Alessandro Calastri Alessandro Calastri got into the restaurant business after starting a promising career as a research analyst at a New York brokerage firm. He enjoyed that work, but it didn’t take long for the recent college graduate with a degree in Global Studies to realize he did not want to spend his days staring into a computer monitor. And so he acted on a life-long interest in cooking and food, and enrolled in the International Culinary Center in New York, where he took classes in everything from culinary techniques to the day-to-day realities of operating a restaurant.
Alessandro Calastri Today, several years along on his new career path, he has no regrets. “Restaurants have changed me for the better,” he says. “Teaching humility and learning how to serve and treat everyone the same.”
Alessandro Calastri He was born and raised in New York in an Italian family. Both of his parents are Italian, and he grew up spending every summer in Italy. “I still go back to Italy as often as I can.” Food and eating are deeply ingrained in Italian culture, and Alessandro Calastri absorbed that. “I love to cook,” he says.
Alessandro Calastri He enjoys spending quality time with friends and family, and that means sharing a meal. “My favorite meal to cook is a simple pasta ‘al pomodoro.’” Pasta is one of the world’s great comfort foods. There may be nothing more satisfying than a plate of pasta, even a humble plate of spaghetti with marinara sauce. By standards of haute cuisine, pasta al pomodoro is easy to make, but it’s also one of the easiest things to do poorly. In the hands of a truly skilled chef, it is a dish to savor.
