In April each year, we are happy to present our Amelia Islander Magazine “Home & Design” special issue. Since April always delivers spring at its blooming best, it’s fitting to think about fresh starts in our lives and in our homes. Spring is a time of new beginnings, some good old-fashioned spring cleaning, and perhaps a few adjustments to the routine rhythm of our daily lives. The Home & Design special issue is always a favorite for us. Building a house, buying a house, or turning the house you love into the home of your dreams can be one of the most significant moments in our life. Creating a comfortable environment where you can raise a family or enjoy retirement is a vital part of life. When we establish a home for ourselves, we make decisions that reflect our priorities at the time, which might mean an extra bedroom for guests, a home office, or a bonus room for the kids. As we grow and change through the years, our homes reflect those changes. When kids are in the home, we need bedrooms and maybe a playroom where the kids can congregate; when kids leave the nest, we might decide to change a bedroom into a den or a hobby room – at least until the grandkids start arriving! As Julie Simmons notes in her home trends article this month, the Covid pandemic, which wrought major changes in your lives this past year, has also encouraged new configurations in the work and play spaces of our homes. In this issue, we share the stories of two local residents and their homes. In the first feature, we meet Chris and David Loucks, who came to visit David’s sister in Oyster Bay Harbour on Friday, fell in love with the community and bought a lot on Sunday, then built a lovely home on the river with expansive views of the marsh and local wildlife. In the second feature, we catch up with Alexis Reynolds, who first visited Amelia Island over 40 years ago, then last year found a custom-built home with beautiful river views, which she then completely transformed into an idyllic retreat she named “Oyster Reef,” complete with a charming cottage for her visiting kids. Also this month, we look at recent home design trends, influenced in part by the pandemic; introduce a new project by four local woman called “2020 – A Look Back,” which collected over 100 photos to capture local life in our year of Covid; present another “Eyes to the Skies” from Gail Pfoh on the brilliantly colorful birds of Amelia in spring; offer a great recipe for crab cakes; and much more.

I
n 2006, Chris and David Loucks came to Oyster Bay Harbour on a Friday night to visit David’s sister for the weekend. By Sunday, they had purchased a lot in the neighborhood. “It was that quick,” laughs David. “We were so enamored with the community, its respect for nature, the marina, and the Yacht Club. It was our dream-come-true.” But Chris and David were not quite ready to retire yet. David, an executive with Proctor and Gamble, had to travel a lot for work, so he and Chris had lived in several places across the country, spending the last 20-years in Cincinnati before 11 AMELIA ISLANDER MAGAZINE •
moving to Fernandina Beach. The couple was originally from Miami, and Florida was always in their blood. Not to mention that two of David’s sisters were already living at Oyster Bar Harbour. “We were destined to come to Fernandina Beach,” says Chris. “We love the location, and it’s a more laid-back lifestyle than the Miami area.” Chris and David built their dream house around their family, with the expertise of Shawn Kirouac of The Kirouac Group. Construction began in 2012. “We wanted the house to include guest quarters for our children and grandchildren,” APRIL 2021

says David. “We wanted them to have an entire floor to themselves, with two bedrooms, a family room, two bathrooms, and a laundry room.” Kirouac’s unique design included an entryway onto a middle landing in the house, with a half-flight of stairs leading down to the guest quarters, and another half-flight of stairs leading to the main

living quarters, which includes a master suite, living room, dining room, kitchen, an outdoor lanai, and a second bedroom that serves as an office. In addition, a 4-bay garage provides room for two cars, a workshop, and room for their golf cart. The home took about two years to build, partly because of its fortified foundation, along with the precise details

The Kirouac Group prides themselves on never building the same design twice, with the visions of their clients as the most important element of their design process. “The carpenters and craftsmen who worked on the house were true artists,” says Chris. “The shiplap cladding was meticulously installed. We wanted a vaulted ceiling to give a more expansive feel to the house, but still have warmth with all the wood details. The wood floors

are all reclaimed lumber, too,” she adds. Chris and David hired Anne Rosenthal of Rosenthal Interiors to help with decorating. But Anne did much more than that. “Anne was in on the design from the very beginning,” says Chris. “She’d look around the space and say, ‘you need a window right here.’ She’s an amazing designer, helping us use our existing furniture, and then adding new pieces and elements that we wouldn’t have thought of.”

As much as Chris and David love their home at Oyster Bay Harbour, it is the property and the neighborhood that means the most to them. Their home reflects that, too, with its wide marsh views from several points in the home. “We love the outdoors, and we love watching the birds and other wildlife,”

says David. “When the grandchildren come to visit, they want to go out in the boat. Sometimes they fish from the dock, and sometimes we’ll take a ride through the neighborhood in the golf cart. We also feel that the people who live here have a true respect for the natural world, and that makes us all feel connected.”

LOCAL AUTHOR TOM HITCHCOCK RELEASES HIS LATEST NOVEL Local author, Tom Hitchcock has a new novel which lands right here on our Island! Four of his five novels are set partially or wholly on Amelia Island. His explanation: “A story needs a location, and Amelia Island is one I’m familiar with, so why not?” Yet Hitchcock and his wife, Susan, lived on another island for nearly 20 years—a small, remote spit of land on the Eastern Shore of the Chesapeake Bay. “Back then, Tilghman Island was populated mostly by watermen,” he continues. “Kind of a sleepy place. Not that it couldn’t have been the scene of murder, mystery, or intrigue, but it would have exceeded the limits of my imagination at the time.” His latest novel, Drowning, is the story of three people who embark on an ill-fated sailing voyage. Tom thought it needed wider horizons than Amelia Island, so the story begins on Tilghman Island and concludes here for its climactic ending. When an illicit love affair turns an idyllic sailing trip into a nightmarish ordeal of torment and guilt, it hounds an adulterous couple through a string of island hideaways landing on our Island. oraine King, Amelia Island’s premier house portrait artist, has a display of her traditional works at the newly expanded Baptist Medical Center Nassau. Although Loraine’s one career constant has been house portraits, her display of thirty pieces at Baptist Nassau move from realism to impressionism and abstract in watercolor, acrylic, pastel, pen and ink, and oils. They represent the other side of Loraine’s talent, where she embraces the nature and essence of the communities in which she lived. Her works at Baptist Nassau range from roseate spoonbills to ocean renderings, landscapes, florals, and more. Loraine’s interest in art began while growing up in a family with art-related careers. She began as an art education major, moved on to teaching, and then became art director of the Shenendahowa School District in Clifton Park, New York. She was an advocate for the arts in her community, directing art shows for her students and other artists. She was recognized by the Schenectady Museum and in many art publications, including Early America Magazine. While living

in upstate New York, her American Primitive paintings sold through the Folk Art Museum in Manhattan, as well as shops throughout the area. She was also instrumental in starting the Dublin Art League in Ohio. Upon moving to Amelia Island with her husband, Tom, she started the Plantation Artists’ Guild & Gallery with the support of the Cooper family. Loraine not only represents the homes she is rendering, but includes family pets, cars, and even family members. Why a house portrait? “Perhaps you have just purchased your first home or have finally completed your dream home,” says Loraine. “Possibly it’s your family home or grandparents’ home that brings a flood of memories. I work from photographs, capturing the heart and soul of your life or those you care for. Before she moved back to Amelia Island in June last year, she and her husband would travel with their two young boys from California to Amelia Island two or three times each year to visit family. “It’s a lot! lexis Reynolds first visited Amelia Island 45 years ago. Now, just 44 short years later, she is here, and here to stay! “When my realtor, Sandy Moser, and I pulled up to this house, the view sold me,” says Alexis. Positioned under a canopy of oaks and surrounded by indigenous landscaping and citrus trees sits the beautiful home that Alexis has named “Oyster Reef,” after the 7-foot tidal creek abounding with oyster beds in her backyard. The property came with loads of character and a very unique beginning. “The original owner was an architect and craftsman, who designed and hand-built this house in 1977. He put exceptional care into every detail, and the build and finishes are as solid as they come. Sometimes even too solid, like when I wanted to move cabinets that just won’t come out!” she laughs. “The only problem was that it also came in fifty shades of brown.” But that was no obstacle for Alexis, who is an artist, botanist, high school educator, and designer. With her own two hands APRIL 2021

and just a little help, she has given Oyster Reef a complete makeover. “First, I painted everything white! Sea Pearl, to be exact.” And she’s not kidding. From ceiling to walls to trim, it is bright and gorgeous, especially paired with the French oak plank flooring. From there, her talent for design is evident in the custom, upholstered, and refinished antique pieces. “I’ve been planning for a home in Florida for many years, and I have been saving special pieces that came through my studio over the years, along with Nantucket antiques and treasures I inherited from my grandparents.” The result is exquisite, all with Alexis’s special touches. “There are certain themes I wanted to carry through the design,” says Alexis. “One was to include odes to the wildlife around me, another to leverage Gustavian Swedish influence as a nod to my dad’s family, and a third was to optimize my blue antique glass collection.” 32 AMELIA ISLANDER MAGAZINE •

Alexis accomplished her goals with artwork, blue heron paint, beautiful carved-wood furniture like her Swedish Mora clock, and her aqua glass bottle collections, which subtly glitter throughout the design. A cherished touch is her antique oven, coated in blue by Ocean Air Coating, which sits under the original brick backsplash. Alexis completed her redesign in record time and has been enjoying it ever since. “I just love painting and entertaining on my back patio overlooking the river – especially at sunset,” she smiles. An interesting fact about her patio is that it is paved with original Centre Street bricks, and it is also the place her dog, Auggie, most enjoys – along with the many squirrels who count on peanuts from Alexis for dinner! The master suite might be her favorite indoor space. “I removed a wall to open the room and allow for more natural light. The entire suite has stunning views that feel brand new every single day.”

Alexis isn’t the only one loving Oyster Reef. Her three adult kids and their friends can’t get enough of it, even when they have to drive from Colorado, North Carolina, and Illinois to visit. “The Nantucket Cottage” adjacent to the main home is perfect for guests, especially now that she has finished updating the kitchenette. When Alexis isn’t enjoying Oyster Reef, you can meet her downtown in her newly opened antique furniture shop, Atlantic Coast Design, at 25 S. 3rd Street. “I got started in this business by helping friends refinish their pieces, and soon I needed a shop, and then a bigger shop, and I am thrilled to have a refreshed studio here on the island to share my work.” Alexis abounds with creativity and energy and says she loves her redesign at Oyster Reef “so far,” but she promises that it’s never finished. “I’m always upgrading to suit what I need,” she says with a smile.

ver the past year, most of us have spent more than ample time in our homes experiencing “home life” like we never imagined. As a result of our hours staring at our walls or maybe battling for space to make it through the workday, a significant uptick in home upgrades and redesigns has developed. If you have ventured to our local home stores and experienced the crowds, you know what I am talking about! For 2021, new design trends are one more sign of our times, and local designers are adding their own valuable perspectives. “Life has changed, and if there was ever a time to think about an upgrade, it’s now,” says Robyn Branch of Robyn Branch Design. “I believe that your personality and surroundings dictate your style, not trends. Designers recognize trends before they happen and tire of them quickly. But what we never tire of is ‘you!’ Individuality is paramount in your home.” This past year has certainly set us up for a great flowering of individuality. For example, many homeowners are turning small closets and nooks into offices and study spaces to accommodate our “new normal.” Or maybe it’s the opposite! If you are like me, your open home office was no longer sufficient, so a guest bedroom corner is the new best bet. Following suit is the emergence of “designated spaces” in the home. The open floor plan is very prevalent in modern design, but the pandemic is demanding distinct spaces as we merge our home, work, and school lives, and families are opting for greater separation between their living and working spaces. While interior changes are in demand, outdoor living upgrades have accelerated to all new levels. “Clients are investing in outdoor spaces, including better quality and comfortable furnishings,” notes Tiffany Hinton, designer and founder of Lola Interiors. This development is a testament to our homes evolving as our world changes, meeting our need to reconnect with neighbors and friends. As we think about home upgrades and timing, it’s not all unicorns and rainbows! “I’m not saying you should sink your savings into your home, but definitely upgrade, and now is the time. Prices for everything are only going to go up because of high demand. Be prepared to pay more, and be patient!” says Robyn. “Patience is the new shiplap!” echoes Tiffany. “Everything is backordered, from appliances to flooring to lighting and windows. As you begin to think about your palates, Tiffany shared that the natural elements and hues that were dominant last year are still great choices. “Natural wood tones in cabinetry, as well as for wall and ceiling treatments, are something we are encouraging and that our clients are requesting. We are also seeing these textures in furniture, light fixtures, and rugs,” she says. “Ceiling treatments are another way we are adding dimension and texture to our projects with wood cladding and wood beams - both stained and painted, wallpaper, and even contrasting paint,” she adds. For the kitchen, these same organic wood-grain hues are prevalent. To keep the design interesting, Tiffany and team are encouraging clients to invest in custom, statement kitchen hoods. “Mixed metal and plaster are two of our current favorites.” With so many DIY trends and neighbors upgrading, it’s easy to get emotional and make fast decisions. Robyn cautions against the temptation. “Educate yourself and hire a designer to guide you. No half jobs. Do it right! There are a ton of people wanting a partial ‘update’ right now. looking back at 2020 With a new community project called “2020 A Look Back,” four women create a new exhibit that catalogues Amelia Island’s extraordinary pandemic year of 2020 in photos. BY DICKIE ANDERSON
I
n November last year, four women met at the Plantation Artists’ Guild and Gallery to talk about an idea brought to them by Karen Bowden, an exhibiting artist and board member at the popular island gallery in The Shops at the Omni Amelia Island Resort. Karen was inspired by a project led by Kate Middleton and the National Portrait Gallery titled “Hold Still.” In this exhibit, photos were selected out of 30,000 submitted that displayed a range of emotions brought on by the pandemic. Bowden’s idea? Why couldn’t a similar project on a smaller scale be done in our community? The four women—Karen Bowden, Barbara Hopkins, Sarah Edwards, and Dickie Anderson—agreed that, yes, it could and should be done. As they brainstormed, the project grew and soon it was dubbed, 2020 – A Look Back. Plans were made to call for photos,
develop a traveling exhibit of 100 of the submitted photos, produce a video, and develop a special edition magazine. They quickly found support in the community, starting with their first visit to Gil Langley and Marilou Welling at the Amelia Island Convention & Visitors Bureau. With their encouragement, others were approached and asked for their support and sponsorship. A visit with Olivia Hoblit, Regional Manager of the two newest hospitality properties on Amelia Island—the Courtyard and Springhill Suites by Marriott—brought the project its title sponsor. Additional sponsors were quick to join, including Baptist Medical Center Nassau, Florida Public Utilities, and Rayonier Advanced Materials. asking for photos. Digital Village and Charlie Monroe joined the team with their technical expertise as the exhibit came together. As the group met each week, an abundance of creative energy emerged as decisions were made. It was decided that an ideal partner and recipient of revenue generated would be Arts Alive-Nassau, a critical non-profit organization that provides arts programming to the children of Nassau County. In December, a call went out for photographs taken during the year 2020 in Nassau County by residents or visitors. Hundreds of photos were submitted. Once selected, the photos were enlarged and made ready for display, either mounted on the wall or displayed on an easel. The exhibit has been designed to be portable and will be available for display at various venues throughout the community and county. The exhibits are free. The 2020 – A Look Back magazine, with selected photos and the story behind the project, is available for sale at exhibit events and other retail outlets. Sales of the magazine benefit Arts Alive-Nassau. The creators are thrilled with the wide variety of photos that are included in the exhibit and the magazine. Of course, there were plenty of surprises, including expected photos that did not come in and unexpected photos that showcased what was important to people in the year 2020. The final collection of photos tells the story of a resilient and vibrant community that survived a year like no other.

Perched on many of the beautiful shrubs blooming on Amelia Island this time of year, you’ll see equally stunning birds like Eastern Bluebirds and Painted Buntings.
I
f you love birds and or blossoms, this might be your favorite time of the year. Blossoming shrubs and flowers on and around Amelia Island, such as azaleas and bottlebrush bushes, are in full bloom. Perching on these as they sing are incredibly beautiful birds. Our area is bursting with color this spring, like the vivid blue of our Eastern Bluebirds, the crimson red of male Northern Cardinals, and the emerald green of Ruby-throated Hummingbirds. Their colors brighten our days and heighten our awareness of why we love living or visiting here. You can increase your chances of seeing these beauties, and other colorful “neighbors,” by planting native plants and providing some water and food to supplement their diet. Local birds such as Carolina Wrens, Tufted Titmice, and Pine Warblers are nesting now. Breeding season means the adult birds need more nourishment because of the demands of parenting, and they have the added burden of providing food to their nestlings. These and other birds would be happy to find black oil sunflower seeds and homemade or store-bought suet in your yard. The Cornell Lab of Ornithology notes that Pine Warblers are “yellowish birds with olive backs, whitish bellies, and two 57 AMELIA ISLANDER MAGAZINE •
prominent white wingbars on gray wings. Adult males are the brightest; females and immatures are more subdued and can even appear gray-brown.” Pine Warblers weigh less than one penny and have a wingspan of approximately 8.5 inches. They enjoy finding suet in your yard. Painted Buntings have recently returned to the island and surrounding areas. With his brilliant blue head, greenish back, and red rump and belly, the male Painted Bunting is one of the most colorful birds found breeding in the United States. The female, as well as the immature male, is a bright yellow/green. Birders often call the females and immature males “greenies.” The only way to be sure if a Painted Bunting is a male is if you see the bird singing. Only the male Painted Bunting sings. Painted Buntings spend their breeding season here before moving south in the fall. To attract them, be sure to offer a fresh supply of white millet in your feeders. A tube feeder with small perches works well for them and keeps larger birds away. Like all birds, they enjoy fresh water from a fountain or clean birdbath. Eastern Bluebirds with their royal blue and red coloring are always popular. They weigh only about one ounce and have continued on next page APRIL 2021

a wingspan of about 11 inches. You can attract them to your yard if you offer them mealworms, which are available dried or live. During nesting season, you may see a male Eastern Bluebird feed a mealworm to his female during courtship. Carolina Wrens and other birds also eat mealworms. Downy and Red-bellied Woodpeckers are nesting now. They are year-round residents here. They love peanuts as well as suet, as do other species like Brown-headed Nuthatches and Carolina Chickadees. During warm months, only put out small amounts of suet to be sure it does not spoil. Don’t hesitate to slice your suet before putting it outside. You can freeze homemade suet so you always have a fresh supply. Hummingbirds and warblers love the blossoms of bottlebrush bushes. These shrubs are evergreen, hardy, and easy to grow. They bloom twice a year in spring and fall, which is a welcome treat for migrating birds. Talk to a local nursery to learn about native plants, which beautify your yard and feed and nourish birds and butterflies. To enjoy backyard birds, always keep feeders and birdbaths clean. superb shrubs While enjoying the good weather in your garden this month, consider adding a few new shrubs for screening or interest, like Olive Martini and Sunshine Ligustrum. BY BETTY MORRELL

pril is one of the best months of the year to plant in the garden. Everything is so fresh and vibrant, with new leaves on the trees, new sprouts on the plants, new buds on the flowers, new seedlings popping up from last season, and a few wind-blown surprises. No surprise are the weeds! The beautiful Azaleas have outdone themselves in welcoming the spring. Their awesome colors always catch the eye. Encore Azaleas will continue to bloom throughout the year. I was also greeted by bands of gold and yellow Lantana in my garden. I cut them way back in the fall, and they have come back with a vengeance. They stand out, but like a weed, they need to be controlled. Walking through a nursery recently, I came across a new Eleagnus, a unique and beautiful Southern Living shrub called Olive Martini (PP). This plant produces vibrant foliage, edged in gold, that creates a striking display on sunny borders. It has a dense upright habit. Eleagnus is salt-tolerant, and left to do its own thing, will create wonderful screening 10 to 15 feet high and wide, or

it can be shaped into an attractive shrub. Its sturdy structure and consistent color, along with its silvery new growth, adds seasonal interest to this evergreen shrub. I love plants in the landscape that vary in color, texture, and height. One fitting that category is a Southern Living (PP) plant called Sunshine Ligustrum, a showy eye-catching evergreen shrub with year-round golden foliage. It flourishes in the sun. Sunshine grows 3 to 6 feet in height and 3 to 4 feet wide. It’s perfect for a backdrop, or you can trim and shape it to your liking. This shrub’s new growth starts out a lime green color and continuously intensifies to yellow hues in spring, then ushers in summer with vibrant golden yellow. It’s so beautiful. Plant it

in full sun and fertilize yearly in spring. Sunshine pairs beautifully with Purple Pixie Loropetalum in front (the dwarf weeping one I mentioned last month). Meerlo Lavender is a stunning, aromatic plant. It has proven to be one of the most heat- and humidity-tolerant plants for our area. This hardy perennial has brightly variegated green and creamwhite serrated foliage that produces a wonderful fragrant aroma. A multitude of pale purple-blue flowers appear during the summer. After the blooms have faded, trim it back to keep this plant in its compact form. Meerlo is perfect for containers and as a stunning addition to landscapes, flowerbeds, borders, low hedges, or even as a specimen. Plant it anywhere you have sun to part-shade. In mass plantings or solid borders, place each one 18 to 20 inches apart. Average size is 24 to 36 inches high and 24 to 30 inches in width. They attract birds and butterflies. B
rett’s Waterway Café is the centerpiece of downtown Fernandina Beach. Perched at the westernmost tip of Centre Street, it presides over all the island’s favorite festivities. It is from this vantage point that Chef Brett Carter has been setting the bar for culinary excellence in Fernandina Beach. His sense of style and flavors remain fresh, and his commitment to quality unequalled. Many a young culinarian has worked alongside or looked up to Chef Brett, and our community is better for it.
On a recent Friday afternoon, I met up with some of my favorite people on the porch at Brett’s to wind down the work week. When I arrived, I found my friend, Christie, already at our table and chatting it up over the porch rail with Captain Kyle McCarthy of Amelia River Cruises; he and I had just said hello in the parking lot. Dozens of people milled about as revelers anxiously awaited their sunset cruise, creating a sense of anticipation and excitement on the dock and the porch, 62 AMELIA ISLANDER MAGAZINE •
making us feel like we were right in the center of everything. There were pelicans and people everywhere, boats came and went, the sun started its evening descent, and for a moment, everything was right. A few minutes later, Christie and I were joined by my parents, and soon after our very good friend, former co-worker, and Brett’s veteran server Cortney Gray came right behind them to get our drink order. Dad kept it simple with Budweiser, but the weather was perfect and the table behind us had a pitcher of Rosé Sangria full of fresh peaches and grapefruit, and so I had to side with the ladies. As the tour boats headed out, they took with them much of the volume. Conversation flowed easily, and Cortney came back to let us know about the menu features for the evening. We got started with an order of Brett’s Café Chips, homemade potato chips topped with sweet and tangy pulled pork, sliced jalapeños, and melted cheese. We also asked for an order of the Bam Bam Shrimp; perfectly fried local shrimp drizzled with their signature Bam Bam sauce. It’s a sweet-and-savory shrimp explosion with just a hint of heat. We came for drinks and appetizers, but when the Lucy Ferguson headed for Cumberland Island, dinner service began and the Scallop and Pork Belly evening special was the temptation of the table. We decided on the scallops and an order of Fried Shrimp to share. The pork belly was silky smooth and paired wonderfully with the scallops, which came surf-and-turf, divided by an island of creamy and delicious risotto and roasted asparagus. The sear on the scallop was the perfect crispy contrast to its delicate flesh, finished with a lemon butter sauce. The dish was perfect. The Fried Shrimp were breaded lightly and fried golden brown, served on a nest of crispy French fries with all the accoutrements. A definite crowd pleaser. While Brett’s Waterway Café is the perfect spot to celebrate a Friday afternoon and welcome the weekend, their delicious food and hospitality make it a great place to celebrate anything at all. They are open Tuesday to Saturday from 11:30 a.m. to 8:30 p.m., with the dinner menu beginning at 5:30 p.m. APRIL 2021

ISLAND ENTERTAINING CRAB CAKES Ingredients 1 lb. crabmeat, drained and picked over for shells 2 Tbsp. mayonnaise 1 Tbsp. Dijon mustard 1/2 cup panko bread crumbs 2 Tbsp. chopped fresh parsley 1/4 cup sweet onion, diced fine 1 large egg 2 tsp. Paul Prudhomme’s Blackened Seafood Magic 1/8 tsp. sea salt Fresh ground black pepper, to taste 2 Tbsp. olive oil, divided Zest of 1/2 lemon Preparation Sauté onion and seasonings in 1 Tbsp. olive oil, let cool. Place all ingredients (except the remaining olive oil) into a large bowl and toss gently with your hands or a spatula. Form into 8 cakes and chill on a plate in the fridge for at least 1 hour. When ready to cook, heat the remaining olive oil in a heavy skillet and fry the crab cakes on both sides for several minutes until they are golden. Serve with Fruit Salsa and Romaine and Herb Salad.

W
hen I heard my friend, Chef Michael Gass, had been named Fernandina Beach High School’s Teacher of the Year, I was thrilled for him! But not surprised, as Chef Mike’s culinary program is top-notch, paving the way for young people to pursue careers in the food, beverage, and hospitality industries. “It is a delight to walk into restaurants and see students from the past and present,” says Gass. “We prepare students to work in the industry locally, but we have also sent several students to premier culinary schools around the country. Two just graduated from the Culinary Institute of America, and another is expected to graduate next year!” When my husband and I were hankering for crab cakes recently, I asked Chef Mike if he would share his favorite recipe. He was pleased to do so, and also included his recipes for Fruit Salsa and
Romaine and Herb Salad to go with the crab cakes. After chatting with him about the recipes, Chef Mike decided to use his crab cake menu as a class project, so a lot of crab cakes were consumed this week! Here are some keys to successful crab cakes: any crab will do, but lump is the best for this application. Be careful not to overwork the crab and filling as you stir the ingredients together. Sauté the onion and seasonings in a bit of olive oil before adding it to the crab cake mixture. After forming your crab cakes, place in the fridge for an hour or so. This will help them keep their shape when cooked on a hot griddle. Crab cakes can be served all sorts of ways—atop a bed of asparagus, alongside a heap of grilled vegetables, and even as a sandwich. And mini crab cakes make great hors d’oeuvres. Thanks for the recipes, Chef Mike! And keep up the good work!

FRUIT SALSA Ingredients 1 cup diced melon 1 cup diced strawberries 1/2 small red onion, chopped (about 1/2 cup) 1/2 jalapeño pepper, seeded and chopped (about 2 Tbsp.) 1 Tbsp. chopped fresh parsley 1 Tbsp. chopped cilantro 1 1/2 Tbsp. fresh lemon juice Pinch sea salt Preparation Place all ingredients in a bowl and toss gently. Chill before serving. ROMAINE AND HERB SALAD Ingredients 3 leaves of romaine from the heart, stems removed 3 large leaves of basil 3 leaves of mint Olive oil Sea salt and fresh ground black pepper to taste Preparation Place romaine leaves on a cutting board, roll, and slice into thin strips. Toss with the herbs, olive oil, salt and pepper, and serve immediately.
