In this winter edition, we take a look at Jamie’s Farm, a wonderful Wiltshire charity transforming the lives of vulnerable inner city children. Over on page 18, RAW Biogas Ltd are proposing construction of a Biomethane Injection Facility, which would provide enough renewable gas for 2500 homes, made exclusively from crops and farm waste. We look ahead to 2016 with the Bradford Roots Music Festival on the 16-17th January. This two day event held at the Wiltshire Music Centre promises to beat the January blues, it celebrates the very best of musical talent and community creativity.

Transforming Lives

amie’s Farm transforms the lives of vulnerable inner-city children, at risk of social and academic exclusion, through a unique residential experience combining 'family, farming and therapy'. Children are involved with the running of their working livestock farms, in either Wiltshire or Herefordshire, and take part in farming, cooking, gardening, carpentry, log chopping, and horse care. The week is punctuated by 1:1 and reflective group sessions, and in order to ensure their impact is sustained, they provide a followup programme with schools and training for visiting staff. The charity was set up by local resident, Jamie Feilden, who found that taking lambs into the disadvantaged Croydon School he was teaching at, considerably improved the behaviour, attendance and positive relationships of his most ‘at-risk’ students. In 2006 with the help of his mother Tish, a trained Psychotherapist, Jamie brought various groups of children to his family farm in

Through their approach, Jamie’s Farm provides an innovative, preventative solution to the number of children permanently excluded from education and the long term cost of this to society and themselves. Mum’s Christmas Appeal for Julia’s House four years we had with him were so precious.

he mum of a brave little boy who died as a result of a rare genetic disorder is appealing for people to support Julia’s House this Christmas in memory of the care he received from the charity. Samuel Monk‘s condition meant he suffered from seizures that were frequent and often severe. He wasn’t expected to survive until his first birthday, but proved to be a real fighter. Now, on the first anniversary of Samuel’s death, mum Zoe has paid tribute to the support the whole family received from Julia’s House by telling her story for its Christmas appeal. Said Zoe: “He gave us four years – four birthdays, four Christmases. And that was more than we had ever hoped for. The

I hope this Christmas people will remember Samuel and all the brave, special children who have to endure so much every single day.” Zoe is hoping the money raised will support more families like hers who would struggle to cope without the practical and emotional help of the Dorset and Wiltshire children’s hospice charity. Julia’s House nurses and carers looked after Samuel at the hospice and at his home in Corfe Mullen where he received regular respite. Zoe, her husband Chris and Samuel’s little brother Toby also joined many of the social events organised for families. “Julia’s House were there for us right from the start – and were there for us at the end. “I hate to think what life would have been like without Julia’s www.alocallife.co.uk

House,” said Zoe. “The isolation would have been unbearable. When you have a very sick child you spend an awful lot of time at home, unable to go anywhere or see anyone. “Julia’s House was such a crucial part of our world when Samuel was here. It was so important to us that Samuel went to Julia’s House after his death. “ In her appeal Zoe describes how the nurses and carers read stories and played music to Samuel and made prints of his hands and feet as keepsakes. “The nurses cared and nurtured him after he passed away and continue to hold our hands even now. Community festival brings music, light and laughter to the depths of Winter The fabulous Bradford Roots Music Festival returns to Wiltshire Music Centre on 16-17th January 2016 with two days of live music and hands-on activities for all the family. Raw Biogas - Charlton Park Farm

AW Biogas Ltd are proposing the construction of a Biomethane Injection Facility on Charlton Park Estate, Malmesbury, Wiltshire. Using advanced anaerobic digestion technology, the proposed project will use only agricultural crops and farm waste to provide sufficient gas for 2,500 average homes. All of the gas produced will be carbon neutral which would save the equivalent of 8,500 tonnes of carbon being released into the atmosphere. RAW are a modest firm with a team of seven experienced renewable energy developers and are based near Burford in Gloucestershire. RAW held a public consultation for local people to come and find out more about the proposal on Monday 23rd of November at The Horse Guards public house in Brokenborough. Up to 40 local people came and met with the three company representatives

and the Farm Manager from Charlton Park Farms, to look at the plans and our information boards. ver 400 people in the Malmesbury policing area have signed up to receive free messages about local police and crime matters. Anyone who lives in Wiltshire can sign up for free messages too by email, text or voicemail by joining Wiltshire and Swindon Community Messaging. beef wellington “An impressive alternative to the Sunday Roast” METHOD 1.

For the mushroom duxelle, heat the butter and vegetable oil in a frying pan. Once hot, add the chopped shallots and fry, stirring all the time, for two minutes. Tip in the chopped mushrooms. Reduce the heat a little and continue stirring and cooking for about ten minutes until the mushrooms are softened and their liquid has evaporated. Stir in the cream and cook for a further two minutes, then remove from the heat and leave to cool. For the Wellington, heat the oil in a frying pan over a high heat. Season the fillet all over with salt and pepper.

Once the oil is smoking, add the beef and fry on all sides until browned. Remove and leave to cool. (NB. Don’t wash up the pan. Use this to make the Madeira and port reduction later.) 3.

Place the crêpes onto the work surface, one layer thick, but overlapping - you need to create an area about twice the thickness of the fillet, and about 2.5cm/1in longer at each end. Spread the mushroom duxelle over the crêpes. Lightly pat the fillet with kitchen paper to remove any excess moisture, before placing the meat on top of the duxelle. www.alocallife.co.uk

Carefully roll the side closest to you over the meat encasing it within the crêpes and mushrooms. The crêpes should cover the meat on all sides, trim off any excess.

Place wrapped fillet onto a sheet of clingfilm, wrap up tightly into a cylinder. Set aside in the fridge until completely cold, about half an hour.

Meanwhile for the potato dauphinoise, preheat the oven to 150C/300F/Gas 2.

Rub the inside of a deep baking dish or casserole with the raw garlic.

cream and season. Stir to coat the potatoes, then lay them evenly in the garlicky baking dish. 10. Cover the dish with foil and bake in the oven for 30 minutes. Remove the foil and cook for a further 20-30 minutes while you prepare the Wellington. 11. Roll the pastry out on a well-floured surface to a rectangle with a thickness of about 3mm. 12. Brush the pastry with beaten egg yolk. Remove the clingfilm from the beef fillet and place onto the middle of the pastry. 13. Wrap the pastry up over the beef fillet. Lightly stretch one edge of the seam so that it is not too thick, then press down firmly to seal. 14. You should be left with a tube that is open at either end. Lightly press the ends of the pastry together using a rolling pin to seal and thin the two pieces. Then with a small knife, trim the edges on each side to form a triangle shape. Brush the triangle of pastry with a little egg and press it up against the side of the Wellington. Repeat with the other side before flipping over so that the Wellington is seam-side down. 15. Place your Wellington onto a baking tray, brush with the remaining egg yolk set aside in the fridge to chill for 5-10 minutes.

16. Increase the oven temperature to 180C/350F/ Gas 4 (the dauphinoise should remain in the oven).

17. Remove the Wellington from the fridge and score a pattern of your choice onto the top.

18. Place in the oven with the potatoes dauphinoise and bake for 25 minutes. Remove the Wellington from the oven and leave to rest for 10 minutes. This should give you a perfectly pink finish to your meat. If you prefer it more cooked, then leave in the oven for longer, but you must ensure the meat is well rested. 19. For the Madeira and port reduction, heat the butter in the same pan in which you cooked the beef fillet over a medium heat. Once bubbling, add the shallot and fry for 3-4 minutes, or until softened.

For the mushroom duxelle 25g/1oz butter 2 shallot, finely diced 8 chestnut mushrooms, chopped 2 tbsp cream For the Wellington dash vegetable oil, to fry 1.2kg/2lb 12oz beef fillet salt and pepper, to taste 3-4 crêpes (you can use readymade) 225g/8oz ready-made puff pastry 2 free-range egg yolks, lightly beaten For the potato dauphinoise 1 garlic clove, halved 1kg/2lb 4oz waxy spuds, peeled and very finely sliced (preferably on a mandoline) 500ml/18fl oz double cream

20. Increase the heat and add the port and Madeira. Simmer until the volume of liquid has reduced by half and then add the stock. Reduce again by half. When the sauce has a thick, syrupy consistency, strain through a fine sieve. Stir in the truffle peelings and keep warm until ready to serve.
