HOTEL SERVICE TO A T In a city revered for its hospitality and hotels, one operation set up in the hills of Pokfulam seeks to set itself apart from the crowd. The T Hotel, run by Hong Kong’s Vocational Training Council, is an insiders only hotel that’s making a difference.

ver since its official launch in 2011, The T Hotel has been listed in the TripAdvisor’s Top 25 hotel list under five separate categories, from “Best Value Hotel” to “Spa Hotel”. What really sets it apart from other properties, though, is that The T Hotel sets out to provide long-lasting learning experiences to its trainees. Part of the Hong Kong’s Hospitality Industry Training and Development Center at the Vocational Training Center [VTC], The T Hotel features experts from various backgrounds to provide top notch vocational programs to the students. Around 3,500 people go through The T Hotel training regimen at Pokfulam, Kowloon Bay and Tin Shui Wai annually, picking up professional skills ranging from basic operations to management. With green surroundings on the Western part of Hong Kong Island, The T Hotel is located opposite to Pokfulam Village, a residential area with more than 300 years of history. There are a number of local attractions to satisfy visitors’ different tastes, such as Ocean Park and Stanley Market. In total, there are 30 rooms with expansive mountain and ocean views overlooking the outlying islands. The guests can enjoy facilities such as the gym and business center, with additional amenities such as the Wine Laboratory, Western Training Restaurant and Training Spa. Dining options are another specialty of The T Hotel. There are two lounges and two restaurants in total, presenting international cuisines daily with panoramic hillside and ocean views and sunsets in the afternoon. The restaurants are available to the guests of The T Hotel and the members of The English Speaking Dining Society, to encourage trainees using English and exchange each other’s professional communication skills with the help of instructors. There is a Chinese Training Restaurant as well, to boost Chinese speaking to the learners in a relaxing atmosphere.

Alan Ip, the Deputy Manager of the Hotel Operations and Training who joined The T Hotel since its beginning in March 2011, elaborated on the unique experiences at The T Hotel for both the trainees and the guests. biz.hk: What’s the history and idea behind setting up a training concept at The T Hotel? Ip: Many of the trainees lacked real life experience. Therefore, we planned for a few years and then started off the project in August 2010, and after seven months of a soft opening, we had our grand opening in March 2011. It’s a platform to provide an authentic environment for the trainees to fulfill part of the learning requirements in the module. They apply all the integrated learning while working in the hotel to gain real life experiences by contacting with the customers. biz.hk: Where do the trainers come from? Ip: All the trainers are the actual teachers in the sector, and they have more than 10 to 20 years of training experiences in the hotel from major brands such as the Mandarin Oriental and Shangri-La. With their guidance, the trainees can experience hotel life so they can test themselves whether they are a fit for the industry, and so they can better plan out a future hotel career. biz.hk: Where do the trainees come from and where do they go on to after training? Ip: They are all Hong Kong citizens, ranging from age 15 to 19. They come to participate in a certificate or diploma course and go through the hotel training course. We only take local students. Applicants who applied for our programs are required to go through an interview process. Our instructors would then assess them in various aspects including their grooming, self-confidence, presentation skills, and level of industry knowledge. We have a pretty good employment rate, which is over 90%. Once the students finish off the training course

the majority of them will go to work in the hospitality industry in different positions, starting from front desk officers or waiters and waitresses. We are responsible for their job recruitment process, and that’s the part we plan for them during the training period. They find jobs in Hong Kong as a first step and they probably will get more experiences and move on to the international brands. biz.hk: What are the growing trends in vocational training in Hong Kong? Ip: Vocational training is a growing trend in demand, especially in the hospitality industry, because no matter what kind of certificates or degrees the students get, the employers are

hunting for new hires equipped with right skills and attitudes to offer promising prospects to hotels and guests. They should possess problem solving skills, social skills, and especially the soft skills. That’s why we are training students not just based on the knowledge of books they learn in the classroom. They learn how to greet guests, when to use appropriate gestures, how to address people, how to smile, stand and even how to open the glass door. All the employers commented positively on our trainees for their soft skills and behaviors. biz.hk: What makes The T Hotel so special out of all the other hotels in the city?

Ip: We are not competing with other so-called commercial hotels because of our unique training concept. People know about our hospitality industrial training development counsels. They learn about The T Hotel through websites and promotions. I would say the guests in The T Hotel are very understanding, very accommodating, and love to participate in the learning of the trainees. We have schools like the Dining Society and members coming for lunch and dinner. They stay with us and refer to their own friends to us. These are the things we have been doing for the past three years. biz.hk: Where do most of the travelers come from?

Ip: Seventy percent of our clients are international travelers from Southeast Asia, the United States and Europe. It’s a good place for the trainees to practice good English. Generally, the local students are shy. They seldom speak up. Most of the guests are leisure travelers like young and married couples, families and retirees. While trainees working in the hotel provide tourists information for them, they in return get chances to communicate more in English with the guests. biz.hk: What is the price range for your rooms and suites, and what are some food and beverage options? Ip: The prices range from 800HKD to

1,000HKD. We are a training concept hotel so we don’t have service charge. It is a very reasonable price and all the guests are welcomed to join our training. Once you get into the hotel, we have the hotel lounge which is available throughout the day starting from breakfast in the morning, lunch in the afternoon, high tea and dinner and also evening cocktails. Apart from that on weekdays, they can go into our local training program. They can actually participate in our trainings in the Chinese Training Institute and the Western restaurants, and dine there afterwards. biz.hk: What’s are the prospects of

The T Hotel in Hong Kong for the next few years? Ip: Hong Kong is always a great location and a hub for the East to meet the West. We are facing some challenges and competitions out there due to the global environment but we have some promising figures. There were over 60 million people arriving in Hong Kong last year. Also, the Hong Kong Tourism Board is aiming for an additional 6 to 7% increase in number. We have more than 280 hotels in Hong Kong currently registered at the Hong Kong Hotel Association so I think on behalf of the Hong Kong Tourism Board, we are in good shape for the foreseeable future.

L

a Paloma, “the pigeon” in Spanish, is Chef Willy Moreno’s latest opening in Hong Kong, following the success of Fofo by El Willy in Central. This restaurant, unlike its fancy counterpart, has a completely different vibe. A stone’s throw away from the shiny, new Sai Ying Pun MTR station, the restaurant is in the swank SoHo 189 complex. Tucked away in between art gallery spaces, La Paloma itself is situated down stark white alleys. Upon entering, though, cheerful Spanish greetings abound, aimed to conjure the atmosphere of chiringuitos, or beachside bars in Spain. It’s a laid back, casual affair, decked out in filament lighting and brightly painted chairs. Executive Chef Vito Chiavacci hails from Valencia, and laughs that everyone who comes through the restaurant has been to Barcelona and Madrid, but he wants to bring a taste of his hometown to the city. With an open kitchen, customers can watch a specially designed paella wall, where stoves are lined up behind the windows on stoves especially designed with wide tops to heat the paella pans evenly for the coveted crunchy layer of rice.

Affable restaurant manager Riky Sabata previously managed a restaurant in Central America, but his dream was always to come to Asia. When the chance to come onboard Moreno’s latest venture in Hong Kong, he jumped at the chance. Sabata and his friendly team are quick to recommend their favorite dishes to customers; though tapas often are an affair that sends diners home hungry, anyone who walks through the doors at La Paloma won’t. For starters, the Iberian pork chorizo (98HKD) is a must-order, along with the tabla mixta selection of cold cuts and artisan cheese pairings. Another indulgent signature dish is the salmon ahumado (30HKD/piece), a bite-sized “explosive” pastry filled with chipotle cream cheese and topped with salmon roe. On almost every table in the restaurant, there are orders of bacon con queso (88HKD/2 pieces), another pastry stuffed with bacon and cheese, then wrapped again with a piece of ham. Bikini Mallorquin (70HKD) are akin to Spanish grilled cheeses, albeit with a kick of spicy sobrasada. And it wouldn’t be a tapas restaurant without albondigas (88HKD), the rustic homemade meatballs dunked in a hearty tomato sauce.

Though there are multiple traditional Spanish omelettes on offer, the rotos or broken eggs are the highlight. Served on a bed of crisp potato shavings, both the options of baby squid and Iberian ham shoulder (88HKD) or roasted peppers and spicy chorizo (75HKD) are good enough to order individual portions. Suckling pig is a risky gamble in light of the ubiquitous beloved local offerings around town. La Paloma nails it, with its cochinillo dish (350HKD), tender meat soaked in its own juices and topped with crackling. The secret behind the dish is “el Asador,” the traditional clay oven from Castilla y Leon that the restaurant imported to replicate Spain’s roasted dishes.

And of course, the paellas deserving their own special stoves are the capstone dishes at La Paloma. Arroz a la cazuela (328HKD) is one of the chef’s favorites on the menu, prepared with the freshest seasonal seafood, Iberian pork, and prepared with wet rice. The paella valenciana (328HKD) is a more traditional dry paella, full of chunks of chicken, broad beans and artichokes. On the dessert menu, offerings such as bollycao, or Nutella chocolate brioche buns, or mollete con helado, soft ice cream sandwiches, round off a decadent tasting menu. Diners can also select from a variety of set menus that range from 300-400HKD per person, especially if dining in large groups so the kitchen

can prepare ahead of time. During its soft opening, La Paloma was a bring your own beverages (BYOB) affair, but it will soon serve a wine list with bottles from different regions in Spain, as well as Spanish draught and bottled beers. There, of course, will be sangria, made with fresh passionfruit, mango, white wine, lemonade and “a kick” of spirits. With its eclectic menu and varying portion sizes, La Paloma is ideal for any occasion ranging from an intimate date for two, to a rowdier group dinner looking for a night out. As Sai Ying Pun looks to make itself a destination in and of itself, this restaurant is sure to be a stalwart in making sure that happens.
