Rebecca Moesinger was ready for a change. The Milton, Massachusetts resident (originally from Hingham, Massachusetts) and former owner of the successful wedding cake business Konditor Meister was looking to start another business somewhere new. The year was 2011, the real estate market optimally priced, but of all the spaces she toured, nothing felt quite right. That is, until a property on Nantucket caught her eye. Rebecca had always loved Nantucket, having come on vacation with a friend’s family growing up, and the house for sale, just a bit out of budget sat at the busy intersection of Surfside and Bartlett. “I came to see the space and I saw all these cars driving by,” Rebecca says. “I thought ‘Ok, interesting.’ And then the price dropped.” Rebecca then purchased the property, and began the painstaking process of transforming that space into the gorgeous and bright café it is today.

Known for their stunning wedding cakes, 45 Surfside Bakery and Café is more than just a bakery, with a delicious menu of fresh sandwiches, salads, pizzas, coffee drinks and most recently, the addition of beer and wine. Open seven days a week, it is clear Rebecca believes in the value of consistent, hard work, although she’d be the first to admit a day in the kitchen is anything but hard.“It is always different and interesting every day,” Rebecca says. “I never drag my feet to get here.” Growing up as one of eight children, Rebecca volunteered her way into the kitchen of her family home when her mother had chosen to return to work. Tasked with preparing family dinner every night, Rebecca laughs and says, “It was one horrible meal after another,” but with her father’s encouragement, she continued on. “Every day I cooked and I just loved it.” As for a career, Rebecca didn’t quite know what she wanted to be when she grew up. “I really enjoyed cooking, but I didn’t know that was something I could do because I didn’t see people like myself, young women cooking. The only time you would see anything remotely close to it was Julia Child. I would watch her and think, well heck, she’s cooking for a living, so why can’t I do that too?” Rebecca attended the University of Massachusetts Amherst, graduating with a degree from their restaurant and hospitality program, but instead of management opportunities after graduation, she felt a desire to work in the kitchen of a restaurant, and so she did, starting at The Front Page Restaurant in Charleston, Massachusetts, ultimately working her way up to the Park Plaza Hotel. After years at the Park Plaza, Rebecca heard the Ritz Carlton had an opening in their Pastry Department. “People had told me that was a field I might want to go into because I’m so particular. And I loved it.” Rebecca approached this new position with an incredible dedication, at night taking recipes home to study so she’d be ready to go the next day. “I don’t want to pat myself on the back too much, but I learned really fast. I think it’s because I cared and paid attention.” It was in this kitchen that Rebecca met pastry chef Günther Mösinger; the two fell in love, and eventually decided to start a business all their own. Thus, the wildly successful bakery Konditor Meister was born.

“We killed ourselves,” Rebecca says of their bakeshop Konditor Meister, the name literally meaning pastry chef in German. “We worked from 4 o’clock in the morning until 9 at night, every day, seven days a week.” But despite all the hard work, Rebecca attributes their success to the fact that they could actually make a delicious cake, one that you would actually want to eat. “People want a good product that does more than just look good. You just have to use good quality ingredients and bake it right, and know what you are doing. And on that premise, that’s how we started. It was one cake at a time.” Rebecca says that flavors in all of her cakes represent the actual, true flavors they are. “When we said we were putting hazelnut in a cake, we weren’t putting something in it that tastes like hazelnuts. We used hazelnuts.” Rebecca, who has since sold her half of Konditor Meister to her now ex-husband and has clearly continued this dedication to pure ingredients, continues, saying, “And that’s what people are finding here too. We do make some pretty spectacular cakes. When a cake walks out on a Saturday ... people will say, ‘Can you do that?’ And I say ‘This is what I do.’” All cakes are made to order, are never frozen, and despite, offering a menu of various flavor options, the sky is the limit in terms of what Rebecca can prepare. A local favorite, however, is the Strawberry Grand Marnier, a golden chiffon cake paired with white chocolate mousse, strawberries and Grand Marnier. “This is why I love when Brides get a cake with fruit in it because when you slice it, it’s obvious that cake wasn’t made on Monday,” Rebecca says. “It had to have been put together yesterday, and it was.” Among the other menu items offered besides cake, Rebecca insists the use of house made ingredients make everything taste so delicious. In the Tom Brady, for example, a roasted turkey sandwich, Rebecca pickles the pickles that she puts in its herb aioli. Coffee drinks are served up with house made chocolate and caramel sauces, and the tomato sauce (as well as the dough) for the pizza is made from fresh ingredients on a daily basis. It’s easy to assume that only this type of dedication could belong to a baker. “The ingredients that I’m using are fabulous,” Rebecca says, “which is why you don’t see a display case. I can’t have a display case because I can’t afford to throw it away, nor can the customer afford to pay for all that to get thrown away.” With Rebecca’s passion found in her selection of the freshest ingredients, it is no wonder that she finds joy in creating new recipes every day. “There are recipes that I’ve been working on for years that are still not ready,” she says. And for everything else, she relies on her sharp-witted, honest daughter Portia to taste test. Portia works tirelessly alongside her mother in all day-to-day tasks at the café, manages their social media accounts, books bridal appointments and much more. “I’ll say, ‘Oh, this is really good,’ but the problem is, they’re all really good,” Portia says. “Then the real challenge is for my mom to be honest with herself.” “Oh, no,” Rebecca says with a smile. “The customers will let you know.”

Nantucket is an island of simple beauty. At its heart and soul, the island is a tiny dot of sand in the Atlantic Ocean, twentysix miles from Cape Cod. It is a relic of a retreating glacier, a forgotten souvenir from long ago when the last Ice Age was coming to an end. But in that souvenir, there is a magnificence that is unparalleled in the world. That magnificence is manifested in the meeting of sand, water and sky. That’s all you really need to describe Nantucket beauty. It is the point where the sand, water, and sky all meet. It’s easy to lose sight of that simple beauty as we go through our days, between the glamorous shopping, the historic tours and the fabulous restaurants. Every so often, we need a reminder that Nantucket is, at her core, about simple beauty. That’s why it’s so nice to know that Chef Scott Osif is such a fixture in the Nantucket culinary scene. Chef Scott has been working in kitchens on the island since 2003, when he came out to Nantucket “for one summer,” as he put it. Anybody who has been to Nantucket “for one summer,” though, knows that one summer can very easily turn into a new home. And such was the case with Scott, who ended up making Nantucket his home at the end of that summer. If that were all there was to this story, you could write it off as a cliché that had been told a thousand times before. However, there’s more to this story. Oh, so much more. I’ve talked to a lot of chefs over the years, and most of them have a common background that includes a stop at culinary school somewhere along the way. Again, a story that has been told so often you can almost recite it yourself at this point. But Scott isn’t one of those chefs Originally, from a small town in Pennsylvania, Scott Osif the Chef was almost Scott Osif the Mechanical Engineer. “I was a mechanical engineering student at Penn State,” he explained. “And I took a job one summer at the Hummingbird Room in Spring Mills, Pennsylvania.” He spent the summer washing dishes, bussing tables, prepping food, doing whatever was asked of him. But he was also watching and learning from some of the area’s best chefs.

“I never really planned on doing restaurant work,” he said. “I just feel like it was a natural progression for me. I started at the Hummingbird Room and kept working and one day I looked up and I was an executive chef. It’s kind of like restaurant work chose me.” Then came that fateful summer in 2003. Scott took a summer job working at the venerable Galley Beach Restaurant, and that has been his Nantucket home base ever since. And those fortunate enough to have sampled his wares at that location understand how lucky Nantucket is to have Scott as a part of the community. “I like to keep things simple,” Scott said of his approach to cooking. “I believe that if you start with a few beautiful and fresh ingredients, it’s hard to get any better than that.” And that is how he approaches the Galley Beach menu, which he changes periodically throughout the season. “The menu is based on the fact that we’re on the beach looking out at the water on this beautiful island,” he said. It’s a simple formula, to be sure. It also produces amazing results when Scott works his magic. In terms of food, the Galley Beach focuses on sustainable, local produce and the freshest meats available. Scott doesn’t like to use a lot of fat in his cooking, which is welcome news to those of us who have reached the age of slowing metabolisms. “I like to keep it healthy,” he said. “I want you to be able to eat a two-course meal and not feel weighted down.” A recent addition to the island’s dining scene is Afterhouse, an intimate space located on Broad Street that is owned by the same people who own the Galley Beach. Despite his full-time duties at the latter, Scott also runs the kitchen at Afterhouse, too. The name is taken from a room, appropriately enough, on a whaleship. The after house was a small room located, also appropriately enough, behind the ship’s galley. It was a space for camaraderie between sailors, for sharing a drink over a story, maybe having a meal, or just relaxing. And that same description sums up Afterhouse. Featuring plenty of dark wood and comfortable seating, the ambience inside Afterhouse invites you to leave the world outside and enter into your own little cocoon. “It’s a wine bar and bistro,” Scott explained. “The food is clean, light, and bright. It’s nothing terribly heavy. And we source as much as we can locally, so it’s fresh.” Nantucket diners can be particular about their meals, so the success of both the Galley Beach and Afterhouse are testaments to Scott’s ability to come up with new and exciting dishes, all the while maintaining the old standbys that some of us traditionalists require. “The crab cake is always on the menu at the Galley Beach,” he said, which was reassuring to at least one of us. “It’s an iconic dish, so it’s always on. I like to include new things, too, to keep guests interested in the menu.” Along with that, though, he makes sure to keep the menu items and flavor profiles balanced enough so that there’s something available for every palate. When it’s all said and done, though, Chef Osif’s primary mission every night is to make his dinner guests happy with their meal. And it all starts with that simple recipe of beautiful and fresh ingredients. “I want people to eat something and wonder why it’s so good. That’s what I really go for,” he said. It’s as simple as that.

Jenny Bence The Green Nantucket’s tradition of strong women dates back at least as far as the days when whalers would sail off for years at a time. Their wives were left on the island, and it was they who kept things going while the men were away. Such was the reputation of those ladies that in the 1800s, a stretch of Centre Street was known colloquially as Petticoat Row because of the number of female-owned and female-run businesses that lined the street. Given that tradition, it’s not surprising that Nantucket native Jenny Bence, owner of The Green at 5 West Creek Road, shares that inner strength. “I started baking at eight years old,” she said. “I was never content to not be working, even as a child. I didn’t sit still well.” The more you know about Jenny and her professional life, the more truth you discover in that comment. Though she doesn’t have formal training in the culinary arts, Jenny’s work ethic has led her to become an accomplished self-taught chef. And in 2010, she decided it was time to bring her culinary talents to hungry folks on Nantucket. “I like organic food and I like local food,” she explained, “and nobody was doing that on-island back then. So, I created a place where I felt comfortable with what I was eating.” That meant—and continues to mean—sourcing as much locally as possible. Freshness and simplicity are hallmarks of Jenny’s food, and The Green offers something for just about every lifestyle. The menu includes gluten-free, vegetarian, and vegan options; there are plenty of omnivorous options, too, for those who are so inclined. There is also a variety of smoothies and juices to keep you energized all day long, plus coffee and tea for those times when you need a little jump-start to getting yourself energized. What’s more, everything is made to order in a comfortable and casual setting. Jenny credits a host of Nantucket women with helping her along the way in her professional development. “I worked for several of the strongest women on Nantucket,” she said. “I learned so much about the service industry, about working with people, and about creativity.”

The wisdom she acquired from those women is reflected in the way she has modified The Green’s menu over the years to accommodate her customers’ preferences. “I originally saw The Green as a simple café,” she said. “I figured we’d have baked goods and breakfast burritos. But people started asking for other things, and the menu grew from there.” Getting back to the fact that Jenny doesn’t do well when she’s not in constant motion, she also runs her own catering business. Because, you know, running one of the most popular take-out cafés on the island isn’t enough to keep you really busy. Her first catering job was a wedding for a friend, and the business took off from there. “People really liked the food because it wasn’t overworked,” she said. “I do very creative presentations and designs, but the food itself is simple. I feel like what I need to do is just source amazing ingredients and present it beautifully.” Jenny’s cooking style resists classification, as she finds inspiration for her dishes all around her. Whether it’s browsing produce at one of the island’s farms or talking to local fishermen about their catch, she’s looking for the freshest ingredients she can find. “I’m interested in what is fresh today. Instead of me asking them for something specific, I prefer to ask them what they have that’s fresh and go from there.” Just as important to her as using the freshest ingredients is sourcing things locally. “Trying to buy local is a top priority for me,” she said. “I source my ingredients locally whenever possible.” Given that she is a self-taught chef, it stands to reason that Jenny would have bookshelves full of cookbooks. “I’m not a big recipe person,” she said with a laugh. So much for standing to reason. Instead, she cooks the same way a musician who plays by ear might play a song on the piano. “When I eat something that I really like, I can usually recreate it by taste,” she said. As a Nantucket-born and Nantucket-raised woman, Jenny is continuing the tradition established by the women who ran businesses on Petticoat Row during the nineteenth century. And she is on track to establish her own legacy for future generations. “Growing up on Nantucket has been an integral part of my life,” she said. “Being able to wake up and make people happy with a simple meal is what keeps me going.” The Green is located at 5 West Creek Road. Patrick Ridge Island Kitchen
I don’t know what it is about Nantucket, but so many residents seem to have a story about unintentional meetings that led to their moving to the island. For some, it was a summer job that turned into a full-time lifestyle. For others, it’s a romantic interest that appeared when it was least expected. Then there’s the one about chatting up a bartender over lunch, only to have that casual conversation change the entire trajectory of your professional life. Patrick Ridge is one of the island’s most talented chefs, and the fact that he’s on Nantucket is, at least in part, due to a conversation he had with Mark Watson and Melissa Kniskern. “I was on the island to interview for a job at American Seasons,” Patrick recalled recently, “and I had lunch at the Atlantic Café. Mark, Melissa, and I started talking about cooking, and then specifically French cooking.” The fact that the conversation turned to French cuisine wasn’t accidental, given Patrick’s culinary training. Originally, from Cohasset, Massachusetts, Patrick graduated from the Culinary Institute of America, one of the world’s premiere chef training programs. He had an intense interest in—and a skill level that rivaled the most talented cooking prodigies—French cooking. So when Mark found out that there was a somewhat hidden gem sitting at his bar, he made a quick call to the owners of Le Languedoc Bistro, who jumped at the chance to hire him. “I spent a year as a sous-chef at the Languedoc, then had a trial run to see how I would do as the executive chef,” he said. At that trial run, he was asked to prepare a full meal for the restaurant owners and their invited guests. One of those guests, whom I happen to know personally, told me that the dinner he had that night was quite possibly the best meal he’d ever eaten in his life. Apparently, the owners agreed, because Patrick would spend the next five years as the executive chef at Le Languedoc. Nantucket diners can still find Patrick doing what he loves most, working in the kitchen. However, these days, he’s in the kitchen in his own restaurant, Island Kitchen. In its sixth season, Island Kitchen has already become a favorite of locals and

visitors alike, as evidenced by the number of people the restaurant serves: “We’ll typically feed eight-hundred people between breakfast and lunch on an average day in the summer,” Patrick said. During one incredibly busy week earlier this summer, he estimated that the restaurant served ten thousand people. Given the number of restaurants on the island, it begs the question of what Patrick is doing that makes Island Kitchen so popular. Of course, his own skill level and creativity in terms of putting together amazing offerings is part of that equation. However, he’s quick to deflect credit to those he sees as the truly deserving ones: “We’ve been super fortunate,” he said. “We have a great team of people, many of whom have been with us since we started. That’s a huge driver in our success. The faces of the people, the people you remember when you come back. That and the quality of the product we’re putting out is what I think makes us so popular. It’s completely exceeded any of my original expectations,” he said. “It’s been incredible.” When he decided to open his own restaurant, Patrick approached the process as a savvy businessman. “We looked around to see what we thought the market needed, then we tried to fill that need.” In this case, Patrick felt like the island needed a place with upscale food paired with a casual vibe. And he’s also brought together old-time favorites and newer menu items to create a menu that literally has something for everyone. It’s about as close to Willy Wonka’s workshop as you’re going to come, with rooms like the hardening room for super-cooling the ice cream and the donut lab, which is my idea of the perfect place to spend the rest of my working days. “Our ice cream is super-premium,” Patrick explained, “so it has almost no air whipped into it all. It’s very rich.” It’s all homemade on the premises, and with forty flavors from which to choose, you could eat ice cream every day and get through half the summer before you ever have the same flavor twice. When you talk to Patrick about making ice cream, you get a real sense of why he’s doing what he’s doing: He just loves it. “It is so much fun to be selling ice cream,” he said. “It’s so communal and it’s so fun. You get the locals, you get visitors, you get everyone. And everyone loves ice cream, so everyone is happy.”

by ANDREW SPENCER remember the summer when I was finally old enough to go to town by myself for ice cream. I rode my bike to the Sweet Shop on Main Street, the money I’d managed to scrape together safely in my pocket. I confidently walked in the door and contemplated which flavor I would be enjoying that evening. I liked to think I was acting like an adult; all the while, all the actual adults in the place were acting like the little kid that I really was.
If there’s something more quintessentially summer than ice cream, I don’t know what it is. Long after the sticky fingers have been cleaned off, the memories linger and always bring us back to our favorite flavors. Ice cream is one of those things that puts parents on equal footing with their kids. While we’re eating ice cream, we’re all the same age. Of course, when it comes to ice cream, the actual eating of it is just the metaphorical cherry on top of the sundae. The whole process is part of the enjoyment. The anticipation that builds while you’re walking to the ice cream parlor and reaches its peak when you’re waiting for your order frames the all-important decision of which flavor is today’s big winner. Is it a chocolate day? Maybe you’re craving something fruity. Possibly, you’re leaning towards one the many specialty flavors offered by Nantucket creameries.
