Held at Snape Maltings, amongst the historic buildings and timeless landscape of reeds, woods and water, the Festival is a wonderful celebration of the quality and variety of the region’s food and drink. With over 100 exhibitors taking part, across the two days you can enjoy the sights, tastes and aromas of the very best produce on offer. There are also two demonstration stages where you can watch exciting dishes come together, with globally renowned chefs using local ingredients, while during the Masterclasses they share their culinary secrets. We are delighted that the Suffolk Young Producers group continues to grow and flourish, the Hillfarm Family Meadow looks set to be as popular as ever and the new Adnams Drinks Experience is sure to be a crowd pleaser. We have always believed in the importance of recognising the strong connection between the food we eat, the people who produce it and the land and sea from where it is sourced, and so new for this year we are introducing a ‘Wild Suffolk’ area to the Festival. Plus, don’t forget that after the Festival weekend, The Fringe offers a fabulous feast of foodie events hosted by farms, restaurants, pubs, producers and chefs throughout September and October. A glorious feast for all the senses: sight, smell, sound, taste and touch. It’s not just ‘rabbits and foraging’, more a melting pot of all the wild things involved not only in our food & drink, but also our art, literature, science and nature. What can you expect? Street Food Legendary Pigeon Burgers, Fresh Mackerel baps, Hedgerow drinks and more… Demonstrations and masterclasses In and around the camp fire, spontaneous ‘Cook-up’s’, a ‘Shrimp peel-off’ and a ‘Partridge Pluck-off’. Learn from some of the masters of the wild. Producer Stands The Wild Meat Company & Maximus Sustainable Fishing Food Writers Corner Where many of our local bloggers and writers will gather to talk about their work and its links to many of the wild things. Fish Box An impromptu ‘stage’ where anyone can ‘wax lyrical’ about their chosen food passion… or just to get something off their chest! HQ This woodland space is the HQ (Hedge-Quarters) for Vivia Bamford’s Sciapod forays, where you will find her mind mapping and researching her foraged finds. Iken Old Cow – Beef for Meat Geeks…

What is ‘old cow’? If you’ve ever eaten a memorably good piece of beef in northern Spain, there’s a good chance that it came from an old dairy cow. In the Basque country, meat from retired dairy cows is highly prized: let loose for between 4 to 17 years on pasture in order to improve meat quality. This – when most of the beef we eat in the UK is slaughtered at up to 20 months – produces a very special, slow-grown beef that is speckled with rich yellow fat and has a stand-out flavour.

Why ‘Iken’ not ‘Basque’? Gerard first tasted Basque old cow when he lived in Spain and the memory of its wonderful deep flavour and rich, but well-distributed, creamy fat stayed with him. Now award-winning butcher and owner of Salter & King, he set about working with Iken-based farmer, Natasha Mann, to develop a local equivalent and ‘Iken Old Cow’ was born: special meat from Lincoln Red traditional breed cows, which have had between 4 and 12 years grazing.

Is it worth the wait?! Iken Old Cow has quickly gathered a die-hard fanbase. The depth of flavour is exceptional – accentuated by the extra long dry-hang that Gerard gives each carcass. ‘There’s something wonderful about being able to grow Suffolk’s own, traditional-breed version of Basque beef,’ says Gerard. ‘Specialist beef, raised by a trusted farmer, in an area of outstanding beauty and sold less than a mile away from where it was born. You can’t get better than that.’

Focus Organic’s three cheese and courgette frittata Ingredients All organically sourced if possible Topping 2 courgettes, 1 yellow pepper, 1 red onion, 6 mushrooms 2 cloves garlic and handful spinach leaves 2 tbsp organic olive oil handful black olives Filling 6 eggs, small cup of milk, 100g stilton, 200g ricotta, 200g cheddar, 2 tbsp green pesto, pinch of pepper

Method Preheat oven to 160c Finely dice courgettes, red onion and yellow pepper and cook in a pan on a moderate heat with olive oil until soft and golden brown. Add finely chopped garlic and baby spinach leaves until wilted. Set aside. Whisk eggs with milk then cream in ricotta, crumble in stilton and grated cheddar. Add the pesto and ground black pepper.

Line an 8-10 inch round baking tin with baking parchment. Pour in the egg and cheese mix and put in oven for approx. 20 mins until set. Take out and decorate with previously fried and cool vegetables and olives. Add little grated cheddar to top. Return to oven for 5 mins and serve.
