Welcome to Ipswich’s Food & Drink Forknight. What a fantastic way to celebrate all that’s great about the town’s food and drink offering. Forknight kicks off with a Food & Drink Market on Orwell Quay on 17th-19th May featuring a line-up of regional, national and international hot and cold foods, a beer festival offering beers and ales sourced from local brewers and wine tastings. I’ll also be cooking up some tasty dishes in the ‘demonstration kitchen’ at the Food & Drink Market on 19th May alongside some of the region’s top chefs who will share their knowledge and offer some great ideas for visitors to take away and try at home. With a full programme including pub quizzes and a live music stage, it’s not only an event to tickle the taste buds, but one which
offers great entertainment for the whole family. Forknight is a wonderful way of showing visitors the many culinary delights that Ipswich has to offer. It’s great to see businesses working together to produce unique value-for-money menus to showcase the quality and variety of their food and drink offer and provide great incentives and discounts for both locals and visitors alike. I’m delighted to be a part of this Forknight and I’m very much looking forward to sampling the best that Ipswich has to offer.

Ed Baines is celebrity chef and co-owner of Randall & Aubin, the champagne and oyster bar in Soho, London. His television programmes include Lunch with Ed Baines and ITV’s Ed Baines Entertains. He was one of the judges on ITV1’s hugely successful Britain’s Best Dish; which went onto its sixth series and regularly drew in viewing figures in excess of 2 million. As well as being a regular on Lorraine for ITV1; Ed also appeared on Taste the Nation and co-presented BBC Great Food Live. Ed has several new shows for 2013, including Country Show Cook Off on BBC2.

The Anchor Bakery Bread The Anchor Bakery supplies a number of top Ipswich restaurants and delis with the delicious bread that you enjoy with your meals. As part of Food & Drink Forknight, head baker, Mark Wade has agreed to share his secrets for making the perfect white loaf.

Ingredients:
Stage 3: Kneading!
1 kg strong bread flour
Simply push, fold, slap and roll the dough around, for 4/5 minutes until you have a silky and elastic dough.
625 ml tepid water 3 x 7g sachets dried yeast 2 tablespoons sugar 1 level tablespoon fine sea salt Flour, for dusting
Stage 1: Making a well Pile the flour on to a clean surface and make a large well in the centre. Pour half the water into the well, then add the yeast, sugar and salt and stir with a fork.
Stage 2: Getting it together Slowly bring in the flour from the inside of the well, being careful not to break the walls of the well. Continue to bring the flour into the centre until you get a stodgy, porridgey consistency – then add the remaining water. Continue to mix until it’s stodgy again, then you can be more aggressive, bringing in all the flour, making the mix less sticky. Flour your hands and pat and push the dough together with all the remaining flour.
Stage 4: First prove Flour the top of your dough. Put it in a bowl, cover with cling film, and allow it to prove for about half an hour until doubled in size.
Stage 5: Second prove and shaping Once the dough has doubled in size, knock the air out for 30 seconds by bashing it and squashing it. You can now shape it then leave it to prove for a second time for 30 minutes to an hour until it has doubled in size once more.
Stage 6: Cooking your bread Ensure you preheat the oven to 180°C/350°F/gas 4. Gently place your bread dough on to a flour-dusted baking tray and into the pre-heated oven. Don’t slam the door or you’ll lose the air that you need. Bake for 25-30 minutes or until golden brown. Cool for 30 minutes, then enjoy!

Every time we open the paper or look online you seem to have won an award for something. What has been your proudest accolade?
Aqua obviously means ‘water’ and in Chinese culture, water plays an important part in Feng Shui. Indoor fountains with flowing water are thought to diffuse any negative ions into the air, bringing better luck. So we have two fountains at Aqua Eight and the water brings us lots of good energy. The number eight is the Chinese lucky number associated with ‘prosperity and wealth’.
Yes, it’s been fantastic! In the first year we opened, Aqua Eight won ‘Suffolk Restaurant of the Year’ and that was a really great starting point as it gave us the confidence to enter other national awards. However, one of the highlights was being voted Runner Up in the 2011 Observer Food & Drink Monthly awards, in two categories (“Best Place to Eat” and “Best Place to Drink”). Winning national awards isn’t
just about patting ourselves on the back, it’s about helping to place Ipswich, and independent family-owned restaurants, on the culinary map of the UK.
What is the restaurant’s most popular dish? It has to be the renowned seafood mixed hors d’oeuvres (which includes scallop truffles, salt and pepper squid, tempura prawns, crayfish rice rolls and crab & prawn katsu). Every week our chefs make hundreds of these!

All About Ipswich asks him some quick questions... Why Aurora? I was really keen to come back to the local area and bring with me the knowledge that I’ve acquired from cooking all over the world. Aurora appealed as I could start at the beginning of this venture and help steer its success. What influences your cooking?
Aurora is one of Ipswich’s newest dining destinations. Serving modern British cuisine and becoming renowned for its wide array of cocktails, Aurora offers unrivalled waterfront views with a laid-back, yet luxurious atmosphere. The man behind the food at Aurora is 28 year old head chef, Stuart Drane. Stuart has worked as a chef for over 10 years, all over the world. His culinary history includes time spent at ‘Arbutus’, the Michelin starred restaurant in London’s Soho, Auckland-based ‘The Grove’, and most recently ‘Russells of Broadway’, which boasts 2 AA Rosettes.
Seasonality is key for me. At Aurora, we change our set menu on a daily basis and refresh our A La Carte menu every four weeks. How do you decide what to include on this ever-evolving menu? I’m in constant discussions with our trusted local suppliers and am happy to be guided by their instincts and knowledge about what is good for the week ahead. Chocolate Delice with Pear Sorbet
For the adventurous chef within
Ingredients:
Base 30g toasted hazelnuts 50g caster sugar 10g toasted oats 20g caramelised butter Topping 50ml milk 130ml double cream 2 egg yolks 140g dark chocolate Sorbet 100ml pear puree - boiron or similar quality. 20ml glucose A little olive oil and salt to finish.
For the delice base: Make a praline by adding the sugar to a pan with a little water and boil until a golden brown colour. Add the toasted nuts and pour into a greased tray to cool. When set firm, blend
the praline to a fine crumb and add the toasted oats. Add the caramelised butter at this stage and set in a suitable mould.
For the delice topping: Bring the milk and cream up to boil in a pan. Remove from the heat and whisk in the yolks. Then slowly stir in the chocolate until it has dissolved completely. Pour this onto the base which you have already made.
For the sorbet: Heat 20ml of water with the glucose syrup until dissolved. Add to the pear purĂŠe and freeze either in a plastic container stirring every 5 minutes until set or put into an ice cream maker until light and fluffy. Keep a little of the puree and the blended praline to place on top of the delice.

As Catharine Jones from the popular Saints cafÊ and coffee shop on St Peter’s Street explains, even though she has an amazing coffee machine on her premises she does not have such a luxury at home. Here is her step-by-step guide to using a domestic machine to ensure good coffee at all times!
Making the perfect espresso Always use finely ground coffee.
Adding coffee to your espresso machine A good coffee machine will do the measuring for you - fill with fresh ground coffee – my favourite is Illy. Otherwise use 7g for a single espresso. Tamp it down to allow a barrier for the water to filter through. Place cup underneath. It’s usually just a question of pressing the relevant button and within 30 seconds you will have a strong black espresso ready for customising or for that instant pick me up!

Fill a small metal jug around one third full of milk - anymore and things will get messy! Turn on the steam pipe and hold the jug underneath, allowing steam to blow into the milk.
