We crossed Greece from Thrace to Crete to find the local gastronomy's finest and the challenge with the recipes was simply, which comes first. The ones we chose are family recipes, laborious to prepare at home and easy to enjoy by food-lovers in every corner of the world, regardless of their local cuisine. This valuable attribute we owe entirely to the Greek gastronomy - a unique combination of ethnic intonations on a taste palette, familiar to people beyond Greece's borders. Indigenous Greek, Italian, Ottoman, Arabic, French and Slavic influences amalgamated in dishes like the famous Moussakas, the Briam or the Gemista. Their common ground has always been the variety and quality of vegetables and herbs mother nature kindly grows on our sunny hillsides. “Moussakas” is for the Greek Cuisine what Acropolis is for the visitor of Athens –a must! Like most great products we enjoy in everyday life, Moussakas is actually a blend of different food cultures. Palirria, inspired by a succulent family recipe, starts carefully with a layer of sautéed potatoes and aubergines. Delicately spiced minced meat follows and on top lies a creamy béchamel with grated kefalotiri cheese. Greeks o en leave Moussakas to cool down before enjoyment.
