THE AMC AUDIOTHERM®
(FREE WITH ORDERS OVER R 11 287.00) The Audiotherm® is your partner in the kitchen, keeping an eye on your cooking so you don’t have to. It will alert you when your AMC unit reaches important temperatures indicated on the Visiotherm® – first red area (time to start frying, or reduce heat), 12h00 to 13h00 position (ideal temperature for longer cooking) and 2nd red area (unit too hot). Once in place, the Audiotherm® will signal an alarm when the Visiotherm’s gold indicator is aligned with the arrow on the Audiotherm®.

The AMC Book is a recipe book as well as an instruction book which helps you to use and care for your cookware easily and correctly. We have included over 150 fully tested recipes to help you enjoy a lifetime of cooking the healthy waterless and fat-free way.
THE AMC VISIOTHERM The Visiotherm® is your personal kitchen assistant that takes the guesswork out of cooking. With a built in thermometer, the Visiotherm® indicates the temperature inside the unit during the cooking process. This allows you to control the temperature.
HOW DOES THE VISIOTHERM® WORK? As the unit preheats, the gold indicator in the Visiotherm® will move according to the temperature inside. It indicates the ideal temperature to start frying, browning or cooking specific foods, and it shows you when the temperature is too high. View the Visiotherm® as a clock face. There are four key areas to consider as the indicator moves during cooking:

FIRST RED AREA When heated over a medium temperature, this indicates the ideal heat to start browning or sautéing most foods without the addition of fat. Or you need to reduce the heat now when cooking rice or waterless vegetables.

SECOND RED AREA
The ideal cooking temperature is between the 12 o’ clock and 2 o’clock position.
The unit is too hot and your food might burn. Reduce the temperature or remove the unit from the heat.

COLD AREA This indicates a cold unit, or a cold lid that was removed during cooking. Preheat your empty unit on medium to brown or sauté foods. Or place dripping wet vegetables or rice with water in your cold unit and heat on medium.

COOK SMARTLY AT THE RIGHT TEMPERATURE The AMC lid knob has a built-in thermometer called the Visiotherm®, which is fundamental in cooking the AMC way. Using the Visiotherm® correctly enables a gentle cooking process that requires less water, fats and oil. The lid knob includes a finger guard design protecting fingers against a hot lid.
A VERSATILE LID MAKES COOKING A PLEASURE A perfect–fit, weighted lid creates a water tight seal during the cooking process. The lid also has a non-drip design capturing moisture that has collected on it’s inside surface, keeping kitchen counters clean. The lid fits conveniently between the handle and rim for safe placement while adding ingredients to your meal. And finally when reversed (lid knob facing down), the lid becomes a stable serving base for your meal.

BEETROOT & BUTTERNUT AUTUMN SALAD Serves 4 – 6 This beautiful salad can easily be served as a light meal, or as a side to a grilled steak.

1. Place beetroot in an AMC 20 cm Low with water and heat over a medium temperature until the Visiotherm reaches the first red area. 2. Reduce heat to lowest setting and simmer for 30 – 45 minutes or until beetroot is tender. Remove from unit and allow to cool before peeling and cutting into wedges. 3. Meanwhile, place bulgur wheat in an AMC 20 cm Dome and pour hot stock over. Cover and leave to stand for 20 minutes then fluff with a large fork. Season with 20 ml olive oil and salt and pepper. 4. Preheat an AMC 28 cm Chef’s Pan over a medium heat until the Visiotherm reaches the first red area. Add 10 ml olive oil to the unit and lightly brown the butternut on all sides. Reduce the heat, cover with lid and cook for 5 – 10 minutes or until cooked through. Spoon out and set aside to cool. 5. Assemble the salad by layering the beetroot, butternut, spring onions and goat’s cheese on top of the rocket and bulgur wheat. Season to taste and drizzle with balsamic reduction.

4 – 6 small beetroot, washed 100 ml water 1 cup (250 ml) bulgur wheat 1 cup (250 ml) hot chicken or vegetable stock 20 – 30 ml olive oil salt and freshly ground black pepper to taste 300 - 400 g butternut, peeled and cubed 4 - 6 spring onions, finely sliced 100 g goat’s cheese, crumbled balsamic reduction to taste
Tips: • Add toasted pumpkin seeds, slivered almonds or sunflower seeds to this salad. • Substitute goats cheese with feta. • If you don’t have a balsamic reduction, make a small dressing by mixing olive oil, balsamic vinegar and a little bit of honey. • Substitute bulgur wheat with couscous. The couscous will be cooked in 5 minutes as opposed to 20 minutes.

STICKY LEMON & THYME CHICKEN Serves 4 - 6 8 - 10 chicken thighs or drumsticks salt & freshly ground black pepper to taste 1 head of garlic, broken into cloves 30 ml balsamic vinegar 30 ml soy sauce 45 ml honey a big handful of fresh thyme 1 lemon, finely sliced

1. Heat an AMC 24 cm Fry Pan or 28 cm Chef’s Pan over a medium temperature until the Visiotherm reaches the first red area. Brown chicken pieces on both sides and season with salt and pepper. 2. Scatter the garlic cloves over and around the chicken and drizzle the vinegar, soy sauce and honey over the chicken. Place a layer of fresh thyme over the chicken pieces and cover this with a layer of lemon slices. 3. Cover with lid, reduce the heat and cook for 40 – 60 minutes or until the chicken is cooked through and done to your liking. In the last 10 minutes of the cooking time, remove the lid and increase the heat slightly, allowing any sauce to reduce and become slightly sticky. Serve warm with mashed potatoes or quinoa and a green salad.
GREEN BEAN, PEAR & PARMESAN SALAD Serves 4 - 6 This exciting combination of ingredients is ideal to serve as a light starter or part of a meal or even as part of a buffet. Dressing: 50 ml olive oil 30 ml apple cider vinegar 20 ml honey 10 ml mild wholegrain mustard salt and freshly ground black pepper to taste 5 large fresh mint leaves, thinly sliced Salad: 150 – 200 g fresh green beans a variety of lettuce leaves (approximately 100 – 130 g) 10 – 12 fresh basil leaves 10 – 12 fresh mint leaves 2 ripe pears, sliced 30 g Parmesan cheese, made into shavings

1. Dressing: Whisk all the ingredients, except the mint, together and season to taste. Gently stir in mint and leave to stand for 15 minutes. 2. Meanwhile, rinse beans thoroughly and place dripping wet in an AMC 20 cm Roaster or Low. Heat over a medium temperature until Visiotherm reaches first red area. Remove unit from heat and leave the lid on for another 1 – 2 minutes or until beans are tender, but still crispy. Rinse in cold water and allow to cool. 3. Layer the lettuce with the basil and mint on a serving platter or individual plates. Arrange green beans, pears and Parmesan cheese on top. Drizzle with the dressing and serve immediately with Italian bread.
Tips: • Substitute Parmesan shavings with Feta, blue cheese or goats milk cheese. • Add slices of ripe avocado to this salad. • Add strips of roasted chicken and serve as a light meal. Alternatively, marinate chicken in some of the dressing, pan-fry and slice. Allow to cool and add to salad.

SAMP & BEANS WITH MEAT From The AMC Book, p139 Serves 6 – 8 Samp and beans cooked with vegetables and stewing meat is an economical one-dish meal. Ideal for weekends. 500 g stewing lamb 1 large onion, chopped 2 cloves of garlic, crushed 2 – 3 baby marrows, halved and thinly sliced 3 carrots, coarsely grated 1 celery stalk with leaves, sliced 270 g (350 ml) samp 200 g (250 ml) speckled sugar beans 1 litre chicken stock 2 tins (400 g each) chopped tomatoes 15 ml dried mixed herbs or origanum salt and freshly ground black pepper to taste 20 ml fresh, chopped parsley

RECIPE 2012
1. Heat AMC 8 litre Speedcooker with normal lid on, over a medium temperature until the Visiotherm reaches the first red area. 2. Add meat to unit and allow fat to fry out before turning. Brown on all sides and spoon out. Set aside. 3. Sauté all the vegetables until tender, and add samp and beans. Stir and then add stock, with meat, to mixture. 4. Seal unit with Speedcooker® lid and allow indicator to reach red level. Lower temperature slightly to maintain indicator at this level. Cook for 1 hour. 5. Remove the unit from the stove-plate. Allow indicator to drop completely and release steam by pressing red safety valve. 6. Add tomatoes and seasoning. Simmer without lid over lowmedium temperature for 15 minutes. Serve with bread.;
Tip: • Prepare this dish in an AMC 24 cm High. Soak samp and beans overnight. Follow recipe as above, but boil for 2 – 2½ hours or until samp, beans and meat are tender. • Speed-cooking is the easiest and fastest green cooking method.
