One of the highlights of the summer season is the incredible bounty of fresh produce, and grilling these vegetables gives them a smoky, delicious dimension. Chef BBQ Naz, a grilling expert from Broil King, shares some simple tips for flavor perfection. • When preparing vegetables, slice them to expose as much of the vegetable to the grill surface as you can. • Coat vegetables with olive oil before placing them on the grill. This will help prevent them from sticking to the grill. • Use the right tool for the job. Accessories like grill toppers and skewers are perfect for keeping smaller foods like cherry tomatoes and onions from rolling around or falling through the grate. • Don’t leave vegetables unattended. Vegetables are delicate and can easily overcook if not monitored. • Grill extras. Leftover grilled vegetables are great in soups, salads, sandwiches and on pizzas and pasta. When grilling vegetables, consider this popular recipe. Grilled Zucchini Rolls Ingredients 3 medium zucchinis, sliced 1/4-inch thick, lengthwise 1 tablespoon olive oil 4 ounces chevre (soft goat cheese), at room temperature 1 Pinch of freshly ground black pepper 1 Pinch of kosher salt 2 tablespoons sun-dried tomatoes, oil-packed and minced 1 teaspoon oil from the sun-dried tomatoes 1 teaspoon fresh thyme, minced 2 tablespoons Parmesan cheese, freshly grated Directions Preheat the grill on medium. Brush both sides of sliced zucchini with olive oil and sprinkle with salt. Place on the grill and cook for 4 minutes per side. When cooked, set on a wire rack to cool. In a small bowl, combine the chevre, salt, pepper, sundried tomatoes, oil and thyme. Using a small spatula, spread the cheese mixture thinly over one side of the zucchini. Lightly roll the zucchini, and place seam side down on a small, parchment-lined baking sheet. Sprinkle with Parmesan cheese. Place baking sheet on top rack of the grill for 15 minutes. Cold Blooded Critters at the Angola Public Library
Cold blooded critters migrated from Beaver Meadows Audubon Center to the Angola Public Library to kick off the Buffalo & Erie County Public Library Systems Summer Reading 2014 season. Mark Carra brought a collection of frogs, snakes, turtles and lizards to give the children a close up view of these animals. More than 700 degrees were conferred to candidates representing Armstrong's College of Education, College of Health Professions, College of Liberal Arts and College of Science and Technology at the university's Spring 2014 Commencement, held at the Savannah Civic Center. Armstrong president Dr. Linda M. Bleicken welcomed the graduates and their families to Spring Commencement. Evans Force Falls in Dazzlers Tournament
The Evans Force 12U Travel Softball team played in the Dazzlers Tournament at Orchard Acres in Blasdell. Coming off their first place finish in the Lakeshore Girls of Summer tournament, The Force was ready to show their stuff. However, their first opponent was the Rochester Battery. The Battery was probably the most powerful team in the tournament and would eventally win the whole tournament at its conclusion. The Battery opened the game with a five hit 3 run first inning off starter Evie Butlak. It looked like the Battery was going to charge their way to an easy win but their pitching faltered in the third with the Force scoring 5 runs on 6 walks and only 1 hit. The Force got only 3 hits in the game but drew 12 walks on route to a 9-4 victory. Sam Dils got 3 RBI including a 2 run double in the first and Tabitha Allen got a RBI single in the third. Grace Barker also had a single. Evie Butlak recovered from the bad first inning to allow only 1 run on 3 hits and only 1 walk the rest of the game to the complete game victory. Maddy Tempski got team MVP for stellar catching play keeping Battery runners in check. Next up were the Rochester Lions and the Force could not match their first game performance. The Force decided to give their ace Evie Butlak a rest from pitching and the Lions roared to take advantage of Force pitching. The Lions got 5 hits including a grand slam home run, drew 12 walks and 4 Force errors to win easily 16-1. Tabitha Allen and Kymi Nance got the Force’s only 2 hits. Evie Butlak got team MVP for some great catches at shortstop. The last game on Saturday pitted the Force against the tournament host Dazzlers. The Force quickly opened a 3-0 lead in the first and added one in the fourth to take a 4-0 lead into the 5th. The Dazzlers got 3 in the fifth to close the gap on 1 hit and 3 Force errors. But the Force hung on for the 4-3 victory in these close battle. Kymi Nance got a double and triple and 1 RBI while newcomer Andrea Olsen added two hits while Caitlin Burbige, Sam Dils, Monica Pokoj and Allison Smith each got singles. Evie Butlak pitched the complete game victory only allowing 2 hits, 2 walks while striking out 13 including 7 in a row. Kymi Nance got team MVP for her powerful hitting. It was a quick exit for the Force on elimination Sunday. The Force met the strong Xtreme team. With the use of “small ball” the Xtreme got 10 hits (many were bunts) and 5 walks to beat starter Evie Butlak. The Xtreme easily won 11-3 to advance. Butlak was 9-0 in tournament starts for the season until Xtreme derailed the Evie Train. The only hits for the Force were by Evie Butlak, Caitlin Burbige and a double by Kymi Nance.
