Felons has been created by bartenders to satisfy our customers desire for a bright, fresh and citrussy gin that works in all occasions. As the gin market has exploded we have been constantly gaining insight and feedback from guests in our venues. We heard our customers, we shared their confusion and frustrations with endless exotic garnishes and cryptic recipes and we listened to their pleas for a ‘really good G&T that’s citrusy’. With this information we set about creating dierent recipes and conducting consumer and bartender tastings and think tanks. Each time tweaking and improving our recipe until we eventually hit something that satisfied the masses. All our gin is produced in small batches on our custom built 100 litre still in St Andrews. Much like the old illicit distilleries of Fife, our still room inconspicuously situated at the back of the restaurant Rogue.

This trio of botanicals makes the basis of the majority of gins you will find in bars and shops around the word. We take great care in sourcing the best quality botanicals we can from all corners of the globe.

Juniper Fresh, woody and sweet pine aromatics. All the berries that go into Felons Gin are sourced from Tuscany, regarded as the best around.

Coriander Seed Our coriander is sourced from Romania which provides a bright citrus quality to the gin.

Angelica Root Enhances the pine and spice aromas coming from the juniper, as well as acting as a ‘fixative’ binding with the more volatile compounds and preventing them dissipating during distillation.

Felons was designed to be a bright, fresh and citrussy gin, and we have managed to achieve this without using citrus peels (other than bitter orange). Utilising the following botanicals has allowed to incorporate the big hitting citrus aromas while maintaining a high level of consistency that can be dicult to achieve using fresh lemon peels.

Angelica Seeds These bring a fresh pepper, subtle floral and fresh citrusy note to the mix. Lemon Verbena Lemon verbena is a perennial shrub which is native to Chile but is now found growing throughout Southern Europe. When distilled the bright lemon aromas burst over along with a soft herbal note too. Bitter Orange Peel We source the peel from Seville and it provides a dry, orangey citrus note with a hint of and the bitterness brings balance to the liquid as well as adding depth of flavour.

AROMATICS


Tom Collins Mix 50ml Felons, 25ml Lemon & 15ml Gomme in a hiball. Fill glass with ice and stir before topping with soda water and garnishing with lemon.

G&T A healthy measure of Felons gin poured over ice in a hiball, topped with your choice of premium tonic and garnished with a couple of lemon wheels.

French 75 35ml Felons Gin, 15ml Lemon juice, 10ml Gomme. Shaken and double strained into a chilled champagne ute, topped with champagne and garnished with a lemon zest.

SERVES


We chose to accent our gin with soft and subtle floral aromatics that help to enhance the bright fresh flavour of the liquid. These bring added complexity as well as lifting the overall aromas.

Cubeb Berries Native to Indonesia cubeb berries are an ideal partner to juniper as their unique combination of intense lavender-like floral aroma combined with a cracked pepper taste allow them to pair so well with it and other core gin botanicals.

Orris Root Sweet floral aroma often likened to parma violets. As well as bringing the flora aroma, much like angelica root, orris is said to act as an enhancer and fixative for the other botanicals used in the gin.

Pendennis 40ml Felons, 15ml Apricot liqueur, 5ml gomme, 20 lime, 1 dash of peychaud bitter. Shake & double strain into a chilled martini glass.

Rogue Cooler 35ml Felons, 15ml Amaro Montenegro, stirred over ice in a hiball and topped with bitter lemon. Garnished with a sprig of lemon

Arsenic & Lace 40ml Felons Gin, 10ml Violette, 10ml Star Anise syrup, 20ml Lemon. Shake all ingredients and double strain into a chilled coupette glass, garnish with a star anise.

SERVES


Felons has a full and rich mouth feel along with a silky smooth texture which we achieved through incorporating the following botanicals and through our distillation methods. Felons is distilled in our custom built 100 liter copper still. We take our time during the distillation process which allows us to maximise the copper contact which helps contribute to the smooth finish of the gin.

Sweet Almond Almonds provide a sweet marzipan nutty flavour with some subtle floral notes coming through too. The primary reason we included this our gin is due to the silky texture in adds to the liquid.

Liquorice Root Liquorice root has a vastly complex palate of aromas and flavours and brings a wealth of subtle nuances to gin. It also has the powerful capacity to change the texture and mouthfeel of a gin, bringing oily viscous qualities.

Distillery & Experiences All our production takes place in the glass fronted still room in the back of our restaurant Rogue in the heart of St Andrews. Rogue is a restaurant that focuses on the best quality seasonal Scottish produces specializing in fresh seafood and aged meat. We offer gin experiences and tours of the still room on a daily basis where our knowledgeable staff or distiller will take you through everything involved in producing Felons.
