Lady Caroline Cranbrook is President and co-founder of the Food and Drink Festival. She is a pioneering and indefatigable champion of good, sustainable food and the people who make it. She belongs to a well-known and respected local farming family with wide-ranging interests in the environment, conservation, education and the arts. In her role as President of the Festival she is central to a growing network of farmers, smallholders, fishermen and food businesses, giving her the enjoyable opportunity to promote all the good things that Suffolk and East Anglia have to offer. The end of September is traditionally harvest time, which is perfect for the Festival, in its spectacular setting of Snape Maltings on the edge of the River Alde, looking out across the wide landscape of reeds, woods and water. There is so much to see and do. There are masterclasses, book signings,

Suffolk is famous for its food and farming industry, with large-scale enterprises comfortably co-existing with a huge range of dedicated small businesses – all of which pride themselves on the quality and honesty of their produce. Large and small, they are vital to the local economy and have a fundamental role in the national food infrastructure.

The Aldeburgh Food and Drink Festival, now in its eleventh year, is a celebration like no other. Drawing on the wealth of Suffolk food and drink suppliers, the two-day show gathers together one of the most impressive collections of fine produce anywhere in the country. It takes place in the picturesque Snape Maltings, the home of Aldeburgh Music, and importantly it is a ‘not-for-profit’ event which has a unique place in the calendar of British food festivals.

competitions and demonstrations with plenty of opportunities to meet chefs, producers and artisans. The unhurried and friendly atmosphere allows you to immerse yourself in this world and to appreciate every aspect of great food from start to finish. More than 100 stallholders take part and are enthusiastic ambassadors of their area, keen to talk about what they do and the provenance of their food and drink. They have fascinating stories to tell. The Aldeburgh Food and Drink Festival is committed to promoting and encouraging awareness of good food and where it comes from. There a dedicated children’s area – foodrelated of course and with lots of exciting and interesting things to do. The Suffolk Young Producers, an energetic and knowledgeable group of farmers and food entrepreneurs, are providing the food and also the theme for the ‘Suffolk Punch’ Saturday evening feast. A number of start-up businesses will have their own section, a showcase for the area‘s new wave of food producers. The Festival weekend also marks the start of two weeks of Fringe events where local farms and food makers open their doors to visitors for talks, tours and tastings. For the first time, this year there is free admission for children under 15. The daily entrance ticket includes a complimentary cotton shopper bag and programme. There are cooked food stalls, several cafés, a restaurant and a picnic lawn, a ‘drop-yourshopping’ point and lots of free parking. Parking and facilities for the disabled are on site. Regular free buses run between the Festival and Aldeburgh town, just up the road. There is a cash machine in the Snape Maltings Home Shop. Dogs on leads are welcome. For the Suffolk Punch Feast, Fringe events and masterclasses, places are limited so it’s best to book your places sooner rather than later. We look forward to seeing you at the Festival! First food memory? Lentils with chorizo. I think it was one of the first things that I was allowed to ‘help’ with in the kitchen…..and by ‘help’ I mean that my Mum let me stir them, that was it! What do you think will be the next food trend? Well, I hope that Spanish food will continue to be on trend of course….. other than that, I think that we’ll see a lot more ‘rainbow food’, it’s not a trend you’ll see in my restaurants though! What food do you turn to for comfort? Fish & chips. People don’t think that this is a thing in Spain, but it really is. I particularly love the traditional fish & chips you get here though – sitting on a sea wall with hot fish & chips in the paper, with plenty of vinegar – I’m a happy boy. Who are you following right now and why (twitter)? I love twitter mostly because it means I can stay in touch with people that I don’t always get to see very often. I like to follow people like @Richardvines, @hotdinners & @CODEHospitality, making sure I’m always up to date on what’s happening – new restaurants & people in the industry. Best and worst kitchen gadget? I couldn’t live without my pestle & mortar. Not sure I’m on board with the whole spiralising thing though – needless to say I don’t have one. Favourite cook book, the one that never lets you down? I love Claudia Roden’s The Food of Spain – the way she has collected the recipes over many years and been inspired by so many people she’s met, I just love her.

The hillfarm family meadow! A

t this year's Festival hillfarm have taken over the children's area and re-named it 'The hillfarm family meadow'. This is a fantastic new venture which promises to be equally enjoyable for adults and youngsters. The hillfarm family meadow will be clearly signposted on the Hepworth Lawn near the entrance. Clare and Sam Fairs of hillfarm have been involved in the Aldeburgh Food and Drink Festival from the very start and are keen participants in the local food industry. A farming family for nearly fifty years, they are delighted to sponsor the part of the Festival dedicated to children and young people. Their aim is to amuse, captivate and educate visitors of all ages. Clare is bubbling with excitement and says:

Then when your hard work of being a hillfarm harvester is over you can have your face painted by a professional face painter. You might like to be an all-important bumble bee and learn why bumble bees are vital for farmers and our countryside. All of these activities are free and our ambition is to educate!' On 24th September the Suffolk Young Producers Group will be reprising their successful pop-up restaurant which made its debut at the Vault Festival in London earlier this year. Called The Suffolk Punch, after the county’s famous heavy horse, it will feature the very best that our young food and drink producers have to offer. The three-course menu has been created by brothers Alex and Oliver Burnside from the Plough and Sail pub at Snape Maltings. As part of the Young Producers group they have sourced the ingredients from members of the group as well as sprinklings from the rest of Suffolk and the food is designed to share and to showcase the wealth of quality produce in the county. This is a typically friendly Festival event which all takes place to a background of live music, dancing and singing coordinated by Folk East. There will also be a guest appearance by two of the magnificent Suffolk Punch horses themselves, although they won’t be staying to eat. A donation from the proceeds will go to the Suffolk Punch Trust based at nearby Hollesley Bay Stud. This ticket-only event starts at 7.30pm with a welcoming aperitif of Little Scarlet Strawberry and Gin Spritzer (from sponsors Tiptree) served in a souvenir Festival glass. Young Producers SUFFOLK’S

This group of young people represent all that's vibrant and exciting about the county's food industry. They are ambitious entrepreneurs, many of whom are second or third generation farmers, with undiluted energy and total dedication to their businesses. They are inspirational representatives of the local food industry. Coming together in 2013, united by their Suffolk heritage, the group shares ideas and plans, support, friendship and advice. Early this year the group organised and ran a pop up restaurant in London. Called The Suffolk Punch, it was masterminded by David Wright from the Woodbridge Cake Shop Bakery and took place in the Victorian vaults under Waterloo Station. Part of a six-week edgy arts festival, the young people brought a genuine taste of Suffolk countryside to central London and it was a outstanding success. As a direct result, and thanks to Caroline Cranbrook's contacts, three of the group took part in an event at Parliament, organised by Jo Churchill

MP and Matthew Hancock MP. One of the three, Emily McVeigh, from Kenton Hall, says, "It was a fantastic opportunity to showcase our produce and draw attention to Suffolk food and drink. As small producers and farmers it was great for us to have a platform to promote our products nationally. David Cameron was very interested in how sustainable our beef production is and how we can educate the consumer on quality when it comes to the meat industry." Visitors to the Aldeburgh Food and Drink Festival will be able to experience The Suffolk Punch when it's recreated at Snape Maltings on Saturday 24th September. It will have the same fantastic food and exciting atmosphere which the Young Producers honed during their exhilarating (and exhausting) sixweek stint at the Waterloo Vaults. I T ’ S A LL A B OUT TH E FA RMERS A N D TH E S T OCKME N So says Gerard King, award-winning butcher and owner of Aldeburgh’s craft butcher’s shop, Salter & King. ‘Having ‘local’ meat doesn’t mean much to me if I don’t know the farmer or stockman, and know the animal that I’m buying,’ Gerard continues. ‘A good, lasting relationship works for both of us: I can buy the very best animals from a farmer I trust, and the farmer can use me as a direct route to market – a market that appreciates all the effort that’s been put into raising high-welfare, grass-fed, happy animals.’ At the core of Salter & King’s business is a handful of carefully chosen, smallscale local farms. ‘If I want a certain breed of lamb I know who to go to; and similarly each of my beef farmers has a particular strength,’ Gerard says. ‘Over the years, I’ve even started to work with one or two farmers to produce specialist meat for the shop. For example, our Suffolk Old Cow was an idea we put to Natasha Mann who farms at Iken, and out of that our 12 year-old Lincoln Red beef was born.’ Salter & King’s ‘Suffolk Old Cow’ has been a huge success among beef-lovers, and was even championed by food critic Jay Rayner in the Observer Food Monthly.

‘It’s about knowing what each farmer produces best, so that we can feel confident about every single piece of meat we’re selling,’ says Gerard. ‘And now that we have an on-line shop we can get the very best of Suffolk meat from these small farms right across the country.’ Some of the highlights from the shop include organic lamb from Martin Durie; Lincoln Red ‘Suffolk Old Cow’ (hung for 6-8 weeks) from Natasha Mann; Large Black traditional breed pork from Robert Simonds; Mutton from Jason Gathorne-Hardy; and genuine Norfolk Black turkeys. Salter & King is also striving to create a kind of ‘hub’ for meat lovers: Gerard has started giving small butchery classes and demos-to-order in the shop – including ‘How to prepare game’, and ‘Venison carcass cutting’ – and has formed a ‘Good Meat Club’ for all those interested in excellent meat and specialist cuts (see www.salterandking. co.uk to join.) He also initiated the annual ‘Aldeburgh Mutton Week’ with local mutton farmer Jason GathorneHardy, and is making plans to bring other forgotten and underrated meaty delights into the public arena. ‘Obviously craftsmanship, knowledge, a love of food, and excellent customer service are all critical to making a good butcher’s shop,’ Gerard concludes. ‘But at the end of the day, your meat is only as good as the farm it has grown up on.’ All of Salter & King’s meat can be ordered on-line and delivered nationwide.
