 6 pm April 10, and remains open during those hours on weekends through May 24. After that, the park is open daily from May 25 to Aug. 9, and then goes back to weekends Aug. 10 to Sept. 30. The cities of Clermont and Eustis also have splash parks for children to enjoy, and Leesburg is expected to debut its new splash pad this spring.

Local bank builds veterans home United Southern Bank employees, executives, and board members are helping Habitat for Humanity of Lake-Sumter build one of 14 houses at the Veterans Village in Umatilla. “We are honored to be able to continue our partnership with Habitat and to build affordable homes for our veterans in the city of Umatilla,” Mike Stephens, United Southern Bank senior vice president, says in a news release. The groundbreaking was in November, and the Village was planned to provide safe housing for those who served their country. Plans are for the team from United Southern to continue its work in the coming months. “We are grateful for United Southern Bank’s continued support,” says Habitat CEO Kent Adcock. “It’s wonderful to have a local bank, based in Umatilla, get involved in this community project. We couldn’t be more thankful for USB’s investment.”

Why do you like football? Sometimes academics and stuff can get stressful, so it’s a really good thing for me to get out on that field and kind of get rid of some frustrations sometimes.
Beyond football: I would like to possibly go into pre-med and maybe become an orthopedic surgeon. One of your friends passed away in 2015 after a swimming accident. What did you learn from that? You can’t take anything for granted because you never know when you’re going to have something one day and you could lose it the next. I struggled with it at first, but eventually it helped me refocus on my academics, and helped me get my mind right and put my head down and focus on doing what I needed to do to get into college.
Biggest influence: Definitely my father, Ronnie. I grew up living with my mom, and my dad and I were not very close for many years. Then, around my freshman year in high school, we started developing a relationship. I felt like high school was a very important time for me to have my father be involved, and he could teach me a lot of valuable lessons that I need to learn.
The 6-foot-9-inch, 270-pound football lineman also played basketball for the Bulldogs. Has a 4.75 GPA in his senior year.

LEESBURG BIKEFEST: THE 20TH ANNIVERSARY AND A LITTLE HISTORY

range roadsters, blue choppers, and black cruisers line the streets of downtown Leesburg as their chrome glistens in the afternoon sun. Leather-clad, vest-wearing bikers enjoy the warm
weather and proudly show off their power-packed machines while swapping tales of the open road. The tantalizing aroma of food—bratwurst, corn dogs, sausage, tacos, cinnamon buns and popcorn—wafts
down Main Street and its many side streets. Live bands deliver heartpounding music, delighting the hordes of fans gathered around the stage. Indeed, the sights, sounds, and smells of Leesburg Bikefest are quite spectacular. At least that’s what the 300,000 bikers and spectators who attend the event will tell

you. Simply put, Bikefest has fired on all cylinders since debuting in 1997. Its success is attributed to the vision of Joe Shipes, executive director of the Leesburg Partnership. He dreamed up the idea of a motorcycle festival that would draw people throughout the state to downtown Leesburg and allow local merchants to showcase their businesses. Never once did he doubt such an event could thrive in a rural and largely conservative area. But he encountered plenty of opposition in the beginning. “I remember when I first pitched the idea of Bikefest to the board of directors at the Leesburg Partnership,” he says. “It wasn’t a wildly popular idea. In fact, you could hear a pin drop in the room. I was looking to put together a niche event. Everyone was already doing arts and crafts shows and car festivals.
four vendors, several local garage bands, and 5,000 motorcyclists. In 2002, the event was expanded to three days and grew exponentially from there. Suddenly, hotels throughout Lake County were booked more than a year in advance. The event was attracting household-name bands such as Skid Row, Quiet Riot, Molly Hatchet, and Candlebox. By 2009, Leesburg Bikefest proudly claimed the title of “the largest three-day motorcycle and music event in the country.” One aspect that makes Bikefest unique, Joe says, is the festival component. “This is not designed as a rally,” he says. “At a rally, bikers ride to numerous destinations. Ours is a festival because everything—shows, vendors, and entertainment— is centralized in downtown Leesburg. I can tell you this

reparing and planning for this massive festival requires hard work and sacrifice from hundreds of behind-the-scenes volunteers. They do everything from manning the beer tents and serving alcohol to cleaning up trash in the wee hours of the morning. One faithful volunteer is Kim Higgins, an administrative assistant at Lake Griffin State Park. Kim began volunteering at Leesburg Bikefest 10 years ago. She was in charge of coordinating and ordering merchandise such as T-shirts, sleeveless denim shirts, and patches for vests and jackets. During the event, the Leesburg Partnership set up four merchandise tents—three downtown and one at Gator Harley-Davidson on U.S. Highway. 441. “I really enjoyed doing that,” says Higgins, a resident of Fruitland Park. “I would

typically approve the merchandise artwork in the late fall or early winter.” Five years ago, Kim assumed an even larger responsibility. She now manages inventory on all alcoholic products purchased and sold and sets up 25 beer tents and bars. “Every March, I begin ordering beer, liquor, and wine based on how much we sold of each during the previous year,” she says. “When the event arrives, we have two belly Budweiser trucks come in with 150 kegs in each. Then we have another belly truck loaded with hundreds of cases of beer and a semi loaded with kegs for backup. We also start the event with approximately 500 cases of liquor.” During the three-day event, Kim walks to the various beer tents and bars to ensure volunteers are pouring correctly and not wasting alcohol. “All the alcohol is measured, and our goal is to have a 95 percent accuracy rate,” she said. “We do not want beer and liquor to go to waste.” Kim typically stays until 1am, goes home to sleep, then arrives back at the festival by 7am. “By the time Leesburg Bikefest is over, you feel like you’ve been run over by a train,” she says. “However, your adrenaline is pumping so much throughout the event that you don’t feel tired until it is over. I typically take a few days off work and get a full-body massage.”

He says event organizers have done a tremendous job of handling the festival’s explosion in attendance. “They’ve carefully thought out every small detail, which includes having volunteers manage the portable toilets,” he says. “That is absent at

A resident of Sarasota, Tim sets up shop underneath a tent on the corner of Main and 5th Street and sells his popular brand of cigars. To say he has seen many changes throughout the years would be an understatement. “The first year, the festival was held in a parking lot where the library is now,” says Tim, owner of Sarasotabased Clint Cigars Inc. “It was confined to that one area, and there was nothing happening on the rest of Main Street. But by the fourth year, it expanded into the entire downtown area.”

The police in Leesburg have a wonderful attitude and only arrest people as a last resort. Officers are very friendly and helpful.”

Don’t worry, it’s not illegal. It’s perfectly safe to pick up a bottle or two of moonshine at Yalaha Bootlegging Co. The craft distillery is the brainchild of Doug McCormack, who, along with his wife, Amanda, sells genuine moonshine and brandy, all made from certified organic blueberries grown on 13 acres at Blue Bayou Farms, 8222 County Road 48, Yalaha. The spirits can be purchased at the rustic country store on their property, which also includes a farmhouse kitchen, where sister-in-law Sandi McCormack whips up homemade pies, a greenhouse for vegetables, and a patio for lunch customers. The farm also is a prime spot for u-pick blueberries, which are at peak season in April. The McCormacks began selling their distillery products in October 2016. The 100-proof
moonshine contains no gluten or grains, making for a smoother product, Doug says. The 90-proof brandy is aged in charred oak cast barrels until it turns a perfect shade of amber. Yalaha Bootlegging Co., which has a No. 1 ranking from TripAdvisor, offers tours and tastings of the moonshine, brandy, and other flavors, such as redneck margaritas. The store should be a popular stop this month for the thousands of bikers who will be rolling along CR 48 during the Leesburg Bikefest. The name of the company might hook them. “We wanted something catchy to seem like we’re illegal and we’re not,” Doug says. Doug comes by distilling honestly. His great-grandfather owned a roadhouse during Prohibition, and his grandfather sold “the best water in town” in Mason jars out of his basement. Only as an adult did Doug learn what was in the water.
“This was the unspoken family history no one ever talked about,” he says. He and Amanda decided 10 years ago to go into the blueberry business, starting only with a field. Amanda, a nurse, kept the finances afloat for the family, which includes daughters Grace and Emily. “Over time, it’s just grown,” Amanda says. “Things are always changing and evolving when you’re an entrepreneur. You have to keep up with the times and what people want, and Doug’s good at that. He’s a true entrepreneur.” The store is open from 10am-5pm Tuesday-Sunday. The eclectic products include pottery made by Sandi and her husband, Tim, tomato leek pie, chicken pot pie, and fruit pies, moonshine cake, local farmers’ produce, free-range eggs, and raw milk, Amish butter, and cheeses, sodas from yesteryear like Nehi and SunDrop, jellies and jams in exotic flavors, and fresh clams from Cedar Key.

ong hailed as a powerful antioxidant super food, blueberries will be celebrated in all their glory at the third annual Mount Dora Blueberry Festival. Freshpicked blueberries from local fields will take center stage, along with vendors showcasing blueberry baked goods, blueberry-themed crafts, and blueberry wine and beer. One vendor even plans to bring blueberry barbecue sauce. “All of the food vendors will offer something that involves blueberries,” says Joseph Steed, festival organizer with the nonprofit Festivals of Florida Inc., who notes every vendor was asked to bring at least one blueberry product to the event. The admission-free festival runs 9am-5pm April 29-30 on the shores of Lake Dora at Elizabeth Evans Park, 100 N. Donnelly St. Visitors will be able to partake in a wide range of activities, including a blueberry pancake breakfast, a blueberry baking contest, judging, and sales, a blueberry pie-eating contest, and music by the Judy Family Bluegrass Band and Bobby Blackmon. A variety of fun things will be offered for kids to enjoy at the festival, while blueberry growers will be selling fresh blueberries picked from their farms. After all, fresh raw berries can be a delight to savor on breakfast cereal, folded in yogurt, topped on ice cream, or enjoyed naturally by the handfuls for maximum nutritional benefit.
ARE REALLY GROWING IN POPULARITY HERE IN LAKE
“Local, fresh blueberries are always best; you can tell a difference,” says Janet Gamache, event coordinator. “There will be jars of goodies and blueberry baked goods that people will be selling to take home, too. It will be a nice, eclectic mix.” The current blueberry crop totals about 17 million pounds, organizers say, and the main focus of the Mount Dora Blueberry Festival is to showcase the agricultural significance of blueberries to the local economy. “A lot of people have no idea that blueberries are the new citrus,” Janet says. “Everybody thinks we are all about oranges, but we are not. Blueberries are really growing in popularity here in Lake County.” The blueberry boom began after the 1989 freeze wiped out orange groves, and growers replaced citrus trees with blueberry bushes. Two types of blueberries grow well in Florida: the rabbiteye, in areas where winters are as cold or colder than in Ocala, and the southern highbush adapts well in Lake County and areas south of Ocala and north of Sebring, according to the University of Florida. “Blueberries are popping up everywhere we once had citrus,” adds Joseph, who notes

The Mount Dora Blueberry Festival kicked off in 2015 with

about 8,000 people attending. It grew to an estimated 35,000 attendance in 2016, and Joseph predicts 50,000 will be at this month’s event. “The whole blueberry festival really has been a phenomenon. It is the first one, the biggest, and growing the fastest,” he says of the Festivals of Florida venue. “Every grower that was at the event last year sold out of everything they brought. In five years, I think we will have the most attendance of any blueberry festival in Florida, and that is my goal. Once they get that new connector [road] from Orlando coming right to Mount Dora, it is going to open it up to a lot more people. They can get into Mount Dora much quicker,

and I think when that happens, we’ll see an explosion in attendance.” Joseph envisions the Mount Dora Blueberry Festival surpassing the Brooksville event. “It’s a different demographic, and people love coming to Mount Dora. It’s a festival city, and the huge population base puts us in the position to grow a bigger festival,” he says, recalling many festivalgoers praised last year’s event with the common refrain: “We love blueberries and we’re glad somebody is doing this!” Do you love baking? It was fun,” he says, recalling growers ran out of blueberries on the first day and were scrambling to get more. “They had to rush back and pick blueberries for the next day,” Joseph recalls. “They were setting up lights and picking blueberries under the lights.” He believes visitors will enjoy hearing the music by Bobby Blackmon and the Judy Family Bluegrass Band, which has deep historical ties to Mount Dora. Wyona Judy’s maiden name was Drawdy, and her great-grandmother was Dora Ann Drawdy—one of the first settlers in Mount Dora and the woman for whom surveyors named Lake Dora in 1846.

hen it comes to motivation, any artist can truly aspire to be like Carrie Knupp. Carrie suffered an injury in June 2015 on the night of the grand opening of her studio. She tripped while carrying dishes and severed an artery in her right hand, paralyzing three fingers. This did not stop the Leesburg artist, however, as she created 138 paintings during the three months of her recovery. “After surgery, I was supposed to paint 100 paintings for the Mount Dora Craft Festival. I asked the Lord, ‘How am I going to paint all these paintings? I’m right-handed,’” Carrie says. “The reply I got was, ‘You paint with your brain, use your other hand.’ So, I painted 138 paintings with my left hand.” Though she has used most of the familiar mediums—watercolor, acrylic, charcoal, pastel, cartooning—Carrie has a unique style of painting now. “I paint in molten beeswax. It is called encaustic, which is the Greek word ‘to burn in.’ I use a blowtorch to fuse each layer of wax,” Carrie says. “When I paint, I lose myself in what I am doing. Things happen I may not have planned but I believe were meant to be there.” Carrie spends most days at her studio, Encaustic Guru, on Main Street in downtown Leesburg. “A lot of my work is free form and relaxing to me and those I teach. Things I’ve gone through in my life inspire me. Those pieces are most important to me. They offer an avenue to help others. If I can help just one person, it is all worthwhile,” she says. Carrie often receives positive feedback about her artwork. “I remember when the Holocaust piece won the Award of Excellence and the People’s Choice for three straight months at the Maitland Jewish Center Holocaust Museum. It was for the 75th anniversary of the Holocaust,” Carrie says. “I had a price on the artwork, but a Jewish lady came up to me and said, ‘You must not sell this piece. This piece is of God; you must teach with this piece.’” The woman’s words touched Carrie, who took the price CARRIE WITH HER AWARD-WINNING off the painting. Some were descendants of Holocaust survivors, and some were experiencing hatred in their lives, as I have. Forgiveness is a big part of what I teach. My late husband taught me that a long time ago.”

ature seduces motorcyclists, and few Florida journeys are as seductive as a brief, but engaging, ride along the Gulf of Mexico between Pensacola and Apalachicola. From the Florida/ Alabama border, the road east alternates between white sands and open turquoise waters, azure blue skies and tunnels of trees that immerse you in the world known as Old Florida.
Day One: Pensacola to Grayton Beach In 1559, six years before Pedro Menéndez de Avilés established a permanent settlement in St. Augustine, Don Tristan de Luna came ashore at Pensacola Bay. A hurricane blew away his plans, but left Pensacola with a Spanish imprint still visible in the Seville Square Historic District that encompasses a complex of museums and historic homes known as Historic Pensacola Village. After exploring this district, ride to the Naval Air Station where, between late March and November, visitors watch the elite Blue Angels rehearse their breathtaking aerobatics free. While on the base, don’t miss the National Museum of Naval Aviation, where more than 4,000 artifacts ranging from biplanes to space capsules reveal
the evolution of Navy pilots and their aircraft. To head east, you’ll ride south across the three-mile Pensacola Bay Bridge that connects the mainland to Pensacola Beach. Slip onto County Road 399, a fantastic two-lane road where nothing lies between you and the placid waters of the Gulf of Mexico except a strip of glistening white sand. Beyond your handlebars, you’ll see the ink-black ribbon of highway, shift to Escambia Bay on your left, and drift out to sea to soak in views of

Trip Tip Few places in Florida capture a feeling of nostalgia like Apalachicola, especially at night when you park your bike, walk the quiet streets, and tune into silence broken only by the cooling pings of your engine. endless Gulf waters. The 15 miles to Navarre Beach offer pure riding pleasure along the Gulf Islands National Seashore. You may want to pull over for a swim. A bridge at Navarre connects to the mainland and Highway 98, your main road from here on out. Low and level, you ride into the heart of Fort Walton Beach and into a type of time machine. The small hill opposite a row of eclectic shops is an Indian mound that was the center of religious, political, and social activity thousands of years ago. A small museum showcases Native American artifacts, weaponry, and information about the tribes. A high bridge leaps over sparkling waters, and from the road you’ll see the Gulfarium, an aquatic attraction, next to shops and restaurants. Assuming it’s near lunchtime, there are multiple choices for dining with a waterfront view. Even more impressive is the view from the pier that reaches a quarter-mile into the Gulf and frames the coastline’s wide, arcing sweep. Buy

a pass to walk the pier or stop by the small bait and tackle stand for everything you need to grab the catch of the day.
The coast is clear FWB’s twin town, Destin (“Florida’s Luckiest Fishing Village”), is a charming place with marinas, resorts, restaurants, attractions, and soft sugar sands. While you may want to stay over, ride a few more miles, navigating unwelcome congestion through the planned community of Sandestin. Ahead, drop south from 98 to hook up with Highway 30 and then 30A to Grayton Beach, a secluded community frozen in time. Cottages and seaside shacks are largely hidden beneath a canopy of oaks. There’s a downtown, but not by much, and people live here because they can’t imagine living anywhere else. The Old Florida feel is everywhere, and is emphasized when you enter Grayton Beach State Park. The pristine 2,200-acre park’s sand dunes and sea oats open to brilliant views of the Gulf, and here is where you’ll find one of your best lodging options—fully equipped cabins just a short walk from the protected shore. Sleeping six and affordably priced, they’re a perfect place to rest before another day of riding.
Day Two: Grayton Beach to Apalachicola Back on 30A, you cruise past planned communities with recurring frequency. Though each lacks Old Florida authenticity, you’ll probably stop in Seaside, the standin for Jim Carrey’s surreal hometown in the movie, “The Truman Show.” Back on the road, 30A returns to Highway 98 just west of Panama City Beach. Traffic here can be stubborn, especially along Front Beach Road, yet the powdery sands and clear, crystalline waters are energizing. You’ll need all the inner strength you can muster to handle the traffic in Panama City. However, once you clear it and reach the grounds of Tyndall Air Force Base, you return to tranquil riding. Like Eglin Air Force Base, Tyndall protects a huge swath of coastline and forests that makes this stretch of road a great place to throttle through a straightaway of pines. When you reach Mexico Beach, a sleepy beachfront town hitched to the border of the Central Time Zone, the community kick-starts a nearly unbroken chain of fine riding and interesting places. After crossing into Gulf County, Port St. Joe is well worth a stop: first, for the Florida Constitution Convention State Park, where delegates framed and signed the first constitution in 1838; second, for a retrocool shopping district refreshingly absent of chain stores; and third, for a ride out to sea. Cape San Blas wraps its arm around St. Joseph Bay, and from the mainland to the cape, you ride along the waterfront before threading the needle between the bayside and Gulf on a narrow strip of land. Coming in from the north, the road curves in before sweeping up from the south to T.H. Stone Memorial St. Joseph State Park. If you love the outdoors, three miles of paved parked roads are notched with pullouts, beach/bay access points,
and nature trails leading to quiet coves and inlets. The road ends with several miles of hiking trails going to remote campsites on the northern tip of the cape. Far from civilization, this is the rare place to experience Florida circa 1880. Traveling in a group? As in Grayton Beach, eight waterfront cabins are outfitted with kitchens, fireplaces, bathrooms, heat, and A/C for around $100 per night. As the ride nears its end, two more highlights await. From Cape San Blas, 30A leads south to Indian Pass, a place you may not know but will never forget. In a former Depression-era filling station/general store, the Indian Pass Raw Bar is a motorcycle-friendly destination serving fresh-from-theGulf oysters. A few miles farther south, Indian Pass Campground is yet another throwback to Old Florida, with a general store, campsites, and a ferry that goes to the undisturbed world of St. Vincent National Wildlife Refuge. You can camp here, on Cape San Blas, or find a room in Port St. Joe. Or you can press on to Apalachicola, the cotton/ timber/oyster town that is now a resort destination of bed-and-breakfasts, art galleries, and fine restaurants. Few places in Florida capture a feeling of nostalgia like Apalachicola, especially at night when you park your bike, walk the quiet streets, and tune into silence broken only by the cooling pings of your engine. You’ll pass historic buildings that are now microbreweries and boutiques and sense such quiet and tranquility that you feel even further from the rush of the modern world. lorida law requires businesses to carry Worker’s Compensation for their employees. In the insurance world, we call this a mandatory fixed commodity. Before 2004, Florida was one of the most expensive states for Worker’s Compensation, second only to California for rates. Gov. Jeb Bush signed S.B. 50-A into law completely changing the business landscape. S.B. 50-A (Senate Bill 50-A) is comprised of 148 sections that place guidelines on Worker’s Compensation, known as the 440 statutes. As a result, rates for class codes dropped dramatically, saving businesses thousands of dollars per year. Florida is now in the middle nationally with class code rates. There are five main parts to the 440 statutes that should become familiar to

business owners. Schedule (A) has four parts. They are death benefits, medical expense benefits, indemnity benefits, and the PIR (permanent impairment rating) schedule. Schedule (B) has one part, called Employer’s Liability, and this is the third-party aspect of Worker’s Compensation. I want to focus on two sections of the 440 statutes that pertain to Schedule (A) and the recent rulings in the Florida Supreme Court. State Statute 440.15 and 440.34 were both attacked and defeated in a court of law. The first case, Marvin Castellanos vs. Next Door Company, determined that restrictions on attorney fees for Worker’s Comp cases were unconstitutional, and §440.34 was thrown out on April 28 last year. It was 42 days later, on June 9, the case
0f Bradley Westphal vs. City of St. Petersburg, §440.15 was ruled unconstitutional, and the number of weeks a person on disability could be paid indemnity benefits went from 104 weeks to the pre-2004 time limit of 260 weeks.
The Council In 41 states, the governing board for Worker’s Compensation is the National Council on Compensation Insurance (NCCI) often referred to as the Council. They set the standard nationally for Worker’s Compensation, and the three most important things they do are creating class codes, determining rates, and promulgating mods for businesses. Promulgating mods refers to the number that compares an accident experience of an individual company to all the other companies in the state in that industry. When these two laws were overturned, the Council determined current rates for coverage would not be sufficient for insurance carriers to continue coverage in Florida. When losses begin to outweigh income, carriers pull out of the market, forcing businesses to pay an even higher rate for coverage, which may create a hostile environment for business owners and affect the overall economic landscape of Florida. The Council made a request for a 19.6 percent rate hike for all class codes for all policyholders in Florida. The Office of Insurance Regulation took the request under advisement and, after weighing the facts and holding a public hearing, determined that a 14.5 percent rate hike was justified and would go into effect on Dec. 1 for policies renewing on or after that date. For business owners, this wasn’t good news. The real concern is that, with restrictions off attorneys and employees eligible for benefits for five years, this rate increase may be the first of many to compensate for rising costs. Florida may find itself back in the top two for costs of Worker’s Compensation insurance.
What can you do? Many policyholders feel they are trapped in an incredibly unfair, punitive system. To some extent, this is true, but there are ways to fight back, and the Council provides one big tool to do that. It’s called the experience mod. Each year, the Council receives a report from the
business owner’s insurance carrier with payrolls, exposures, and losses. They promulgate that data in an aggregate fashion and determine a company’s experience mod. This mod rate determines if a company will pay 100 percent of the premium, a discount on the premium, or have a premium higher than average. As one can imagine, the worse the company’s losses, the higher their mod rate, and the more they pay. The first thing an owner can do is work with an agent who understands how mods work, how they have promulgated, and the five areas where mistakes can be made on their experience mod worksheet. Class codes, payrolls, and exposures must be accurate to avoid an artificially high mod. Overturned fraudulent claims and subrogation returns must also be credited to reduce the mod factor. The right agent can recover aggravated inequity for you in the current policy year in the state of Florida. Once these areas are all accurately reported, the next step is to have the right work environment. NAC and RTW programs are essential to avoiding the weekend warrior claims that owners get on Monday mornings. If an employer believes that an employee injury did not occur as a result of the scope of work, they have the option of notifying the carrier on the NOI form and attaching an affidavit to that effect. A drugfree workplace will offer a 5 percent discount on Worker’s Comp premiums. There are even companies that offer a test kit for as low as $12.50 that you can administer it as part of a conditional offer of employment on the spot. All of these things, combined with a good workplace safety program, will drive your mod factor down below 1.00 and save you thousands of dollars per year. The punitive system may be unfair, but smart business owners are partnering with well-versed agents and fighting back to protect the company they put their blood, sweat, and tears into for years.

About 10 years ago, social media arrived on the business scene. Today some adopters spend tens of millions of dollars on social media strategies while others commit relatively small amounts of cash to simply establish a social presence on the web. But even now, some businesses remain on the sidelines trying to make sense of it all. Although it’s true that the social media scene can seem light and entertaining, and on occasion, somewhat tumultuous or disorderly, adopters can capture economic value from social platform investments. So before you decide to remain on the sidelines, consider these 10 ways that social media might improve your company’s performance.

COMPETITIVE ADVANTAGE: Social media channels allow organizations to monitor competitor marketing messages and possibly achieve a competitive advantage by interacting with suppliers, customers and investors. 6. COST CONTROL: To preserve company profits, leaders must control costs regardless of the business model they adopt. One way they check expenses is to switch to low-cost alternatives if the change has little if any effect on operations. For example, a business might provide customer service or market its products using a low-cost social media channel rather than the highercost television broadcasts.
7. CUSTOMER RELATIONSHIP MANAGEMENT: Social media programs support real-time interaction between a company and its stakeholders. A business can use these connections to address product issues or provide information regarding its brand. What’s more, a company can monitor social media channels and quickly post a response to comments, which can strengthen the company-customer relationship. The stronger the relationship, the more positive the effect on product reputations and customer satisfaction, as well as sales quantity and revenue.
8. PUBLIC RELATIONS: A company can use Twitter, LinkedIn and other social media platforms to transmit corporate news to a selected audience. Investor relations, for instance, can use social media channels to engage a particular audience and control the negative effects of bad press that can quickly “go viral” on the Internet.
9. SALES CAMPAIGN: A company’s conversion rate refers to the percentage of sales leads that become buying customers. By increasing your conversion rate, you generate a higher sales volume. The addition of social media functions to corporate websites is effective in offering customers the option to demo a product; conveying a company’s value proposition; and providing free and useful information that may solve customer problems. Also, companies may increase sales by allowing customers to post product ratings on social platforms that might persuade others to purchase the company’s products or services.

CUSTOMER RETENTION: The number of a brand’s followers that eventually purchase products depends in part on the company’s ability to use social platforms to communicate its brand values and create positive word of mouth. Social interaction such as this generates strong connections between a company and its customers and contributes to customer loyalty.

Time for animal crackers April 18 is hailed as National Animal Cracker Day, according to nibble.com, and animal crackers, or cookies as we call them today, date to 19th-century England. They were initially imported, before U.S. bakers made them for the 1876 Centennial Exposition in Philadelphia. In 1902, they were re-created as Barnum’s Animal Crackers and packaged in a circus cage box with a string—all with the idea that the box could be hung on a Christmas tree for children to enjoy. Several companies make animal crackers today.

It’s bell pepper season in Florida, and these tasty vegetables can be used in a variety of recipes. They also taste good eaten raw with or without dip. When you’re buying your peppers look for smooth skin that has a gloss and is tight. Be sure there are no watery spots or wrinkly places. Remember, green peppers are less sweet than the yellow or red ones. You can store them in the refrigerator for a week or chop them up, put them in the freezer and just get out what you need to put in soup, spaghetti sauce, or other great recipes. Tip for seeding: Hold the pepper tightly and slam the stem end on the counter. This loosens the seed core and makes it easy to pull out.

Building a better tomato Looking for a tastier tomato? A global team of scientists is on the case. Harry Klee, a horticulture professor with the University of Florida Institute of Food and Agricultural Sciences, along with researchers from China, Israel and Spain, have identified chemical combinations that contribute to better tomato flavor. Modern tomatoes lack sufficient sugars and volatile chemicals critical to flavor, traits that have been lost over the years because breeders haven’t had tools to screen for flavor, Harry says in a UF/IFAS news release. “We’re just fixing what has been damaged over the last half-century to push them back to where they were a century ago, taste-wise,” Harry says in an IFAS news release. “We can make the supermarket tomato taste noticeably better.” Because breeding takes time, Harry says the genetic traits from the study may take three or four years to produce new tomato varieties. Florida growers produced 33,000 acres of tomatoes worth $437 million annually as of 2014, according to UF/IFAS research.

I think back to Easters as a kid and the same delicious, comfortable foods come to mind. Glazed ham, deviled eggs for days, and coconut anything. I took those familiar flavors and turned them into an upscale brunch. Because, honestly, who doesn’t love brunch? Now don’t get scared, this brunch is upscale for sure, but we’ll keep it easy and simple. A brunch isn’t complete without mimosas, so my advice is pour yourself a nice cold glass of champagne, throw on a spring-y apron, and let’s head to the kitchen.

Shaved Asparagus, Roasted Tomato, & Prosciutto Tart Ingredients

Directions Directions
Preheat oven to 400 degrees. To prepare roasted tomatoes, spread the pint of grape tomatoes on a small sheet pan. Toss lightly with olive oil, salt and pepper to taste. Set aside while you prepare your tart dough so they can cook at the same time. On a floured surface, roll the puff pastry into a 16x10-inch rectangle. Transfer your puff pastry to an ungreased baking sheet. Lightly score the dough an inch from the edge of the pastry to mark a rectangle. This allows an outer crust to form. Next, use your fork to pierce the dough inside the markings, about every inch or so. Bake the puff pastry until golden, about 15 minutes. The tomatoes go in at the same time and should be stirred once. When they start to pop and shrivel up at 8-10 minutes, remove them from the oven. Now it’s time to top your tart. Sprinkle the shredded Swiss cheese over the inside rectangle of the tart. Next, using your vegetable peeler, peel long flat strips of the asparagus. Sprinkle the shaved asparagus over the Swiss cheese, top the asparagus with roasted tomato jewels and finish with the ribbons of asparagus. Season lightly with salt and pepper. Bake until toppings are lightly golden and cheese is melted, 10-12 minutes.
I love this recipe best with toasted coconut. However, this is an optional step. To toast the coconut, stir coconut in a dry nonstick skillet until it begins to get golden brown. This is not the time to make a phone call or turn your back on the pan. It will go from pale white to golden very quickly. Stir the coconut frequently, then transfer it to a different container. This can be done up to three days in advance. To assemble the parfaits, start with ½-cup of yogurt in the bottom of each wine glass. Top the yogurt with your berry blend; this can be done the day before, just keep the glasses covered. Just before serving, sprinkle granola over the berries, and garnish with toasted coconut and a few fresh berries. To finish off this delightful brunch, pour mimosas for your family and loved ones. Making them is easy; just pour equal parts of champagne to any juice you love. The classic is orange juice, but you also could use cranberry juice, peach nectar, mango juice— the possibilities are endless. So, turn off your phones, dine with your loved ones, and be thankful for all new beginnings. Happy Easter and Happy Spring!

arm, handsome décor of rich dark leather and a burning fireplace offer old-world ambiance at Palmer Legends Country Club in The Villages, where a spectacular view of the golf course makes this a “must” for fine dining and a delicious meal. Palmer Legends does not disappoint. The proof was when a friend and I noticed a large overflow of people willing to wait two hours for a table—on a Monday night!—and soon we understood why: Succulent Maine lobster cooked to perfection was the day’s special well into the night. After our server Amanda arrived carrying a warm loaf of bread with tasty herb butter, we chose a Surf and Turf meal of 7-ounces of bacon-wrapped filet mignon and Maine lobster tail—both featuring melt-in-yourmouth tender goodness—accompanied by fresh green beans and potatoes. My friend ordered the baked potato—served with the wonderful herb butter—and I had garlic redskinned mashed potatoes. Our perfect dinner was capped off with delectable desserts of Bourbon Pecan Pie served warm and a la mode with vanilla bean ice cream and sweet bourbon drizzle, and Chocolate Trilogy, featuring stacked layers of white milk and dark chocolate mousse. Palmer Legends is definitely the place to impress visitors, and casual attire is accepted.

I
’m not exaggerating my tale—this is a great place to eat. We had a late lunch on a Saturday, so it wasn’t crowded, but customers were coming in steadily. We began our meal with a cup of New England clam chowder. It was hearty and creamy and loaded with chunks of clam and potatoes. Served with oyster crackers, it was the perfect starter. I enjoyed the catfish basket with fries and coleslaw, while my husband had the seafood duo with trout and scallops garnished with onion rings. His two sides were boiled red potatoes and coleslaw. The slaw was very good because it was fresh and crispy and not smothered in mayonnaise. We both enjoy our meals fried, and the breading was perfect. It was light and crispy and didn’t overwhelm the fish. Both meals came with hush puppies that reminded me of my mother’s. I’m kind of picky about tartar sauce because sometimes there’s too much sweetness to it, but this was excellent and just enhanced the flavor of the fish. The atmosphere is very casual, but nice and comfortable. Service was quick and attentive, and we truly enjoyed ourselves.

n 1968, Dionne Warwick released the popular song, “Do You Know the Way to San Jose?” Yep, I most certainly do. And going there is well worth the trip. No, I didn’t drive to the scenic city in California, I dined at San Jose’s Original Mexican Restaurant in Clermont. Three friends and I sat in a spacious booth, with an overhead lamp that nicely illuminated the restaurant’s extensive menu. Mexican music played softly in the background and didn’t drown out conversation. Our waiter, Andres Ortega, brought out chips and salsa, and the chips were warm and the salsa was flavorful with a nice kick—but not too hot. For an appetizer, we ordered the Sampler Platter, featuring a diverse selection of quesadillas, chimichangas, flautas, nachos, and tamales. I particularly enjoyed the tamale because of the tender, shredded chicken that is steamed to perfection in a cornhusk.

If you’re craving scrumptious Mexican food, it’s time to find your way to San Jose.
For my entrée, I went with the tried-andtrue chimichanga. It did not disappoint. The golden brown, pan-fried exterior was smothered in a delicious cheese sauce, and the inside was loaded with seasoned ground beef and savory spices. Next time, I’ll likely try the California Burrito Jr. That’s what my friend ordered, and it looked delicious. It comes with grilled steak, sour cream, guacamole, lettuce, rice, and refried beans. Another friend selected an enchilada and taco combination, which looked equally tasty. We rounded out our meal with delicious fried ice cream. If you’re craving scrumptious Mexican food, it’s time to find your way to San Jose. Fortunately, the trip won’t be far for residents of Leesburg because the restaurant’s owners recently opened a new location there.

They’re baaaack! The char-grilled oysters were so popular a year ago at Tiki West Raw Bar and Grill, the owners have decided to bring them back for another helping. Seafood lovers can find their favorite ocean delicacy at Tiki West, which opened in January 2015 at 118 W. Ruby St., Tavares. With a laid-back vibe, casual attire, hammock swings hanging in the bar, and Caribbean music floating through the restaurant, customers may feel like

Customers also can get an eyeful of oysters at the oyster bar, where they’re put right up on the bar, and served raw or steamed. Portugal’s Douro River Valley is getting an international reputation for its distinctive red wines created in some unlikely rocky vineyards. STORY: MARY ANN DESANTIS, WSET
any people think the only wine that Portugal has to offer is port, the fortified sweet wine that is a delicious accompaniment to desserts. Up until a few years ago, finding a dry red, unfortified Portuguese wine in the United States was tough. Now they seem to be everywhere. For the first time, they’ve even cracked the prestigious Top 100 Wines list from Wine Spectator magazine. Located west of Spain on the Atlantic Ocean, Portugal’s Douro Valley—the country’s major wine-growing region—seems an unlikely spot for vineyards, with its rocky crystalline “schist” (called slate in other European regions) and harsh summer sun. However, the Portuguese

The grape, often used as a building block in blends, is to Portugal what the Cabernet grape is to France. The rich color creates dark wines with complex aromas.
Pairing Suggestion: Game meats and/or strong cheeses It takes strong food flavors to stand up to Portuguese dry red wines, which have complex tannins and can be quite concentrated. Red meat and game are good pairing choices, as is French foie gras.

knew best what would grow on those vertical sloping hillsides—the Touriga Nacional grape. While other countries rushed to plant French vines, Portugal stuck to the indigenous grape variety and now is giving Bordeaux-style blends a little competition with complex wines of its own. Red wines made from the Touriga Nacional grape can seem harsh with the first sip. All the Portuguese wines I tasted needed to breathe for at least 30 minutes or be decanted. Only then did the softer flavors emerge. “When trying Douro wines for the first time, the taste can be very different,” explains winemaker Miguel Roquette, whose family has owned Quinta do Crasto for more than a century. “They also have lots of minerality because the vineyards are planted in rocky schist.” Roquette conducted a master class at last year’s Atlanta Food and Wine Festival, where his Crasto Superior wines were tasted alongside varietals from other countries, including France. He described the Portuguese varietals as new wines made with old traditions. “Everything is handpicked and hand-crushed,” the fourth-generation winemaker says. After sampling several Portuguese wines from the Douro region and one from Dão, south of the Douro River, I was surprised at the differences among them. I also learned that many Portuguese wines have the word “Quinta” as part of the name. Though the word means large house (think “Chateau” on French labels), it is an official designation to show the grapes came from that specific estate. “Superior” in the title means the grapes are from the Upper Douro, the flattest, driest area that produces some of the best grapes. Over the past few weeks, I’ve heard many misconceptions about wines from Portugal. The most common was that Portugal doesn’t produce good red wine except port. I wouldn’t describe the red unfortified wines as poolside sipping wines. After all, they tend to be like a sledgehammer in your mouth if they haven’t had time to breathe or haven’t been decanted.
As I opened the bottles, I was reminded of a quote that winemaker Roquette shared from his grandfather back in Portugal: “Anyone who says they know everything about wine is a fool, because wine is constantly evolving.” That was certainly the case when it came to discovering these Portuguese wines:
CASA ERMELINDA FREITAS TOURIGA NACIONAL RESERVA 2013: This full-body, concentrated wine screamed “licorice” on the first taste. After it had time to breathe, the bouquet became more floral and the taste evolved into jammy fruit. It was excellent served with flank steak pinwheels stuffed with spinach and provolone. (Suggested retail: $14.99) FEUERHEERD’S DOURO DOC RED 2013:Tearing through the bright white wrapper that comes around this bottle was like opening a surprise gift. I didn’t know what to expect. The aroma was very pleasant—more fruity than earthy—but the taste was definitely minerally, like slate. However, there was a party in my mouth when I paired it with chocolate cookies. Those sweet treats brought out the dark fruit flavors. (Suggested retail: $13.99) BARÃO DE VILAR RED DOC DÃO 2011: The Dão region is south of the famous Douro River, but it also claims the Touriga Nacional grape as its own. The medium-bodied wine is blended with two other grape varieties, which gives it a smoother taste, and a little spice. I paired it with a meatball sub. (Suggested retail: $11.99) QUINTA DO CRASTO SUPERIOR DOURO DOC 2013: Also a blend of several grape varieties, this deep purple wine has elegant aromas of violets and delicate hints of cocoa. It paired nicely with cured meats and manchego cheese. (Suggested retail: $23) QUINTA DAS CARVALHAS RESERVA DOC 2014 : I had this wine on my birthday with a Brazilian steak. I was so happy to find it locally because it is an excellent alternative for more expensive Bordeaux blends. Just as with the others, this wine must be decanted and needs to be paired with a strong dish or game. (Suggested retail: $19.99)

Feline Politics One is black; the other is white and gray. One is conservative and quite picky about his food. He’s also quite selective about the people he lets get close. eet my rescue cats: Ernie, the conservative, and Whitney, the liberal. Both were abandoned kittens, refugees more or less. Even after they were cleaned up and displayed at a local pet store, no one wanted them. Ernie had too much long hair and was solid black, a symbol of bad luck for many superstitious souls. Whitney, on the other hand, would have been adopted sooner had she settled down. She liked to dart whenever she had the chance, chew cable wires, and was even known to hide jewelry. If ever a cat had an ADD personality, it was Whitney. She was returned once to the rescue organization by an elderly woman who wanted a calm “lap cat,” a trait that Whitney didn’t possess. I fell in love with that bundle of energy immediately, though the rescue manager tried to steer me in another direction. When my husband, Tony, looked over and saw Whitney snuggled into my neck, he said to himself, “That cat is going home with us.” Tony, on the other hand, couldn’t resist the huge gold eyes staring at us down from the next cage, which was labeled “Hemingway Cat.” We brought them home together thinking there would be a period of adjustment. For unknown reasons, these two cats loved each other from the moment we opened the carrier door. When Ernie hid under the bed upon his arrival at our house, it was Whitney who went to fetch him. It’s almost as if she told

him, “Hey, Buddy, we have a good thing going here.” That’s not to say they don’t have disagreements. Despite being friends, neither cat likes to share or compromise. No matter how many toys are strewn around, there’s only one they both want and it’s at the same time. Turf battles are common, especially when it comes to sitting with Dad in his recliner. Their friendly wrestling matches can turn into war with lots of hissing and posturing. Just as we think one is going for the other’s jugular, they stop. The one that walks away usually has a smirk that says, “OK, you can be in control now…for a while.” At the end of the day, however, Whitney and Ernie forget their differences and settle down together in peaceful harmony, knowing that life is still good no matter which one has the position of power.
