Australian Prawn Cocktail Ingredients 1 avocado, halved, stone removed, peeled & coarsely chopped 1 Lebanese cucumber, finely chopped 1/2 small red onion, finely chopped 1/2 cup mayonnaise 1 tbs tomato sauce 2 tsp Worcestershire sauce 1 tbs lemon juice 6 drops Tabasco pepper sauce 8 iceberg lettuce leaves 24 cooked prawns, tail on Lemon wedges, to serve

Method

Combine the avocado, cucumber and onion in a medium bowl.

Whisk together the mayonnaise, tomato sauce, Worcestershire sauce, lemon juice and Tabasco in a bowl.

Line each serving glass with 1 lettuce leaf. Finely shred the remaining lettuce leaves and divide among the glasses. Top with the avocado mixture and prawns. Drizzle over the mayonnaise mixture. Serve with lemon wedges.

Mini Passion Fruit Cheesecakes

250g block Philadelphia cream cheese Small tin of passion fruit pulp 2x passion fruits 1x box of passion fruit jelly crystals 1 pack of arrowroot biscuits ½ block of butter

Method Put all of the arrowroot biscuits into a food processor until all the biscuits have crumbled into fine pieces then put in the butter to make it stick then in a separate blow combine all the other ingredients into it mix together afterwards put a small amount of biscuit base into muffin trays then with the combined filling put the mix into the lined trays place into fridge until set.

Chicken with Creamy Garlic and Mushroom Sauce Ingredients 1cup basmati rice 3cups water 1tbs olive oil 4 chicken thigh fillets 1cup sliced mushrooms 1tsp minced garlic

Method Spray baking tray lightly with olive oil, bake chicken for 25 minutes. Meanwhile lightly sautĂŠ mushrooms and garlic for 10 minutes on low in frying pan add cream and simmer for 5 minutes add water to a saucepan and bring to the boil add rice reduce to a simmer remove chicken and place on plates at rice and pour over sauce and serve.
