Spaghetti Alfredo Salad with Lemon Vinaigrette Ingredients: Pasta Butter Parm Salad greens Lemon (For best results, read recipe fully before beginning.) 1) Prepare the ingredients: - Quarter and de-seed the lemon. - Finely grate the parm. - Small dice the butter. - Place salad greens in a serving bowl to be ready to dress at the last moment. 2) Cook the pasta: - Heat a large pot of generously salted water (like seawater) to the boil on high. - Add pasta and boil, stirring regularly, for 9.5 minutes. Drain, reserving 1/2 cup of the pasta cooking water. 3) Make the sauce: - Transfer the 1/2 cup pasta cooking water to a large saute pan. Bring to a gentle simmer, then whisk in butter, one piece at a time, until it is emulsified. - Remove from heat. Whisking constantly, add grated cheese, about 1 tablespoon at a time, until fully incorporated. - Add cooked pasta and a generous grind of black pepper and toss to coat well. 4) Dress the salad: - Combine the salad greens with the juice of the lemon wedges, salt, peper, and olive oil, and gently mix to combine. - Divide the pasta between 2 dishes and serve the salad alongside.
