eppers are incredibly good for you. They are low in calories and are loaded with good nutrition. All varieties are excellent sources of vitamins A and C, potassium, folic acid, and fiber. Eating them regularly can help to improve eye health and reduce risk of several chronic diseases. Serves 4.
Ingredients • • • • •
6 red peppers, halved and deseeded Extra virgin olive oil A handful of fresh basil leaves 2 cloves of garlic, chopped 12 small chunks of feta cheese
Method Preheat the oven to 200oC/Gas mark 6 Place the peppers in a baking dish, cut side down, drizzle with olive oil Tuck the basil and garlic between the peppers, scatter the feta on top Bake in the oven for 30-40 minutes You can serve hot, warm or at room temperature Enjoy!
