LOCATED LESS THAN A MILE FROM THE BROADMOOR, SEVEN FALLS is one of Colorado’s must-see destinations, with seven tiers and 181 feet of cascading waterfalls situated in Cheyenne Canyon among stunning rock formations and sparkling streams.

Now that Restaurant 1858 at Seven Falls has reopened, visitors have another reason to plan their trip. “We’re thrilled to bring this unique concept back to the Seven Falls experience,” says Executive Sous Chef of Restaurants Justin Miller.
The restaurant’s dining room is positioned at the base of the falls alongside a trout stream, and its design, inspired by America’s National Park architecture, is a nod to the gold-rush history of the region. Whether you dine alfresco on the covered patio or inside the cozy, window-lined dining room, expect a picturesque backdrop for your meal.
In keeping with Seven Falls’ scenic western surrounds, Restaurant 1858’s menu focuses on Colorado cuisine. The wood-fired grill is the centerpiece of the restaurant. “Many of our ingredients make their way across that grill before landing on a guest’s plate,” Miller says.
Those ingredients include Colorado Rocky Mountain Red Trout, harvested from pristine waters in nearby Lost Creek Wilderness. The locally sourced fish is featured in seven different preparations on the prix fixe dinner menu, from Cast Iron Classic to Crispy Southern Fried.
The 1858 Wood Fired Mixed Grill also showcases traditional game proteins that would have been enjoyed by Pikes Peak miners, including a Colorado bison kabob, venison port cherry sausage, and quail. Those who worked up an appetite hiking to Inspiration Point will appreciate the restaurant’s vibrant Hiker’s Salad, which showcases The Broadmoor’s farm-grown kale, marinated roasted beets, carrots, blueberries, granola, and an açai-pomegranate vinaigrette.
Restaurant 1858 is open seasonally for lunch and dinner, and its hours and menus vary throughout the year. Also be on the lookout for Falling Waffles, open seasonally and offering Broadmoor Creamery ice cream and a variety of toppings served in freshly made bubble waffle cones.
