Holiday Traditions That Tie Us Together
Across the world, we celebrate a wide variety of special holidays and festivals during the winter months. Some of our cherished traditions may seem isolated to specific communities yet are shared and inspired by others. Here are just a few examples of how our cultures are connected.
THE CHRISTMAS NUTCRACKER
The famous wooden nutcrackers originated in Germany in the 18th century, and once many German families had one in their homes, toymakers had to look elsewhere to sell their wares. These merchants traveled to a variety of countries such as Norway, Poland and eventually Russia, inspiring Russian composer Pyotr Ilyich Tchaikovsky’s world-renowned holiday ballet, The Nutcracker.
Bring back an authentic German nutcracker as a fun souvenir or holiday gift from your Christmas Markets cruise along the Rhine or Danube rivers.
THE KWANZAA KINARA
When activist Maulana Karenga first brought the Kwanzaa holiday to life, he searched for a candleholder with seven slots, one for each of the seven principles (Nguzo Saba) such as umoja (unity) and kujichagulia (self-determination) that Kwanzaa celebrates. Unable to find one, he instead repurposed a Hanukkah menorah, creating a unique connection between these two holidays.

THE HANUKKAH DREIDEL
Many different stories have been told to explain the origins of the popular dreidel game, one of the most famous customs associated with Hanukkah. In fact, the top was adapted from a game called totum (or teetotum), which was most frequently played during the Christmas season celebration.
During our Holiday Cruises, you will see a menorah on each of our ships and hear newly added Hanukkah songs within the ambient music played on board. Our Holiday Traditions On Board
Here are a few of the special ways that our Cruise Managers bring their own ways of celebrating during our winter Holiday Cruises.
Cruise Manager Kata: If I have a Christmas Markets cruise in December, I always bring an Advent calendar. For each day of the cruise, there is a little something in it. I hide a little Santa, and whoever finds it each day will have a chance to open the calendar and get the present inside.
Cruise Manager Martina: One of my favorite traditions is the Wishing Christmas Tree, which is believed to grant the deepest desires of those who place their wishes on it. Guests also love it because they also hang their gratitude alongside their wishes on its branches. It is always a very beautiful moment!
Cruise Manager David: During Christmas Markets cruises, I hide an “Elf on the Shelf” every day with some funny set-up. I also have a twist: I tell guests that if they find the elf, they can feel free to hide it themselves and come up with some fun of their own.

An Interview with AmaLucia’s Captain Henk
Henk joined our AmaWaterways family in 2009 and has captained eight ships in our award-winning fleet. Warm and welcoming with his signature Dutch accent, he is beloved by guests and crew alike. Here is a little more about the captain of our beautiful AmaLucia.
WHAT INSPIRED YOU TO BECOME A RIVER CAPTAIN?
Captain Henk: I am a proud fourth generation river captain. I was born in Hasselt, Netherlands— literally on my parents’ cargo ship, the Alpha, where I grew up. From an early age I knew this is what I wanted to do. It’s in my blood!
IN YOUR OPINION, WHAT IS THE MOST BEAUTIFUL DESTINATION WE VISIT?
Henk: Each river has its own charm. The Rhine with its castles. The Danube with three European capitals. The Moselle with its vineyard-covered mountains. And Tulip Time cruises to see all the colors in the tulip fields.
IN WHICH SEASON DO YOU MOST ENJOY CRUISING THE RIVERS AND WHY?
Henk: I prefer the summer when the weather is nice. But also, December has something special when the ship is fantastically decorated for Christmas—and every day there is a different Christmas Market.
YOU HAVE A HARD-TO-MISS COLLECTION OF RUBBER DUCKIES IN YOUR WHEELHOUSE. APPROXIMATELY HOW MANY DO YOU CURRENTLY OWN AND HOW DID YOUR COLLECTION START?
Henk: It started in 2015 with a rubber duck that was given to me by one of the Cruise Managers. Now I have around 300— and not one was purchased by me. All the ducks have been given to me by guests and crew.
AmaInsider Tip: If you’re a collector like Captain Henk, Amsterdam has multiple rubber duck stores located throughout the city!
DO YOU HAVE ANY MEMORABLE STORIES FROM YOUR YEARS WITH AMAWATERWAYS ON THE RIVERS?
Henk: In 2013 on board AmaLyra, we had a couple on board who were celebrating their honeymoon but due to extenuating circumstances, they were not actually married yet. Together with Cruise Manager Nick, we figured we would marry them on the last night in the Main Lounge in the company of all the guests. We asked the husband ahead of time and he thought it would be fantastic, but it was a complete surprise for his wife, and she was very moved.
HOW DO YOU SPEND YOUR FREE TIME WHEN YOU ARE NOT ON BOARD AMALUCIA ?
Henk: I am always traveling around the world. I have done some ocean cruises this year, one through the Norwegian fjords. It was fantastic, but with 2,600 guests on board, it was a bit too much for me. I prefer the smaller ships where I can connect with the guests.
WHAT ARE YOU MOST LOOKING FORWARD TO ON THE RIVERS IN 2025?
Henk: Every day you see something different on the rivers, but I am looking forward to cruising to Giethoorn, a new stop on our Tulip Time cruises that I thought of together with my AmaWaterways colleague Sonia. It is really nice that AmaWaterways is open to the ideas of their guests and crew. Giethoorn is about 15 minutes by car from the city where I live now, and I like the fact that I can share my little corner of the Netherlands. However, the best part of cruising each year is meeting all the new guests.

Throughout August and September, we asked guests who actively participate in our Loyal Guests (Official) Facebook Group about the most powerful sensory experiences they had while river cruising with us. The results of our polls—and some exceptional destinations to consider for your next AmaWaterways journey—are listed below.
THE MOST AROMATIC CITY: BUDAPEST, HUNGARY
While we recommended the scent of lavender from Provence, rich spices from hot mulled wine in Rüdesheim and the mouthwatering aroma of Belgian chocolate in Brussels, the clear winner in our poll encompasses both sides of the Danube River. More guests preferred following the scent of “warm sugar from freshly baked chimney cakes in Budapest” than any other option. With upwards of 10 unique Danube itineraries that include time in Budapest, you have plenty of options to sniff out these local delights—in every single season.
THE TASTIEST CITY: RÜDESHEIM, GERMANY

Around every bend in Colombia’s Magdalena River awaits a vibrant experience, teeming with awe-inspiring life and vivid colors. THE HARBICH FAMILY
Josef Harbich’s family farm in Lower Austria has been growing field vegetables for three generations. With a particular interest in asparagus, including the distinctive white (spargel) and purple asparagus varieties, Harbich believes the secret behind the vegetable’s unique taste lies in ensuring its freshness by using the latest technologies. We are proud to source the highest quality asparagus from his farm and are delighted that Josef’s family is committed to the protection of wild plants, animals and insects that ensure their plants remain pollinated.
THE ZELLER FAMILY
Herman and Tanja Zeller have run their organic farm since 1991, providing milk, grains and vegetables for many major suppliers. Within the past decade, they have taken great strides to renovate their barns to enhance the living conditions for their cattle. They also ensure their cows graze on the short grass pasture and are fed throughout the winter with fresh field beans, alfalfa grass silage, grain maize and other fine vegetables grown on-site. In addition to providing dairy and beef, the Zellers also grow fresh seasonal zucchini, pumpkin, tomatoes, spring onions, baking wheat and malting barley and use an eco-friendly photovoltaic system to produce electricity.
PETER AFFENZELLER SPIRITS: “EVERY SIP TELLS A STORY”
Fine Austrian whisky, rum, gin and vodka serve as the base for many of our complimentary drinks served at our Sip & Sail cocktail hours. We source these from Peter Affenzeller, a passionate nature enthusiast and family man who grew up on a local farm that he transformed into a whisky distillery near Linz. Using grain from the farm and the surrounding area, Peter creates award-winning spirits and, most importantly, is committed to doing so as sustainably as possible.
Regionally Inspired on the Danube
Traditional Viennese Schnitzel: The dish perhaps most associated with Vienna, Wiener schnitzel’s origins may have been linked to politics. According to the age-old story, the Italian General Joseph Radetzky was sharing an update on the political and military situation in Lombardy with Austria’s Emperor Franz Joseph I—and just happened to mention a delicious veal steak he had eaten. This whet the Emperor’s appetite, and it wasn’t long before Radetzky brought the recipe over the Alps with him for the Emperor, and eventually all of Austria, to enjoy.
Kaiserschmarrn: The story of this rich confection is one of royal overindulgence! The Austrian Empress Elisabeth, otherwise known as Sissi, was said to have requested her chef only prepare the lightest of desserts for her. When she was presented with this schmarrn, or “scrambled pancake” dish, Sissi refused to eat it; however, her husband, Emperor
Franz Joseph I, otherwise known as the kaiser, was so smitten with the sweet treat, he consumed both of their servings. Thereafter, the dessert was known as “Kaiserschmarrn” across the Empire.
Wachauer Marille Apricot: Nestled along the Danube River, Austria’s Wachau Valley is renowned for its legendary apricots. It is said that the trees were originally brought to the area during the Middle Ages by monks who tended to them in their monastery gardens among other “healing” plants. With the local climate contributing to their vibrant color and flavor, these apricots exploded in popularity and are now a staple throughout the region.

Ingredients:
1 cup (250 ml) whole milk
1/2 cup (100 g) granulated sugar (plus additional to coat ramekins)
1/3 cup (115 g) molasses
1/4 cup (32 g) all-purpose flour
6 large egg whites
2 tbsp unsalted butter (plus additional to grease ramekins)
2 tsp vanilla extract
2 tsp pumpkin spice
1/4 tsp kosher salt
1/4 tsp cream of tartar
powdered sugar
Gingerbread Soufflé
Tease the palate at the end of your holiday meal with the nostalgic flavor of gingerbread showcased in this mouthwatering recipe expertly prepared by our onboard chefs at Christmastime!
Preparation:
Preheat your oven to 350°F (175°C). Prepare ramekins by adding a light coat of butter to the inside of each of them, then add sugar to cover the bottom and sides and shake out excess.
Next, mix the molasses, butter, vanilla and pumpkin spice in a large bowl, then set it aside.
Add the sugar, flour, salt and milk in a medium saucepan, then bring it to a boil over medium high heat. Whisk the mixture continuously until it thickens, then pour it into the bowl with the molasses, butter and spices. Stir these ingredients together thoroughly until they are well-combined, then set it to the side to cool.
Use a stand mixer to whisk the egg whites and cream together on high speed until the mixture has high peaks. Once the mixture in the large bowl has cooled, carefully fold the egg white mixture into it. Add a quarter of the egg whites at a time. Note: Be sure not to overmix the egg whites in, as they are what cause the soufflé to rise.
Spoon the soufflé batter into the ramekins, leaving about 3/4 inch of space from the top of the ramekin. Place the ramekins on a baking sheet and bake for 20-25 minutes, until generously risen and a good crust on top. Dust with powdered sugar and serve immediately.
Bonus: Add a scoop of vanilla bean or cinnamon ice cream for another layer of sweetness!

Gingerbread is believed to have been introduced to Europe between the 10th and 11th centuries. Guilds of professional gingerbread bakers were formed, turning the creation of the delicious treat into a true art. In fact, in the 1600s, outside of Christmas and Easter, only guild-approved bakers were allowed to make gingerbread!
Flavors of Burgundy Spritz
Specially crafted by Chef Joanne Weir on her autumn Flavors of Burgundy cruise along the Saône River, this refreshing drink carries the refined flavors of France to your holiday celebration.
Aperol
Ingredients:
1/4 oz. freshly squeezed lemon juice
1/2 oz. Cassis liqueur
3 oz. fruity Beaujolais wine
2 drops Summer Berry Bitters (or similar)
Burgundy Crémant or sparkling wine
Berries as a garnish: blueberries, raspberries or strawberries
Preparation:
Mix the lemon juice, Cassis and bitters together. Pour into a large balloon glass filled ¾ of the way with ice cubes. Add the Beaujolais slowly. Top it up with Crémant. Garnish with a few berries and serve immediately. Makes one spritz
Spritz Mocktail
For those who prefer to partake in the seasonal spirit without imbibing any spirits, savor this citrus mocktail, which is now available throughout Europe*!
Ingredients:
1 ½ oz. Martini Vibrante (non-alcoholic Red Vermouth)
6 ¾ oz. grapefruit juice
6-8 ice cubes
Club soda
Orange zest as a garnish
Preparation:
Mix the Martini Vibrante and grapefruit juice together, then pour into a large wine glass that is filled ¾ of the way with ice cubes. Top off the glass with club soda. Garnish with orange zest and serve immediately. Makes one mocktail*

A Vintner's Voyage: The Joys of Hosting a Celebration of Wine
Jean-Pierre Wolff, owner and vintner of Wolff Vineyards in San Luis Obispo, California, is no stranger to embracing new roles. In 1999, Jean-Pierre and his family took on the daunting but exciting challenge of becoming winemakers. In 2023, with more than 20 years of winemaking experience under his belt, he embarked on a new adventure: acting as Wine Host alongside his wife, Elke Wolff, on one of our Celebration of Wine River Cruises.
The Wolffs, avid travelers with European backgrounds and over two decades of river cruises under their belts, first experienced AmaWaterways on our Taste of Bordeaux Wine Cruise. "I thought, 'this is really well done. It's first class.' I could differentiate the quality of AmaWaterways' ships and service. It was all included and there were no surprises," Jean-Pierre recalls of his first journey with us. Impressed by the experience, Jean-Pierre agreed to host his own Wine Cruise when the opportunity arose, and in the summer of 2023 he and Elke embarked on their inaugural hosting experience: a 7-night Colors of Provence itinerary through the south of France.
CRAFTING THE PERFECT BLEND
For Jean-Pierre, being a Wine Host is about more than just sharing facts. He sees himself as a guide and storyteller, weaving together the various elements that contribute to world-class winemaking as he accompanies guests along the rivers. "It's not abstract," he states. "It's vines to wine. This is where it grows, and this is the finished product and what it tastes like." His goal is to enhance guests' understanding and appreciation of the wines they encounter as they journey through Europe's renowned wine regions. By providing context and insights, Jean-Pierre aims to help travelers connect more deeply with the landscapes, cultures and flavors they experience along the way.
As a visiting lecturer at Cal Poly San Luis Obispo and Cuesta College, Jean-Pierre is an experienced public speaker. However, he quickly realized that hosting a Wine Cruise required a different approach. "It's easy as a winemaker to fall down the rabbit hole of the technical details," he notes. Thus, finding the right balance between detailed information and entertaining content became crucial, particularly for a mix of cruisers with various levels of viticultural knowledge. With his first cruise, Jean-Pierre adapted his presentations to suit the cruise atmosphere, incorporating humor, trivia and interactive elements. One highlight was an olfactive experience, where guests had the opportunity to detect the unique aromas of different types of oak used in barrel-making. He also organized a comparative tasting of his own Syrah alongside the local French varieties. With his Syrah being produced with clones that originated from the region they were sailing through, this tasting was a great showcase of the differences between New and Old-World wines.
The culinary aspect of the river cruise proved equally important. "Wine is food," Jean-Pierre asserts, emphasizing the significance of wine and food pairings. He praises the flexibility of the culinary team, who were receptive to his pairing suggestions, including an unconventional yet successful pairing of Petite Syrah with dessert. Drawing from his experience working in the first-class dining car of the Trans Europe Express while he was a university student, Jean-Pierre also notes the importance of presentation. "People eat with their eyes," a lesson he recounts learning from the executive chef aboard the luxury train line as he commends AmaWaterways' thoughtful and attractive culinary presentation.
EXPANDING HORIZONS
Enthused by his experiences with AmaWaterways as both a host and guest, Jean-Pierre was eager to host another river cruise, and would love to welcome you aboard his 10-night Rhine & Moselle Splendors Wine Cruise in July 2025. This cruise traverses four countries along two rivers, and he anticipates the extended itinerary will offer more opportunities for onboard presentations and events. "This adds a lot of variety in terms of the cultures and the stylistic approach of the wines from the different regions, giving a much richer experience," Jean-Pierre explains. The magnificent river cruise will showcase the diversity of wines along these rivers, particularly within the Riesling category. Guests will have the chance to compare Rieslings from different regions, including those from Jean-Pierre's own vineyard, which uses clones originating from France’s Alsace region.
