Celebrate … Tremains Christmas Lights The Tremains Christmas Lights extravaganza is a firm favourite on the calendars of the Hawke’s Bay community each December. Homes, gardens, shops, and buildings are transformed into Christmas wonderlands, decorated with magical light displays to celebrate the festive season. Buses will not be running this year, there will still be a map for everyone to use. There will be street viewing only. This is important as it keeps our community safe so grab the decorations, turn them on and spread the joy with us.

The maps for self-guided tours will be available inside your local Napier Courier or Hastings Leader on the 1st December. You can also pick up a copy from any Tremains office or they can be downloaded on the Tremains website from Wednesday 1st December. Lights will be running from the 1 – 24 December.

Christmas Tree I t was 1994 when the late Wayne McNeill decided to plant forestry grade pine trees on land he and his wife Jenny owned in Stock Road. Sadly, and not long after, the trees were severely damaged by a massive hail storm. The damage prompted Wayne to sell prunings at the gate. People kept coming back for more and the idea of growing Christmas trees commercially soon became a reality. They named the

business Christmas Tree Corner as the property sits on the corner of Stock and Maraekakaho Roads. When Wayne passed away Jenny decided to keep selling Christmas trees. She and Wayne had three children who are all involved helping out: Jodie, Stacey and Blake and partners also help and even the four grandchildren do their bit by handing out lollipops to the many customers. So it’s very much a family

affair. Both Jen and Blake have jobs, Jen works in a rest home and Blake in a local rural services supplier. They enjoy the physical aspects of the job and meeting up with repeat customers. “Our customers are lovely, they come back every year.” Blake enjoys seeing people his age returning every year with their kids. About five acres are planted in trees over four blocks. Plantings are staggered so that every year there’s a new crop of trees ready. It takes about four years for them to mature.

These small trees will not be on sale for several years yet. The bigger ones are kept for customers wanting extra-large trees.

But you don’t just plant a tree and forget about it for four years. Jen points out that it’s really hard work. They weed and spray and plant about 800 trees at a time. It’s Blake’s job to plant the trees. Then they have to be irrigated, sprayed to control weeds and the grass needs to be mowed. When the trees are about 18 months old Jen starts pruning them, and she does this in January and October. She shapes them nicely like a Christmas tree should look, otherwise if left to their own devices they’d be rather unruly. “People really like then, I feel proud about how it’s all come together.” On opening day there are cars lined up outside on both sides of the road waiting for them to open, Blake says. Buyers can either tag a tree and come back for it closer to Christmas Day or pay cash and take a tree away the same day. There’s plenty of parking and trolleys are available to transport the trees to people’s cars. “It sort of gets you in the spirit. Kids get very excited. I like seeing the joy on people’s faces,” Blake says. The trees will be on sale from Saturday 4 December. Opening hours and further details can be found at Facebook, Christmas Tree Corner.

Sharing Christmas T hey say that busy people always find time to take on other tasks and this is certainly true for Jo Reyngoud. The special education needs coordinator and part-time counsellor spends a good deal of her time throughout the year coordinating the Hastings Christmas Cheer Appeal. Once run by Hastings District Council the appeal is now run under the auspices of the Flaxmere Baptist Church. Hastings District Council is still a major sponsor along with Eastern and Central Community Trust, First Light Community Foundation and Trust House. This will be the 11th year Jo has coordinated the appeal under the Flaxmere Baptist Church banner so she’s got the administration well organised but it’s still a massive job coordinating recipients, food parcels, gifts and volunteers. The strength of the appeal comes down to almost 40 agencies in the Hastings district who, based on set criteria, nominate families to receive gift parcels. There could be any number of reasons people are nominated such as those suffering from a life threatening illness, victims of domestic violence or people living on their own. t the recent Hawke’s Bay Hospitality Awards Havelock North’s Piku Restaurant & Cocktail Bar won the Hawke’s Bay Today People’s Choice Award. We asked owner/operator Ben Harper how he plans to spend Christmas 2021.

Salmon and R ich and buttery, this salmon is a guaranteed winner for the festive and holiday season. A side of salmon will feed a lot of people. It brings colour to the table and is delicious with a simple homemade aioli on the side. Serve with new potatoes rolling in butter and herbs, and a fresh garden salad.

under cold water. Cut into smaller pieces. 2. Place the asparagus, spinach, garlic, lemon, capers, horseradish, oil, dill, salt and pepper into a kitchen processor. Blitz until it sticks and becomes pesto-like. 3. On a lightly floured board, roll the pastry to fit over both sides of the

fish, so you will be able to create a large parcel. Plan how you will wrap it before you start. Spoon the asparagus mixture on to the pastry where the top of the fillet will sit. 4. Place on the fillet, top side down. Fold the pastry over the salmon to enclose. Cut out any excess piece to makes shapes for decoration. Place on an

oven tray lined with a baking paper. Refrigerate until ready to cook. 5. Preheat an oven to 200C. Brush the pastry with egg. Cook the fish for 2025 minutes, until the pastry is puffed and golden. 6. Serve hot with dill aioli and lime wedges.

Raspberry, apple Y

ou can make the pavlova bases ahead of time, just be sure to keep them airtight in tins and to protect them from being damaged. The compote and sauce may also be made a couple of days in advance - making the festive day less stressful for all.

Serves 6-8

7 egg whites 320g caster sugar 2 tbsp cornflour 2 tsp white vinegar 1 tsp vanilla

Raspberry and apple compote

1 Tbsp butter 4 granny smith apples, peeled, cored and sliced 6 whole cloves 1 vanilla bean, seeds scraped out ½ cup sugar 2 tsp lemon zest ¼ cup lemon juice 1 cup fresh raspberries

Butterscotch sauce

25g butter 1 cup brown sugar ½ cup cream ½ cup toasted slivered almonds 300ml cream, lightly whipped Icing sugar to dust Mint leaves to garnish

Method

1. Preheat an oven to 140C. Line two 23cm cake tins with baking paper. 2. Place the egg whites in a large bowl and beat until stiff. Slowly add the sugar 2 tablespoons at a time allowing it to dissolve before adding the next. Add the cornflour, vinegar and vanilla, beating through. Divide the mixture evenly between the two tins. Bake for 1 ½ hours before turning off the oven and allowing the pavlova to cool. Remove and store until ready to build. 3. For the compote, warm the butter in a pot. Add the apples, cloves, vanilla seeds, sugar, lemon zest and juice, bringing slowly to a simmer stirring so it doesn’t stick on the bottom. When the apples are soft remove from the heat and cool completely. Stir through the raspberries. 4. For the butterscotch sauce heat the butter, sugar and cream in a pot bringing to a simmer for 3 minutes. Store in the fridge. 5. When ready to build the pavlova place the base on to your serving platter. Spread with half the cream and a little compote. Top with the second pavlova, the remaining cream, compote and almonds. Dust with icing sugar before serving and dribble over some butterscotch sauce. Serve the remaining sauce in a small jug.

Have a merry, F or many people in developed nations Christmas is a time of excess with far too much food and drink and gifts given that are nice to have but often excessive. Fortunately, this year, more than ever, attention is turning to the harm we are doing to the environment and consciousness is rising about the resources we are misusing. There are plenty of things we can do this Christmas to reduce waste and protect the environment. Why not choose a real Christmas tree and dispose of it thoughtfully (ie recycle), or better still buy a real one in a pot or grow your own. Real trees help to remove carbon from the air while they are growing, and are a 100% biodegradable, renewable resource, unlike their plastic counterparts. For those still wanting an artificial tree buy a good quality tree so that it will last much longer than a cheaper tree. Consider buying LED Christmas lights as they use less power than incandescent bulbs. Trees can also be made out of all sorts of articles found inside and out: make a tree out of driftwood or twigs and decorate it with shells or repurpose scrap wood or use stencils. Decorate a ladder, use a house plant, use removable tape eg masking tape and stick to the wall in a tree shape, cut and shape a cardboard box, paint a tree on wrapping paper. Really there’s no end to the creative ideas you can come up with, especially if you involve the kids. Decorations can be made or bought but preferably make them at home from recycled wood, fabric, glass, pine cones, walnuts, twigs and wool. Is gift wrapping necessary? Get into the habit of saving paper so it can be used again. Or brown paper and

string, old newspaper, a t towel, pillowcase, fabric remnant, paper bag or biodegradable wrapping. When buying gifts try and support local businesses and buy ethical products, such as Trade Aid, if possible. When buying gifts make sure they are designed to last. Hand-made gifts, especially food are always appreciated.

Christmas cards are declining in popularity as email becomes easier but for those who still enjoy sending and receiving cards why not re-purpose old cards or make your own? Source your food locally and don’t over buy. Vegetable scraps (not meat) should be composted whenever possible.

“It’s not Christmas

O

riginally back in the 60s Bill Downey, 80, planned to take up carpentry until he discovered that butchers were paid twice as much. It was a wise decision that has seen Hawke’s Bay benefit from his knowledge and experience for 55 years. Downey’s Butchery in McGrath Street, Napier is a local icon and one of the few remaining traditional butcher shops in Hawke’s Bay. To this day Downey’s is known for its personal, over the counter service and they only sell 100% New Zealand pork, beef and lamb. It was Ted Downey, Bills father, along with Bill, who established the butchery on the same site in 1965. Bill and his

wife Paula bought out his father’s share in 1970. Rob Downey took over as owner operator in 2005, although Bill can still be found helping in the business from time to time. Christmas is always the best time of the year with people looking forward to catching up with friends and family and enjoying the break, Bill says. “Back then we gave out calendars and pens at Christmas time.” At Christmas they sold a lot of hams and mutton hams. Mutton hams are still in big demand at Christmas. “The mutton hams were big, and the bigger and fatter the better,” Bill says. Rob adds that they’re nice to have cold with pickle. Fresh turkeys were, and are still are very popular at Christmas. But you can’t beat the popularity of ham which has stood the test of time. “To be honest it’s not Christmas unless you have a ham,” Bill says. “Hams are the biggest seller and it takes on another flavour when glazed. At Christmas time we also sell a lot of boned and rolled pork, legs of lamb, rib eyes and eye fillet steak. Sausages are always popular, especially during the holiday period,” Rob says.

Bill started his career, aged 15, at Thompsons Butchery in Heretaunga Street West, Hastings, opposite Roach’s Department Store. Bill “took off overseas” and worked for Telfer’s- a big pie maker and processed meat products in Fulham, London. The company was awarded a Royal Warrant in 1955 for supplying cooked meat products to Buckingham Palace, Bill says. and Easter. In 1965 sides of hogget were £2 and mutton was £1 19s and 6d. They were very popular and people used to queue up at the door for them. Bill paid £60 for a 400kg dressed ox to sell. Sausages were 1 shilling a pound.

A good day’s turnover was £60. Bill and Paula bought a farm in Swamp Road in 1975 to fatten cattle and sheep to sell in the shop. Also popular back in the 60s and 70s was a hand of pickled pork (hock and brisket). Customers still occasionally ask for it. “When I started there were no barbeques. We used to roll up ribs of beef for prime rib roast and briskets were rolled for corned beef,” bill says. Nowadays ribs are used for rib eye steak and beef and short ribs are used for slow cooking BBQs.

“Most people will cook rib eyes and eye fillets on the BBQ but it’s customer demand that largely dictates what we sell. Our sausages are all fresh and made with natural casings and we make our own hamburger patties,” Rob says. Rob started “messing around” in the shop when he was three and started working for his father in 1990. He did head off to Christchurch and London for four years and retuned home with plenty of skills and knowledge of English style cuts such as crown lamb roasts and contre-filet. His brother Brendan also worked in the shop when he was

younger but he took up a career in horticulture. It’s still very much a family business with wife Lucy, and their children May and Fraser working in the shop. “We have been lucky to have skilled butchers that have made working in the shop a lot of fun. We appreciate all our customers support over the years,” Rob says. Downey’s Butchery is busier than ever which they attribute to personal service, knowing their customers by name and also knowing their likes and dislikes when it comes to meat. Downey’s is part of the local community but their customers extend far and wide.

ego, invented in 1932, has topped the Christmas gift popularity charts for decades and this year it looks as if the trend will continue. Although fashions appear to change over the years in reality there’s a core range of gifts that never seem to lose their popularity. Cuddly toys, vehicles to play with, vehicles to ride and dolls are always popular. Lego products have expended tremendously and along with Duplo, offer a fantastic range of not only building blocks but pirate ships, city ocean exploration craft, Minions, Star War themes and monster trucks to name but a few. Barbie dolls debuted in 1959 and are just as popular as ever. They were the first doll to have adult, rather than baby features. There are plenty of Barbie branded products such as playsets, campervans and vehicles, career dolls, singing dolls and even Ken, Barbie’s boyfriend still appears in various guises. The dolls have varying skin tones, eye colours, body types and fashions and are designed to reflect the world kids see today. Cuddly toys including teddies are still popular. The brands may change but essentially they’re fluffy, cute toys. Plush animals, especially dogs,

birds and unicorns are trending and amongst the most popular are TY Beanie products, Peppa Pig and Pillow Pets. Toy cars and trucks never lose their appeal and Hot Wheels are consistently popular, along with Tonka toysespecially garbage and dump trucks and loaders. Board games still sell well and there’s a newer version of New Zealand Monopoly called Here and Now for the family to share. There are several Harry Potter board games such as the Magical Beasts, and Trivial Pursuit plus a large range of other products including playing cards. Needless to say there are Harry Potter Lego products too! Kids like to pretend to be grown up and there are plenty of junior tool sets, chainsaws, kitchen sink set ups, tea sets, leaf blowers, and vacuum cleaners to play with. The joy of receiving a bicycle, trike or scooter is hard to be beat and they are perhaps some of the most eagerly anticipated gifts that last a long time. Things to fidget with (cubes, balls, spinners etc) are well liked by kids and slime and Play-Doh never lose their attraction. Water pistols are eternally popular with kids (but possibly not adults) and bunches of balloons that are filled with water are always messy and fun.

em Ormond of Maison de Cuisine shares some of her culinary secrets that would make excellent treats for the family at Christmas or equally home-made gifts with a difference. They are easy to make and recipients will be touched that you have out so much thought into a gift. All that’s required to finish is simple gift wrapping and a hand-made label. 1 size 7 egg 2 tbsp golden syrup 1 cup flour ½ tsp baking powder 1 tbsp ground ginger ½ tsp ground cinnamon ¼ tsp ground mixed spice Pinch salt ½ tsp baking soda ¼ cup room temp milk

To assemble:

Ginger Kisses with mascarpone and raspberry jam Makes 12 kisses

Ingredients 75g soft butter ½ cup packed brown sugar

Mix baking soda and milk together in a small bowl and when dissolved add to the batter mixture and leave for 10 mins .This process makes the dome shape when cooked. Put the mixture into a piping bag with a wide nozzle and pipe large walnut sized kisses. Space well apart as they will spread. Bake approx. 9 mins until lightly golden and risen. Rotate trays halfway through cooking. Leave to cook slightly and then transfer to a cooling rack.

To assemble: whisk the mascarpone, vanilla and cream together until just thick. Don’t over whisk or it will split. Pipe the cream around the edges of kisses and put a small teaspoon of jam in the middle, sandwich together and then dust with icing sugar.

200g mascarpone ¾ cup cream ½ tsp vanilla extract Raspberry jam

Macadamia Brittle

Method

1 ½ cups caster sugar ½ cup water 2/3 cup liquid glucose 2 ½ cups macadamia nuts 1 tbsp butter 1 tsp baking soda ½ tsp vanilla essence

Place baking paper on 2 baking trays. Preheat oven to 160 degrees fan bake. Beat butter and sugar until pale and fluffy. Beat in the egg and then the golden syrup, sift dry ingredients and gently mix through.

Ingredients

Method Line a lipped baking tray measuring 30cm x 25cm with baking paper. Put the water, sugar and glucose into a heavy based saucepan over a low heat. Lightly stir with a wooden spoon until the sugar has dissolved. Don’t over stir as this will cause the mixture to crystallise. Bring to the boil and cook without stirring until the mixture reaches 128 degrees on a candy thermometer - about 5-8 minutes. Add the nuts and give one quick stir to combine with the syrup. After that only stir occasionally to ensure that the nuts don’t catch and burn. Cook until the brittle reaches 154 degrees on your thermometer. Quickly stir in the butter, vanilla and baking soda. You need to work rapidly at this point. Remove from the heat and pour the mixture onto the tray spreading as thinly as possible with the back of a spatula or metal spoon. Cool completely before breaking the brittle into shards. Store in an airtight container for up to two weeks.

Christmas T he big winner of the Hawke’s Bay Hospitality Awards in early October was Central Fire Station Bistro which won three categories: outstanding restaurant and ambience and design, as well as the supreme establishment of the year. We asked Sam Clark, owner and head Chef and his wife and business partner Florencia (Flor) Menehem and family plan to spend this Christmas.

What do you normally do on Christmas Day and who with?

Hamilton for Christmas lunch with my mum and sister on Christmas Day.

We usually do a sort of two day celebration - Flor is from Argentina and usually celebrations there are on Christmas Eve. We have two sons, a 6 year old and a very new baby. Flors’ brother lives in Napier with family so we’ll have dinner with them Christmas Eve. Then we’ll probably drive north to

Will this year be any different due to Covid? I guess we’re waiting on whether travel restrictions will be lifted to the Waikato, if not I think we will stay home and maybe hit the beach at Waipatiki.

What do you enjoy most about Christmas? Having kids now I just kinda want to be with them and see their enjoyment of it. Otherwise just some time off and hitting the beach!

Would you like to comment on your success at the awards? It was a great feeling, being recognized by the industry is very satisfying. We opened in 2019 and trading through the last two years hasn’t been easy, but we have a great team and as a group we have been incredibly committed.

Do you have any special family traditions? Not really, my mum usually bakes a Christmas cake for me as a present, which I try and hide from my family and eat over the next few weeks.

Do you take a break at Christmas? How long? Yes, this year we’ve committed to closing the restaurant for almost two weeks. Seems like a strange decision however my feeling is it’s better for team morale and staff retention to close and Sam Clark and Flor Menehem will be spending Christmas with their son take a break like every other Lachlan and a brand new baby. industry.

Favourite Christmas song, carol, movie? Nah, I am really not a person that enjoys the commercial side of Christmas. I might enjoy hearing the Pogues Fairy Tale of New York a couple of times but that’s it.

Favourite Christmas food? This year my oldest son Lachlan has requested prawns on the BBQ, which he has never had before, so I guess I will be making that, or maybe a crayfish from our friends at Tora Collective. Otherwise Christmas fruit cake and pavlova are my favs.

Favourite Christmas Cocktail? Is that a thing? I like rum or tequila based cocktails in summer, Julian and Scarlett who run our front of house team at the restaurant are always creating super seasonal delicious drinks so I will probably ask for a recipe from them.

Favourite meal? Anything cooked on the charcoal bbq, especially beef short ribs or whole chickens.

Will you be cooking on Christmas day and or creating some festive meals? For sure I will be cooking on Christmas day, when you’re a chef your family just defer to you, especially for big occasions, in saying that it is really nice eating other people’s cooking!

Anything else you’d like to mention about Christmas in Hawke’s Bay? How good is the weather here?

Salads with Melon, prosciutto and mozzarella salad

Chargrilled peaches with green beans and almonds

Serves six to eight people Fresh and prepared straight on to the serving platter, this melon ball and prosciutto salad is the perfect accompaniment to any festive meal. You could serve as a refreshing starter or with barbecued grilled meat.

1 Mozzarella ball, torn 1 cup Mint, and basil leaves, shredded 1 squeeze Fresh lime juice, to serve

Serves 6 This gorgeous salad is perfect to use some of the best Hawke’s Bay ingredients this Christmas.

Ingredients ½ Honeydew melon ½ Rock melon 8 slices Prosciutto, halved

Using a melon baller, scoop from the insides of the melons, or cut into evensized pieces. Place the melon balls, prosciutto, mozzarella, herbs on a platter and squeeze with lime.

1/4 cup (55g) caster sugar 100ml apple cider vinegar 1/4 teaspoon coriander seeds, toasted, lightly crushed 1 star anise Pinch of chilli flakes 4 peaches, cut into wedges 2 tablespoons extra virgin olive oil, plus extra to brush 500g green beans, trimmed 1 red onion, halved, thinly sliced 1/4 cup (35g) slivered almonds, toasted

Method 1. To make the pickling mixture, combine the sugar, vinegar, coriander, star anise and chilli in a saucepan over low heat, stirring until the sugar

Virgin Banana Pina Colada

• 2 very ripe bananas • 1 cup diced fresh pineapple, plus 4 wedges for garnish • 1 cup pineapple juice • 1/2 cup lite coconut milk • 3 cups ice cubes Puree bananas, diced pineapple, pineapple juice, coconut milk and ice in a blender. Divide among 4 glasses. Garnish with pineapple wedges.

Mock Champagne

• 2 litres of apple soda/juice • 2 litres of ginger ale • Optional grenadine syrup Pour apple soda/juice and ginger ale into a punch bowl. Add enough grenadine to make a light pink colour. Serve with ice cubes in each glass.

Hawke’s Bay Fizz

• A handful of strawberries, hulled and halved • 1 kiwi fruit, peeled and chopped • 2 pineapple rings, chopped • Sparkling apple juice • Tropical fruit juice • Soda water Fill 8 glasses with a mixture made up of strawberries, kiwi fruit and pineapple rings. Fill the glasses with equal amounts of chilled sparkling apple juice, chilled tropical fruit juice and chilled soda water. Serve immediately.

Minty Iced Green Tea

• 1/2 cup fresh mint leaves • 3 green tea bags • 2 tablespoons honey • 4 cups boiling water • 4 stalks lemongrass, for garnish Combine mint leaves, tea bags, honey and boiling water. Let steep for 5 minutes then remove tea bags. Refrigerate until chilled. Divide among 4 large ice-filled glasses. Garnish with a stalk of lemongrass.
