The Amelia Island Concours d’Elegance in early March last year was one of the last major events that happened on the island before the Covid pandemic turned our world upside down. This year, in the hope that things would continue to settle down as the year progressed, the date of the show was pushed to late May. Despite losing one of our sure signs of spring here on Amelia Island—the parade of fabulous automotive gems on our roadways in early March—we are grateful to have the Concours return in full this month. The show must go on, as it is said, and we commend Bill Warner and his outstanding team for making it happen. Known affectionately around the world as “The Amelia,” our favorite automobile show is a two-time winner of the Motoring Event of the Year at the prestigious International Historic Motoring Awards in London. Its reputation is well-deserved. Whether you’re traveling around the country or across the globe, when you mention Amelia Island, car lovers of all ages and types get interested. Renowned for its gathering of famed race cars each year, this event has come to be known as the “Racers’ Concours.” This year’s honoree is Lyn St. James, whose two-decade racing career included competing in the IndyCar series, two class victories at the 24 Hours of Daytona, and becoming the first woman to win Indy’s Rookie of the Year award. In addition to its unmatched array of seminars, social events, and road rallies, this three-day extravaganza offers an unmatched opportunity to see some of the world’s finest automobiles. Celebrating its 26th anniversary this year, the Concours culminates on Sunday with a display of 300 rare automotive gems on the fairways of The Golf Club of Amelia Island. These stunning classic cars represent almost every era of automobile production, including early models, the great luxury cars of the 1930s, classic models from the 1950s, and some of the best racing cars ever produced. Congratulations to Bill Warner and everyone at “The Amelia” for presenting another memorable Concours weekend, despite the shadow of the pandemic. Over the past 25 years, the Amelia Island Concours d’Elegance Foundation has given over $3.75 million dollars to local charities, including Community Hospice & Palliative Care, Spina Bifida of Jacksonville, Shop with Cops, and other worthy charitable organizations in northeast Florida. Also this month, we find out what’s ahead for the Class of 2021, who overcame uncertainty and supported each other in their senior year; take a look at the renovated Ocean Clubhouse of The Amelia Island Club; learn about the new Simmons Road Park; visit two natural springs near Ocala; and much more. ow in its third decade, the Amelia Island Concours d’Elegance is among the top automotive events in the world. “The Amelia” draws more than 300 rare vehicles from collections around the world to The Golf Club of Amelia Island and The Ritz-Carlton, Amelia Island, for a celebration of the automobile like no other! This year, The Amelia was moved from its customary second weekend in March to the third weekend in May. Nearly three decades ago, Bill Warner, an antique car collector and writer/photographer with Road and Track Magazine, thought Amelia Island would be the perfect location to hold a Concours d’Elegance. Translated from the French, concours d’élégance is a “competition of elegance” and refers 11 AMELIA ISLANDER MAGAZINE •

to an event where prestigious vehicles are displayed and judged. With help from Patti Hendrix of The Ritz-Carlton, Amelia Island, the first Concours was produced in 1996. It has grown dramatically over the years, attracting thousands of people to the island. Along with the public display of automobiles, the Concours offers various seminars, social events, and auctions, rounding out a fabulous weekend of exceptional autos, their owners, and car-lovers. But things haven’t been easy for The Amelia during the pandemic, which attracts car enthusiasts from all over the world. “The realities of life during the pandemic have compelled us to reevaluate our format,” says Warner. “The biggest and most noticeable change will be fewer classes. I often get criticized for MAY 2021

having too many cars on the field. Some even suggest that we have, and I quote, ‘too many race cars.’ Not guilty: you can never have too many race cars! I’ll make no apologies for being known by many as ‘the Racers’ Concours.”

LYN ST. JAMES HONORED AT THE 2021 AMELIA CONCOURS This year, racer Lyn St. James will be The Amelia’s honoree, so expect a diverse mix of competition cars in the Cars of Lyn St. James Class. “Lyn is a poised and articulate spokesperson for motorsport and the business of motorsport, and she is possessed of an enviable work ethic, a deep and impressive competition resume, a dazzling smile, and a quick wit,” says Warner. “Her racing career began in a Ford Pinto in the 1970s and had its grand finale more than two decades later in a special commemorative ceremony on the ‘yard of bricks’ at the Indianapolis Motor Speedway. the first woman to win Indy’s prestigious Rookie of the Year award and was named as one of the ‘Top 100 Women in the Automotive Industry’ by Automotive News and ‘Top 100 Women Athletes of the Century’ by Sports Illustrated.” The Concours opens on Thursday, May 20 at 10 a.m. with the RM Sotheby’s Amelia Island Preview, held 10 a.m. to 8 p.m., at The Ritz-Carlton Ballroom, Ocean Front Lawn. This event is open to the public, and while you’re visiting, be sure to stop by The Shop at the Concours, held on the Concours Show Field. PORSCHE DRIVING EXPERIENCE AND SEMINAR WITH DALE EARNHARDT, JR. On Friday, May 21, the Porsche Driving Experience departs from the Fernandina Beach Municipal Airport immediately following the 7 a.m. check-in and 7:30 a.m. drivers meeting with coffee and donuts. Participants will travel in their personal vehicles to a yet to-be-determined location, where they will enjoy activities to include an autocross in one of the latest Porsches and a spirited ride with a professional driver. case practically priceless, cars,” says Warner. “Cost was never an object with Hispanos, and it shows. “While fewer than 300 survive, it’s still a grand tale. It all helps make Hispano-Suiza one of the most legendary, elegant, desirable and exotic cars in history.” The Amelia is also presenting an eclectic and often ignored class of rare classic and special interest two-stroke motorcycles. “It’s as though 2021’s ‘Weird & Wonderful’ class somehow infiltrated our annual motorcycle class,” says Warner. “Many of these bikes are the centerpieces of happy memories. For some Baby Boomers, the ritual of mixing gas and oil for their first bike was a rite of passage.” In addition, the Chevy Thunder class, dedicated to Chevy power, will honor the cars and engines that made history, invested the average American motorist with the luxury of power on demand, and created a muscular aura around Chevrolet’s iconic “bowtie” emblem. FIRST LOVE BREWING CREATES “TURTLELY AWESOME” ALE TO BENEFIT AMELIA ISLAND SEA TURTLE WATCH Amelia Island’s First Love Brewing is built around the idea of pursuing your passions and dreams. “We are driven by the people we meet, the community that we live in, and the places we visit,” share owners Jessie and Kevon O’Brien. “At First Love, we aim to bring together great beer and good people under one roof.” But those aren’t the only passions the O’Brien’s bring to the community. “We visited Hawaii in 2016 and learned about sea turtles. When we realized Amelia Island has the perfect ecosystem for the species, our interest and involvement grew. We met the team at Amelia Island Sea Turtle Watch (AISTW) and learned this organization is made possible because of volunteers and public donors, and we had just the idea.” Turtlely Awesome is a special American wheat ale brewed to promote awareness about sea turtles and to help support the work of AISTW. For every pint sold, First Love gives $1 back to the charity, and in 2020, that meant a generous gift of $2,300. “This year, we are kicking off the campaign in early June and view this as a unique way to give back to the community and a cause we are so passionate about.”

Throughout the Covid-19 pandemic, we have seen Amelia Islanders come together and support each other like never before. One great example is Amelia’s Fine Jewelry’s recent appreciation of our healthcare heroes through a $500 gift certificate to a deserving Baptist Medical Center Nassau staff member. “We are pleased to present this gift to Robin Thomas,” says store owner Gigi Grubner. Robin works on the Environmental Services team and was Gigi Grubner and Robin Thomas nominated by her supervisor, Don Gabriel. “Robin has worked in all the areas of the hospital for 17 years, but for the last three, she has served the AAU unit (ICU) facing the daily challenge of COVID-19 patients. She doesn’t complain, takes ownership saying, ‘Those are my rooms,’ and ensures a clean environment for her patients. Robin is someone we count on every day, and her heart is always in the right place,” says Gabriel. “I wanted to recognize a community member who has gone above and beyond,” says Grubner. “Robin’s nomination stood out because she puts herself at risk every day to ensure the patients are cared for in a clean environment. So often, housekeepers are overlooked, and our store wanted to make sure someone with Robin’s dedication was thanked and celebrated.”

FRIENDS OF THE LIBRARY ART EXHIBIT AT FERNANDINA BEACH LIBRARY Friends of the Fernandina Beach Library is presenting an art exhibit entitled, “Just Above Water: Florida Folk Art,” on display at the Fernandina Beach Branch Library from May 1 to October 30, 2021. This exciting, traveling art exhibit comes to Fernandina Beach from the Museum of Florida History in Tallahassee and includes a varied collection of objects made from diverse materials such as textile, metal, and wood. Most of the folk artists are self-taught and have been inspired by their customs and traditions. All have been recognized by the State of Florida with the Florida Folk Heritage Award and are residents of Florida. Friends of the Library member Peggy Bulger, a Fellow in the American Folklore Society, member of the Florida Folklife Council, and member of the Florida Humanities Council, will serve as guest curator for the exhibit. FOL’s Art Committee is looking for local folk art to be displayed alongside this exhibit. C

asey Matthews’s art reflects change, growth, and evolution. She’s constantly challenging herself, searching for the best version of her creativity. “I don’t believe in having a comfort zone,” says Matthews. “I try to find consistency in the chaos, while keeping my work loose, and free.”

A Misunderstood Literary Genius

Matthews has been creating art since she was a small child; in fact, it’s all she’s ever known, and all she’s ever wanted to do. “My creativity begins with a constant state of awareness and appreciation for everything around me,” says Matthews. “I’m always noticing patterns in nature, and the way inanimate objects and shapes harmonize with each other.” Having grown up in San Antonio, Matthews moved to Amelia Island over 20 years ago, initially creating art in her studio space at Blue Door Artists. In 2017, she opened her own studio

and gallery at 813 South 8th Street, where her craft has flourished. Her art is in collections around the world and featured in publications such as Southern Living, House Beautiful, Luxe Design, Domino, and on HGTV. Many of her pieces are large commissioned works, up to 15 feet in length, and can be found in private, corporate, healthcare, and hospitality locations. She is a prolific artist, who works on multiple pieces at once, inspired by the coastal community in which she resides. Her art can be found in galleries throughout the U.S., including Boston, Charlotte, Atlanta, and Delray Beach. Matthews creates rich paintings with multimedia surfaces that are both visually intriguing and full of energy. They incorporate expressive color, fluid movement, and strong elements of design. She has developed a series of gestures and marks that make up a unique visual language. ottonways has been on Amelia Island for 12 years, but the owner, Jennifer Davis McNeill, has been offering a comfortable and sophisticated clothing line since February 2006. Jennifer turned down post-graduation job offers to follow her dream, opening her first store in downtown Melbourne, Florida. “In February 2009, we opened the doors on our second location in Fernandina Beach,” says Jennifer. She now also has stores in St. Augustine, Vero Beach, and Winter Park. It’s no wonder the clothing line is so successful. When walking by the store on Centre Street, it is hard not to stop to take a closer look at the beautiful clothes on display. The best part about the clothing line is that it is nearly maintenancefree. While the Covid pandemic taught the Class of 2021 that things can change in an instant, they also learned the importance of supporting each other and working together.

enioritis is in the air! You can see it on social media with the gorgeous senior pictures, feel the energy when you run into graduating friends in town, and perceive it on the hearts of countless moms and dads who have worked hard for this milestone. Fernandina Beach High School (FBHS) senior Kamryn Williams sums it up well. “Growing up on an island, where everyone knows everyone, it’s hard to imagine myself outside of city limits,” says Kamryn. “However, I can’t wait to explore the world and make connections with new faces!” Kamryn plans to study nursing at the University of Central Florida, with plans to become a nurse midwife or OBGYN. While eager for what’s ahead, the Class of 2021 can’t help but fondly reflect on the last four years at FBHS. “My favorite 35 AMELIA ISLANDER MAGAZINE •

memory is after every home football game, a group of us would head straight to Zaxby’s to just hang out and talk,” shares Erica Teare, who will attend Auburn University to study engineering. Similarly, Saylor Hogue, who will attend Georgia Southern University to pursue a major in business, also thinks back on Friday Night Lights and homecoming week in particular. “My junior year, our class won homecoming week and beat the seniors. That was a goal of mine since freshman year—and we made it happen!” For this year’s homecoming, Kamryn will never forget Logan Parker being crowned King. “Seeing the joy and happiness on his face after hearing his name called was definitely the highlight of my high school career.” continued on next page MAY 2021

It’s just this love and support for one another that makes this class so special, and it’s not just between classmates; this group is quick to recognize their teachers. “Because each of my teachers invested plenty of time and energy in helping me, I will miss them the most. I have had 18 different teachers over the years, and each one truly cared about my academic and personal success,” says Cole Terry, who is headed to the University of Florida’s Innovation Academy to major in business management. She hopes one day to find a career in law. While the entire staff is phenomenal, there’s a small roster of teachers these students want to remember: Erica nominated Mr. Weiser for his energy and welcoming spirit; Saylor recognized Mr. Ball for being a team player and educating about the real world, in addition to the curriculum; and Kamryn chose, Mr. Sapp, hands-down, for encouraging students to reach for the stars and stay true to themselves. This bunch of kids have already been reaching for the stars and realizing some amazing dreams. For instance, Cole Terry is a favorite local musician making quite a name for himself performing at local venues. Erica is making her mark as president of Dance Marathon, raising funds for local children’s hospitals. Kamryn has expressed her creativity through videography, with a YouTube channel numbering 3,000 subscribers and 200,000 views! And Saylor is a firecracker, full of energy and ambition. She has been nannying, waitressing, and now cart-girling since the moment someone would hire her! Having lived through COVID-19, the Class of 2021 understands that life can change in an instant, and their attitudes reflect that: it’s up to you how to respond, everyone must work together in hard times, and as Cole put it, nothing is impossible with God. Between their amazing school, supportive families, and the past year of innovations, the Class of 2021 is ready to embark on their next adventure. reimagined Despite a year-long remake and a global pandemic, The Amelia Island Club’s renovated Ocean Clubhouse is flourishing, thanks to a creative staff and a close-knit community.

n 2018, The Amelia Island Club closed the doors of its Ocean Clubhouse building for a full-scale renovation. ELM Architecture of Jacksonville and Ansana Design of Winter Park were chosen for the renovations, each selected for their brandfocused hospitality and commercial environments and their strong dynamic architectural presence. It took about a year to complete the project, and the new Ocean Clubhouse was ready to set sail. Until, that is, a global pandemic shut down the world. But unlike many businesses that suffered throughout 2020, the Ocean Clubhouse flourished, and much of their success was due to their creative staff, who figured out how to safely maintain their membership and facilities. “We followed the State of Florida’s and CDC’s guidelines,” says Membership Director Donna Bilger-Manken. “The golf course was kept open, and our pro shop set up outdoors. We saw a huge resurgence in golfers, in fact, in all outdoor activities at the club. And as we were able to open the Ocean Clubhouse again, our membership increased!” Bilger-Manken, along with Communications Director Elaine Matts, General Manager Dave Shepler, and Club President Jim Sweet, began working on innovative ways to keep the Club going strong. “Due to our efforts to keep our staff employed, we were able to attract local and highly talented chefs, such as Executive Chef Sean Woods and Executive Sous Chef Rick Laughlin to lead our culinary team,” says Matts. “We hired other local employees who had been furloughed from their jobs, too.” The Club’s new centrally located from-scratch kitchen allowed for better expedition of all their dining areas, such as the Ocean 5 Dining Room, The Waves Dining Room, and the Atlantic Room Ballroom. A second kitchen on their first-floor services the Driftwood Restaurant and outdoor poolside dining. But The Amelia Island Club isn’t just about fine food; it’s about community and the activities that are important to its members. “We have a good vibe here,” says Bilger-Manken. “We have so much going on, like family cookouts, musical events, wine tastings, and ongoing educational programs. “And beyond the actual clubhouses, our members enjoy all the Omni Amelia Island Resort amenities, including the golf course, pools, fitness center, and tennis courts. We offer full service at the beach, and special activities for children, too. walk in the park After developing Simmons Road Park with the City of Fernandina Beach, 8 Flags Playscapes hopes to continue adding to its legacy of accessible parks on Amelia Island.

id you know that the City of Fernandina Beach has added a new park to its collection of nearly two dozen properties that preserve and showcase Amelia Island’s natural beauty and give residents places to sit, walk, grow, and play? Simmons Road Park is now open and ready for you to do just that! Developed in partnership with 8 Flags Playscapes, Inc., Simmons Road Park is the third in the 8 Flags collection of public spaces. “8 Flags Playscapes, Inc. is a non-profit grassroots community organization dedicated to building places where playing is fun for everyone,” says Trey Warren, president of the organization. Warren has been working with 8 Flags Playscapes since its inception. The team made its first impact on the island by ideating and building Pirate Playground behind the Atlantic Rec Center, where individuals of all abilities and ages can play. But that wasn’t enough for this group of dedicated Islanders. The organization next conceptualized and developed Egan’s Creek Park on Atlantic Avenue, the first universally accessible property dedicated to physical wellbeing, with a walking path, exercise equipment, and most recently, an added playground. 53 AMELIA ISLANDER MAGAZINE •

It didn’t take long for the City of Fernandina Beach to appreciate the value of 8 Flags Playscapes, and it is thrilled to work in partnership with them. “As you look around our island, we have an abundance of properties, but they are mostly clustered on the northside,” says Fernandina Beach Parks & Recreation Director Nan Voit. “The Simmons Road property was an opportunity for us to extend our reach.” Voit is right, as the new park’s location adjacent to the Amelia River-to-Sea bike trail could not be more perfect. If you enjoy a pedal along Amelia Island’s network of bike trails, Simmons Road Park is a perfect rest stop, with its packed gravel parking, bike racks, accessible bathrooms, and petfriendly spaces. “We are excited to be part of opening another inclusive property,” says Benjamin Morrison, 8 Flags vice president and designer of all three 8 Flags properties. “Simmons Road Park offers the first universally accessible nature trail on the island. In the design, the team considered as many people groups as possible, even consulting with a team of professionals on autism from University of Florida to account for proper sensory and spacing needs. As you visit the park and stand under its welcoming pavilion, the quarter-mile nature trail pulls you in like a magnet. “Mom, what’s around that corner?” my son, Carter, asked as he dribbled his redand-black soccer ball down the trail. Around those corners were canopies of oaks with birds’ nests and squirrels jumping from branch to branch. Relaxing under a blue Florida spring sky, we walked, laughed with our friends, and played with the ball. “What we are trying to cultivate,” says Morrison, “is the peace of our island, the joy of your time in it, and memories with loved ones of all abilities.” The Amelia Island community is crucial for the success of 8 Flags Playscapes, and the Simmons Road Park bears the mark of the island’s generosity through its tree, bench, and monetary donations. vibrant verbena As April showers bring forth bright colors in our gardens, add some pop to your landscape with plants like EnduraScape Red Verbena and Lime Sizzler Firebush. BY BETTY MORRELL

O

ur April showers, which were occasionally a deluge this year, really greened up the grass and shrubs, and also brought forth loads of beautiful flowers! I like bright flowers in my garden, and that is why the EnduraScape Red Verbena caught my eye. If you want a showy pop of color this is the plant for you, and me. EnduraScape is a very showy trailing plant that grows 6 to 10 inches in height and can spread 2 feet or more. The blooms are so profuse that they literally smother the toothed leaf foliage, creating an awesome sight. This Red Verbena has a long blooming season, running from late spring through the summer. The flower clusters attract birds and butterflies. It is an ideal selection for low borders, in groups in mass plantings, or as a spiller in your container planting. Plant in sunto-part shade and water it regularly until it is established. EnduraScape is another Southern Living plant, and it is available at Home Depot. For another interesting pop of color, check out Lime Sizzler Firebush. Its sparkling red-orange flowers, perched

TIP O OF F T HE M O N T H Here are some ideas that keeps mosquitoes at bay. Plant Lavender with mint. The scent combination bothers mosquitoes. Place pots around your sitting area outside to be mosquito-free. A reader suggested combining a big bottle of blue cheap mouthwash with 3 cups of epsom salt and 3 cans of cheap beer. Mix until the salt has dissolved, then spray wherever you sit outside. It won’t harm plants or flowers, and mosquitoes will leave the area and not come back. Good luck!

They can reach 3 to 4 feet in height and will spread 3 to 4 feet wide. Lime Sizzler should be planted in full sun to part-shade, and I promise you will enjoy this easy-care, heat-loving, compact, mounding, spreading plant. Water it moderately, and once it is established, water it occasionally. (Water

it more often if it is planted in containers or if we have extreme heat.) Lime Sizzler works well as a hedge, in mass plantings, as an accent border, or in containers. By the way, they make great cutting flowers with the leaves in a vase. This Southern Living plant has a patent pending (PP). How about something for rock gardens, woodland gardens, borders, or ground cover? I found this little beauty called Sassy Grass (Sisiytinchium). Sassy grows 18 inches in height and width, and it has dainty violet-blue flowers from late spring through fall. This precious dwarf, easy-care grass attracts birds and butterflies, has a compact mounding habit, and is heat tolerant. It’s an evergreen that will return year after year. Plant this new (PP)Southern Living grass in full sun to part-shade and fertilize it throughout the growing season. Deadhead it year-round and trim it back in the fall. riends living on Amelia Island were determined that John and Debbie Baechle would move to Amelia Island, and they did. With a home base in Hudson, Ohio, where they spend the summer months, the couple has established a beautiful home on Long Point in Amelia Island Plantation, where they come to escape the midwestern winters and welcome friends and family to visit. Working with Vic Buscaino of Arthur Rutenburg Homes, the couple designed a house that met their very specific vision. “What a great project, working with a couple who knew what they wanted and chose a design that was a contrast to many of their neighboring homes,” says Buscaino. The four-bedroom, six-bath (plus two half-baths) house is described by its owners as West Indies exterior with an open contemporary interior. The lot offers complete privacy and opens to a gorgeous marsh panorama that changes throughout the day.

The Baechles found a floor plan Rutenburg offered that they liked, then made custom adjustments to it. Debbie’s experience as a realtor, with expertise in construction and interior design, has proven to be a great asset through the last 15 years as the couple has remodeled and built homes. That is not to say that John doesn’t have his own ideas. The couple smiles as they describe the process of adding three unusual transom openings in one wall of the main living area. The addition added a dramatic focal point to the living room, as well as added light

and decorative detail to the stairwell leading to the second floor. The home is a wonderful space for entertaining, and the outdoor pool, large lanai, and marsh view make one feel as though they are at a resort. Entering the home, one is greeted by an intimate sitting area with a dramatic stacked stone fireplace that reaches to the 15-foot ceiling. The kitchen fits snugly into the passageway leading into the main living area. A large, rounded quartzite kitchen counter adds a softening touch to the space. An interesting design element that provides

ease-of-use is a pair of GE Monogram ovens. Instead of stacking the two, Debra designed the two side-by-side. Within the house, there is a sharp contrast between the first and second floors. The first floor is very contemporary. Large oversized and colorful paintings dot the walls that lead through the cleverly designed open spaces to the pool area, outdoor kitchen, and screened lanai. Much of the couple’s collection of striking contemporary art was purchased at Art on Centre in downtown Fernandina Beach. A

dramatic focal point in the living room is a cabinet made of textured German silver, a combination of copper, nickel, and zinc. A master bedroom wing has the bedroom looking out over the pool area. The unique bathroom features a twoentry shower tunnel behind the main bathroom and tub. A heating system uses the heat from the entry fireplace for the bath area. The second floor is guest-friendly and cozy, with more traditional furnishings. A thoughtful touch is a

A large gathering area and workspace for John opens to an expansive screened porch great for cocktails and viewing the stunning sunsets. By preference, the landscaping is understated and minimalist. Natural plantings contrast with more formally landscaped homes nearby. They credit Haywood Odoms Jr., who carefully tends the yard yet keeps it Florida natural. The Baechles combined family includes 8 children and 13 grandchildren,

ranging in age from 6 months to 25 years, who love their visits, going to the beach, and exploring Amelia Island. The kids live great distances apart, from Australia to New York and many locations in between. When family and friends visit, the Baechles love sharing all they adore about the island, including golf, dining, and the beautiful beaches. They share their home with KJ (for Kendall Jackson), a peppy little dog that loves his spacious home and his walks in the neighborhood, where he greets everyone cheerfully.

T

he Amelia Island Tea House is the most recent addition to the Fernandina Beach food & beverage scene. Owners Myrta Defendini and Deborah Gold once owned the Hoyt House Inn, where they served a traditional English Tea. Myrta and Deborah now own David’s Restaurant and Lounge, and they have recently opened the Amelia Island Tea House, where they are again offering a proper English tea. Working with friend, tea enthusiast, and designer Betty Berkman, Myrta and Deborah set out to recreate what was perfect about the tea experience.

Recently, my curiosity piqued, I strolled into the Amelia Island Tea House to see what new delights were on display. I was not disappointed. It should be noted that I have not had the opportunity to sit for a traditional English Tea and I only started drinking tea as an adult, and only because I had moved to a cold climate and do not enjoy coffee. On the other hand, I have had thousands of tea sandwiches over the years, but we called them “finger sandwiches.” Served at church, those ecumenical egg salad sandwiches would have 66 AMELIA ISLANDER MAGAZINE •

been entirely forgettable were it not for their ubiquity. The Amelia Island Tea House, however, gives this and other simple staples a delightful update. On this afternoon, I was moving quickly and would not be able to stay and enjoy the lovely setting. I had called in my order and was picking it up to enjoy with friends. I decided to try a variety of offerings, which made the signature Triple Tray the perfect option. The Triple Tray presents several indulgent treats, including Curry Egg Salad, Cucumber and Cream Cheese, and Tarragon Chicken Salad tea sandwiches, a Mushroom Tartlet, English Crumpet, Lemon & Blueberry and Oatmeal Raisin cookies, a fresh baked Scone, and a Lemon Tartlet. All of these offerings were delicious, full of subtle flavors, providing an opportunity to consider how the flavors of the food and the flavors of the tea enhance one another. The Triple Tray is an excellent way to indulge, offering a chance to experience much of what is happening at the Amelia Island Tea House. The Triple Tray is generous for one person, but since I was going to be sharing, I asked Executive Chef Devin Odom to select a few items and surprise me. He sent along Lobster Salad and Shrimp & Dill Sandwiches. The seafood was cooked perfectly and popped with flavor and fresh herbs. Chef Devin also selected a Petit Croissant, Cinnamon Scone, and a small Olive Loaf. The nibbles I took to share with friends, the tea I enjoyed while it was still hot. The bergamot flavor in Earl Gray is my favorite. The Rosy Earl Gray Organic is the same classic tea spiked with rose petals and jasmine green tea for a delightful cup that fills the senses without any added sugar. All the trimmings are available to make your tea the way you like it, but this isn’t your typical tea bag; these flavors deserve to be savored. ECENTLY, MY HUSBAND, TROY, AND I DECIDED TO TAKE A WEEKEND TRIP TO OCALA WITH OUR FRIENDS JANE AND DOUG to visit two of Florida’s most beautiful springs: Rainbow Springs and Silver Springs. Located in the heart of “Old Florida,” these springs are rich in history and chronicle the world of tourism back in mid-century Florida. Many relics of Rainbow Springs State Park’s past as a kitschy tourist attraction remain, including man-made waterfalls, an elaborate entrance walk, dining terrace, and the remains of the aviary and animal cages from the 1960s. The attraction operated until the mid-1970s, when it was forced to close because of a steady decline in business. In 1990, the property was acquired by the State of Florida to be managed as a state park. Rainbow Springs, located in Dunnellon, is the headwaters of the Rainbow River, and a great place to swim, snorkel, and kayak. The water is clear and cold at 72 degrees, and very invigorating! Troy and I did some snorkeling, while Jane and Doug walked the trails leading to the various waterfalls located in the park. Underwater in the springs, we were able to see turtles, fish, and forests of aquatic grass that provide food and habitat for he many creatures that live there. The park also has a campground with full amenities, and it is part of the Great Florida Birding Trail. Our next stop was Ocala’s Silver Springs State Park, boasting one of America’s largest springs, a venue famous for its glass-bottom boats. Boat rides are only $12 per person, and they are operated by knowledgeable and entertaining tour guides. The main spring is surrounded by serene gardens and historic structures reminiscent of the days when Silver Springs was a major destination for Northerners arriving by steamship. The park is still a favorite Florida tourist attraction and home of Springsfest, an annual event celebrating the protection of all Florida springs and waterways. 84 AMELIA ISLANDER MAGAZINE •

From our boat, we were able to see alligators and birds, including a rookery of anhingas, up-close and personal, in addition to fish and turtles swimming beneath our boat. Silver Springs does not allow swimming, and you probably wouldn’t want to swim with the alligators anyway, but they have some nice trails throughout the park, which we enjoyed after our boat ride. Silver Springs also has a campground and cabins, and because it is so popular, it’s best to make reservations well in advance. In addition, there are beautiful gardens, picnic areas, and covered benches. Just down the road from Silver Springs is the Appleton Museum of Art, which we visited on a rainy afternoon that weekend. The Appleton is home to over 18,000 pieces, along with exhibitions and programs for visitors of all ages. It is definitely a must-see while you’re in the area. Ocala is about a two-and-a-half hour drive from Fernandina Beach, and close to many other points of interest, including the Florida National Scenic Trail, Salt Springs, Juniper Springs, the Marjorie Kinnan Rawlings Historic Site, and the Yearling Trail. There are plenty of “Old Florida” style motels, along with numerous shortterm rentals for your weekend adventure.
