The Aldeburgh Food and Drink Festival at Snape Maltings is the place to find over 100 fine food and drink companies and a select group of newcomers. Nearly all come from Suffolk and offer the best of local produce. Over the weekend there’s an impressive line-up of guest chefs and culinary professionals, ready to share their knowledge and skills, plus live music, the Family Meadow, hands-on cooking for kids and an amazing range of specialities in the food courtyard. Now in our 13th year, we are proud of this unique Festival as it has played a leading part in encouraging local food and drink producers, helping to establish Suffolk as a food destination. We focus on quality not quantity and are delighted to have consistently been voted one of the best food festival in the country. Nowadays, the importance of good food, where it comes from and the vital part it has to play in maintaining a healthy lifestyle is widely understood and we are involved at every stage. supporting schoolchildren, nurturing new and innovative businesses and working closely with our farmers, fishermen and producers. We are also founding partners of the ‘Food & Drink Fund’, part of the Suffolk Community Foundation – a grant-making charity established to improve the lives of local residents. In addition, this year we are hosting a conference (Friday 28th September) to explore the ways to eat wisely and well – see page 14 for more details. We like to think there really is something for everyone and promise a weekend full of fabulous things to do and wonderful food and drink experiences. So, whether you’re making special dishes in a masterclass, learning from experts in demos, talks and discussions, trying quality food and drink, enjoying children’s fun and games or simply soaking up the relaxing atmosphere in these beautiful surroundings, our aim is to make sure you have a perfect pocketful of Suffolk. This year, the Festival promises to deliver a jam-packed weekend of fabulous food adventures, from tastings and demonstrations to ‘roll up your sleeves and get stuck in’ masterclasses. We are also delighted to welcome renowned chef Prue Leith, who takes to the stage on Saturday, and are proud to host the conference: Eating Wisely and Well.

Aldeburgh Food and Drink Festival Conference Friday 28th September 2018, 9.30am – 4pm The Aldeburgh Food and Drink Festival is a famously enjoyable occasion which, along with its fringe programme, has helped to boost the popularity of our region’s produce, enabling existing businesses to flourish while encouraging new start-ups. It also has a wider purpose; to educate, and one way it can do this is through conferences on topical food-related issues. This year the conference is about healthy eating and why change is needed, particularly in relation to diet. Speakers are leading consumer and medical researchers and local food experts. Subjects include food-buying behaviour, the strong link between diet and disease, the role of local food in bringing about change, and the potential effects of Brexit on our local food chains. Should we be concerned about our eating habits and the problems associated with obesity and diet-related disease? This question will be the focus of this year’s Aldeburgh Food and Drink Festival Conference, while also exploring potential solutions and the part regional food has to play – as Lady Caroline Cranbrook explains.

What’s on the agenda? This year’s conference theme is ‘Eating Wisely and Well’. Speakers from the forefront of consumer and medical research, together with local food experts, will address the need for change in our eating habits. Assisted by panellists drawn from East Anglian food businesses, they will debate their conclusions with the audience and discuss how local and regional food producers should respond, both now and post-Brexit.

Who will be speaking? The conference will be chaired by the former BBC Breakfast presenter Bill Turnbull. The first speaker is Professor Andrew Fearne from Norwich Business School, who has been studying the buying habits of consumers for over 15 years and will explain the challenges of enouraging behavioural change. Doug Field, Chief Executive of the East of England Co-op

and Chair of the New Anglia Local Enterprise Partnership, will describe the Co-op’s highly successful local food sourcing policy. The connection between food, diet and disease will be explained by Professor Alastair Forbes, medical doctor, scientist and gastroenterologist from Norwich Research Park and University of East Anglia. Bee Wilson, the acclaimed British author, food writer and historian, will then argue that change is possible, and Oliver Paul from Suffolk Food Hall will talk about the advantages of local food. Finally, Martin Collison, representing the EU Short Supply Chain Knowledge and Innovation Network (SKIN), will share the European experience on developing shorter food chains.

Who is the conference aimed at? The subject matter of the conference affects us all, so the answer is everyone! Whether you are involved in education, health, the public sector, farming, food production or food retailing and if you are concerned about the link between diet and health or just care about what you eat, it promises to be a fascinating and inspiring day.

For Meat Geeks. Iken Old Cow & Soay Lambs What is Iken Old Cow?

And Soay Lambs… any good?!

‘Old Cow’ (no mother-in-law jokes please) is a highly-prized northern Spanish meat which comes from retired dairy cows that have been let loose on pasture for up to 17 years. ‘Iken Old Cow’ is Salter & King’s very own Suffolk take on this special beef. It came about after award-winning butcher, Gerard King, started working with Iken farmer, Natasha Mann, to develop a local equivalent with her herd of traditional-breed Lincoln Reds for his shop in Aldeburgh.

It’s very hard to find a Soay in a butcher’s shop – it’s a semi-feral breed, and their small frames are considered uneconomical. They came originally from the island of Soay in the Scottish St.Kilda peninsular, and bear a strong resemblance to the wild ancestors of domestic sheep. It’s a real treat to have found a herd nearby – these dark, horned beauties roam the fields of Great Glemham in the Alde Valley – and Gerard is lucky enough to have a good relationship with the farmer: he takes them when he can!

Iken Old Cow has now gathered a die-hard fanbase – all drawn to the exceptional depth of flavour and rich, well-distributed fat. These Lincoln Reds have been grazing on the lush pastures abutting the River Alde for between 4 and 12 years when most of the commercial beef is slaughtered before 20 months. Each carcass has an extra long dry-hang at the shop before being offered to a dedicated waiting list.

Because of their feral nature and delicate frames these lambs are seriously good to eat. They’re very lean and tender; they’re latematuring, which means they’re ready in the autumn; but best of all, they taste fantastic – gamier and stronger in flavour than commercial breeds, their sweet tasting meat is a wonderful thing. with Prue Leith

When did you first fall in love with food? As a student in Paris in the early sixties. I could not believe how much the French thought and talked about food and cooking. How many cookery books do you own? I gave away 2,000 to the Oxford School of Gastronomy and got my collection down to a dozen, but it’s crept up again to a hundred or so. What is the most memorable meal you’ve ever eaten? My wedding lunch. oysters to start, oysters to follow and treacle tart for pud. What do you think will be the next big trend in food and why? It could be insects. I’m serious. They are nutritious, can be delicious, are easy to farm, ecologically sound and could feed the world! Maybe not tomorrow, but I think it will happen.

Many top chefs enjoy a takeaway after a long shift in the kitchen; what is your secret indulgence? Greek yogurt straight from the pot with a drizzle of honey and sprinkling of almonds still in their skins. Which season appeals to you most as a cook? Autumn I think for mushrooms, porcine, game, pumpkins, plums and apples and a bit of spice. What is your ‘go-to’ mid-week supper dish? Grilled mackerel fillets on lentils or rice or mash. Maybe with grilled tomatoes. Having successfully bid for Elizabeth David’s kitchen table at auction in 1994, you described her as ‘the most important cookery writer this century’. Who or what do you see as having the most influence in this century? Sadly, it’s the manufacturers of junk food with their massive advertising budgets to persuade kids to live on fat, sugar and salt.

Eggs benedict with locally smoked eel and baby spinach A brunch classic with a difference, replacing the crispy bacon with the best type of smoked fish you can buy. It doesn’t come finer than smoked eel, but cold or hot smoked salmon and trout are cheaper alternatives, and we love to use organic free-range eggs from Maple Farm at Kelsale. (serves 2)

Ingredients 20g salted butter 150ml milk 20g plain flour 2 tbsp wholegrain mustard 1 large handful baby spinach 4 free-range eggs 2 English muffins-split 150g smoked eel fillet, shredded

To make the mustard sauce, melt the butter in the milk, add the flour and whisk together to a smooth sauce. Stir in the mustard and seasoning to taste. Wash and drain the spinach before wilting down in a hot pan with a little butter and seasoning. Poach the eggs and toast and butter the muffins. Top each half with spinach, smoked eel and a poached egg, finishing with a spoonful of the mustard sauce. Enjoy!
