Delicious Life

"Kitchen Fable" from Captive Voices.

The fork lived with the knife and found it hard — for years took nicks and scratches, not to mention cuts. She who took tedium by the ears: nonforthcoming pickles, defiant stretched-out lettuce, sauce-gooed particles. He who came down whack. His conversation, even, edged. Lying beside him in the drawer she formed a crazy patina. The seasons stacked —  melons, succeeded by cured pork. He dulled; he was a dull knife, while she was, after all, a fork.

“Have you eaten yet?” This was one of my dad's favourite longdistance phone conversations to show interest in my well-being. As an adult, I can totally see this now. If I was dining out alone or with friends, I was lucky because the answer was easy and straightforward. But when it was my chance to be chef, things got a bit more challenging. It would take a lot more effort to explain. From another angle, maybe he would have been proud of my adventurous and creative spirit which was only accentuated by my experiments in the kitchen…but likely not! I think my parents probably knew more about me than I ever realised! Having spent more than ten years in Europe alone, I have documented most records of my trial and error with photographs. I would like to show my dad one day. However, not being able to cook well, my survival skill remained a mystery to my parents at all times. Their curiosity made them brave and they become anxious to try my cooking. Needless to say, I used to make terrible food and still do. And my ability to criticise not only makes me picky, but also encourages me to give it up. Despite all these disadvantages, however, I had promised them to make an apple salad as a housewarming dish and dad would just laugh and laugh whenever it was mentioned because truthfully I have never made them any food, not even once. However, I secretly had the best of intentions to impress! I did a lot of research and was seriously planning to make a big feast for our relocation. Good food takes time to prepare; only dad did not wait. He has left me with a test of independence, and I hope I am not doing too embarrassingly bad. I’ll let you decide. Here’s a sneak peek to the documentary of my kitchen. Be gentle, please.

Still life paintings are visual history, not only documenting historical events such as The Last Supper by Leonardo da Vinci, but also telling what lies beyond the canvas. Still life is often intertwined with cultural identity to depict the pride of a nation and even the imagery of fiction. 靜態畫就如歷史繪本,除了像達文西的「最後 "A clam for supper? A cold clam; is

Sylvia Malaguzzi 於 2008 年推出的一 本實用著作《藝術中的食物和盛饗》(Food and Feasting in Art),堪稱解讀靜態畫背 'Future Fruit 120' 2007, by Al Munro, digital prints on found maps, cut and collaged - framed

produce artworks that look like food and instead look to other mediums including edible substances to produce their work. Traditionally, the still life was built on an entire iconographic language used to signal subtle messages to the viewer. A common example would be the depiction of wine and bread, religious connotations indicating the blood and body of Jesus Christ. A very useful book was published in 2008 by Sylvia Malaguzzi titled Food and Feasting in Art. The book acts as a visual guide to the hidden meanings and messages coded in still life paintings. Iconographic language was used heavily during the Renaissance and

is still used occasionally by contemporary artists working in a traditional style. The socio-political sculpture of guerrilla street-artist Will Coles employs traditional sculptural techniques to manipulate found objects and explore contemporary issues, specifically over consumerism. The sculpture titled ‘First World Food (burgers)’ was produced specifically for the Art + Food exhibition and was made by casting McDonalds hamburgers. The method combines several into a large stack to produce the ultimate icon in fast food gluttony. The exhibition included work by artists using edible materials including salt, white chocolate and communion wafers. Megan has been researching artists using sugar for the upcoming exhibition, Sugar, Sugar, built on the ideas explored by the Art + Food artists using edible materials. The featured art pieces are

This time, through an impressionistic angle, we feature three modern women, each absorbed in her own world. • Breakfast is a time for “grab and go” and keeping pace with urban living. But what if this meal could be enjoyed tastefully? • Lunch is only a business meeting, a missed opportunity to savour the taste of perfectly prepared food. What better way to celebrate the second anniversary of Antipasto Magazine than by featuring “Antipasti” of 5 different cuisines from some of the newest joints in town? Our name Antipasto literally means “before the meal” and refers to the starter or first course. True to the spirit of Antipasto, we believe that a good introduction is always of utmost importance. From gathering with friends over a special meal to getting ready for the next phase of your life, it’s all about creating a fabulous start. So let’s raise a toast to the spirit of good living and let our magazine spice up your daily life! We hope that our choices will give you a delightful start to your meal, buon Appetito!

Txipirones Boqueria (Spanish)

Spain has one of the best “startersâ€? culture with their huge variety of tapas created to go with beer or wine before the main meal starts. At Boqueria, they are taking a different twist on a Catalan classic starter Xatonada by replacing the usual Bacalao (salted cod) with fresh baby squids (txipirones). Served on a base with escarola lettuce (native to Catalonia), served with a tomato confit, Romesco sauce made from tomato, olive oil, garlic, onion, hazel nut and red pepper, topped with a grilled calçot (catalan spring onion).

While jamon iberico is widely adored by so many

known. Lomo means the tenderloin in Spanish and it is from the same Iberico pig that produces the Jamon iberico. In this dish, the Lomo iberico enhances the flavour and freshness of the green asparagus and the cherry tomato gives it a any fattiness that comes with the cured meat.

Ploughman’s Platter

Just as its name suggests, Salted pig mainly features dishes made from pork and this platter is exactly what you’d expect: pork in many different forms. Cold cuts such as Milano salami, chorizo, saucissons,

mousse, cheese, pickles, bread and a scotch egg. The pickles with mustard seeds help to ease the heaviness of this starter and add another dimension of taste. The homemade terrine is the highlight, with nuts and spices that are a fine accompaniment to the rest of the ingredients.

We’ve now arrived at special time of year when festive seasons are fast approaching and likely many of you are starting to think about planning your celebrations. In this issue of Wine Map, we would like to recommend some wines that make ideal pairings with your festive foods! We have generalized a few common festive dishes from different cultures and tried to pair them up with...some rather traditional wines but also some very unexpected choices! So why not take this opportunity during the festive season to jump out of the box and try something different with your festive meals???

Discarded objects weep at night inside the trash bin” is a lesson taught in Sayaka’s kindergarten.

45

sayakaganz.com

Diamond and gold are priced for eternity and plastic should be quite expensive too. In fact, the cost for a single used fork and knife that are part of your takeaway lunch will add up to an unaffordable price for our Earth. This hardly decomposable material requires sunlight to undergo photo-degradation, meaning any discarded plastic objects are likely to be as long lasting as any precious stones or metals...unless there is a second life. Indeed, anything is possible. Discarded plastics could be revived by the hand of artist Sayaka Gaza who integrates them into an animal in motion. Sayaka spent her childhood in Japan, where the Japanese Shinto belief is that all objects have spirits too. A message of hope is inherent in her sculptures. If there is a conflict, there must also be a solution to it. By showing the beautiful side of plastic, we may learn to value it and hence waste less. As soon as Gaza has collected enough of one colour from her 30 bins of collection, she starts to plan out the structure, researching, calculating, and constructing the armature. Next comes the fun part where she solves the puzzle by attaching each unique piece together to form the desired motion. Run, horsey run!

When you buy a newspaper in the morning at 7, it means that the seller has been there to set up the stall before 6, a routine that happens seven days a week regardless of the weather. It’s

very convenient, right? Perhaps not completely. Paper House by Thomas Heatherwick has given the kiosk a stylish curved wall that shelves magazines in a stepped tier form, with the upper tier allow-ing sunlight to shine through during the day. Night shines out through the window in the evening while the bronze sculpture acts as a nightlight.

Together, Sapper and Zanuso created many remarkable items in the 60s which look stunning even today. For example, the first folding telephone, portable television, and many others, including this radio Model TS 502. The innovative design of the radio cube with a slide-out carrying handle has become a classic and is still being manufactured by Brionvega half a century after.

Knowledge is wealth. In praise of the magnificence of books, a monument seems just right. The spiral pyramid of bookshelves in Spijkenisse public library creates various sizes of private space internally, conceiving closed areas for an office, conference room and study room. The terrace area offers a public space for reading. The height of each wall is up to 1.8m for the permanent collection, and above that is reserved for archives, obsolete collections, equipment and such. The Book Mountain by Winy Maas sits under a sloping glass roof. The most public library has certainly become a landmark.

720 Degrees by Ron Arad is a monumental installation of 360 degrees screenings of films and video art which is not only visible to the visitors inside the installation, but to those across the 20-acre campus of the Israel Museum. The projections program has shortlisted some of the leading multi-media artists. The immersive experience of images in motion is made possible by 5,600 silicon rods which are suspended from a height of 8 meters, and the circle in the shape formed is also a stage for the surprise performances of music, dance, poetry and theater.

The Royal Danish Library by Schmidt Hammer Lassen has not only embraced its practical function as a democratic institution for knowledge, it is also a pivotal aspect of cultural life in Copenhagen, where it facilities other public activities including performances, conferences, and concerts. Its evergreen design nicknamed Black Diamond is a distorted prismatic building built in black granite which features cladding mined in Zimbabwe and processed in Italy. The leaning block sits in the waterfront and is seen to be floating from water and has become one of the major landmarks.

The spherical objects are contained in some of the private dining rooms of a Chinese restaurant called SUBU in Beijing. The futuristic interior fused Scandinavian touches by Johannes Torpe which are accentuated with Chinese influences: round tables, seating in red fabric, Chinese wall paintings, and orchid flower arrangements. It is a perfect example of the modern Chinese phenomenon where rebranding of Chinese cuisine is a response to a trend. The redefinition in response to international attention has opened up a new dialogue of Chinese culture to newly received audiences.

Bricks of cushion stack up and tie together becoming a sofa. One of the partners of KiBiSi, Bjarke Ingels, has the perfect expression: “What is a sofa but a pile of pillows for maximum comfort? Turning the habitual modularity of sofa design into a virtue, the Brick explores the tectonic of bricklaying to stack sandbags like cushions into architecture for comfort. The construction of the chic, cosmopolitan sofa is just as simple as that.

Nobody Chair by Komplot Design is truly one piece with no joints or glue. Its awardwinning design of modernism and simplicity can easily facilitate mass production and provide a light and stackable solution to storage. The single piece of fabric shaped into a chair is made of form-pressed PET-felt from recycled plastic bottles and is therefore 100% recyclable as well. The innovative approach is at the same time sophisticated and easily maintained, making it certainly a popular alternative to a foldable chair.

An attractive environment is not only created from the element of beauty, but the emotion that adds to its surroundings, also enhancing the area’s sense of identity. Rosan Bosch has taken an artful approach to building glass sculpture The Kaleidoscope which sits on top of a pedestrian tunnel in Albertslund South, which formerly felt unsafe to the residents. Canal Mountains is an activity park which brings kids together and has created an intriguing meeting place and landmark in the area. Altogether with other art and recreational initiatives in the housing complex have accelerated positive development. 51

Adding urban flair to a city steeped in history is perhaps the best solution to maintaining both future and past elements. The shiny exteriors of Hutong Bubble 32 by Ma Yansong’s team gives the courtyard house in old Beijing a futuristic touch, yet the reflective surface morphs into its surrounding. Yet it is not only to decorate; the iconic bubble is also transformed to meet the community’s need, consisting of a toilet and a staircase which extend to the roof which act as a living statement aimed at improving Hutong’s poor hygienic conditions. May history live in the present.

Does Garden by the Bay by Andrew Grant resemble a modern forest of imagination? It consists of a Flower Dome, the largest columnless greenhouse, which replicates the cool-dry climate of the Mediterranean regions that homes plants from all over the world. Water pipes on ground cools incoming air and vents warm air at the top. The Cloud Forest is a cool-moist conservatory with the longest indoor waterfall. Plants from tropical highlands up to 2000m above sea level are housed here. Last but not least, the canopies of the Supertree Grove are embedded with environmentally sustainable features, such as a solar energy collecting cell and integrated cooling conservatories.

Agriculture urbanization is a great way to approach sustainable living. Green School by Studio 3XN is a multi-level building, accompanied with a productive greenhouse which allows vegetation to grow all around, both internally and externally. Each of the nine levels of student housing twists and shifts from the previous one, creating wide terraces with maximum daylight exposure. The products grown in the greenhouse are sold at the organic store inside the public area of the building.

An unusual chapel certainly adds intrigue to a memorable wedding ceremony. The Leaf Chapel by Mark Dytham is composed of two leaves, one glass and one steel. A delicate lace pattern projects onto the white fabric when light penetrates through the 4700 holes with lenses on the steel leaf At the end of the ceremony, when the broom may kiss the bride, the veil of lace opens up to the awe-inspiring elements of nature, including a pond in front and Japanese Alps, Yatsugatake peaks and Mt. Are you ready to break free from constraints? We invite you literally think outside the box. 你準備好衝破規限了嗎?我們誠邀你跳出思想界限。 For many of us, the word “art” may bring to mind a priceless oil painting in a gilded frame or a rare collectable in a jewel box…something contained and separate from ourselves. However, in virtually every city today, art no longer solely exists in museums or galleries but instead is widespread in public spaces. Creative expression is extensive, crossing both physical and psychological boundaries, captivating and engaging viewers with it openness. Unlike private works, viewing public art is free and nonexclusive — everyone can participate in the interpretation. One simply has to be wherever it exists. Public art is a creation whose origins lie within the creator, beginning with a desire to communicate with an audience. The artist hopes to succeed in rejuvenating self-identify and reflections among individuals, all without words.

MEXICO WALL, 2012; paint on wall. 14 x 40', MAYA HAYUK

The roots of public art are truly democratic. Conceptually, it can be translated into a barrier-free language so that people can be affected and given a channel to offer up opinion. While one of its main purposes is to provide a certain aesthetic, creating beauty and enhancing the environment, artists have also embraced it as a medium which enables them to have their work translated into socially relevant themes or become an expression of protest. Freddy Sam, a street artist based out of Cape Town, South Africa, began his mural projects to not only to add colour to the place but also in the hopes to bring about social change and transcribe a positive message. Orphans in the community are invited to become physically involved in the artistic process, aiding in the creation of each mural. Ideally, this hands-on approach encourages community involvement and fosters feelings of uniqueness in each child. The “Before I Die” wall actualized by Candy Chang, a New York based artist, awakens all individuals to ponder and pursue a little more each day by allowing people to complete her art piece with their different insights. Janet Echelman’s subtle yet evocative floating sculptures make us aware of the importance of taking imagination seriously and believing that it can lead us to anywhere we want to be. Public art functions as a mirror for its viewer who becomes an active participant and partner in creation. In contrast to high-valued pieces placed in galleries, this art form subconsciously involves and merges itself into our daily lives, creating an interaction and intervening with emotion and introspection. 很多人都認為,「藝術品」就是一幅鑲在金框

The sudden loss of a friend regarded as a mother by artist Candy Chang led her to begin thinking about life and death and to be grateful for every day that she is breathing. Chang founded the Before I Die toolkit with an inexpensive massive chalkboard painted on an abandoned house. Today the façades of existing buildings are frequently painted to create more quality in urban environments. Maya Hayuk, a Ukrainian-American artist whose diverse skills combine intricate patterns and bright colours, generated THIS WALL COULD BE YOUR LIFE, an on-going mural project which began in 2005. Conceptually, its origins lie in the pursuit of actualizing an unstoppable force to add some sparks and colour into the world. One thing is certainly clear: Hayuk doesn’t shy away from anything as can be seen when viewing her mix in styles and media. Get into her world and regain your fortitude.

Having applied to seven art schools and being rejected by all seven, Janet Echelman’s persistence and passion was truly revealed during one of her visits to an exhibition in India. After her paints went missing, she was inspired to utilize an ordinary material from locals, fish nets, to construct her work. She had come to appreciate the importance of honoring traditional skills following her studies in Chinese calligraphy and visual art in Hong Kong. She soon transformed light-weight fishing nets into elaborate sculptures using traditional net-weaving techniques, sparking public imagination worldwide by creating a personal and profound link with the forces of nature —light, wind and water. echelman.com

'Faraway, so close’. This is what I thought when I looked through these pictures. I recalled a sentence of Maximiliam Voloshin, Russian poet /painter: 'One first heard and only then saw art.’ This voyage is about visiting a very special place…when traveling merges with music created by artists that musically responds to the landscape. The landscape a music creator travels through can give a new perspective and a new significance to the music creation itself. The connection between the human creation and the place of inspiration are like impressions that one catches from the hypothetical dialogue between the ear and the eye. These ideas came to fruition in the musical journey of Norwegian duo FROST, a journey into sonic discoveries of the extreme North, in the remoteness of the Arctic, to a ghost town called Pyramiden.

PYRAMIDEN [78° 39.3' N 16° 20' E] (Russian Пирамида) Very remote yet special. A now desolate ghost town on the island of Spitsbergen. Its name is derived from the pyramidshaped mountain (936 m) close by. Former coal mining settlement of the Soviet Union, the town was abandoned in the late 90s. With the collapse of the Soviet Union, the Russian mining company was not enough to support it. In 1999, Russian authorities ordered the

quick evacuation of Pyramiden, turning it into a ghost town almost overnight. Since then, time seems to have stood still. Pyramiden has the allure of the odd, the facilities almost untouched, preserved by a dry, cold climate. There is a haunting silence that reigns there. Wide streets and architecturally planned in pure Soviet style brick buildings and wooden houses. It was considered a good place to be from the 1960s through the 1980s when

cassette-tape with the label Радио Магнитное on it (Radio Magnetic in Russian) to Per and Aggie. It was 2008. A letter from a Russian radio aficionado explained that he picked up some unusual radio signals across the Arctic Circle. One could hear music intermingled with a male Russian voice, and coordinates tracked the broadcasts exactly from Pyramiden. He sent Frost the tape since he thought it could be 'inspiring', after having seen them on occasion of the perfomance for the music of 'Mother', a silent Russian movie. They said: “We are constantly making music, but suddenly this cassette appeared, with recordings of old Russian radio transmissions... We listened to these sounds from back in time, with noise and crackles and they helped us get a perspective on our own music—inspiring us to take a step back and observe our music from a different angle. When writing and producing our album we tried to construct a filter through which we listened to what we were doing in real time. 67

There are very few cities in the world that can rival the grandeur of Budapest. Widely regarded as one of the world's most spectacular cities, this true gem in the crown of Central Eastern Europe boasts a vibrant and colourful history, showcasing all the drama and adventure you’d expect from an epic historical novel. Once the twin capital of the vast and powerful Austria-Hungary Empire, Budapest now has a sense of faded glory lingering over it, caused not only by the destruction of WWII but from the years of communism that followed. Many of the city's magnificent historical buildings fell into disrepair at that time and were left crumbling. Lucky for us, Budapest has awakened from her slumber, with the entry of Hungary into the European Union in 2004 and with the many efforts made to restore the city to its former glory.

INFORMATION ON BUDAPEST By air: Regular flights from major cities. By Rail: Rail connection to Vienna (Austria), Bratislava (Slovakia), Prague (Czech Republic) and other major cities in the region. What to Do: WALK! The city core of Budapest is small enough to cover on foot. Don't bother taking the metro as you might miss a lot of the street scenes, get yourself a comfortable pair of shoes and do some walking! What to Eat: Bock Bistro (Erzsebet krt.43-49., Budapest, Hungary ) is highly recommended, with their modernist approach to traditional Hungarian classics, you can sample the best of what Hungarian cuisine can offer here. With their ties with Bock Winery one of the top wineries in Hungary, nearly all the best wines in Hungary can be sampled by glass! Rosenstein (Rosenstein 3 Mosonyi Utca, VIII, Budapest 1087) serves the best home style Jewish Hungarian food, head chef Tibor Rosenstein is considered to be one of the best and most famous chefs in the country. What to Drink: Wine! Hungary is an outstanding wine country making some world class wines!! They have handed down the BEST dessert wine - Tokaji Aszu, in the world. For White and Red wine, go for dry wine from makers like Bock, Gal Tibor, St. Andrea, Gere Attila, Takler, Sauska, Demeter. For a local favourite liquor, try Unicum (a type of medicinal bitter liquor) or a shot of Palinka (a local grappa, the best sampled was distilled from grape residual from making Tokaj wines) Where to Stay: International chain hotels are in abundance, smaller local hotels are more economical, home stay is generally not recommended as very few people are fluent in English (German is the preferred second language). Visits outside of town: The Eger wine region and Tokaj wine region are a must-go for wine lovers. Other visits: Margret Island, an island on Danube between Buda and Pest offers a nice stroll and with good view of the city. Aquincum, just outside the town centre, has Roman ruins that offer a peek at what Budapest was like before the arrival of the Hungarians.
