Everyone who lives on Amelia Island, and most who have visited, can tell you what a gem the Amelia Island Museum of History is. It is one of the finest regional history museums you will find anywhere. With enthusiastic support from the community, the Museum tells the fascinating story of our “Isle of Eight Flags” through interactive exhibits and “spoken history” presentations that bring Amelia Island’s history—from the native Timucua to Spanish and French explorers, pirates and revolutionaries, and wealthy Victorian-era tourists—to life. It does this through the tireless efforts of countless volunteers.

The story of the Museum begins in 1975, when the Duncan Lamont Clinch Historical Society had an idea for a museum that would collect items and interpret Amelia Island history. At that time, William Decker, caretaker at Fort Clinch and a history enthusiast, was amassing thousands of historical documents, artifacts, and books on local and natural history. In 1977, a non-profit institution called the Fernandina Historical Museum was incorporated. The City of Fernandina Beach purchased the Decker collection, which it subsequently donated to the Museum. In 1978, the Museum was opened in the old Train Depot, providing a home for the Decker Collection which could now be more easily shared with the community.

By 1979, the old county jail at 3rd and Cedar Streets was empty and in disrepair. The County Commission offered the museum a lease for $1 per year, and soon volunteers began working to create a functional exhibit space. The Museum tried to create interest through a renaming contest, and later by rebranding as a Florida transportation museum, but neither got much traction. The Museum’s board of directors began to search for a new inspiration to keep the Museum alive. That inspiration came in the person of volunteer Deon Jaccard, who resurrected the display stands and framed flags from the first Museum effort, adding new material and creating a “spoken history” museum. With the help of local historians like Helen Litrico and Suzanne Hardee, she trained volunteers as tour guides for an “Eight Flags” journey. With these changes, the Museum went through its final name change to the Amelia Island Museum of History. Today, the Museum is the caretaker of Amelia Island’s exciting history, which it shares through its exhibits, community programs, and its modern research facility. We are thrilled to preview the renovated Museum in our cover story this month.

DEDICATED VOLUNTEERS MAKE THE MUSEUM RUN A seventh-generation North Floridian and Amelia Islander since 1976, Phyllis Davis has been Executive Director of the museum for over 12 years. She credits a great staff, board, and dedicated volunteers in the museum’s growth and success. Under Davis’ capable direction, the museum’s four full-time and two parttime staff and a corps of volunteers coordinate a wide variety of programs and services.

“We are very excited about the transformation of our Museum,” shares Davis enthusiastically. “We have worked to hone and refine what previous staff and volunteers have created in an effort to engage our visitors with history and keep the Museum moving forward.”

Docents go through an extensive virtual training program preparing them to take visitors on museum tours, walking tours, or to be available as speakers.

From the friendly greeters at the museum’s front door to the chefs who cook up the museum’s now-famous shrimp gumbo served each year at the Isle of Eight Flags Shrimp Festival, volunteers are vital. Almost any talent can find a home in the museum volunteer program, according to Seagraves. Newcomers to the island find the museum a great place to volunteer, meet people, and get involved in the community.

Each year, the museum coordinates three major fundraisers: The Holiday Home Tour in December, the Amelia Island Museum of History Golf Tournament in February, and the shrimp gumbo booth at the Isle of Eight Flags Shrimp Festival on the first weekend in May. The success of these popular community events would not be possible without volunteers.

DAILY TOURS AND MONTHLY PROGRAMS On a daily basis, the museum is a busy place. Onehour tours of the museum are held daily at 11 am and 2 pm Monday through Saturday. In addition, the museum offers walking tours in the Historic District. For those looking for a little fun with their history, a Ghost Tour every Friday evening as well as pub crawls are offered by reservation only.

The museum offers many specialized tours by arrangement, including Victorian teas and architectural tours. Docents are available in costume to give presentations. There is something for everyone, including camps and programs for children. To showcase local historical research, a dedicated space just inside the entry door offers changing exhibits.

Museum Curator Summer Bias coordinates two of the museum’s most popular programs: Third on Third, a onehour lecture program, is offered every third Friday, in which the museum hosts historians, authors, and other experts for thought-provoking lectures on local or regional history. The topics range from Florida’s statehood to the history of toys, live oral histories to Yamasee princes.

The popular Brown Bag Lunch lecture series offers presentations by people in the community with interesting stories to tell. Participants are invited to bring a lunch and meet at the Museum at noon on the first Wednesday of the month.

Attendance is free and open to the public.

OSPREY VILLAGE ANNOUNCES 2021 SILVER PEN SCHOLARSHIP WINNERS Osprey Village, a luxury senior living community on Amelia Island, has announced the 2021 winners of its Silver Pen Scholarship Competition. The scholarship, started in 2012 by parent company, The Maxwell Group, has awarded nearly $330,000 to high school seniors with the goal of bridging the communication gap between high school seniors and members of the senior living communities. “It’s a great scholarship opportunity, as local students write essays on a chosen topic and our Members get to read and judge the entries based on the set criteria” says Matthew Barger, Osprey Village’s executive director. “Our Members love participating, and it’s a great way to connect with our local community.”

This year, the essay topic chosen by Osprey Village was, “There are many people that can be influential to an individual’s life, whether they be someone in history or known personally. If you could have a conversation with anyone, living or deceased, who would it be and why? What would you discuss?” Scholarships worth $3,750 were awarded to Catherine Fenstermaker, First Place; Meredith Boswell, Second Place; and Dylan Kelly, Third Place. SOUNDS ON CENTRE RETURNS FOR 2021 Last year, we missed so many things on Amelia Island, and Sounds on Centre was one of the things we missed most. But 2021 is a whole new summer, and Amelia Island is thrilled to welcome back this great tradition. Sounds on Centre, an energetic, free outdoor concert series appropriate for the entire family, occurs the first Friday of each month through October.

The concerts are always an entertaining two-hours as bands perform on Centre Street between Second and Front Streets from 6 to 8 p.m. Roads are closed to traffic during this time, and that means that not only our sidewalks, but also the streets, are open for families to setup chairs, blankets, and even mini dance floors to enjoy the shows. Children adore the music and provide their own show as they sing, play a game of tag, and blow bubbles in front of the stage.

Created and produced by the Historic Fernandina Business Association, the 2021 season opened with Band on the Run performing in May, and the Amelia Blues Project is the featured artist for the June 4 concert. As the Amelia Island Chamber Music Festival celebrates its 20th season this year, it has also officially passed its leadership baton. Dr. Joe Marasco, who has guided the beloved festival since 2013, provided the passion, dedication, and optimism to usher the festival through a period of challenges and impressive growth, bringing many of the world’s finest classical musicians to Amelia Island.

With respect and appreciation, the Festival’s Board has given Marasco the title of Executive Director Emeritus. The new Executive Director of the Festival is Eric Sakurai.

Eric has held a variety of corporate senior executive positions in operations and finance at major corporations, and after his retirement in 2015, he served as board member with the Amelia Island Chamber Music Festival, Take Stock in Children of Nassau, and The Guitar Foundation of America. A lifelong, classical music enthusiast, Eric developed a strong passion for playing classical guitar in recent years, and he enjoys living on Amelia Island with his wife of 50 years, Gail. “In my new role as the Executive Director of the Festival, I look forward to working closely with patrons, volunteers, artists, board/ staff members, and all music lovers to bring world-class music and education programs to our community.”

breadth of his work, yet some of his favorite images were made here on Amelia Island. “My website gallery is a place designed to share beauty,” says Leimberg. “Both real and imagined, incredible moments are missed unless you slow down, stop, and look more closely—and with different eyes—at the intense color, texture, lines, shapes we encounter, at moments in time that most others haven’t seen.”

Leimberg’s intense desire to “image” people, places, and objects is ironic since he lacks eidetic memory, a learning disability that prevents him from creating or recalling images in his mind. The term for this is Aphantasia.

“Photography brings those images back,” says Leimberg, “and is also a key that opens the door to fascinating people I would never have met and places I would never have visited.”

A strong supporter of Wild Amelia and the Amelia Tree Conservancy, the “Bird Man of Amelia” is passionate about preserving the unique environment of Amelia Island. “My fine art nature photography is a way of saying all this beauty is in peril and will soon be lost if we don’t act now to save it!”

n August 2005, Cindy Jones encouraged her husband to turn his dream of owning a sailing business into reality. Tony Jones left a 28-year career in retail, and he and Cindy purchased Windward Sailing. Tony and Cindy are Florida natives and love the amazing waterways that Amelia Island and Cumberland Island have to offer. They had been sailing for many years, so their new venture was an easy transition. For Tony and Cindy, it is truly a blessing to be able to do what you love for a living.

Windward Sailing has plenty to offer for both locals and visitors to the island. They have a 34-foot sailboat, a 36-foot sailboat, and a 37-foot catamaran, which go out daily for private fun sails lasting from two to eight hours. These sails are ideal for a romantic sunset sail, family outings, proposals, bachelorette and bachelor parties, weddings, memorial services, birthdays, girls-night-out groups, and eco-tours (sailing is the original green-machine) in Cumberland Sound, the Atlantic Ocean, and near St. Mary’s, Georgia. Y

ou may know Rick Traum as a witty fellow with a great smile and sense of humor, but did you know he’s an Emmy Award-winning executive producer? Rick has produced numerous television specials, movies, and plays during his career, but did you know that Rick’s a musician? In high school, he played Timpani. “I had a band,” he grins.

“What was the name of your band?” I ask. He flashes that smile and says, “Rick Traum, His Drums, and His Band.”

When he graduated from Stuyvesant High School in New York City in 1958, the graduation was held at Carnegie Hall, and Rick played percussion.

Did you know Rick graduated from the United States Air Force School of Aviation Medicine? He served as a medic for six months active duty, and five years in the reserves. I ask him what that was like. He raises an eyebrow. “A little bit of knowledge can be a dangerous thing.”

Rick’s father, Juddy Traum, was a theatrical aficionado.

Rick followed in his father’s footsteps and studied television, motion pictures, and business management at New York 35 AMELIA ISLANDER MAGAZINE •

University. Rick graduated in 1967 and went to work as commercial producer for Johnny Carson at NBC. “He was great, Johnny made jokes out of everything,” says Rick, then shares a joke that still makes me laugh. “That’s not one I can print,” I tell Rick between laughs, “but it is one I’ll tell.” He became friends with Ed McMahon, who used to send Rick cases of Budweiser for his birthday.

In 1976, Rick took a job as the head of Late Night Programming at NBC and became the Executive-In-Charge of “Saturday Night Live.” He was there when John Belushi and Bill Murray made SNL the late-night show to watch. He says that Gilda Radnor was the performer he enjoyed the most, a real sweetheart, and Al Franken’s sense of humor almost gave him an ulcer.

“I love Al, he’s great,” Rick laughs, “a very bright guy. I had a great time working with SNL and made lots of friends. That was cool.” I asked Rick who was the easiest to work with on the set. “I guess I’d have to say Gilda. She was terrific.” continued on next page.

Listening to some of the stories from Rick’s time in television, I realized he was the go-to guy for the cast even outside of the studio.

When one of the cast members, Don Novello, perhaps best known for the character of Fr. Guido Sarducci, was in the hospital for a short stay, there was no television in the room. He wanted one, but he was told he couldn’t have one. “Where’s Rick Traum?” he asked. Rick was found, and a television was delivered.

Rick went from NBC to PBS, where he worked as an Executive Producer. While working there, Rick won an Emmy for Outstanding Children’s Program for an adaptation of Kurt Vonnegut’s short story, “Displaced Person.” Rick was also Senior Vice President of Finance & Production for Radio City Music Hall Entertainment & Radio City Music Hall Productions, as well as Chief Financial Officer for Radio City Music Hall “How did you end up in Florida?”

I ask naively, thinking he moved to Florida to retire. Boy, was I wrong. “I got tired of taking my four-year-old daughter across the dirty, sooty slush.

The studios were supposedly moving to Orlando to create Hollywood East, so we moved South. But that never happened, so I went to work for Walt Disney World.”

As a consultant to Walt Disney World Entertainment, Rick served as the Park Producer for Disney’s Animal Kingdom, where he produced the opening ceremonies and the dedication of Asia.

Rick is still active in the business.

In 2019, he co-produced a concert

by Melba Moore, and he also coproduced “Danny Kean and Valerie Ghent: In Concert,” the second in the 2019 Concert Series held at the iconic Woodstock Playhouse in New York.

After all his incredible success as a producer, Rick has a little advice for me at the end of our interview. “The awards and recognition aren’t important; the money—it comes and it goes,” he says.

“It’s meeting people and making new friends that’s important.”

Hull Shipwreck Tavern The

Looking out the window in the bottom level of his new home, Jeff Cummings felt like he was in the hull of a ship, inspiring him to construct one of the great man-caves of all time.

ot long after Jeff and his family moved into their house by the Amelia River, he and his son, Pace, were looking through a window from the bottom level out over the marsh.

He turned to his sone and said, “I feel like I’m looking out of the hull of a ship.” Almost immediately, Jeff, a carpenter disguised as a day trader, went to work turning the space into one of the most unique man caves you will ever see.

Before you open the door to enter what Jeff has named The Hull Shipwreck Tavern, you notice Jeff’s attention to detail.

The rum barrels, weathered boards, and copper relief sign with wrought iron accents are just a teaser of what lies ahead.

When you step through the door onto a concrete floor painted to look exactly like the heavy oak planks from the inside of a pirate ship from the 17th or 18th century, your legs 43 AMELIA ISLANDER MAGAZINE •

automatically brace themselves for the rocking motion of the waves you’re sure are right on the other side of the wall.

The bar to the right catches your eye immediately.

Constructed from tequila barrels and a large wooden wire spool—and thanks to Jeff’s creative mind, artistic talent, and fertile imagination—it looks like something straight off the Pirates of the Caribbean movie set. I was really impressed by how Jeff was able to turn ordinary things into realistic-looking period pieces.

Jeff put a lot of thought into each detail. Everywhere you look, you find a fun and interesting conversation piece.

behind the bar, and he even built cannons from scratch. For the cannons, Jeff started with pilings and spackle and finished with three awesome cannons for his ship. The space has so many cool touches, but for me it’s the lanterns, flickering candles, and the custom-built overhead light that create the greatest impact.

“The lighting really gives the feel of being in a ship’s hull,” Jeff says, and he’s absolutely right. It looks and feels like sunlight shining down through the boards of the top level of a ship. The more you look around the tavern, the more there is to see. Like cannon balls (painted bocce balls), liquor bottles (with custommade Fernandina Beach and Amelia Island-themed labels designed by Jeff) mixed in with the real bottles behind the bar. Wooden crates and cabinets that would hold gun powder, ammunition, spare wooden peglegs, or whatever a pirate would store in his ship are used for storage for normal things like tools and electronics.

The Cummings, originally from the Carolinas, were intrigued by the colorful pirate history of Amelia Island, so Jeff incorporated that into the design with Wanted Posters of some 44 AMELIA ISLANDER MAGAZINE •

of Amelia Island’s most notorious pirates and plunderers on the wall, along with replicas of swords and other weapons from that era.

It only took Jeff 15 months to complete the space, but he continues to add to his collection of nautical treasures, thanks to friends. His realtor, who is also an antique collector, gifted Jeff an antique wheel from a ship.

When Jeff and his wife aren’t entertaining friends, Jeff uses his unique space as an office. “I love college football, so there are three TV’s down here. I discovered I can’t handle three games at once, but I do watch two games at a time.”

I spy a plastic Macaw in a hanging cage. “His name is Bodie,” says Jeff. “He’s the mascot of Shipwreck Tavern.” I find a couple of other parrots in different places. “They’re all named Bodie,” laughs Jeff’s wife, Kimberly.

S

ometimes the best things come in small packages. Jane Lindberg is a petite dynamo who has been an active part of the Amelia Island/Nassau County arts community since she and her husband, Bob, moved here from South Carolina in 1998. They moved their company, Springer Controls, to Yulee and quickly became involved in their new community.

Jane directed her considerable energy to the Arts Academy, a non-profit dedicated to bringing performing and visual arts to the children of Nassau County. She was instrumental when the organization reorganized and became Arts Alive Nassau.

She has served as president of its Board of Directors since 2012. She credits the board, a part-time program director, and a potpourri of talented teachers, musicians, and artists who offer their talents to the many programs for the non-profit’s success.

She was recognized with the 2019 Community Volunteer of the Year by the Florida Alliance for Arts Education for her role as board president of Arts Alive Nassau.

Jane has been instrumental in forming many groups that enrich the lives of both participants and those lucky enough to attend performances, including the Island Chamber Singers, First Coast Singers, and a community chorus for youth ages 10 to 14. She also formed the Songspinners, a group of women who get together weekly and sing pop, folk, Broadway, and other fun music. Community groups like Rotary and the Hospital Auxiliary welcomed their performances. They look forward to starting up again later this year.

As Musical Director at New Vision Congregational Church in Yulee, Jane has introduced jazz and rock-and-roll into services. Even with hands challenged by arthritis, she is still able do a mean rendition of Little Richard’s “Lucille,” a performance she shared with her congregation on one memorable Jazz Sunday.

She is especially proud of the Island Chamber Singers, a 62-member group in its 16th season, which performs classical music. They sing major choral literature and offer two concerts each year in December and April. Some of their proudest accomplishments include performing at Carnegie Hall in 2017 and at L’Eglise de la Madeleine in Paris in 2019. They have been invited to sing at Carnegie Hall again in 2022.

Jane also worked closely with the Plantation Artist’s Guild and Gallery on their community photo project, “2020 – A Look Back.” With help from Arts Alive Nassau, a video of the project was produced with background music composed and played by Jane herself. Sales from a magazine published in conjunction with the project will benefit the organization.

Under Lindberg’s leadership, Arts Alive Nassau brought Jeanne Robertson, American humorist and motivational speaker to the island. The event was a huge success, and Robertson will return in February 2022 for her second fundraiser for the organization.

When Jane married Bob, she inherited three sons, three daughters-in-law, and seven grandchildren. One son, Randy, and his wife, Kristen, moved to Fernandina in 2000 from California to work for Springer Controls. Randy is now the president of the company. All three of their children graduated from Nassau County schools.

Pets are big at the Lindberg house and include two Golden Retrievers, Duffy and Maggie May, and two rescue cats, Cleo and Sox. A grateful community thanks Lindberg and her eversupportive husband, Bob, for their dedication to bringing arts of all kinds to the children of Nassau County. Their talent, energy, and dedication have given the community many memorial performances, with many more sure to come.

hot weather favorites With the official start of summer almost here, it’s time to plant tried-and-true, heattolerant favorites for our area, like Crape Myrtle, Indian Hawthorn, and Ligustrum.

pring has gone, and we seem to be flying from one season to the next!

Summer is here, with its heat and humidity, so make sure any plant you buy now is heat-tolerant.

Let’s refresh our knowledge of the reliable, tried-and-true plants for summer, like the Crape Myrtle. They will be blooming soon, so now is the time to select the colors and type of bushes for your garden.

You can also plant heat-tolerant annuals, such as Gladioli bulbs, Portulaca, Zinnias, Gomphrena, Salvia, Cosmos, Gazanias, and Caladiums.

Annuals that add color and are adaptable to the shade are Impatiens, Allysum, Begonias, Torinias, and Coleus. With a little sun, you can add Nicotiana, Lobelia, and Browellia.

You can still plant good old perennials that have had a good start, such as Lantana, Gomphrena (can be an annual or perennial), Pentas, Buddleia, Verbena, Ruebeckia, Plumbago, Gingers, and perennial Salvias. Jacobinia and Gingers can be planted in the shade.

lots of beautiful plants, so stop by and see what they have. You can plant Gardenias, Azaleas, and Camelias now. Each has so many varieties that you’ll certainly find the right one for your garden. Their colors and sizes run from dwarf to large and fragrant to non-fragrant.

One of the most popular shrubs is Indian Hawthorn, and for good reason.

Its glossy, leathery leaves and compact growth habit make it attractive as background plants or informal hedges.

My personal favorite is Majestic Beauty, with its fragrant light pink flowers in clusters to 10 inches wide and leaves 4 inches long. It is larger in detail than all the others and can reach 15 feet in height. This beauty can be made into a small tree with a single or multiple trunks. Thin branches reduce wind

resistance and minimize chances of the plant blowing down. Indian Hawthorns are salt-tolerant.

Another great shrub used for hedges is the Ligustrum (Privet).

Japanese Privit, or Wax-Leaf Privet, is an evergreen shrub with a compact growth habit to 10 to 12 feet, but it can be kept lower by trimming. The leaves are oval 2- to 4-inches long, dark-to-medium green, glossy above and almost whitish beneath, with a thick, spongy feel. This is an excellent plant for hedges or screens.

If you prefer a Ligustrum tree (L Iucidum), Glossy Privet makes a roundheaded tree that can eventually reach 40 feet. It can be kept lower as a big shrub, or it may be formed as a multitrunked tree. Its glossy, 4- to 6-inch long leaves are tapered and pointed, dark-tomedium green on both sides. The leaves feel leathery, but not as spongy as the Japanese Privet. Flowers are especially large, feathery clusters followed by a profusion of fruit.

The store’s catalog describes their philosophy this way: “Furniture and décor should be sustainably sourced, lovingly made, and built to last.”

Favorite pieces include a coffee table in the living room made from a large piece of petrified wood from Madagascar set upon simple legs. Another favorite is a chair in the living room that is more a sculpture than a chair, fashioned out of a unique piece of natural wood.

A

ny excuse is a great excuse to get out on the water with the family. On an island like ours, there are lots of options, but sometimes ol’ Mother Nature gets all huffy and puffy, and we have to retreat inland. On a recent Saturday morning, the breeze pushed us out to Lofton Creek for a little mini-adventure. I had recently scored a 1973 Sears & Roebuck aluminum canoe from an old friend and was anxious to get it in the water. I took along my beautiful daughter and biggest fan, Lydia. The deal was sweetened with the promise of lunch at the Mustard Seed Café while we were out and about.

The Mustard Seed Café is located inside of Nassau Health Foods, under a sprawling oak tree in the Amelia Plaza Shopping Center. The owner is Buster Beaton, a northeast Florida native and lifelong proponent of healthy living, who had come to Fernandina Beach years earlier to teach at Fernandina Beach High School.

He soon recognized an opportunity to fill an unmet need on Amelia Island and opened Nassau Health Foods. Years later, his commitment to bringing quality products to the 66 AMELIA ISLANDER MAGAZINE •

marketplace led him to dip his toe into the restaurant world, and ten years later, with the help of chef Shawn Meeks and their farm partners, The Mustard Seed Café is quietly putting out some of the best food on the island.

Lydia is my youngest and most adventurous daughter in the culinary sphere. When we visited sushi restaurants when she was young, Lydia would bite the heads off baby octopi and delightfully say, “Mmm, brains.” Today however, we decided to keep it simple. Despite her taste for the dramatic, Lydia has fallen in love with Caesar Salads, and so no opportunity to enjoy one is missed.

At the Mustard Seed Café, crisp organic romaine is tossed in their homemade dressing with crunchy croutons, shaved parmesan cheese, and candied pecans, then topped with the protein of your choice.

Lydia picked grilled chicken. She wasn’t really excited about the croutons or pecans, so she ordered them on the side and I got to enjoy the sweet and spicy pecans.

I went fairly traditional as well, choosing to go with the Southwest Brasstown Burger, a handmade burger made from all-natural, pasture-raised beef from Brasstown, North Carolina.

To be perfectly honest, when the beef is ground, seasoned, grilled to perfection, and served all-theway on a toasted ciabatta bun, you can’t really tell the difference. It is delicious, of course, but along with that full tummy comes the satisfaction of knowing that the meat was raised in a healthful and ethical way, and then prepared by folks who believe in serving the best products around. The burger was served with a side of chips and some pickled cabbage, which was delicious.

I added a bit of the cabbage to my last couple of bites of my burger for a killer flavor combination.

The Mustard Seed Café specializes in healthy foods prepared with fresh local ingredients. They are located at 833 TJ Courson Road, in front of the Walmart and Winn Dixie, and serve from 8 a.m. to 3 p.m. Monday through Saturday, offering breakfast until noon.

HARISSA-MARINATED GRILLED SALMON Harissa is a North African spicy red pepper sauce that is available at most grocery stores.

For a spicy grilled salmon dish, portion your salmon into 4-ounce pieces, leaving the skin on. Place them in a shallow dish, skin side down, and pour 1/2 cup of harissa over the fish.

Marinate in your fridge for several hours.

Remove from fridge and let the salmon, come to room temperature. Oil your grill, heat to medium-high, and place the salmon on the grill for about 5 to 6 minutes. Gently flip the salmon with a fish spatula, then cook on the other side for about 2 minutes.

COLD POACHED SALMON OVER GREENS Cold poached salmon is a welcome addition to any salad on a warm summer evening.

Lay your salmon pieces in a shallow pan.

Add thinly sliced lemon, 1/2 cup white wine, and then water to just barely cover the filets. Bring the liquid to a gentle simmer and cook for about 5 minutes, or until the fish is opaque.

Carefully remove the salmon from the water and lay the pieces on a cooling rack until the fish comes to room temperature. Then wrap and store the salmon in the fridge until you are ready to serve. We like to serve it atop a bed of greens, with a dollop of minted yogurt.

You can also use the salmon for other applications, like adding it to a pasta salad, or mixing it with mayonnaise as you would tuna salad, and serving it piled on a brioche roll.

ow that the world is opening back up, my husband, Troy, and I are hoping to begin entertaining again this summer. During the year-plus lockdown, we have been eating more salmon than anything, and we have discovered many new and interesting ways to cook and serve this versatile and healthy fish.

Salmon is rich in omega-3 fatty acids, which have been shown to reduce inflammation and lower blood pressure. It is also very high in protein, and it’s reasonably priced. And whether

you prefer farm-raised or wild-caught salmon, it’s available at just about every grocery store and fish market.

There are lots of ways to cook and serve salmon, whether as a quick midweek dinner after a busy day at work or for an elegant dinner party for friends.

I highly recommend leaving the skin on your salmon filets. It helps keep the fish from falling apart if you accidently overcook it. And although I’m not personally fond of the skin, many of your guests like it! Here are some of my favorite ways to cook salmon.

ROASTED ORANGE TERIYAKI SALMON This is a dish elegant enough for your next dinner party. Make a marinade by combining soy sauce, grated ginger and garlic, rice wine vinegar, a bit of brown sugar, and orange juice. Taste and adjust seasonings to your liking. Place an entire loin of salmon skin side down in a large casserole dish. Pour the marinade over all of it and top with orange slices, then let it marinate in the fridge for about 2 hours.

When ready to cook, remove the salmon and orange slices from the casserole and lay on a greased rimmed baking sheet. Cook at 400 degrees for about 15 to 18 minutes until salmon is cooked through. Place on a large platter with the oranges, drizzling the sauce over all.
