With another edition of UNIQUE comes many hours contemplating when the weather will improve enough to take the beautiful spring/ summer trends out for a spin… And now the time has come! It's inevitable that as the UNIQUE team scout Rundle Mall’s 700 retailers in search of exciting pieces to catch your eye, that a piece or two will catch mine. And whilst falling head over heels for a new pair of shoes or a must-have handbag may not necessarily be good for my bank balance, I console myself with thoughts of supporting Rundle Mall's retailers and hitting the new season with statement pieces. But it's not only my wardrobe that’s had an overhaul thanks to the Mag this season. I've taken the traditional spring clean a little bit further than intended this year, getting caught up in the excitement of the brilliant patterns, colours and textures of new season Homewares and filling my home with tonnes of fresh flowers in an effort to bring the season inside. Bringing the outside in reminds us that the seasons are changing, but as daylight savings sets in, the days get longer and the nights get warmer I like nothing better than getting outside at the end of the day. undle Mall’s $30 million redevelopment has been under way since February 2013, and as a result you may have noticed some significant changes to the landscape including new paving between King William Street and Gawler Place, the removal of existing buildings down the centre and the introduction of new trees.
The team at Country Road have coined a store catch phrase for the development process; ‘no pain, no gain’.
In 2010, the Rundle Mall Management Authority and the Adelaide City Council partnered to create a new vision for Rundle Mall; a vibrant and exciting retail precinct to be enjoyed both day and night. With works continuing to this end, the vision is definitely coming to life!
Despite the works, the Mall is still as busy as ever with shoppers and workers. Sarah, an avid shopper, often lunches in the precinct. “The redevelopment hasn't stopped me coming into the Mall. I can't wait 'til it's done, but in the meantime I'm still shopping in heels and supporting my Mall.”
“There is no doubt that the City of Adelaide is evolving – from Adelaide Oval, the Riverbank precinct, the Victoria Square upgrade and the Rundle Mall redevelopment – the activity and energy in the CBD is going to be at a level not seen before,” said Lord Mayor Stephen Yarwood.
An exciting part of the project that will further add to the physical redevelopment is a $5million Innovation Fund that revolves around place-making. Applications have been submitted and proposals are currently under review for ways to make laneways, upper-stories and unused buildings in the Rundle Mall precinct come to life. This initiative is designed to drive the early evening and night-time economy in this area and is part of the wider Vibrant City project.
“RUNDLE MALL IS CENTRAL TO ALL OF THIS AND ITS UPGRADE WILL INCREASE THE PRECINCT’S COMPETITIVE ADVANTAGE AND REINSTATE THE MALL AS A COMPELLING CITY EXPERIENCE.” The Lord Mayor’s comments are echoed by Rundle Mall retailers. Kyra Compton, Store Manager at Review, said the redevelopment will add a lot to the use of the space. “Rundle Mall is going to be a place which will be better utilised and accessible to everyone day and night. It's really exciting!” she added. “The disruption in the Mall caused by the development works have been tricky, but it’s business as usual for us and we’ve all got our eye on the end goal; a beautiful new Mall.”
“We’ve had very little negative feedback from customers, only interest in when the works will be finished. There’s no denying that the Mall needed an upgrade, so we’re just glad it’s happening!” said Dion Sanderson, Store Manager at Country Road.
Tom McCready, Executive Program Manager at Adelaide City Council, is one of the many people behind the project who is enthusiastic about the final product, and says it will be exciting to see the Mall come alive and watch people interact with the wonderful space. “The vision for this project came about from a lot of community feedback about the sorts of things people would like to see in Rundle Mall,” Tom said. “Seeing people enjoying the new, modern, attractive Mall will make the works all worth it. The urban-setting seats and modern lighting will look really attractive as we create a vibrant retail and leisure space,” he added, “and the Expressions of Interest ideas that we’ve received for the plug-and-play spots along the mall are really exciting.”
As you venture into the Mall from November you will notice that the Mall will open up as temporary fencing is removed for the busy Christmas period and 'The Pigs’ are reinstated to their home after receiving some well-earned polish. From early 2014 work will recommence, moving from Gawler Place to Pulteney Street in stages due for completion in October 2014. “Rundle Mall’s $30 million redevelopment is an exciting project in a fast changing city. But it’s important we all keep in mind that the Rundle Mall redevelopment isn’t simply a project about new pavers, lighting and trees, it's really a project about developing ‘Place’; giving the Mall back to the community and learning about how South Australians want to use it,” said Rundle Mall Management Authority CEO, Ian Darbyshire.

nce upon a time – around 1849 – a gentleman by the name of Mr George Peter Harris, together with a Mr John C Lanyon, was sailing the high seas on the good ship Candahar en route to Adelaide. The pair talked turkey and subsequently formed a partnership to found Lanyon and Harris, a hardware and ironmongery business on Hindley Street. From there, Mr Lanyon left the partnership leaving Mr Harris as the sole owner of the business and the opportunity to change the name to Geo. P. Harris. Enter the roaring 20s and a move to the still standing Grenfell Street address where the birth of Harris Scarfe, the department store most notable for homewares, manchester, men's and women's apparel, took place.

The business continued to grow and offered a broad range of items at value for money prices. During the 70s and 80s Harris Scarfe peaked. A cafeteria was built, an inhouse credit card was introduced and it wasn’t long before Harris Scarfe was a household name. 1994 saw the sprawl to suburban Adelaide, where the department store opened its first store in the 'burbs (Salisbury). Following this successful store opening, Harris Scarfe acquired more sites in South Australia and later expanded its activities to other states. Enjoying a rollercoaster of retail emotions, it was time for a change. So in 2002 Harris Scarfe underwent a branding revamp. They launched their new logo, new signage and upgraded all stores incorporating their dynamic and proud South Australian history.
Fast forward to today and the iconic South Australian retailer has recently relocated to their multimillion dollar flagship store – all 9,600 square metres – located at Rundle Place; a move which demonstrated commitment and investment in the South Australian retail market. Their new digs are comprised of two levels, boasting a fresh look and feel. A contemporary café (note: café, not food court à la the 80s) is situated on level two complete with modern décor and a pop art feature wall – a Ben Frost original. Neon HS signs are prominent behind various counters and there is an 8.2 metre long catwalk, where over 30 fashion mannequins are on display. It’s a visual merchandise paradise.

“There are 120 mannequins positioned throughout the entire store which highlights a real fashion focus for Harris Scarfe – showcasing our latest collections, including our newest addition, Boutique @ HS,” says Harris Scarfe Managing Director Joe Barberis.

The team also enlisted the help of local contributors, with store furnishings sourced from renowned Adelaide furniture, art, and interior specialists Louis Bond and Eureka Antiques. “At Harris Scarfe, we recognise the strength and success of iconic local businesses and have collaborated with them to help create a truly unique and inaugural shopping experience for the South Australian public,” Joe states. But their greatest achievement to date would have to be proudly blowing out 160 candles on their birthday cake, signifying a 160-year relationship with South Australia.

It's the buried treasures that Colin Williams and Mary Kosiak at Adelaide Booksellers hunt for and most enjoy seeing their customers reconnect with. “The treasures don’t have to be valuable, it may just be a title that a customer has been looking for, for a long time,” Colin and Mary told UNIQUE. “We had a lady in the store jumping up and down with excitement because she found such a book the other day.” Situated downstairs in Twin Street, Adelaide Booksellers is a spacious, wheelchair

George and his wife Konnie have formed a strong bond with their customers over 25 years, with hundreds of magazine buffs trusting them to supply speciality publications.
“It's the people we love to connect with, people who love books draw the best out of us.” Adelaide Booksellers, established in 1979, stocks over 30,000 high quality and mostly out of print books. The selection covers a wide spectrum of non-fiction and fiction titles.
“He's a real asset on your table at a quiz night!” Konnie says warmly. George's encyclopaedic knowledge means customers can expect expert advice on their full range of foreign language
magazines, regional and metropolitan newspapers and movies. While innovation and fresh ideas have kept the couple motivated, it’s the traditions that have kept them in business. “In Australia, we still like the feel and smell of a magazine; we like to collect them, you can’t do that on an iPad,” Konnie told UNIQUE. “If you read in bed, you want to hold a book.” Open seven days including public holidays, Rundle Mall Plaza Newsagency also sells Lotto and is a Hallmark Alliance store.

In 2012, he was a national finalist in the Goldwell Colourzoom competition. But the major highlight of his career was, undoubtedly, winning the Goldwell Colourzoom 2013 competition in August this year.

CUE HIS PASSION FOR HAIRDRESSING – AND A SUCCESSFUL CAREER The competition celebrates explosive colour and forward-thinking haircuts in hair fashion, and is a genius way for Goldwell to find the most creative stylists in Australia and globally and allow them to work on future Goldwell collections. Naturally, Daniel was chuffed with his win which landed him a spot in the international finals in LA this October. “Winning Colorzoom was a surreal feeling,” he reveals. “All my hard work over the years has paid off, to the point where I have finally won a national award. It’s given me the chance to work on an international platform and represent Australia for Goldwell.”
A CUT ABOVE THE REST
W
hen it comes to hairdressing, the name Daniel Lepore is what Coke is to the soft drink industry, or MTV is to the Y generation – a household name.

And now, the owner of Symetry Cutters can add Goldwell Colourzoom winner to his achievements, a major coup for both Daniel and Symetry.
“We always strive to give our clients personalised cuts and styles and the best customer service to ensure they have the most relaxing experience within our salon,” Daniel says.
But like Rachel Hunter claimed in that famous shampoo commercial, it didn’t happen overnight – but it did happen.
Symetry Cutters success is also based upon Daniel’s drive to hone in on his craft – and push the boundaries.
Daniel Lepore cut his way into hairdressing when he was 16. While most boys hung out in the Mall or Dazzleland, he often found himself at the salon where both his parents worked as hairdressers, sweeping the floor or cutting the occasional head of hair. Cue his passion for hairdressing – and a successful career.
“I'm always allowing myself to strive for a higher level in the industry I’ve chosen. I believe that a strong foundation from a young age has allowed me to build a solid career in an industry which I have so much passion for,” Daniel quips.

It was Daniel’s directional and creative ‘do (modelled by Rebecca Burgess), complete with sharp lines and bold colours, that secured him the win; a style that was inspired by spring. “Magazines, the internet, and my own imagination often feeds my creativity but this time I got my inspiration through the likes of Vidal Sassoon, the feeling of springtime, watching what happens around the world in hair fashion and fashion culture and from just simply travelling the world and watching people,” he says. And when he’s not winning awards, he’s touring nationally for Goldwell’s road show ‘Cutting into Commercial Reality’, and setting his sights high for his next feat. “My dream is to achieve ‘Hairdresser of the Year’ for the Hair Expo awards,” he concludes. AMAZE YOUR GUESTS WITH HOT RECIPES FROM HOTEL RICHMOND HEAD CHEF AND CULINARY MASTER, STEVEN VAN RIET
SPANISH MACKEREL CEVICHE TART 500g Spanish mackerel (if not available use any other firm white flesh fish) 2 limes 2 birdseye chilli 1 tablespoon coriander ½ teaspoon ginger Sea salt 1 teaspoon castor sugar 1 sheet puff pastry 1 egg Coriander and mint for garnish • Slice chillis in half and remove seeds, then dice the chilli up very finely. Finely slice the coriander, peel and microplane or very finely chop the ginger. • In a bowl combine the lime juice, chilli, coriander, a pinch of sea salt and a pinch of castor sugar. • Remove the skin from the mackerel, then finely dice up the fish and add to the lime juice mixture. Give it a good stir and cover and place in the fridge for around 30 minutes. Pre heat oven to 180ºc. • With a 6cm pastry cutter cut out 20 puff pastry discs, place discs on a baking paper lined tray, whisk the egg in a small bowl and baste each disc with the egg, cook in the oven for around 6 minutes or until golden.
BARRAMUNDI AND PRAWN CHIPOTLE FISH CAKES 500g barramundi 150g SA prawns ¼ bunch coriander ½ tablespoon cumin ¾ tablespoon chipotle powder ½ tablespoon smoked paprika ¾ tablespoon sea salt 10 green beans 2 egg whites Lime for garnish
BUTTERMILK FRIED CHICKEN 4 chicken breasts 2 cups buttermilk 2 tablespoon dried oregano 2 cups cornflour ½ cup flour 1 tablespoon garlic powder 1 tablespoon onion powder 1 tablespoon sea salt Canola oil • Slice chicken breast length ways, 1cm wide.
• Remove skin from barramundi and roughly chop into small pieces, do the same with the prawns, scrape mix into a large bowl.
• In a large bowl combine cornflour, flour, 1 tablespoon oregano, onion powder, garlic powder and seasalt.
• Place barramundi and prawns in a food processor and blend for about 30 seconds.
• Combine buttermilk and 1 table spoon oregano in a medium bowl, add chicken to the mix.
• Place cumin, chipotle and smoked paprika and sea salt in a pan and roast it in an oven at 180ºc for 3–4 minutes. While roasting, finely chop the coriander and green beans and add to the fish mixture stir through till combined. • Whisk the 2 egg whites to a medium peak, fold this through the fish mixture. • Form the mixture into 6cm round discs. • Heat canola oil in a wok or fryer to around 170ºc and carefully place each fishcake in the oil until golden. Garnish fish cakes with some fresh lime and enjoy.

• After the fish has been refrigerated for 30 minutes, lightly stir the fish again and place a teaspoon of ceviche into each pastry dish, garnish with fresh coriander and mint.
• Put canola oil in a wok or deepfryer and heat to around 170ºc. • Transfer chicken from buttermilk mix into the flour mix, make sure to separate the chicken in the flour so it is evenly coated. • Carefully place chicken into the hot oil and with some tongs just lightly move the chicken around to cook evenly. • When chicken is golden remove from fryer into a bowl or tray with paper towel on it. • Serve chicken with a sauce of your choice.
