Make-up artist Lisa Potter-Dixon, spends her time making up models for Matthew Williamson and PPQ as well as for our Jubilee shoot, or creating new looks for Benefit Cosmetics and predicting trends for the new season. My muse: I have four – my sisters. I love watching the constant changes they make to their looks and their lives. We’re all so different but also so similar and our one main connection is our passion for creativity.

Our new food writer, tasked with giving you recipes you can make in 15 minutes or less, is the head chef of Polpetto. She began her kitchen career as an assistant baker to Richard Bertinet and began at Polpetto in 2010 where she has won acclaim for her osteria-inspired Italian menus. My muse: Duncan Basterfield, executive head chef at Rhubarb catering company. His faith in me inspired me to put all I can into my work and life.

hank you all so much for your incredibly warm welcome for our first issue of aMuse last month. You confirmed what we all thought – that London’s crying out for its own fabulous monthly glossy. And never more so than this summer when the eyes of the world are turning to the capital as we celebrate the Queen’s Diamond Jubilee and then the Olympics and Paralympics later in the season. Her Majesty Queen Elizabeth II may have turned down the invitation to be our June cover girl (her schedule was a bit busy, apparently), but we have the best alternative possible in the incomparable form of Elizabeth Hurley. And I’m not sure even we could have persuaded the Queen to pose in a bikini. Talking of bikinis, Irina Shayk, Christiano Ronaldo’s girlfriend, is something of an expert on the subject seeing that she’s a world-famous swimwear model – and we’ve got her talking undies. Plus we’ve the pick of the hottest beach looks for the summer, and a choice of the best beaches to wear them on – St Vincent and the Grenadines, anyone? If you’re not a bikini kind of girl, we’ve got the top trends of the season, and a selection of all the best fashion, music and shows the city has to offer. She looked as beautiful as Jean Shrimpton in the 60s, as sexy as Bardot in the 70s, as rock and roll as Kate Bush in the 80s and as cool as Patti Smith in the 90s.

UNDER THE WIRE WITH IRINA SHAYK Russian glamourpuss Irina Shayk, 26, has been going out with mega-star footballer Cristiano Ronaldo since 2010. All WAGs must perforce cultivate a serious bikini body and none more so than Shayk who has appeared on the cover of the Sports Illustrated Swimsuit Issue and met her beau on assignment for Armani. In a move away from swimwear, she’s now the face (and curves) of the new Intimissimi underwear campaign. It’s hardly surprising, then, that she says she feels “like a girl who knows everything about bras...” aMUSE: So, Irina, what makes the perfect bra? IS: It feels like a second skin - it’s very important for us women to find our perfect bra. I mean, first thing in the morning, what do we do? We put on our bra. So it has to be something that makes us feel comfortable, sexy, stylish and modern. aMUSE: What’s your favourite bra? IS: Simona from the Intimissimi collection. It’s a black silk push-up bra that gives a little cleavage but not too much. If I had to wear one bra for the rest of my life it would be this one; I can use it for the gym or the red carpet. aMUSE: Is there any kind of underwear you’d never dream of trying on? YOU GOTTA HAVE FAITH There’s a yearning quality to Paloma Faith’s second album, Fall to Grace, that takes her a step away from her performance-heavy 2009 debut. Just when you thought it was impossible to come up with a fresh approach to healthy eating, Kelly Hoppen’s daughter Natasha Corrett and top nutritionist Vicki Edgson produce this colourful, absorbing guide/recipe book. Its philosophy? ‘The alkaline approach’, which advocates eating from all food groups, in their purest forms. Yes, it does endorse a fair few alfalfa sprouts and kelp. How did you find the transition from journalistic work to novel writing? Working in news teaches you a lot about the importance of the story, and it nurtures very practical skills. And

because of my day job as a TV reporter, the election of Obama and the onset of the global recession form the backdrop of the story. The book is a powerful love story. Did you find the writing process moving? Grown men have told me that they cried as they were reading it. That really surprises me, because I didn’t feel the emotion as I was writing it. All I felt was the pull of the story. What book do you reread constantly? Silk, by Alessandro Baricco. A huge story, in a tiny slim volume. Who do you particularly admire? How did it feel being back in the limelight after a five-year break? It has been humbling, overwhelming, exhilarating, challenging and fulfilling all at the same time. As a born-and-bred Londoner, what do you like most about the city? One of my favourite places to eat is Tibits, off Regent Street; it’s a vegetarian restaurant that does lovely food and amazing natural juices. I also love InSpiral in Camden too. Where do you shop for clothes? Honestly, I hate shopping with a passion and do all my shopping in bulk online just to get it over and done with. The minute I find a shirt or pair of jeans that I like the style or cut of, I buy one in every colour and that’s me done for the year. Besides music, what makes you happiest? My son… unconditionally! the DIOR CUFF Occasionally, I see a picture of something in a magazine so gorgeous that I rip it out and stick it on a board above my desk. Usually it’s a picture of George Clooney, but sometimes, rarely, it’s an item of jewellery. And so it is with Dior’s new My Dior cuff. Lord above, but it’s pretty. I love a cuff, because they’re cool and modern and a classy way to accessorise, but this is the cuff of cuffs. I haven’t wanted something so much, since, well, ever. It’s in the classic Dior lattice-weave, so instantly recognisable, but also discreet as only a cuff can be. Necklaces shriek ‘look at me’. Cuffs go about their business quietly, even the one with diamonds, or the show-stopping version with the multi-coloured stones (launching for Christmas). Me, I’d like a matching pair in plain yellow gold, one for each arm. If you’d like to buy them for me, that would be just marvellous. She has already lent her face to a slew of campaigns from Louis Vuitton and Burberry to Mango and Nails inc, worked with photographers from Terry Richardson to David Bailey and been tapped as an ambassador for Chanel, Cartier and the British Fashion Council.

Being photographed by David Bailey with my dad (pictured above)... was just one of those experiences I wish I could replay in my head over and over again. It was quite raucous with a lot of laughter and naughty conversations I’m always late and always by 15 minutes... whatever I’m doing, whether I’m

going to a business meeting, seeing a friend for lunch or going to a play. It’s something I’m trying to change, as I know how annoying it is. I nearly missed the Alice Temperley show during LFW in the spring. I only made it by a hair’s breadth and sat down just as the music started. I used to be a bit of a tomboy... but now I’m more girly. I’m wearing blue nail varnish which I thought would be good with my canary-yellow dress. Dancing like a mad raving lunatic around my house in my dressing gown... is how I relax. When I go out clubbing I love... The Scotch in Mason’s Yard. I think it’s amazing and I love that it’s steeped in all that iconic Sixties’ history and was where everything really happened with Jimi Hendrix and the Rolling Stones.

Stop smoking... is the advice I would give my teenage self. The thing I’m really looking forward to at the moment is... creating my own fashion collection. I’m really interested in, and very passionate about, the whole idea of design and I would love to do that. I find Lady Amanda Harlech inspiring... She’s quintessentially English, very sophisticated and very beautiful. I love what she wears as I think she makes couture look easy. She could put on a pair of jodhpurs and a man’s blazer and look equally astonishing. Who would play me in a film? My little sister Cara because she knows me the best. She knows my mannerisms. remember being eleven and going on my first school trip to Featherstone castle in Northumberland. I remember it being wet and cold, and it being my first real encounter with nature. We walked for miles through fields, climbing over stiles and looking with interest at the huge cows scattered around mooing at us. On the trip were some very cheeky 11-year-old boys and I was even more intrigued by the amount of attention they were giving me. I was already dramatic then and I remember the boy that I fancied only had eyes for someone else, so I buried my head in a pillow and sobbed myself to sleep. My poor mother received a cry for help on a postcard: ‘Mummy the boy doesn’t love me!’ Iris is far more intelligent than me and a lot less dramatic. There were no maudlin postcards or stories of boys on her recent school trip with PGL, a company that organises Outward Bound courses and trips. Getting ready for her trip to Osmington Bay near the New Forest, Iris was practical and organised when packing, and ticking off everything on her essentials list made me feel all nostalgic. Cagoule, long johns, walking boots... in they all went. And I hid little snacks and games for her to discover later. I remember missing my mother on my school trip and boy did I miss Iris this time. She is such a chatty presence in my house it felt so quiet with just the boys. She called me once while she was away. I could hear in her voice she was missing home, but she is a brave girl. When the four days, which seemed like an eternity, were up and I had to meet her off the coach, I could see in her eyes that this trip had been a valuable one. My little girl had grown up and attained a certain independence.

GL stand for Parents Get Lost – and that is exactly what happens! Going on a school trip out of London and leaving my parents for more than a sleepover was new and odd to me. Packing was very exciting – I had to make a few hard decisions over cool clothes versus comfy waterproof clothes. I stuffed in new clothes and old clothes, leaving stuff out and sitting on the suitcase quite a bit. The packing definitely made me more excited, but when the time came for me to say goodbye, my throat swelled up and my tummy felt funny. My friends who were all a little nervous too made me feel better right away and the coach trip went really quickly. Everybody was filled with adrenalin and the boys were bottling up tears and worry like a chemical factory, while the girls either weren’t worried at all and just passed magazines round and chatted, or admitted they missed home a bit. When we arrived we were all dragged through mud in our comfy (new) shoes and clothes from the coach on a surprise walk. Our rooms were quite small. I was in a room with three of my friends and the bunk beds were squashed together. The feet of the person in one bed were in the face of the person in the other. We went on great activities, like a giant swing where you were pulled up higher and higher until you were about 20 feet from the ground then let go to swing wildly down to the ground. There was one evening that I really started missing home. A teacher lent me his phone to call my mum and after hearing familiar voices I felt much better. I think after PGL I will find it easier to leave home. I also now know the difference between waterproof and drizzle-proof (having learnt the very hard way).

We're all completely addicted to her fake eyelashes and rarely go out without a pair!” Holly started life as a make-up artist but is fast making a name for herself as a multi-disciplinary designer. Her eyelashes, Shimmer Twins (stocked on Asos, Urban Outfitters and Willa Keswick’s Village Bicycle), were spotted by jewellery designer Hannah Warner, and the pair have since gone into business together, creating body adornments such as metal nails. Their rose thorns and thistles were used by Marian Newman in Nicola Formichetti’s AW12 Thierry Mugler womenswear show in Paris. They are currently working on lizard-head and spider versions and branching out into bindis and metal prosthetics too. Holly has also worked with Florence Welch and created lashes for Kreayshawn (which the rapper sported on the cover of i-D magazine) as well as for Jaime Winstone. 23, ACTRESS, MODEL AND FILMMAKER With Chanel muse Lady Amanda Harlech for a mother, a childhood spent hanging out with Naomi Campbell, André Leon Tally, Isabella Blow and Bruce Weber (he shot her for Italian Vogue when she was a child), Tallulah is a fashion blueblood. She made her catwalk debut aged 12 taking a bow with Karl Lagerfeld at his SS00 couture show. She attended the Lee Strasberg Theatre and Film Institute in New York and landed a lead role in an off-Broadway production of Richard III. But Harlech isn’t one to sit back and wait for things to come to her. “I want to make things happen for myself,” she says, and she is currently working on a fashion-film collaboration with Vogue.com written by her mother. “It’s about a woman and the different sides to her character, so I end up talking to different versions of myself wearing different looks.” We hear that the dark side will wear Julien Macdonald and the girly side, Chanel.

Six years later, it’s time for her debut accessory collection Sedici45 which will launch later this year. 27, THE NEW KING OF KNITS Nominated by Dazed And Confused’s William Oliver: “Lawrence has established himself as the go-to expressionist knitwear designer, known for a super-sexy experimental look with a classic understanding of form and shape.” Knitwear but not as you know it… the Ipswich-born Central Saint Martins graduate began his career working for Gareth Pugh before branching out with his own label which he’s been showing now for the last eight seasons. He is already a favourite with stylesavvy celebrities from Florence Welch and Tilda Swinton to Bjork, Jesse J. and Lady Gaga. His SS12 collection (styled by Katie Shillingford) was all floor-skimming bodycons and outsized sweats executed in Swarovski crystal and Kyototex foil-wrapped yarns which looked like ethereal spiders’ webs. And the inspiration? Stolen innocence, BBC series Five Daughters and Vajazzles. Craig is stocked internationally by Milan’s Corso Como and RA Paris and was scooped up by Dover Street Market in 2011. He’s also created a diffusion line for Willa Keswick’s Notting Hill Village Bicycle. Look out for his AW 2012 collection. We hope he branches out into womenswear. “I might play around with that for next season,” he says. 23, ILLUSTRATOR AND DESIGNER Nominated by the Sunday Times’ Jessie Brinton: “What will this girl not do? She makes extraordinarily pretty pictures but then there’s that sharp mind and her work ethic is untouchable.” As Creative Director of the Estethica Review, an ethical fashion mag, and with a Kiehl’s collaboration for Trees for Cities under her belt, Margot is already changing views in fashion. The Central Saint Martins graduate’s new capsule collection is created from hand-painted vintage clothing. “I think the exciting thing about making fashion in this way is that it’s really questioning how people have been making clothes for the last 50 years,” she says. “This is what’s going to keep fashion truly fresh: new fabrics, new techniques, a new mentality.” Bowman puts a utopian slant on a dystopian fashion future.

23, STYLIST AND FILMMAKER Daughter of fashion photographer Matthew Donaldson and sister of model Lily Donaldson, Aurelia has an enviable style pedigree so a career in fashion was inevitable. Her day job is as a stylist and writer for The Telegraph Magazine but her passion is film-making. She began collaborating with her father in 2008 when a friend brought round a Phantom Camera which works in super-slow motion. “I’m a real tomboy when it comes to things like that,” she laughs, “so it was just the three of us geeking out.” The result, Flying Hair, which debuted on the nowness.com style website, starred her sister Lily. At Central Saint Martins he developed his aesthetic juxtaposing intricately embroidered nylon petticoats with Hawaiian shirts, Capri trousers and Bermuda shorts. He was soon snapped up by Lulu Kennedy’s Fashion East organisation that nurtures young fashion talent and his SS12 debut collection fused boxy tailoring with palm-tree chic. In the last year alone she’s been tapped as a young style ambassador for the British Fashion Council and as spokesperson for Bicester Village’s Designers Collection. Her latest collection, Cubed, is influenced by the sculptor Raymond Duchamp-Villon with abstract geometric prints and sculptural peplum shapes across a palette of grey and burnt umber. Erin O’Connor has inspired designers from Jean-Paul Gaultier to Giles Deacon, she towers 6ft 4in in her heels and says that people fear she’s going to come at them with a machete. So how did a chronically shy little girl from suburban Birmingham overcome her stage fright to conquer the fashion world, asks Natalie Silverton

ve got massive stage fright,” confesses Erin O’Connor, as she enters the library at the Soho Hotel one bluster y spring morning. Dressed like a modernday flapper in black Vivienne Westwood harem pants, a Cos blouse and Helmut Lang blazer, she seems anything but nervous. And for someone as experienced as she is, stage fright would indeed be surprising. O’Connor has been modelling since she was discovered, aged 17, by a scout while rummaging in the bargain bins at The Clothes Show Live in Birmingham. “I had big fat braces and a mane of hair that covered my face. I was aware of someone watching me for a long time, and thought she was going to accuse me of stealing. Instead she took a Polaroid of me. I’m not saying I liked what I saw but there was an instantaneous gratification of seeing a developed picture of myself.” Shortly after, she arrived at Victoria Station prepared to make it as a model with a weekly allowance of £40 from her agency. She was a shy child, but: “m o d e l l i n g i s t h e m o s t u n b e l ie v a ble s ol u t i o n t o combating shyness. It takes a lot of adrenalin to get up on stage.” She points out that “it’s the unassuming ones that end up making a living”. Though Naomi Campbell might disagree. The shyness worked for her. Within a few months, O’Connor found herself working with Richard Avedon on the Versace campaign. At 20, she met JeanPaul Gaultier, and a unique friendship was born. He embraced her angular beauty and used her on the catwalk and in campaigns. “She isn’t only a model. She is like art. She is like theatre,” Gaultier said of her. “She is an extraordinary inspiration.” Since then, she’s done covers for Vogue and campaigns for Chanel, Valentino, Giles Deacon and Dolce & Gabbana. Her work for Marks & Spencer was credited with changing the fortunes of the high-street retailer. “Designers and photographers were redefining beauty,” O’Connor recalls of the late Nineties. “The aesthetic perfection of the Eighties supermodels began to die out and modelling became as much about

personality and character and the attitude you projected as a woman.” At the time, O’Connor “marked out the androgynous territory” and now aged 34, she is still in great demand. “I go for castings and they screen me to see if I’ve had extra work done. To be in your natural state is somehow exotic now.” High fashion is worlds away from O’Connor’s childhood on the outskirts of Birmingham as part of an Irish family – she’s the middle of three sisters. Her grandparents and parents were all in public service. “My family were in the police, they worked as nurses, teachers – my mum and sister work in a school and my aunties were headmistresses,” she says. O’Connor talks a lot about her parents and her sisters, and it’s clear they are very close. Perhaps even more so after the loss of her brother, Terry, when she was a child. He was knocked down and killed by a car. When I mention this, she pauses, and I can feel her inwardly check. “When you experience something like that there are some things that you preserve on behalf of other people. It brings your family closer together, you have a deeper understanding and you realise the value of having people around you that put up with you, annoy you and love you.” As a child she would dream about what she might grow up to be: “It ranged from wanting to be a nun, ice-cream van owner or ballet dancer to being married to Boy George.” It was at the age of twelve she became styleconscious, inspired by her elder sister, and then, as a teen, went through several (rather dubious) fashion transformations ranging from stripey tights and Doc Martens, indie-style gypsy skirts to a period of granddad chic. At 6ft 4in (in heels), it’s not O’Connor’s height that’s most striking when you meet her, but how animated she is. Very sharp, her answers are punctuated with grins, raised eyebrows and dramatic voices. It’s that same intensity that she brings to her photos. “At work I’m always quite extreme,” she admits. “People think I’m going to come at them with a machete. It’s taken me at least a decade to know how to dress myself.” With eyes smudged in Tom Ford Eye Colour, lips stained in creamy Mac nude, her alabaster skin above a swanlike neck and her shock of Louise Brooks hair, she’s undoubtedly a beauty, though somehow an odd one. A recent year-and-a-half hiatus away from her gruelling modelling schedule offered the respite she needed to

maintain her flawless complexion, as well as allowing her time to devote to other initiatives close to her heart, and to set up her eco fashion brand, She Died Of Beauty, with stylist and friend Kate Halfpenny. While a return to full-time modelling this year made sure she’s kept fit. “I go to the gym three times a week. It’s bloody hard work and I graft at it. I’ve always been elongated and skinny growing up but to keep that now is more difficult. To top that off, last year I was told I had high cholesterol.” Looking at her whippetthin frame this is hard to believe. “It is a hereditary condition that has thankfully levelled out without the need for medication or extreme life style changes.” Apart from some minor changes to her diet like butter substitutes, she explains “my cholesterol is happily under control through exercise and more self-awareness”. Her weight was never a problem for O’Connor but other aspects of her body were. In the past she has been told she has big kneecaps and shouldn’t show her teeth. But, as she says, “I’m pretty much done with self-criticism. There are enough people who will have a go.” In 2007 she contributed to the Model Health Enquiry into the size-zero debate championed by The British Fashion Council. And soon after that founded the country’s first Model Sanctuary, a non-profit drop-in centre for young models which gives them advice from nutritionists, life coaches and osteopaths. “My idea is to empower models to be informed individuals and to encourage them to invest in themselves,” she says. In 2009, O’Connor also co-founded All Walks Beyond the Catwalk, a charity project devoted to broadening the range of professional models used in fashion. One reason for her renewed energy is a proposed move back to New York. “It’s liberating to work in a city with a strong reputation for emerging talent, sustaining that talent and being loyal to it. And New York is really where my career blossomed. I’ll miss London terribly – the culture, museums, EastEnders, our unguarded humour and cynicism.” But there is a boyfriend in the States. Long-term, I

ask? “Let’s hope so,” she laughs, adding: “Luckily we’re not having a height contest – he’s definitely much taller than me.” She’s reticent about revealing too much, but it’s obvious that she’s loved-up. She may be heading for Manhattan but she won’t stop her nearconstant travelling: newly recruited as a Save the Children Ambassador, she recently visited Delhi as part of ‘A Life Free From Hunger’ campaign. “If it means using my public profile to highlight the crucial work they do out there, I’m prepared to take that chance.” Whether it’s modelling on the catwalk, or wearing a ‘campaign’ hat: “I always want to really mean what I’m doing and that’s where my focus is.” Today she’s focusing on her eyes as the spokesperson for Optrex ActiMist 2in1 Eye Spray for Tired & Uncomfortable Eyes: “As models – we all get tired, puffy eyes,” she explains. “This is fabulous, as it can be used over make-up, unlike drops that can make you look like Alice Cooper.” Sounds like the perfect SOS handbag must-have for the slew of models heading to London Fashion Week this September. “And this time, I’ll be returning as a model on the runway,” O’Connor reveals. E

very morning Bip Ling’s mother, the artist and fashion illustrator Tanya Ling, would say to Bip and her younger sister Evangeline: “Every day is a styley day darlings.” It’s since become a mantra for Ling, now 22. Three years ago, while working for a fashion PR company, Bip (short for Bipasha) started a blog – “because I like the idea of keeping a diary and documenting things.” Growing by word of mouth – or mouse – among the style set, she’s well on track for a million views – and her readers can’t get enough of her quirky “bathroom looks of the day” set to cartoon backgrounds, her animations and the playlists that relate to her adventures on Planet Fashion. Last year, she became the face of young American clothing export, Forever 21, when it launched in the UK. “They had ads on taxis, Tubes and buses so I’d have to ring friends and say, “I’ve just seen myself on a bus!” These days, she’s shot by Patrick Demarchelier for American Vogue and is being assiduously courted by Chanel as one of their unofficial ambassadors. Having grown up in Wimbledon, Bip now lives in Shoreditch and today we’re shooting at her favourite hangout – souped-up greasy spoon, The Breakfast Club – and the venue, in fact, of some of her first dates with her boyfriend, model Dylan Garner. “I love the

music, the food is great and I always try to get the little private room at the back,” she enthuses. Today Bip is wearing red suede wedges, shorts from Religion (“it was raining so I thought ‘yeah, ‘I’ll wear shorts’”) a top from Borne and a little bow from Beyond Retro – a favourite vintage shop on Stoke Newington Church Street: “Whenever I go in there, I buy something.” She also loves a mix of high street and designer labels from Cos and American Apparel to Comme des Garçons, PPQ and Christian Louboutin, of whom she says proudly: “I’ve just bought my first pair, the Pigalle 120. They’re black and pointy and six inches high. I spent a fortune on them but I’ve been wanting them for two years.” Describing her style as “British Museum chic” - one of her role models is the American socialite, Peggy Guggenheim who ran away to Paris in the 1920s to become the darling of the avantgarde - Bip still feels she’s developing her look. “I feel sometimes that I’ve created Bip Ling as a little character,” she muses and, indeed, her life is “ just an ongoing fashion shoot” – this year alone she’s been to Dubai, Athens and New York to launch CK1 cosmetics for which she’s a ‘Colour Insider’. But while she might slide from bed to desk for her first blog of the day in a tracksuit and slippers, when she’s on show, she wears skyscraper heels and her trademark ponytail. As for great fashion moments, there are quite a few – not least the Vogue shoot. “It was the first time I’d been to New York and I’ve got the whole trip tape-recorded in my head.” There was also a memorable session outside the Paris designer shop, Colette, with photographer Candice Lake – “it was a Ken/Barbie party and there’s a photo of me standing in the middle of the road with a massive inflatable Ken – cars were beeping everywhere!” And then of course there is Chanel: “The show is the best because it literally gives you goosebumps.” Thebreakfastclubcafes.com; Bipling.com aMUSEmagazine.co.uk |

Kate Phelan has turned her back on the rarefied world of Vogue to bring her pareddown, grown-up style to the rough and tumble of the high-street superbrand. So how has the fashion director’s sleek style gone down with Sir Philip Green, asks Lauren Cochrane

T

aking a seat in her first meeting at Topshop, Kate Phelan got quite a shock. “They plonked this big wallet of paper down in front of me, called a product review,” she recalls, big blue eyes widening. “I couldn’t even see the numbers, they were so small.” Demonstrating her commitment to the new gig, she gave herself a crash course in the business side of things. “I had no comprehension of the size and the scale of Topshop,” she admits. “Stepping through the door I had to work that out really quickly.” Phelan’s brainstorm makes sense when you know where she came from. Previously Fashion Director at Vogue – and at the magazine for more than 18 years – she left to become Creative Director at Topshop in September last year. Fashion shoot locations, photographers’ schedules, cover stars and supermodels would have been more her stock in trade. “Mathematical dyslexia took over my brain,” she laughs. “I was

like ‘it’s not a photograph, I can’t deal with this’.” Eight months on, Phelan may now be more familiar with the numbers but she has brought some of her glossy world with her if her office just off Oxford Street is anything to go by. Lined with photography books, it has fashion show invites pinned to the wall along with a photograph of a young Kate Moss brandishing a snake. There are also signs of the day-to-day running of a fashion superpower. A rail of samples is stashed in the corner, while promotional material, covered with Phelan’s scrawls, is strewn across the sleek white table that dominates the space. Phelan herself, with striking, cornflower eyes, an easy smile and auburn hair in a loose bun, is dressed simply in a blazer, pyjama-style blouse and skinny jeans. It’s the kind of outfit that looks ripe for replication, but would never quite work if you tried it yourself – in short, the 48-year-old is the epitome of effortless, grown-up chic. advocating this more understated look in the peacock world of the front row. She is at the opposite end of the spectrum from style blog favourite Anna Dello Russo who changes several times in a day and wears full catwalk looks top to toe. Fashion insiders hoped Phelan’s personal style would make an impression at Topshop and, in September, their expectations were realised when she unveiled her first show at London Fashion Week for Unique, (Topshop’s catwalk label). It was indeed pared down and sleek. A mix of military influence, loose shapes and natural beauty, it was greeted with universal coos of approval. Grazia Contributing Editor Melanie Rickey described the collection as “straight-up future-fashion staples everyone wanted on sight”. Phelan, however, knows her role at Topshop is not as simple as just replicating her own look – the brand isn’t just for women like her, “it’s for everyone. I sometimes criticise the product in the sense of ‘where’s that gorgeous pair of black trousers and a nice silk blouse?’” she says. “But I also find myself asking my daughter and her friends things about Topshop because although they’re only 14, they are the future of the brand. The world of Topshop has to incorporate all the years of the life of a growing young woman.” With this statement, Phelan neatly sums up the brand’s DNA. A visit to Topshop, now nearly 50 years old, has become a rite of passage for teenagers to discover fashion and London girls have fond memories of hours spent in the changing rooms at the Oxford Circus store. Sponsoring young designers like Christopher Kane and Jonathan Saunders at London Fashion Week with NEWGEN for 10 years, too, it’s become symbolic of something more than just clothes. Always connecting with the new and the young, it’s managed to stay thrilling for each successive generation while keeping customers as they grow older. You can’t fault the business model – Arcadia posted profits of £133.1m in 2011. Giving youth a place in fashion has long been important for Phelan. Born in Exeter in 1964 (the same year Topshop was founded) and growing up the daughter of a chartered surveyor father and an illustrator mother with an older sister and half-brother, her parents helped her feel anything was possible. “They made us work hard,” she says, “but they never made us feel like we were destined to do one thing. There was an opportunity, an open door, always.” Vogue was her first window into the fashion world. “My mum used to get it on subscription,” she says. “I remember being completely blown away by a Bruce Weber shoot that Grace Coddington had styled, based on Edward Weston’s photographs. I literally went straight into town and had all my hair cut off. I think I always had this fascination to be the girl in the picture.” Even better was to create the pictures in the first place – as she

found out when she made her way to London’s Central Saint Martins in 1985. “I realised very quickly that I wasn’t a designer,” she says. “I wanted to play with the clothes but I didn’t want to make them.” After an ill-fated work placement “feeling like an alien dumped at a desk” at the Mail on Sunday, she then ended up at Vogue. “Within about a week, I thought ‘this is the most incredible thing,’” she says, voice going all dreamy. “Everything just fell into place.” Dropping out of college to take up a permanent assistant job in 1987, she was a fashion editor at Vogue from 1993 and she flourished in the loosened-up Nineties. Working with models including Kate Moss, Karen Elson and Shalom Harlow and, later, Lily Donaldson and Lara Stone, often shooting on location, Phelan collaborated with photographers like Craig McDean, Tom Munro and Corinne Day on a fresh approach. “I was used to fashion making all the models look older than they were and suddenly there was this embracing of youth, and youth culture,” she remembers. “Once I realised there was a place for that in Vogue, I could do it.” So if she was so at home at Vogue, why the change of direction now? “The fashion industry has been turned on its head in the last 10 years,” she says. “It used to be an exclusive few who got invited to shows. Everybody knows about fashion now – we have access to it any time we want.” Enthusing about street-style blogs and the usergenerated parts of the Topshop website, she’s excited by “that girl who has an enormous appetite for fashion and wants to be of the moment, making trends of her own.” Catering to said girl, Phelan, who is married to filmmaker Richard Carroll, and lives in South London, is busy working on new collaborations for Topshop – a Richard Nicoll bridal range is out this month, with a bigger, as-yet unannounced, project in September – on the back of the successful Mary Katrantzou range in February. “I think before, the collaborations have always been seen as something quite small compared to the rest of the business,” says Phelan. “There’s so much potential in the relationship we have with the designers, we should maximise it.” With that product review probably well-thumbed by now, she’s working between the inhouse design team and Topshop’s formidable owner Sir Philip Green to put more plans like this into action. “I think he’s really ambitious for the brand and I’m ambitious for the brand so therefore I really get him,” she says of her boss. “He could go and lie on a beach if he wanted but the fact that he doesn’t is really fantastic for us. Somebody is there, still dreaming up the vision and the next big thing.” He’s not the only one, of course. “I want to give our customer the store she can be creative within,” says Phelan. “And then you want to try and harness whatever new feeling or mood is next.” a

. DON’T DIET...

I rarely diet, and find if I eat healthy food I can eat quite a lot of it. By healthy, I mean organic meat, fish, lots of fresh fruit and vegetables, homemade cakes, breads and puddings. I almost never eat anything from a tin or a packet as I’m passionate about home-cooked food and am convinced that eating processed food encourages weight gain. If you think about it, a homemade cake only has four ingredients; butter, eggs, sugar and flour but if you look at the ingredient list of a shop-bought cake it can be quadruple that – and most of it is stuff you don’t want in your body. I like food in its simplest state. I have my own organic farm and only eat my own meat. I don’t eat dairy but buy it for the family from the farm next door. I grow most of my own vegetables and buy the rest from our local farmers’ market.

. BUT DO LEARN HOW TO COOK...

I put myself under pressure to remain slim because I still model my own bikinis. That said, my eating habits are pretty good, but there’s always room for improvement. I’d like to take some cooking lessons and get some more dishes into my repertoire. I go to bed reading recipe books – especially when I’m hungry. I get bored easily if I eat the same foods every day and like to mix it up. I’m more likely to snack on savoury treats, like popcorn, than sweet ones.

. DITCH THE WINE - STICK TO VODKA...

I don’t drink much alcohol and gave up drinking wine and champagne nearly three years ago. If I have a drink, I prefer Grey Goose vodka in a tall glass with lots of ice, the juice of a whole lime and soda water. Totally delicious and not too fattening.

. WEAR WHITE ON THE BEACH...

It’s a good problem to have, but packing for a vacation is mind-boggling for me as I have hundreds of pieces from my own collections from which to choose. I usually whittle it down to a few colour groups and then build up little piles on my bed around them. White is the great equalizer on the beach as it works with everything and always looks good with a tan. A white sarong can be worn over virtually every bikini you own. I throw in some neutral coloured flip flops and a straw bag and I also usually take a few light little dresses that fold up into nothing.

. ...AND UGG BOOTS WHEN YOU FLY...

Flying is dehydrating so I drink as much water as I can, even though I dislike it, and use heaps of moisturiser. I also take a big shawl to snuggle in and my Ugg boots, if I can cram them into my hand luggage. I usually clean up my in-box on flights, read or stare out of the window and think. I never watch movies and try to sleep as much as possible.

. ALWAYS GET UP EARLY...

I love the beach, as long as it’s empty. I always get up early on vacation and go for a swim when everyone else is still snoozing. Later on, I’ll mostly lie still, read, chat and doze. I don’t listen to music on the beach as I love the sound of the waves and the gulls. I go on holiday to relax and catch up with my friends and family. Once the kids are in bed, I love long, delicious, lazy dinners. I like people dressing for dinner, as it’s sexier.

. DIVERSIFY TO SURVIVE...

I adore bedrooms so am launching my own bedlinen collection (at House of Fraser stores). We spend a third of our lives in bed, so the beds should be beautiful. I'm also opening an Elizabeth Hurley Beach boutique later this month in Marbella.

. LOOK YOUR AGE...

I love women looking fabulous and I don’t think growing older means looking less good. For me, it’s less about trying to look younger and more about making sure you look at your absolute best. Without doubt, once I hit 40 I had to make more effort. AMUSEMAGAZINE.CO.UK |

. BUT WEAR MAKE-UP EVERY DAY...

I always wear make-up as I don’t see the point in looking less than your best. I’m in my eighteenth year of working for Estée Lauder and I’m perfect for the job because I’m a huge make-up fan. I can get fully made up in five minutes flat; light foundation, blush, eye pencil, eyelash curlers, mascara, a slick of lip gloss and I feel a million times better.

. AND SPRITZ ON THE CREME DE LA MER...

Estée Lauder has an amazing product called Advanced Night Repair and I would hate to be without it. I‘ve used it religiously for years. I also use Resilience Lift moisturiser – both the day and night crème – which feels amazing on the skin. Throughout the day I use Creme de la Mer’s Facial Spray – I squirt it on frequently and it’s really hydrating.

. KEEP PETS...

I live full-time in the country and try to walk or run with the dogs every day. I have three labradors and a spaniel, all of whom are a lot fitter than me. I’m in love with them all and they all sleep with me. I also have a blue-fronted Amazonian parrot called Ping Pong. She is enchanting and can imitate the dogs, cackle, wolf whistle and talk like a human. She has her own Twitter account, @PingPongHurley, of which I don’t really approve, as she’s often incredibly rude about me.

. DON’T FORGET TO TWEET...

I’m a Twitter fan and am always interested in what my followers have to say. I don’t take tweeting very seriously and most of my tweets are extremely silly. Press releases are virtually extinct; now, if I have anything to say, I’ll tweet it. I don’t generally comment on silly things written about me, but if it’s untrue and hurtful to my family then I may. I only do it for a few minutes a day but I enjoy it.

. BE AN ITALIAN-STYLE MAMA...

I adore my son and we are very close. I am more like an Italian mother than an English one and think he’s the bee’s knees. I’m pretty strict and he’s very well-behaved. He has been very well socialised from a young age and I can take him anywhere. My son Damian, 10, spent a month or so with me in New York over the summer while I was filming Gossip Girl and he loved it. He made his own short movie and ran through my lines with me every night. He thought it was the most exciting thing that ever happened. He got to be in my trailer and hang out on a film set, which is what he has longed for his entire life.

. A GOOD DAUGHTER...

I spend heaps of time with my family and my mother has a permanent bedroom in my country house. I love Shane’s parents coming to stay too. I think it’s great for kids to have the older generation around. I’ve always had lots of older friends and mentors and find their experiences fascinating.

. AND A LOYAL FRIEND...

For me, friendship isn’t about punching a time card. It’s about shared experiences and going through good and bad times together. Many of my best friends live in different countries, if not continents, to me, but our bonds are as strong as ever. I’ve got lots of both male and female friends and I value them all – their gender is immaterial. I get on equally well with both sexes. I like female company or mixed company but hate being the only girl in all male company – unless it’s all gay, in which case I’m fine!

. IF YOU WANT TO LOOK GLAMOROUS, DON’T BITE YOUR NAILS...

When Estée Lauder approached me out of the blue and asked me to work for them I was staggered, as I’d never modelled before in my life. They taught me to make an effort with my appearance and now, eighteen years on, it’s become a habit. I don’t look glamorous every day as I work and have my son to look after, but I watch my weight, don’t drink much alcohol, don’t go out much and try not to bite my nails.

. ACCEPT THAT LIFE IS COMPLICATED...

My future plans are as chaotic as ever. We are now juggling school dates from Shane’s children in Australia alongside Damian’s here, while working all over the globe and trying to have fun too. It’s a good challenge to have.

Wake up and smell the roses

L

ast year I turned 40. It was also the year that all my prejudices and preconceptions about perfumery were turned on their head. During the Noughties, I had become a fan of niche perfumes. When Serge Lutens, then Frederic Malle, and later Byredo and Maison Francis Kurkdjian launched, I was hooked. Big brand and celebrity perfumery has become so cynical, bland and mediated by the tastes of focus groups and these little names offered blends which were the undiluted visions of the artist perfumer. I was enraptured, for some years, by the cult and the recherché. I think if the French sociologist, Pierre Bourdieu, had been around to analyse my tastes he would have decided that my ‘cultural capital’ was decidedly middle class. The rise of artisan perfumes in the Noughties coincided with the rise of artisan foods and farmers’ markets, also typically middle-class preoccupations. And yet, and yet... by last year I was tiring of the niche. Several reasons: by now there were too many of these brands, the market was flooded. Secondly many of these lines were badly edited. While I admired the minimalism of brands that launched with one, two or three blends, many now had tens of products and it had become confusing. Thirdly, in trying to be all things to all people, some had become as cynical ‘IN TRYING TO BE ALL and commercial and mediocre as the big celebrity brands they were founded in THINGS TO ALL opposition to. And certain ingredients, like PEOPLE, SOME oud (the dark, aromatic resin of evergreen ARTISAN BRANDS HAD trees), had become ubiquitous. These brands BECOME AS CYNICAL just didn’t seem that original any more. What’s more, some of the big brands were AND MEDIOCRE AS putting out niche/artisan perfume collections THE BIG BRANDS’ and beating the niche labels at their own game. I’m thinking of Tom Ford’s Private Collection Blends (owned by Estée Lauder), Chanel’s Les Exclusifs, and quite liked certain celebrity perfumes: namely Sarah Jessica Hermès’ Hermessence in particular. Parker’s Lovely, Tilda Swinton’s Like This and Rossy De So, prompted by all of this, I decided to explore all the genres and categories Palma. I loved the florientals, Gucci Guilty and Chanel Coco I hated. To see if fashion and celebrity perfumes – all the types of perfume Mademoiselle, two perfumes I had initially deemed too I deemed cynically commercial and creatively bankrupt – were really as bad commercial and too young for me. I have subsequently worn as I thought they were. Was I simply prejudiced? Worse: was I a snob? them to death. What I found was that while I might not like all of them: there are always, I think the moral of this is: just as you write something always exceptions to the rule. Chanel, Hermès, Guerlain, Comme des Garçons off, it often has the temerity to creep up behind you and and Prada are all ‘blockbuster’ brands making some amazing scents. I even knock you for six. e had Portia Freeman, Tali Lennox, Amber Atherton, Dudley O’Shaughnessy (the hot one in Rihanna’s We Found Love video), and all the models were there. Amy Winehouse’s band played and we were all outside on the roof terrace with everyone on Shoreditch’s Redchurch Street looking up to see what was going on.” The party was even covered by Tatler. What was this event? A film premiere? The launch of a ritzy new members’ club? No. It was Teresa Tarmey’s beauty salon-warming party. Clearly, Tarmey isn’t your regular beauty therapist: “I always like to do things differently,” she says, “I like to open the door and welcome people in and make them a drink.” From the open-plan loft-style living room complete with comfy sofas and coffee table stacked with fashion tomes to the bedroom/treatment room with the most enormous spa bed you’ve ever seen, it does seem like a

home, albeit a cool one. Tarmey, 35, who is originally from Yorkshire, has buffed and polished the likes of Daisy Lowe, Tallulah Harlech, Pixie Lott, Suki Waterhouse, Jessica Ware, Portia Freeman and Rebecca Hall. Looking way younger than her 35 years, Teresa has enormous bright eyes and a pretty, youthful glow which is thanks to her skincare regime (“keep out of the sun, drink lots of water and don’t smoke”) as opposed to the surgeon’s knife, and she definitely doesn’t have a painting hidden in the attic. Instead, the upper reaches of 73 Redchurch Street, feature a mezzanine nail lounge looking out onto the terrace. Polishes are stacked on an Art Deco cocktail trolley alongside old-fashioned spirits bottles filled with acetone. The area is the perfect setting for the girly movie screenings she has planned featuring manis, pedis and martinis. Above the sofa there’s an artwork created by a friend featuring giant neon lipsticks, and she tells me that the three massive AMUSEMAGAZINE.CO.UK |

test-tubes that decorate an exposed brick wall are soon to be filled with jelly beans. This is all part of Tarmey’s original, and collaborative approach. The salon sits above shoe designer Tracey Neuls’ graffiti-clad boutique and Teresa lost no time getting acquainted by borrowing a selection of the designer’s SS12 shoe looks which now hang, installation style, in the mezzanine party space. She’s also friends with Les Trois Garçons restaurant’s owners Hassan Abdullah, Michel Lasserre and Stefan Karlson from whose lifestyle boutique a few doors down she’s sourced most of her furniture. “It’s everything I’ve ever dreamed of,” she enthuses, “I’d been looking for this kind of space for two years. I saw it, loved it and put in an offer on the same day.” Tarmey is the fourth of five children, her father was in the army and later worked as a miner: “My mum’s got alopecia so she could never have any kind of treatment and because of that, I guess, I’ve always been scared of losing my hair.” After school, she enrolled in beauty college and had her own salon in Bolton by the time she was 25. Four years ago, she upped sticks for London - first opening in Baker Street and then to Bond Street. In addition to Redchurch Street, she now has a second space in Old Park Lane’s Playboy Club – both opened within weeks of each other this spring.

“I’ve always been really determined,” she says, “working hideous hours, six days a week.” And the hard work paid off as she is now the darling of the fashion industry. Tarmey’s salon isn’t all jelly beans and girly movie screenings though: she specialises in pain-free laser hair removal and has a new machine, a Strawberry Laser Lipo machine which is non-invasive and totally pain free and said to shave inches off stubborn areas of fat. She’s also got a galvanic machine that she uses with aloe vera from her own home-grown plants: “The current increases the penetration of the aloe vera and used in conjunction it helps to lift and tone the skin and accelerate the healing process.” Suffering from acne herself for 10 years has made her more sympathetic to people’s feelings: “I understand when they have to take all their make-up off and be exposed. They feel better that I’m not Mrs Perfect and I think people trust me because I really do care.” This is no empty rhetoric. Tarmey gives free treatments to people she knows can’t afford them: “they might come for a bikini wax but if they’ve got a skin problem I’ll take them under my wing.” She also wants to set up a foundation for underprivileged teens, with free treatments to help them win back their lost self-esteem. a www.teresatarmey.com

Despite being a city high flyer, Nicola Horlick cooked her six children’s meals when she got home. So what better way of creating a memorial to her daughter, Georgina, who died aged 12, than opening a restaurant, she tells Lydia Slater

N

icola Horlick, 51, has had many strings to her professional bow. In her twenties, she was one of the youngest ever female directors of an investment bank. She subsequently set up two fund management firms, then diversified into film development. Along the way, she managed to have six children and to marry twice. And now, at a time when her City contemporaries are contemplating retirement and working on their golf swings, Horlick is busier than ever with an entirely new project: opening her own restaurant. Food has always been important to Horlick. Her mother, who is of Polish descent, is a “fantastic cook”, she says. Horlick herself, as befits her nickname of ‘Superwoman’, brought up her own children to eat everything – “their favourite food is cabbage”, she says proudly. And the one domestic chore that she has never been prepared to delegate is cooking the evening meal. “I love it,” she says. “You get this great sense of achievement and nurturing.” It is not love of food that has driven her to launch the restaurant, but a poignant promise she made to her eldest daughter, Georgina, who died of leukaemia in 1998, aged 12. “Towards the end, she wasn’t allowed to eat,” Horlick explains. “She had to be fed intravenously, and that isn’t very exciting, especially when you like food. “I used to have terrible rows with her, because she would occasionally run away and steal things from the parents’ fridge in

hospital, or go downstairs when no-one was looking and buy a packet of peanuts. I’d be screaming, ‘Please don’t do this! They’ve told you not to!’ But it was so hard for her,” she goes on, her voice suddenly raw. “So I used to talk to her about our restaurant, because that’s where she was going to eat when she got out of there. It kept her going.” Fourteen years later, Horlick is keeping her promise by opening Georgina’s in Barnes. “I’ve kept to Georgie’s vision - fresh food, not over-complicated, lots of salads, cakes, a full service dinner in the evening.” There will also be a frozen yogurt station which wasn’t around in Georgie’s day, of which her mother thinks she would have approved. “Her sisters all love it,” she says. Horlick gives me all sorts of hard-headed business reasons why now is the perfect time for her to launch a new restaurant chain. “It’s something you should do in recessionary conditions because it’s much cheaper to get everything fitted out,” she says. “In five years’ time, I’d like to have 10 across south-west London.” But talking to her, you get the overwhelming impression that she’s done it for emotional reasons, in an effort to keep the memory of her eldest daughter green. “I will never get over losing Georgie,” she says, matter-of-factly. “The passing of time increases the pain. It’s a bit like being on a beach and watching a little boat with her in it, just drifting away – there’s no rope and no oars and no means of getting that boat back. I feel the distance growing between us.”

Georgina was diagnosed with leukaemia at the age of two. “She had nine weeks of treatment and for the next couple of years she was fine. Then it started going really badly wrong, and from when she was eight through to 12, it was really horrific.” Horlick sought comfort both in her work as one of the City’s highest-profi le fund managers, and in her family. “I very much doubt I would have had six children if she hadn’t been ill,” she says. Her youngest son Benjie, 12, was born after Georgie’s death. “You can’t replace a 12-year-old girl with a baby boy, but it made me feel an awful lot better to have him to cuddle.” Further heartbreak hit the already devastated family in 2003, when Horlick’s marriage of 21 years imploded. “It wasn’t as though Tim and I didn’t get on with each other, but the statistics show that you are 90 per cent more likely to get divorced if you lose a child,” she says. “It was a double tragedy for the children – they lost their sister and then they had the break-up of the family unit. It wasn’t necessarily my choice and it’s been a terrible thing. “You hear a lot of people saying that children are resilient and will bounce back from divorce, but I don’t think that’s true. I think children are very fragile and need to be nurtured. So much that goes wrong in adult life is connected with what happened in childhood.” Horlick found new happiness with her marriage in 2005 to Martin Baker, a fi nancial journalist. And despite the divorce, her five remaining children all appear to be doing well. Alice, 23, is a fashion designer, Selena, 21, is training to be a doctor and Rupert, 18, is off to Cambridge to study computer science and mathematics. Antonia, 15, and Benjie, 12, are still at school. “And Georgie would be 25 now,” says Horlick for whom her eldest daughter is still very much part of the family. For this most hard-headed of women is now a firm believer in the afterlife and the existence of spirits.

“After Georgie died, strange things happened,” she explains. “Maybe I was just deluded, but I got this very strong sense that she was still around.” She tells me an astonishing story about how, a few months after Georgie’s death, she was driving with her then toddler daughter Antonia in the car when a deer leapt out from the side of the road in front of her car. She smashed straight into the animal at 70mph. “There was a huge bang and the car went up in the air and came down over the carcass. Luckily, it was a big four-wheel drive,” she says. “Eventually, I came to a stop.” She opened her eyes, expecting to find her car a writeoff and her daughter injured, even dead. “But Antonia was asleep. I got out of the car and walked around it. There was no mark on it anywhere, and no dead deer in the road.” Terrif ied and disbelieving, Horlick drove home. The following day, a friend took her to see a psychic. “Towards the end of the consultation, she said something about a deer I’d crashed into. I hadn’t told her anything about it. ‘Do you realise what happened?’ she said. ‘Georgie pulled you back in time, let the deer run across the road and then pushed you forward again.’ Martin says I mustn’t say these things because people will think I’m a mad crank, but you can see why I believe in life after death.” Horlick also credits Georgie also with her survival when she was mugged by a gunman and refused to hand over her jewellery. “I’ve got a nice little guardian angel up there, keeping an eye on me. She’s my little treasure, stuck in time as a 12 year old. “After I was mugged, I said to Georgie: ‘Whenever I come home late at night on my own, please just always make sure there’s a parking space outside the house.’ And there always, always is. And I smile and think, ‘thanks, George’.” a

Whether you like flames to be shooting out of a volcano, or prefer them cooking your steak, Lanzarote is the place to come, discovers Sophie Gilbert

I had a lot of preconceptions about Lanzarote which were mostly centred round straw donkeys, sangria and peeling package holidaymakers. The last thing I expected was a wildly beautiful, barren desert dotted with craters. Like some strange corner of Mordor, the Timanfaya National Park is the least park-like place in which I’ve ever set dusty foot. Rather than some equatorial paradise (Lanzarote is only 125km from Africa), the park contains the Montanas del Fuego, or Fire Mountains, a collection of giant volcanoes apparently all set to erupt again some time soon. They’ve certainly got form: thanks to a series of fiery volcanic explosions in the 1730s, great swathes of the interior of the island are nothing but solidified lava, black and crumbling like a badly maintained giant’s motorway. It’s not relaxing but it is immensely exciting. In the park, the underground temperature sets fire to brushwood fed into it by nervous-looking attendants, shoots boiling water sky high and even cooks the sardines and chickens which are stretched over a gigantic and perpetually hot barbecue in the Timanfaya restaurant. Our own barbecue, back in our pristine white villa, was less of a triumph. Perhaps it was the heat, or all the local red wine that slipped down so well, but we missed the crucial moment, the fire faded and we had to take our large and smoky steaks indoors to finish cooking them. We were more successful at cooking ourselves on sun loungers by the side of our glamorous slate-surrounded pool. But our greatest sun-worshipping session was at Playa Papagayo, which is one of the most beautiful beaches imaginable – a perfect bay of turquoise water protected by two rocky headlands and with a charmingly scruffy cafe perched above. We even succumbed to the temptation of a sangria – but thankfully there were no straw donkeys in sight. Add wardrobes, bin the carpets and get rid of the lodgers. That’s the advice of Stephanie Phair, the powerhouse behind Net-aPorter’s sister site, The Outnet, who has colonised her husband’s Knightsbridge apartment

live in a mansion block apartment in Knightsbridge with my husband Fred and our one-month-old daughter Emilia. It’s on the top floor so there is a lot of light and a beautiful view from the bedroom across the leafy parts of Knightsbridge. What I love most about this area are the communal gardens, which make you forget you are near the heart of the city. The flat originally belonged to my husband but I moved in in 2009 just after the launch of The Outnet. There wasn’t a lot in terms of decor when I arrived. My husband had been living there with his brother and then

with roommates and had done the typical guy thing – what I call ‘perimeter decorating’ – where he’d put all the furniture around the edges of the room. For me, everything starts with the space and how you can make the best possible use of it – 10 years of living in New York apartments taught me that. Back then I even used my oven for storage like Carrie Bradshaw. With this place, the first thing I added was a built-in wardrobe in the master bedroom as I wanted to capitalise on the high ceilings to accommodate more storage underneath. I also removed the carpets because wooden floors instantly make a room feel more spacious. In every room there is a nod to where we’ve come from, like the New York cityscape in the dining room. My husband is Dutch/English and I am Canadian/ Argentinian, born in Mexico, and we take a lot of inspiration from our travels. We don’t buy obvious souvenirs though, as they tend to look great in situ, but when you get them home, they look wrong. So instead, we look for things that are more unusual. The piece in my home that means the most to me is a rice statue from Borneo, because it is from the first trip I took with my husband – we went looking for orangutans. I wear a lot of Calvin Klein as everything is so beautifully constructed, and interiors-wise, I’m the same. I like to take modern, clean lines, and then add a beautiful antique or one-off piece into the mix. This is a modest dish but much like that “little black dress” it is all about elegant simplicity. The most important thing is to source the freshest, ripest and purest ingredients. Never over-complicate things as the ingredients will speak for themselves. 4 filleted & pin-boned sea bass • 1 punnet ripe baby plum tomatoes • 1 small bunch parsley • 2 unwaxed lemons • 1 dessertspoon lilliput capers • a glug of good quality olive oil • 1 teaspoon red wine vinegar • salt & pepper 1 Place the tomatoes onto a baking tray and put in a pre-heated oven at 200°C for 5 minutes or until the tomatoes start to blister. 2 Remove from the oven and place in a bowl. Add the capers, red wine vinegar, roughly chopped parsley, the zest of one lemon and glug of olive oil. Mix it loosely and set aside. 3 Oil and season the skin of the sea bass. Hooray! The British apricot season starts in May. They are a real treat with their fragrant, soft, velvety skin. Chargrilling the apricots adds a smokiness that really brings out the best in their wonderful flavour. Although colour is not always the best guide to flavour, steer clear of the very pale varieties and always avoid wrinkly or blotched skins. 3 ripe apricots, halved & stoned • 1 teaspoon olive oil • 100 grams toasted walnuts • 3 tablespoons Greek yoghurt • 2 tablespoons honey • a pinch of salt 1 Heat a griddle pan until hot. Rub the cut side of the apricots with a little of the olive oil and cook in the hot pan for 5 minutes, or until the apricots have black charred lines on the bottom and start oozing. 2 Place the walnuts onto a baking tray. Add a pinch of salt and a splash of olive oil and bake in the oven for 3 minutes until the natural oils from the walnuts release a nutty aroma. 3 To serve, place the apricots on a plate with a dollop of yoghurt. Trickle over the honey and crush the walnuts lightly in your hand before scattering over the apricots.

Which woman most inspires you, and why? I am a huge Margaret Thatcher fan and always will be. She was a big business influence on me. She changed the UK and my approach to ‘getting on with things’. Where do you go to relax? I would advise anyone to become a friend of the Chelsea Physic Garden to escape the city in this blissful ‘secret’ garden. Where do you go to party? One of my most memorable nights in London involved a boat, some nakedness and the police. Where do you go to eat? For something a little different I go to Rock & Sole Plaice in Covent Garden. It was established in 1871 and is still bustling. Wrap up warm and eat outside under coloured lights strung from the trees. Where do you go to drink? Home for a kitchen supper with family, friends and lots of pink wine. Where do you go to feast your eyes? The Design Museum is a gem housing modern and contemporary industrial design, architecture, graphics and fashion. Where do you go to feast your soul? Abe Books in London is brilliant for rare and vintage books and I could spend hours here. I always leave feeling inspired and creative with something special tucked away in my bag. Which three shops can’t you resist? If my husband would allow it, I would spend every Saturday at Lassco in London. It is an architectural salvage shop in Vauxhall and has the most incredible

range of curiosities. I have bought all sorts here from reclaimed floorboards to taps for my bathroom. I love the V&A shop for children’s gifts, and adore the old men’s shops in St. James. What was the last luxury you treated yourself to? Chocolate from Melt. What is your life philosophy? Work hard and be determined even when facing a tough challenge. What advice would you give to your 16-year-old self? Never give up. If you have an idea develop it, and then just keep going and never look back. Where do you go on holiday to escape from London? You can’t beat the Southwest. Staying in England is less stressful than flying abroad and our trip to Cornwall is a relaxing, family escape I look forward to each summer. We rent the same coastguard’s cottage every year which overlooks two beautiful beaches. What’s your favourite London hotel? The Goring has been run by the same family for over 100 years and is traditional luxury at its best. Who is your favourite Royal? The Queen. She is a true icon. What’s your favourite work of art in a London gallery? The Chris Levine portrait of the Queen. Who would you like to be stuck in a rush-hour Tube train with? My children as I don’t get to see nearly enough of them.
