Pasta with House Bacon Roasted Cauliflower Ingredients: Pasta Bacon Braising greens Cheese Cauliflower (For best results, read recipe fully before beginning.) 1) Prepare the ingredients: - Wash and dry the fresh produce. - Small dice the bacon. - Finely grate the cheese. - Strip the leaves of the braising greens o their stems, and roughly chop. - Cut cauliflower into individual florets. - Heat a large pot of generously salted water (like seawater) to the boil on high. 2) Roast the cauliflower: - Toss cauliflower with olive oil, salt, and pepper. Arrange in a single layer on a pan and transfer to the oven. Roast until browned and tender, but not soft, about 20 minutes. 3) Cook the pasta: - When the cauliflower has about 5 minutes left to cook: Add the pasta to the boiling salted water and cook, stirring occasionally, for 7.5 minutes. Drain, reserving 1/2 cup of the cooking water.

4) Make the sauce: - While the pasta cooks, heat 2 teaspoons olive oil in a large saute pan on medium-high until hot. Add bacon and cook, stirring occasionally, until browned and somewhat rendered, about 3 minutes. - Add prepped greens and season with salt and pepper. Stir well to encourage them to wilt. - Add cooked pasta and reserved pasta water and simmer until liquid loosely coats the pasta. Remove from heat and add grated cheese. Stir well, o the heat, to emulsify the sauce. 5) Finish the dish: - Divide pasta between 2 dishes. Serve roasted cauliflower alongside. Enjoy!
