Gratin d’agrumes au gingembre Citrus Gratin with ginger

INGREDIENTS For 6 persons - Orange: 4 - pink grapefruit: 3 - yolk: 6 - Sugar: 80 g - grated fresh ginger 1 full small spoon
PREPARATION Citrus peel to strong neighborhoods and detach from each other in passing the blade of a knife between the thin membrane separating them. Work over a bowl to collect juices from fruit. Place the fruit quarters in a colander over the bowl so that any juice is recovered. Whip the egg yolks in a saucepan with sugar, citrus juice and grated ginger. Place the pan in a bain-marie and cook gently in whisking constantly until a thick mixture and sparkling. Preheat the oven grill position. Divide the citrus districts in 6 ramekins or ovenproof glass. Pour the sabayon on top and enfournez. Make gratin few minutes.
