Steamed Fish and Braising Greens Ingredients: Fish Braising greens Garlic White wine Butter Rice (For best results, read recipe fully before beginning.) 1) Prepare the ingredients: - Wash and dry the fresh produce. - Trim and discard any thick stems from the greens. Thinner stems are fine. Chop into large bite-size pieces. - Using the side of your knife, smash the garlic clove. Remove and discard the papery skin. - Season the fish on both sides with salt. Lay on a paper towel lined plate at room temperature. - Rinse the rice in several changes of cold water. 2) Cook the rice: - In a small sauce pan, combine the rinsed rice with enough water to cover it by about 1/2�. Season with salt. Bring to the boil on high, then reduce heat to low, cover, and cook until all the water is absorbed, about 10 minutes. Remove from heat, remove lid, cover pan with a clean kitchen towel, then replace lid on top. Let sit o of heat for at least 5 minutes (longer is fine). 3) Start the greens: - While the rice cooks, heat 2 teaspoons olive oil in a wide bottomed pan on medium-high until hot. Add crushed garlic and cook for 30 seconds or so, until aromatic and golden brown (be careful not to burn). Add prepped greens and season with salt and pepper. Add wine and 2 tablespoons warm water, cover, and cook until greens are tender, about 10 minutes. 4) Add the fish: - Put seasoned fish on top of greens and dot with the butter. Re-cover and cook until fish is cooked through but not falling apart, about 5 minutes. 5) Plate your dish: - Divide rice between 2 dishes, then top with steamed fish and greens. Enjoy!
