With an incredible range of breads and pastries made daily by our own bakers, and a huge menu that stretches from the buffet to our Rocky Mountain classics, every breakfast can be a different experience that sets you up for whatever the day may bring.

Not to be missed is our beloved Sunday brunch, also served at the Lake Terrace Dining Room, and offering a famously extensive menu gently accompanied by a pianist. The raw bar, serving a refreshing selection of seafood, is just one of 12 chef-attended stations making sure that every appetite—from prime rib to delicate pastries—is catered for. (We find it all best enjoyed with a glass of champagne.)

In July, most of us are busy planning outdoor barbecues and picnics. But The Broadmoor’s executive pastry chef Franck Labasse is already working on his signature Christmas treat: panettone.

The domed sweet bread is a tradition on Italian tables in December, with a reputation among bakers as one of the most challenging breads to perfect. Labasse has spent years mastering the technique behind the labor-intensive dessert. “Anything can go wrong at any time, and due to its delicate and airy texture, it is very hard to make perfect,” he says.

For those who have only ever sampled panettone from a big-box store, Labasse’s artisan version—flavored with either citrus or chocolate hazelnut praline—is a revelation. The Broadmoor’s panettone begins in July with the creation of a sourdough starter, or levain, which is refreshed daily for months until sufficiently strengthened. Come the holiday season, the levain is mixed into a sugar- and egg-enriched hand-cut, prime steaks, chops, and rib is a clear reminder of why this is known as one of the most legendary steakhouses in Colorado. But, the extensive wine list, fascinating cocktail collection and fresh seafood bar ensure La Taverne is also so much more than just a great steak dinner. With a choice of either the elegant main dining room or the airy Le Jardin Room creating a wonderful experience for any occasion, La Taverne's subtle French influence adds an edge of the sophisticated to every dish. The seafood tower, including Maine lobster, Dungeness crab cocktail, oysters and jumbo prawns is a perfect, sharable start to the meal, and our warm, freshly baked bread is, in itself, enough of a reason for many to keep coming back. dough, which rises over the course of multiple proofs (a three-day long process) before it’s finally ready to bake. Upon removal from the oven, the bread is hung upside down to prevent any loss of its signature height before it is beautifully packaged to sell at Café Julie’s, The Broadmoor’s jewel of a sweet shop located in Broadmoor Main.

While Labasse’s panettone is only available from December 1 through January 1, the Broadmoor’s team of 50-plus pastry chefs and bakers make everything (yes, everything!) at the resort fresh daily. From burger buns and dinner rolls to petite gâteaus and macarons, every baked good on campus is homemade on-site. Want to see some of that confectionary prowess in action? Golden Bee RAISING A GLASS OF GOOD CHEER LUNCH AND DINNER

For centuries, the historic English pub has been the happy heart of the community; not just a place for drinking but a social gathering point for friends and families—and the Golden Bee is no exception. A hearty gastropub menu served with famously laid-back British charm welcomes everyone into this convivial and lively embrace where friendships are formed and quite a lot of beer is enjoyed.

The Golden Bee is an authentic 19th century English pub that arrived, panel by panel, at The Broadmoor in 1961. The result is an authentically cozy atmosphere of warm woods and traditional craftsmanship, perfectly recreating the impressive “palaces to drink” that form such a comforting part of people's lives.

Of course, our fish and chips with house-made beer batter are hard to beat, especially when devoured on the rooftop patio, but the mouth-watering selection of Golden Bee menu favorites, such as the hot pastrami sandwich, will suit any appetite, whether you choose to wash them down with a yard of ale, or while singing along to the nightly Ragtime tunes on the piano. Colorado's most majestic series of waterfalls, Seven Falls, is the setting for this dining adventure. The thunder of falling water adds a spectacular element to the already remarkable experience, where the cuisine takes inspiration from the region's traditional heritage of early frontier cooking to create a seasonal menu of uniquely Colorado dishes.

This unforgettable restaurant sits at the base of the falls, designed to integrate beautifully into its surroundings, and, in addition to the main dining room, an outdoor patio offers guests the choice to dine even nearer to the cascading waterfall with breath taking views of the canyon.

The kitchen's centerpiece is the wood-burning grill, tempting the senses with the warm and seductive aromas of the menu where choices range from local rainbow trout and bison burgers to the signature wild boar green chili. This is also home to the epitome of Colorado cuisine; our mixed grill featuring bison, jumbo Texas quail, and venison sausage all served with heritage corn Anson Mills grits and Broadmoor Farms pole beans. If that's worked up a thirst, the bar features a well curated selection of Colorado craft beers and prohibition era cocktails, including our Moonshine Mule made with locally produced, awardwinning 291 Fresh Moonshine Whiskey, lime, and ginger beer. 1858 is open during park hours for a la carte lunch & Prix Fixe Dinner.

WILD BOAR GREEN CHILE

Chef Miller recommends obtaining fresh fire-roasted green chiles instead of the canned varieties on grocery store shelves for the best flavor.

1 LB. TOMATILLO (PEELED AND CUT IN HALF)

5 GARLIC CLOVES

1 YELLOW ONION (PEELED AND CUT IN QUARTERS)

1 POBLANO PEPPER (SEEDED AND CUT IN LARGE DICE)

1 JALAPEÑO PEPPER (SEEDED AND CUT IN CHUNKS)

VEGETABLE OIL

SALT AND PEPPER

2 EARS OF FRESH CORN (GRILLED AND CUT)

1 LB. OF ROASTED HATCH GREEN CHILES

1 LB. GROUND WILD BOAR (OR GROUND LAMB OR BEEF)

1 SPOON CUMIN SEEDS (TOASTED AND GROUND)

2 CUPS OF WATER OR CHICKEN STOCK TORTILLA CHIPS (ABOUT A HANDFUL, CRUSHED)

1/3 BUNCH CILANTRO (ROUGHLY CHOPPED)

1 TSP OREGANO (ROUGHLY CHOPPED)

1 LIME (JUICE AND ZEST)

1. Preheat oven to 450°. Combine tomatillos, garlic, onions, and peppers on a sheet tray. Add a drizzle of oil, salt, and pepper and roast for about 30 minutes. Combine with remaining vegetables.

2. Add oil to a pot over medium heat and start browning the wild boar. Season with salt, pepper, and cumin. Add water or chicken stock and mixed vegetables. Let simmer for 15 minutes. Add tortillas and simmer for an additional 5 minutes, or longer, if you like. Add fresh herbs and lime juice and season to taste before serving.
