Where real fruit pieces have never been before The new Mini’s, tiny real fruit pieces from Taura, open a new world of opportunities in bakery and confectionery By Taura Natural Ingredients Taura Natural Ingredients’ Mini’s are an innovative range of extremely small real fruit pieces developed to enable food manufacturers to add the benefits of real fruit to applications where it has not been possible before. The demand for very small real fruit pieces is increasing across the world and can be attributed to health-conscious consumers seeking indulgent products with fewer calories so that they can enjoy snacking without feeling guilty about it. Mini’s are as tiny as a grain of quinoa and are suitable for use in fine bakery and confectionery applications such as ultra-thin biscuits and premium thin chocolate tablets. Mini’s are also great as topping on donuts and muffins or as inclusions in desserts, adding flavour, aroma and a soft chewy texture. Lib20 V2 is a new unique liquid injection and tumbling mix which is completely e-number free. This unique product is new within the market and has the distinctive feature that it does not contain any allergens. The product can be injected or tumbled at a rate up to 30% and has been developed for use in the processing of fish, poultry and meat products.
Lib20 V2 has a pH enhancing function and as a result it has a positive influence on the water retention properties of proteins. Positive EFSA evaluation of BENEO inulin The positive EFSA evaluation on 13.5 health claim for BENEO’s inulin improving bowel function opens the door for new foods and beverages that support digestive health By BENEO BENEO is pleased to announce that based on a 13.5 health claim application it has gained a positive EFSA evaluation for its prebiotic fibre inulin improving the effect on bowel function by increasing stool frequency. The application includes new and proprietary scientific research. EFSA’s positive evaluation allows the approval by the Commission, the Member States and the European Parliament within the health claim procedure and paves the way for new food and drink applications to benefit the industry as well as consumers. The recent positive evaluation proves that BENEO’s prebiotic fibre inulin maintains normal bowel function by increasing stool frequency without triggering diarrhoea. This is because inulin resists digestion in the small intestine and is fully fermented in the large intestine. EFSA’s decision is based on six human intervention studies that have consistently proven that consumption of inulin increases stool frequency and
thus supports digestive health. Significant results were demonstrated with a total intake of 12g per day. While the recommended daily intake of dietary fibre is 25g per day and actual intake is significantly lower, the positive evaluation shows that adding inulin to a formulation improves stool frequency and also helps to achieve the dietary goal of adequate fibre intake by the general population.

This sugar is obtained from a White Grape Juice Concentrate where only the sugars and the water of the fruit are kept and making labelling such as “without sucrose added” and “100% extracted from fruits” possible. FructiSweet Original® BIO has the composition of sugars (fructose, glucose, sucrose and sorbitol) naturally present in the fruits. In this range of products, Nutritis offers Apple Sugar which allows obtaining for example products “100% from Apple”.
THE MULTI-FRUITS (Sugars Extracted from Fruits) FructiSweet® BIO (50-60 and 75) are standardised products taking care of the quality and the price aspects of the liquid sugar solutions. These solutions of glucose and fructose coming from fruits only (apple and grape) are tailored to the customer’s needs and process.
Natural fruit sugars from organic source The fructose has a very high sweetening power, so the more fructose you use, the less sugar you need to add to your product. The solutions are at 70 brix because the fructose does not crystallize at this level (contrary to glucose). As the rate of various sugars is controlled, the FructiSweet products always have the same characteristics independent of the quality of the harvest. Finally, as we can switch from one fruit to another, the price of these sugars does not depend on the market of the fruit, which for grapes can be quite unstable and for apples very unstable. At the moment, the most popular FructiSweet is the FructiSweet 50 which is exactly the same product as a Rectified Grape Juice Concentrate apart from the fact that it is not produced from grape. This is interesting because grape prices can vary quite a lot whereas this product has a much more stable price. FructiSweet 50 is also available in the organic version. FructiLight® BIO (FructiSweet®95 BIO) has the lowest Glycemic Index of the calorific sweeteners on the market (GI=11.9) and thanks to the patented process it only contains

fructose from fruits (contrary to other types that are from corn). FructiLight BIO has a sweetening power higher than sucrose, so decrease of quantities means decrease of calories. The product has a very high purity (no flavour), it is very stable, has excellent organoleptic properties and is without GMO, gluten or allergens.
Labelling All Nutritis sugars allow the mentions “100% from Fruits” and “Natural Fruit Sugars” on the front packaging. It is also possible to claim the low calories/sugar content with FructiSweet 75 and 95 and low GI with FructiSweet 95. Article 288
