Welcome to Our Community Kitchens Get to Know Our New Resident Foodie, Pamela Hawkins

F

ive years ago, my job as a magazine editor and photographer took me from California to New Jersey and New York; I left the redwoods, the Pacific Ocean and the foggy rain-soaked winters for traffic jams and snow-covered roads. While that surely was an adventure, I am very excited that my new job as the North Coast Co-op’s Outreach Coordinator has brought me back to the place I adore, doing something I love. To say that I am excited about my new position here at the Co-op is putting it lightly. I have had a love affair with food for a very long time. Being the oldest of five kids, I can cook for an army, I have a special place in my heart for Graber Olives, and fresh farm-to-table ingredients make me swoon. I also have been in love with this area of the country ever since I originally moved here in 2003. That might have something to do with the weather, bike riding on the bottoms and the exceptional farmers markets, but it also has a lot to do with the Co-op. I have taken a lot of classes at both the Arcata and Eureka Co-op Community Kitchens myself. Now that I will be on the other side of the cutting board, so to speak, I am excited about the great people, talented chefs and yummy food that I will get to experience!

Registration Options Register online, by phone or at Customer Service. Please note that pre-registration and payment are required for all classes and workshops. See our Cancellation Policy on back cover.

Register online: Go to our website: www.northcoast.coop. On the home page, click on store features at the top, scroll down and click on “view classes and register”. This will take you to the calendar of cooking classes and workshops. Click on the name of the class you’re interested in to bring up class descriptions and to see openings. If you would like to register for a class or workshop, press the “add to cart” button located to the right of the class description. At this point you’ll see a field to enter a “gift certificate, coupon, or voucher code.” This is where you’ll enter your membership information to receive your 20% discount. Enter your first and last name with your member number. Example: janedoe12345 (with no spaces). After your information has been entered into the field, press the apply button to see your discount reflected. You can then keep shopping or proceed to checkout. Once there, first time users will need to set up a Community Kitchen login and returning users will need to sign in. Payment and registration confirmation can then be made. Register by phone at (707) 443-6027 ext. 102. If asked to leave a message, please include your class request(s), phone number and member number if applicable. We will return your call as soon as possible. Register at Customer Service in either store location. Use your member number, if applicable, to recieve your 20% discouint.

Co-op Staff Instruction / Free This interactive class is creative, economical and nutritious, and focuses on creating healthy & delicious dishes from scratch with ingredients on sale at the Co-op. Chef Alex Begovic $45 Warm up your kitchen with classic recipes from Chef Alex! Start your evening with a hearty Black Bean Soup with Chorizo, finished with Chipotle Sour Cream. Then, onto Warm Potato Salad with Ham, Hard Boiled Eggs, Parsley and a Whole Grain Mustard Vinaigrette. An entrĂŠe of Baked Cod with a Cranberry Butter Crust over Caramelized Leeks will fill your palate with surprising and wonderful flavors. For dessert, a classic Tarte Tatin is the perfect sweet and fruity finish! 3

Begin with Honey Balsamic Roasted Pears with Endives, Walnuts, Blue Cheese and Olive Oil—a sweet and savory masterpiece. Enhance a classic Potato Soup with Roasted Garlic and Parsley. Curried Beef and Veggies in Puff Pastry with Cilantro and Tomato Coulis is a rich and satisfying main course. A delicious, creamy Guinness Mousse with Ganache Sauce and Caramel Drizzle will be a sweet indulgence.

A Flair for Persian

Steele Wine and Cheese Pairings

Betty Thompson $45 “Happy is that meat which is close to butter and walnuts” is a Persian saying. Tonight’s dish “Fesenjan,” Chicken simmered with Butter, Walnuts, Pomegranate Syrup and a choice of Vegetables is considered a mark of Persian hospitality. It will be served with traditional “Chelou,”using a technique which produces Fluffy Rice with a crusty bottom, (one of the important foods of Persian cuisine). A cold side dish of Yogurt and Mushrooms, and a finale of Citrus Fruit Flambé with Pistachio Praline completes tonight’s menu. Wed., Feb. 11 from 6:00 to 8:30pm

Winter on the North Coast III Chef Alex Begovic $45 Distinct flavors play together wonderfully in this class. First, create luscious Chowder with local seafood. Then, taste a colorful Warm Braised Fennel Salad with Bacon, Red Onions, Croutons and Dill Vinaigrette. A succulent sautéed Pork Tenderloin with Apples, Leeks, Cabbage and Hard Cider Sauce will delight the palate. Complete your meal with a warm and satisfying chocolate bread pudding with rum, caramel sauce and toasted almonds. Mon., Feb.16 from 6:00 to 8:30pm

Nouveau Comfort Foods Chef Jon Hoeschen $45 Springtime is coming, so let’s cook with color! Start off with a Citrus Salad with Fennel Vinaigrette tossed with Mixed Greens. Next, a Winter Squash Carbonara with Pancetta & Sage is a flavorful combination in a creamy and comforting dish. End with a bright Meyer Lemon Cream served with Graham Crackers & Sea Salt.

Naomi Key and Co-op Staff $45 Learn common guidelines to identify the relationship between a successful wine and cheese pairing. Study characteristics of local specialty cheeses and how they pair with our collection of Steele Wines from the Lake County region. A fresh Apple Salad with Wild Rice, Pumpkin Seeds, Frisee and Cranberry Vinaigrette will liven up your table. Then, enjoy aromatic Roasted Onions stuffed with Quinoa, Mushrooms and Hazelnuts with a Pomegranate Glaze. A simple Chocolaté Soufflé is dressed perfectly with a little Orange Sauce. For the main course, a scrumptious Braised Pork Shoulder with Savoy Cabbage, Potatoes and Whole Grain Mustard Gravy will fill the air with a wonderful aroma. A tantalizing Chocolate Pear Charlotte finishes this meal.

Greek Treasures Betty Thompson $45 Hot Fried Kasseri (cheese) with Lemon and Capers on crusty bread is our starter followed by SautĂŠed Mussels with Garlic and Herbs. A delicious Chicken Kapama follows with what Greeks call a few mystery ingredients in the sauce. Betty Thompson $45 Spicy Phanang Chicken Curry with Kaffir lime leaves, lemon grass, Thai basil and Peanuts. Included are tips for using prepared curry pastes. Our menu also includes Spicy Fish Cakes with green beans and cilantro, Jasmine Lime Rice, Mixed Greens with garlic and oyster sauce, Tangy Sweet and Sour Prawns and Tropical Fruits in Lime Syrup.

Chef Alex Begovic $45 Chef Alex brings us a vegetarian menu that’ll delight even the pickiest carnivore! Creamy Celery, Fennel, and Potato Soup is a perfect starter, followed by Roasted Winter Vegetable Salad with White Balsamic. As a main dish, enjoy delicious and savory Buckwheat Crepes stuffed with Cream Mushroom Filling and finished with Gruyere. Juicy Baked Apples stuffed with Blackberry Jam, Hazelnuts and Oats complete this exceptional menu.

Our kitchens keep getting better!

Arcata Renovations We’re constantly making strides to ensure that you have the best cooking class experience possible. That’s why we’ve recently refurbished our Arcata Community Kitchen — improving acoustics and installing a 70” TV screen to provide views from several different angles of culinary creations in action. We’ve also updated the kitchen’s furniture and added adjustable window shading to provide a more comfortable and visually pleasing atmosphere. We’d like to thank local companies Sound Advice and Shady Lady for assisting us in the improvements. The Arcata Community Kitchen is better than ever and we invite you to come experience it yourself. Part 1 of this series will cover the constituents of a nutritious diet. Jennifer Shouse has a Bachelor of Science in Nutrition, a Master of Science in Public Health, and a California Teaching Credential in Health Science.

Stretch Your Dollar, Shop the Bulk Department

Kirsten Lindquist $20 The Co-op has an extensive bulk department, but sometimes too much choice can be overwhelming. Let us demystify the diversity and help you gain confidence in shopping in bulk. In this hands-on class, students will prepare and eat a wide variety of dishes based on bulk ingredients. The class will start off with an appetizer of Quinoa Stuffed Mushrooms and Marinated Olives and then a tour of the bulk department and bulk offerings in the frozen department and more. Afterwards, the class will prepare and dine on Corn and Black Bean Salad with Cumin Vinaigrette and Chickpea Flour Flatbreads with Sautéed Garlicky Greens.
