For a truly elevated taste of Summit, the Summit Ceviche
Trio is a refreshing and bright melody of the simple and the complex presented across three unique variations of ceviche. Starring our catch-of-the-day, the Peruvian Salmon Tiradito and the Japanese inspired Nikkei Tuna, each ceviche delivers a burst of their own personality for a fully-rounded taste sensation.

There's nothing quite like a summer's evening here; embraced by the bustling energy of Ristorante del Lago's open kitchen, enjoying a hearty bowl of fresh house-made pasta or a wood-fired pizza, and sinking into the warm atmosphere of Italian hospitality. Looking out across Cheyenne Lake, it's easy to feel transported to the fragrant shores of Lake Como.
The kitchen's “pasta headquarters” are run by three dedicated chefs, all masters of the art. With an authentic understanding of the cuisine and its incredible nuances, the team regularly travel to the finest culinary regions of Italy to find fresh inspiration—from classic, comforting pasta dishes to the delicately crafted Chef's Menu, all paired with a huge selection of Italian wines.
Our Italian producers ensure diners experience the very freshest ingredients. Pio Tosini supplies the delicately sweet Prosciutto di Parma from their family business, the Serra family in Emilia Romagna raise the cows for our delicate ParmigianoReggiano Valserena, and the lively, peppery olive oil that brings such a unique finish to our cuisine comes from Castello di Arna. Our guests would also insist you try the Pollo Arrosto ½ Green Circle Chicken; slow roasted over “nothing goes to waste” potatoes that catch the chicken's delicious juices as they cook—but please, of course, leave room for the homemade gelato.

To let the good times really roll, Play is the place. Serving up great entertainment, sharable snacks, a range of games and a delightful feast of family favorites in a lively setting of cool retro vibes, this fun-filled bowling alley and restaurant concept is a great night out for the whole family.
While the more energetic among you take on the bowling lanes, the dining room's playful attitude keeps the sport theme going and offers a more “adult” version of our milkshakes alongside a range of Colorado microbrews, wines, and spirits. Here you can keep an eye on the bowling from a happy distance while never missing out on the fun.
Working up an appetite is easy and can be quickly satisfied from the menu of Americana classics, such as our signature Play
Nachos, the Colorado Wagyu burger, or the ever-popular charcuterie and pretzel board that bursts with flavor from a selection of salumi, pickles, and warm, salted pretzel rolls. With the clue most definitely in the name, Play is a highenergy destination for family gatherings, private functions, and memorable nights out.

Starring an abundant menu of American grill favorites to be savored with the breathtaking mountain views, The Grille celebrates great sport and fresh food with equal relish.
From the Old Derby Cobb Salad to our beloved burger, this is the sort of menu you need to keep coming back to, time and time again, to make sure you've tried everything at least once.
If the menu is offering you too much choice, may we recommend a couple of house favorites? A club classic is the Breast of Colorado Chicken Picatta; locally-raised chicken medallions lightly breaded, pan-fried with butter, white wine, lemons, and capers and served with fresh house spaghetti. And no visit would be complete without trying The Broadmoor Signature Pepper Steak. The recipe was created by Louis Stratta, the first chef of The Broadmoor, and is loved as much today as it was back then. The Grille? It's a great tradition.
