Side Project Cellar

Before Side Project Brewing launched, making beer was truly a side project for Karen and Cory King. Their passion for barrel aging and experimentation led to a successful line that includes saisons, wild ales and ales aged in spirit barrels.

The brewery complex has a tasting room that’s open on the weekends, but Side Project Cellar, located a few blocks to the east, is the company’s everyday taproom. The focus is on craft beers, wines and whiskeys. Every afternoon it fills with the sounds of lively conversation and the aromas of hops, malt and yeast. (But not food— the Belgian-inspired beer bar avoids crosscontaminating smells.)

The prolific brewery’s offerings include seasonal beers and blends. Side Project Cellar sells some in bottles to go and many more on draft. Each one is served at the optimal temperature and in the correct glass, as befits beers that may have been aged for years and naturally conditioned in the bottle for months before finally making it to the public. There are also scores of ales and whiskeys from around the world. Since the brewers always have multiple collaborations going and new beers are being released regularly, be sure to ask for tips from the staff when ordering. The short wine list features producers and styles with interesting backstories too.
