Prep Time: 35 minutes | Makes 4 Servings

Greek Chicken Ingredients:

q 1 pound boneless skinless chicken thighs q 1 tablespoon avocado oil q salt, to taste q 1/2 teaspoon black pepper q 1/2 teaspoon dried rosemary q 1/2 teaspoon dried oregano q 1/4 teaspoon dried thyme q 1 teaspoon garlic powder

Tzatziki Sauce Ingredients:

q 1 cup Greek yogurt q 2 Persian cucumbers, diced 2 garlic cloves, minced q 2 tablespoons fresh dill, chopped 1/2 lemon, juiced q 1/2 teaspoon dried oregano q salt, to taste q pepper, to taste

Additional Ingredients:

q cherry tomatoes q diced bibb lettuce or spinach q feta cheese q fresh dill q naan bread or pita bread

Directions:

Prepare the Greek seasoning. In a small bowl, combine salt, pepper, 1/2 teaspoon dried rosemary, 1/2 teaspoon dried oregano, 1/4 teaspoon dried thyme, and 1 teaspoon garlic powder. Prepare the chicken. Lay the chicken flat and beat it with a meat mallet to make the chicken even and thin. Drizzle avocado oil on each side of the chicken and season with your Greek seasoning mixture. In a large skillet over medium-high heat, drizzle avocado oil and sear the chicken on each side for 4-5 minutes or until the chicken is golden brown and crispy. The internal temperature of the chicken should be 165 degrees. Prepare the tzatziki sauce. In a bowl, combine 1 cup Greek yogurt, diced cucumber, dill, garlic, lemon juice, 1/2 teaspoon oregano, salt, and pepper. stir to combine. Build your gyro! Lay a piece of naan bread or pita flat. Add tzatziki sauce, sliced chicken, lettuce, feta, cherry tomatoes, and dill.
