Food is the most honest history.” It was a truth that sprung from the lips of Egyptian Chef Ali El Sayed, whose tiny, eclectic restaurant in Astoria, NY, has made an international name for itself thanks to its delicious fare and rotating menu. Kabab Cafe is small — cramped, some would say — and simple; my friend and I were the only two people eating there for much of that day in the spring of 2016. She knew of its legendary stature in the New York food scene, and had brought me there. Though just a 15-minute walk from where I lived at the time, Steinway Street — where Kabab Cafe is situated among a host of hookah lounges, mosques, Egyptian grocery stores and restaurants — is a world unto itself. Many of the signs are in both Arabic and English, and a Fairouz song might be heard playing as people gather on the sidewalk, sipping coffee and chatting. Kabab Cafe (technically Kabab Cafe!, according to the sign on the door) is an unassuming, small storefront. When we were there, Chef El Sayed alternately attended and regaled us as waiter, cook, and historian/philosopher all in one. He explained the menu of the day to us, whipped up our meals at the stove just a few feet from our table, and shared some of his musings about the power of the culinary arts. I can’t recall exactly what we ate, other than that it was delicious; but I have always remem-

ENGLISH ESPAÑOL bered those direct words — “Food is the most honest history” — from the accomplished, passionate chef. From economics, geography, and religion, to war, culture, and trade: Traces of all the elements of history can be found in a single dish. And cuisine is, in some ways, a better bulwark against erasures of time and conquest than many other aspects of culture - thus the “honest” part of El Sayed’s pronouncement. The rampages of history have failed to tear from many people and cultures the treasured recipes of the abuelos. In our cover story this week, you can read more about one chef who has used his culinary and entrepreneurial skills to keep alive the culture of his family and ancestors, and share that with others. Fue una verdad que surgió de los labios del chef egipcio Ali El Sayed, cuyo pequeño y ecléctico restaurante en Astoria, Nueva York, se ha hecho un nombre internacional gracias a su deliciosa comida y su menú rotativo. Kabab Cafe es pequeño – apretado, dirían algunos - y simple; mi amiga y yo fuimos las únicas personas que comimos allí ese día, en la primavera de 2016. Ella sabía de su legendaria trayectoria en la escena gastronómica de Nueva York, y me había llevado allí. Aunque estaba a solo 15 minutos a pie de donde vivía en ese momento, Kabab Café está en la Steinway Street, entre una gran cantidad de salones de hookah, mezquitas, supermercados y restaurantes egipcios. Es algo así como un mundo en sí mismo. Muchos de los letreros están en árabe y en inglés, y se puede escuchar una canción de Fairouz mientras la gente se reúne en la acera, bebiendo café en tazas de poliestireno.

Kabab Cafe (técnicamente Kabab Cafe!, según el letrero de la puerta) es una pequeña tienda sin pretensiones. Y la cocina es, de alguna manera, un mejor baluarte contra el paso del tiempo y la conquista que muchos otros aspectos de la cultura, de allí la parte "honesta" del pronunciamiento de El Sayed. ith the support of three advocacy groups, four individuals with disabilities recently filed a lawsuit against Philadelphia, alleging its violation of the Americans with Disabilities Act (ADA) and a 1977 law that requires street accessibility. The lawsuit outlines multiple instances where the plaintiffs, both wheelchair-bound and visually impaired, were either injured attempting to traverse Philly’s sidewalks or required to take another route to their destinations because of unforeseen barriers. It cites dilapidated curb ramps and the lack of enforcement for cars parked on the sidewalk as some of the main obstacles. “Philadelphia’s failure to create and maintain accessible paths of travel has made it difficult — and at times impossible — for me to go to work, school,

Much like the Civil Rights Act passed 26 years earlier banned discrimination based on race, color, religion or nationality, the ADA banned disability-based discrimination. The bill mandated accessibility for all buildings run by public entities — school district, municipal, county, state and federal — plus all public transportation and commercial centers. The act led to a wave of changes across the country. For many newer cities with less old architecture and planning, the adjustment was easier, but that’s not to say older cities have failed. Washington D.C. is praised for the accessibility of its monuments and wide sidewalks. However, like Philadelphia, D.C., still struggles. In a Washington Post column from May, Theresa Vargas detailed a wheelchair-bound man’s

Philadelphia hasn’t released a response to the lawsuit, but a mayor spokesperson told PlanPhilly in April that the city doesn’t have funding to fix its sidewalks, instead putting responsibility on property owners. The city’s 2019 budget includes a funding boost for the Streets Department, but none of it is for planned sidewalk renovation. ❚

It’s not just the amount of material that President Donald Trump has easily given them; there are also the particular circumstances that the country - and the world - must face in this era. One of the most significant is the threat of climate change.

During the first televised forum on climate change, the Democratic candidates promised a wide range of measures against the environmental threat, including taxes on carbon emissions, undoing the Trump administration's policies and multi-million dollar investment in renewable energy. For example, given the promise of candidates to impose a tax on carbon emissions, the American Energy Alliance immediately issued a statement that looked like the preamble to a threat: “Tonight, while American families worry about making ends meet, the Democrats running for president will be working hard to outbid each other on who can raise electricity and gasoline prices the highest, and the fastest,” the alliance said in an emailed statement. If this sounds like Republican propaganda to you, it’s because the issue of climate change itself has become a political question. That is to say, climate change has become a thorny issue for those who compete for the Democratic nomination to face Donald Trump next year in the presidential elections.

WE ALL HAVE SOMETHING TO HIDE

The chairman of the National Democratic Committee, Tom Pérez, published a column in Medium last June in which he argued that the large number of issues that candidates had to address made it more difficult to

focus only on climate change. Two months later, Pérez introduced a resolution to the committee “recommitting” the Democratic Party to the fight against climate change, but it contained a section conditioning the type of debates that could be carried out in this regard, proposing only two events focused on the issue sponsored by CNN and MSNBC. The restrictions imposed by the chairman of the committee did not take long to provoke a wave of complaints about the alleged hidden interests of the party. For Jeremy Symons, former vice president of political affairs at the Environmental Defense Fund, "the DNC’s inaction on a climate debate is especially troubling in light of the Party's long dependency on the fossil fuel lobby to fund conventions." In his opinion column for The Hill, Symons exposes how giants of oil and natural gas companies such as the American Petroleum Institute (API) have collaborated with up to $700,000 for Democratic conventions, which represents only $200,000 less than what they usually offer to the GOP. Similarly, coal lobbying, represented by Duke Energy, contributed up to $6 million to the DNC during 2012. These manipulation strategies are just another ploy of private interests to “lull Democrats to sleep on climate, joining their Republican colleagues in inaction if not words by keeping climate in the back burner,” explains Symons. "It's a tempting lullaby for political operatives," he concludes. “The planet doesn’t have a bank account. Fossil fuel lobbyists pay well and pay often.” The question is simple: Will the candidates really be able to bypass the DNC's private pacts and be consistent with what they preach, or will the 2020 elections be decided again by the poisonous lobbying? ❚

hen we think of food, it’s common for our minds to turn to nutrition, nourishment or the vitality of its impact on growth and survival. For world renowned chef and restaurateur Jose Garces, food and cooking is more than just survival: it is an art form, and as a chef his work goes beyond the mundane aspects of gastronomy. “Cooking was underappreciated for many generations. For years, it used to be just a form of sustenance,” he said. Within the culinary world, there are a myriad of different cuisines and recipes, and endless cooking techniques to choose from for each meal. Some are passed down from generation to generation in kitchens and homes across the world; other tips and demonstrations for how and what to cook can be found anywhere from Pinterest to your television set. The level of discipline it often takes for a chef to mix and match flavors, textures and ingredients to create an appetizing and delectable dish that can effectively derail the pain and anguish of hunger is promptly what makes it an art form. That process of piecing together the mosaic of a well-crafted

Para el prestigioso chef y propietario de restaurantes José Garces, los alimentos y la gastronomía son más que supervivencia: son una forma artística, y como chef, su labor traspasa los aspectos mundanos de la gastronomía. “Cocinar fue subvalorado durante muchas generaciones. Por años, fue tan solo una forma de sustento”, dijo Garces. meal is the underlying beauty that Garces finds in the world of culinary arts. “As artists, you don’t always have hits right [off] the bat, and I appreciate that,” said Garces. “But I love the game, I love to strive for that perfection. And it’s so much fun at the end of the day.” “There is no doubt in my mind that culinary arts, it’s a true art form,” he added. With a career-long journey that has spanned nearly two decades, Garces now owns over a dozen restaurants across the TriState area of Pennsylvania, New York and New Jersey. He’s traveled across continents, sharing his expertise and influence with many others. On June 24, Garces sat down for a conversation with AL DÍA Publisher & CEO, Hernán Guaracao, to detail his start in the culinary industry, how the industry has evolved over his years, the ways in which food can connect people, and much more.

AN ECUADORIAN-AMERICAN FUSION

Garces was born in Chicago, Illinois, to Ecuadorian parents who moved to the United States during the late 1960s. Growing up on the northside of Chicago, Garces was surrounded by a very diverse community, from Italian to Irish to Polish to Mexican. As he was coming of age, he always enjoyed the balance of being both Ecuadorian and American.

“Growing up in this Ecuadorian-American household… I wanted to stick to my roots, but also just embrace Chicago, embrace American culture,” said Garces. An eagerness to learn about both the environment he was in, and his family’s background consumed him, and continues to play a vital role in his work today. “While I appreciated where I came from, I think there was a yearning, at any early age, to just embrace what was going on in the country and place I was gonna live in,” he said. At an early age, Garces’ culinary passion was cultivated by his grandmother, Mamita Amada, who taught him how to cook with Latin flair. He credits his grandmother for being a big influence in his life, who passed down her passion for food, ingredients and flavors. Garces took everything he learned from his grandmother and parents, and allowed that to SEPTEMBER 11 - 18, 2019

aid him in his current career. Our life trajectory is often shaped consciously and unconsciously by our environments, both inherited and chosen, and for Garces, the mixture of being exposed to a diverse community while maintaining his Ecuadorian roots “really helped me to be able to look at where we live, and our market, in a different way,” he said.

CULTIVATING THE CULINARY PASSION

After discovering his passion, Garces decided to go to culinary school at Kendall College in Chicago to learn how to become a chef. As a student, he had the opportunity to intern

De estudiante, tuvo la oportunidad de realizar una pasantía en La Taberna del Alabardero en Puerto Banus, España. “Sólo quería estar expuesto a la cultura española, la cocina española, la gastronomía de inspiración europea”, dijo. “Así que, estar en Europa y aprender de los chefs europeos era algo que me atraía mucho”. Luego de su pasantía en España, Garces se trasladó a Nueva York y trabajó en varias cocinas con algunos de los chefs más sobresalientes de la industria. “Allí es donde realmente sentí que aprendí la cultura del chef, aprendí cómo convertirme en un chef”, dijo Mientras estuvo en Nueva York, Garces conoció al mundialmente aclamado “Padrino de la nueva gastronomía latina”, el chef Douglas Rodríguez. “Pasé mucho tiempo como un tipo de protégé de él, alguien que estaba bajo su ala, y sencillamente apreciaba su sed por los sabores, y sus habilidades singulares”, dijo Garces de Rodríguez. “Fue un gran mentor y a quien le atribuiría mi aprecio por la creación de los sabores”. at La Taberna del Alabardero in Puerto Banus, Spain. “I wanted to just be exposed to Spanish culture, Spanish cuisine, European-inspired cooking,” he said. “So, being in Europe and learning from European chefs was something that was appealing.” After interning in Spain, Garces then moved to New York and worked at a number of kitchens with some of the top chefs in the industry. “That’s really where I felt like I learned the chef culture, learned how to become a chef,” he said. While in New York, Garces met the globally acclaimed “Godfather of Nuevo Latino Cuisine,” Chef Douglas Rodriguez. “I spent a lot of time as kind of his protégé, someone who was under his wing, and I just appreciated his thirst for flavors, and

his unique abilities,” Garces said of Rodriguez. “He was a great mentor, and someone who I would credit with my appreciation for building flavors.” Garces worked diligently on his craft and started to grow into his chefdom while in the Big Apple. In 2001, Rodriguez was recruited by local mega-restaurateur Chef Stephen Starr to open Alma de Cuba in Philadelphia. Rodriguez chose Garces to join him. Garces then found himself in the City of Brotherly Love, and for the first time, serving as an executive chef. “I was really just thrilled to be in Philly… I think that there was just better opportunity,” he said, adding that the culinary landscape in New York over the five years he spent there was difficult for up-andcoming chefs to ascend. “Coming down to Philadelphia... I really wasn’t too aware of the dining scene, but I knew that… [the] quality of life would be better for me,” he added. He has since settled in Philadelphia with his wife and two children.

BECOMING A RESTAURATEUR

The experience of working at Alma de Cuba, and later El Vez, paid huge dividends for Garces

Ese ambiente, junto con la influencia que tanto de Rodríguez como de Starr tuvieron en él en el transcurso de los años, le permitieron a Garces establecer su posición en la industria.

Eventualmente, empezó a sentirse más conocedor y preparado para empezar su propio negocio. También se dio cuenta que había formado seguidores dentro del mercado, algo que suscitó su confianza para dar el salto. “Me había tomado alrededor de 10 años en el negocio antes de que sintiera que había llegado el momento en el que sabía que abriría mi primer restaurante y… adueñarme, en definitiva, de mi propio destino”, dijo Garces. En 2005, Garces abrió su primer restaurante en Filadelfia, Amada, en honor a su abuela. El restaurante, ubicado en Chestnut Street, cuenta con un menú completo de riqueza gastronómica española tradicional y tapas. “El éxito llega, y me llené de confianza a partir de esa primera experiencia”, recordó. Reconociendo que hubo algunos desafíos en el camino conforme creaba su perfil y su marca, indicando que las condiciones del mercado y la evolución en la forma en que las personas consumían los alimentos eran dos de los contribuidores principales. and set the stage for his future endeavors. While there, he reflected, he and the other chefs were expected to “own the business” and “act like owners.” That environment, coupled with the influence both Rodriguez and Starr had had on him over the years, allowed Garces to gain a solid foothold in the industry. Eventually, he began to feel more knowledgeable and became empowered to start his own business. He also realized that he had gained a following within the marketplace that sparked the confidence to take that leap. "It had taken me about 10 years in the business before I felt that moment where I knew I should open my first restaurant and... ultimately own my own destiny,” said Garces. In 2005, Garces opened his first restaurant in Philadelphia, Amada, named after his grandmother. The restaurant, located on Chestnut Street, features a full menu of rich, traditional Spanish cuisine and tapas. “Success happens, and I gained a lot of confidence from that first experience,” he recalled. Granted, there did exist some challenges along the way as he worked to build his profile and his brand, noting market conditions and the evolution of the way in which people are consuming food as two of the main contributors. In contrast to a market like New York, Garces found there is more loyalty towards restaurants in Philadelphia, which helps; however, he’s experienced firsthand just how brief and daunting SEPTEMBER 11 - 18, 2019

success in the culinary industry can be. Nonetheless, Garces remains upbeat and hopeful about what the future may bring. To aid his endeavors, Garces created a full-service catering and event division, called the Garces Group, as well as the Garces Foundation, a philanthropic organization dedicated to Philadelphia’s underserved immigrant community. “In our business, you just have to work, stay on it, and stay positive, because things will occur and you have to just stay the course and believe in who you are and what you can do,” he said. “That’s kind of what’s carried me all the way here.”

SPREADING CULTURE THROUGH FOOD

Garces believes that one of his biggest objectives as a chef and restaurateur is to educate the public about the various cuisines and dishes there are. With easier access to information and more people traveling from the U.S. to Latin American countries, he sees more non-Latinos being exposed to Latin American cuisine. “Food… really brings people together, and it’s more and more with our devices and the many distractions we have throughout the day,” said Garces. “Our food, our culture is so diverse and has so many different avenues that it can’t help but bring people together,” he added. Having been in the business for some time, Garces feels he has a great opportunity to make an impact on people’s lives. “I think there’s good opportunity in the market to spread more of our Latin culture through food,” he said. Garces’ focus remains being able to connect to his cultural roots, while doing what he loves and helping others enjoy it, as well. He hopes to continue paying homage to his parents and grandmother, and one of the most effective and impactful ways to do that is through the art of cuisine. “I think by doing that, I will be able to connect further with the Latin community here in Philadelphia and beyond,” he said. ❚

or Stephanie Torres, the striking mural that now graces the side of Providence Center at Fifth and Huntingdon streets was almost impossible to imagine when she and other community members ventured their first few brushstrokes to begin the process. The bold yet intricate design depicts a woman with symbols and allusions to the cultures and traditions of Latin America in her hair, which spreads out in an afro around her face. She is gazing straight ahead as her hands pull back two sides of a border wall. On the back panel is a line of immigrant families, led by a young woman from Honduras in the foreground, who are waiting to enter through the opening in the wall. Torres, a teen leader at Providence Center, a nonprofit organization that provides educa-

tion programming for people of all ages in the Fairhill community, said that initially she was overwhelmed wondering how they would be able to create something as large and detailed as the mural — especially for those, like herself, who didn’t have much experience painting. But just a few weeks later, as she stood looking up at the finished product unveiled on Aug. 27, her perspective had shifted. “When they put it up, I was like, ‘Wow, we did that,’” Torres said. “I feel really proud of us.”

Torres and the Providence Center employees and students were part of an even larger team that worked alongside artists Ian Pierce (who goes by Artes Ekeko) and Betsy Casañas to make the two muralists’ vision a reality in the six short weeks that artists, community members, and stakeholders came together to create the “Sanctuary Neighborhood, Sanctuary City” mural. On Aug. 27, the Mural Arts Philadelphia program, in partnership with Providence Center and La Puerta Abierta, an organization which provides pro-bono mental health services to the Latino immigrant and refugee communities in the Greater Philadelphia area, gathered the community to dedicate the mural. Artists, organizers, and youth alike spoke to the enduring power of the arts to present a message about the reality many members of the Latino and immigrant communities in the country face, while also revealing the possibilities for a different, brighter future. Many of the youth from Providence Center and La Puerta Abierta, who worked to create the mural have experienced their own immigration stories, arriving in Philadelphia in search of a home from countries throughout Latin America and Africa, as well as Puerto Rico. “The neighborhood has a lot of culture. neighborhood has a lot of art. The neighborhood is not lost,” Charito Morales, Providence Center community organizer, said in Spanish at the ceremony. Pierce, an internationally-acclaimed Chilean artist, first worked with Mural Arts Philadelphia in 2018, when he designed the Families Belong Together mural, also located in the area, on Front Street. Once Mural Arts Philadelphia invited him to do another piece, Pierce and Casañas, a Puerto Rican artist who grew up just two blocks away from the mural site at Fourth and Cambria streets, began collaborating to design a mural that would speak to immigration at the border as well as encompass the experiences of the diverse communities in Fairhill. Pierce said that the intention of the mural is, in part, to show that “the pain of others is our pain.” Casañas, who said the mural was also a way for her to “reconnect” to her childhood community, was one of eight artists who had painted the wall’s previous mural, which represented the Puerto Rican culture and heritage of the neighborhood. “There’s blood behind this mural. Because it was made with love, with passion, it was made by people who are wanting and willing to have changes in Philadelphia,” Morales said. “This is not a regular mural. This is their mural.” ❚

I am a 30-year-old Latinx gay man, originally from Barranquilla, Colombia. When I was three years old, my family emigrated to the U.S., settling first in Chicago and then moving around to a few different states until I made my own move to Philadelphia in 2011. I was raised by parents who taught my two older brothers and I to question everything, think critically, and remain compassionate. They taught us resilience and confidence, skills that have been critical to my success an immigrant. In my professional life, I’ve learned to thrive in environments that are mission and service driven. Fueled by my passion to serve others, my career path and growth have led me to numerous opportunities where I can positively impact on the lives of marginalized community members. This career path led to my becoming the Executive Director of DVLF (formerly Delaware Valley Legacy Fund) just over a year ago. In my personal life, I keep busy with many interests as well. I have a deep love for music, singing and dancing. I also love playing soccer. For five years, I’ve been a member of the Philadelphia Falcons LGBTQ+ soccer club. Finally, in the past few years, I have developed a love for photography because of its ability to capture deeply meaningful moments in time. This love led to the creation of my photography brand - That Little Moment - on Instagram.

Cuando tenía tres años, mi familia emigró a los Estados Unidos, primero se establecieron en Chicago y luego se mudaron varias veces a diferentes estados hasta que finalmente me mudé por cuenta propia a Filadelfia en el 2011. Mis padres me educaron a mí y a mis dos hermanos mayores a cuestionar todo, a pensar de manera crítica y a ser compasivos. Nos enseñaron a ser resilientes y a confiar en nosotros mismos, lo cual ha sido clave en mi éxito como inmigrante. En mi vida profesional, he aprendido a sobresalir en ambientes que están orientados a cumplir una misión y a servir. Impulsado por mi pasión por servir a otros, mi recorrido y crecimiento profesional me han conducido a numerosas oportunidades donde he podido dejar un impacto positivo en las vidas de los miembros marginalizados de la comunidad. How can people support your organization or get involved? There are many ways in which people can support the organization and/or get involved. Making a recurrent donation is the most direct way people can support and amplify our mission. Other ways people can support DVLF is by attending our monthly “Our Night Out” networking events where we raise money by collecting a small donation to benefit a selected beneficiary organization every other month. People can also support DVLF by attending or becoming an official sponsor to one, or both, of our two major yearly events: HEROES Awards Brunch in the Spring, or TOY, our holiday fundraiser in early December..

What are some of the challenges that your organization faces? One of the main challenges is fundraising during a political climate that is nearing a presidential election with several nominees running their own fundraising campaigns. Another challenge is the need to find new and creative ways to support and uplift the LGBTQ community while it experiences the rollback of some of their rights and/or are targeted by messaging that alienates our community, especially our Trans siblings and people of color.

Sean pacientes con ustedes mismos, dediquen algún tiempo a resolver que tipo de autocuidado les funciona mejor. El autocuidado es algo que es único y personal, así que prueben diferentes cosas y vean cuáles estrategias les ayudan a sentirse más recargados y motivados y sigan enfrentando los retos que puedan surgir para cumplir las metas que se propongan. Su gente son aquellos que los apoyarán en su visión y a todo su ser al mismo tiempo que los retan de maneras sanas y positivas, aquellos que celebrarán sus logros y los ayudarán a levantarse cuando caigan, y durante todo su recorrido.
