ith the COVID-19 pandemic throwing the world in disarray, countries are having trouble containing it. Many are taking massive losses both for their economy and people; all trying their best to minimize the spread and damage of COVID-19. In spite of the chaos, Bahrain has been on top of other countries in managing this pandemic. Recently, Bahrain has the highest recovery rate in the Middle East. Earlier this month, the World Health Organization has commended the country on the initiatives it has taken in facing the virus. Here is a rundown of notable actions done for the country‌
Bahrain International Airport Testing and Quarantine Tents Following the worldwide caution for COVID-19, a National Taskforce for COVID-19 built testing and quarantine tents at the Bahrain International Airport. Increased security and screening was implemented for travelers visiting or returning from countries with high infection rates. Shortly after, procedures for quarantine, isolation, and recovery were introduced.

Hotline and Ministry of Health Guidelines A nationwide hotline for (444) was introduced for answering inquiries and giving instructions concerning COVID-19. The Ministry of Health also announced precautionary measures to be followed by the public. These measures include avoidance of social gatherings, temporary closure of certain businesses, and more. All food and beverage outlets were restricted to take-away and deliveries only. The MoH is limiting social interaction to reduce the spread of the virus. Mass Testing Mass testing was conducted on populated parts of Bahrain to track the virus’ spread. Random individuals were taken for quick tests on mobile screening units. The field visits are across the Kingdom, including in Manama Bab Al-Bahrain area, Durrat Al Bahrain and areas alongside the Budaiya highway.

Feature WHO and world leaders have insisted on the importance of mass testing in battling the deadly virus. Bahrain has clearly taken this advice and is handling the pandemic well. BeAware app and Bracelet To further track the spread of the virus, the Information and eGovernment Authority of Bahrain launched BeAware. It is an app that every resident can use to check if they have been in places that a COVID-19 positive person went, and thus know if they are likely to have caught it. The app also shows the current cases and other info about COVID-19. The iGA has recently released a bracelet for the app. This is to be used by people in self-isolation orders while awaiting results for their COVID-19 tests. Free Treatment for Everyone The Ministry of Health provides comprehensive care and treatment to all active coronavirus cases, free of charge, for both citizens and residents. This includes testing and quarantine services.

Hotels for Hope Some of Bahrain’s hotels have joined the fight against the coronavirus.
E
arlier this year, guests at Bahrain’s hotels enjoyed onsite amenities for business and leisure. For the past few months, however, some hotels have been transformed into medical facilities to treat patients who have been infected by the coronavirus.
Just recently, the National Health Regulatory Authority (NHRA) announced that while the free Ministry of Health treatment and quarantine centres will remain open, options have also been extended to asymptomatic patients and those in quarantine who wish to receive care in a private hospital setting. Few hospital-hotel combinations have been granted licenses in this regard.

Which hotels have taken part in this? The Middle East Hospital will provide private medical services for active cases of COVID-19 who are asymptomatic, at the Park Regis hotel in Juffair; increasing the island’s treatment capacity by 172 beds. Meanwhile, individuals arriving from COVID-19 affected countries, or those who have interacted with active cases, and wish to be quarantined in a private facility will be able to do so at the Novotel Hotel, Muharraq, where they will be monitored by a specialised medical team from the Bahrain Specialist Hospital. This has increased the quarantine capacity by 160 beds.

This will add another 260 beds to the quarantine capacity. We spoke to the teams at Middle East Hospital and Park Regis Hotel who have
received 6 COVID-19 patients, of which 3 are currently in treatment at the hotel*. How does this work, what is the process to check in? Active cases of COVID-19 who are asymptomatic and wish to be admitted should call 444. That is the direct Ministry of Health line, and once the ministry does the necessary checks, they will be transported to Park Regis. From there, we take over. What facilities are available to someone who isolates in Park Regis? All three meals – breakfast, lunch and dinner are provided. A dedicated doctor and nurse will attend to each patient and 24-hour nursing stations have been set up on every floor. Can anyone avail this treatment facility? Anyone who approaches us through the ministry can avail treatment and our facilities at a set rate. What are the rates? A Single Deluxe room for one day is priced at BD 100. This is inclusive of food and medical treatment while a Single Suite room for one day is priced at BD 150. This is inclusive of food and medical treatment. What is the sanitation process maintained at PR? All Ministry of Health protocols are being followed including regular sanitation of the premises, all counters and elevators are being wiped down and disinfected. Employees are required to sanitize before

patients are single-use items. We will throw these after use. How will medical services be provided? The specialized medical team from Middle East Hospital is staying at Park Regis Hotel to provide treatment on-call. Patients are observed at regular intervals and all the equipment is available on-site. The inclusion of private hospitals in the coronavirus care space is an interesting development. Similar developments have also been seen in other regions like Dubai, Jordan and Abu Dhabi. and after each guest interaction. he coronavirus pandemic has brought a drastic change to the automotive industry. Car dealers around the world contend with a near collapse in sales and months of uncertainty. COVID-19 and social distancing cut deeply into traditional face-to-face transactions. Nevertheless, health guidelines and measures brought by the virus have sparked dealers to find ways to do business remotely while protecting employees and customers.

With the traditional way now completely upended, a new world of car sales is taking shape. Bahrain’s dealers are stepping up by implementing high standards of safety to ensure a seamless service even during this time.
Some Dealers Ahead of Others Euro Motors (EM), Bahrain ‘s official importer of BMW Group vehicles, has reopened all facilities and are currently applying the highest level of hygiene measures following the guidance received from government authorities. EM carries out a full sanitation of their whole facility on a weekly basis, which includes the disinfection of the service centre, new showroom and spare parts and used cars showroom. The dealer has also implemented a range of unique services to fully support each customer in these uncertain times. Clients can now request to test drive BMW or MINI vehicle, either at the showroom or at home.

Each vehicle can be delivered to the client’s desired location at the timing of their choice, restricting as much physical contact as possible. To offer potential car buyers and existing customers greater convenience and safety, EM has also launched an Online Payment System on www.bmw-bahrain.com/en/index.html. Clients now have the option to purchase a new vehicle or required services in the comfort of their own home.

The new strategies not only lessen the time exposed to sales pressure but also boosts social distancing. While many of the changes in the car dealership industry were brought on by the pandemic, they are changes that were long overdue – some most likely to become the ‘new normal’. n

Deemed as essential businesses, grocery stores and supermarkets are among the outlets that have been allowed to operate to serve the residents’ basic needs amid uncertain times. These stores manage to run because of workers who do not stay at home despite the hardships and risks of the deadly virus. The last few weeks have demonstrated that Bahrain’s grocery workers are on the front lines of the pandemic and play a critical role not just in the country’s economy but also in

Like health care workers and first responders, grocery store employees are “essential workers” on the front line of this battle. This means that workers need increased protection and flexibility in order to keep the grocery stores open and safe for everyone. Lulu Hypermarket said that attention to hygiene in all aspects was paramount. In compliance with the Ministry of Health’s guidelines for retails and supermarkets, important proactive actions have been implemented across all LuLu Bahrain outlets. Adding to this, high standards as well as exhaustive and thorough precautionary measures are continuously being implemented in all of their branches. This includes giving away free face masks and gloves, temperature checks, disinfection chambers and outlet sanitation. The periodic disinfection of staff accommodations is also being executed. n

What should I cook? Beef & Broccoli
DIRECTIONS
The next time you're craving takeout, make this homemade beef and broccoli instead.
1. In a medium bowl, whisk 1/3 cup soy sauce, lime juice, 1 tablespoon brown sugar, and 1 tablespoon cornstarch until combined. Add steak, season with salt and pepper, and toss until steak is coated. Marinate 20 minutes. 2. In a large skillet over medium-high heat, heat oil. Add steak in a single layer, working in batches if needed, and cook until seared, about 2 minutes per side. Remove steak and set aside. 3. Stir in garlic and cook until fragrant, about 1 minute. Stir in remaining 1 tablespoon cornstarch until garlic is coated, then stir in broth, remaining 2 tablespoons brown sugar, remaining 1/3 cup soy sauce, and Sriracha. Bring mixture to a simmer. Add broccoli and simmer until tender, about 5 minutes. Season sauce with salt and pepper (if necessary), then return steak to skillet. 4. Garnish with sesame seeds and green onions before serving.

c. low-sodium soy sauce, divided of 1/2 lime l 3 tbsp. packed brown sugar, divided l 2 tbsp. cornstarch, divided l Kosher salt l Freshly ground black pepper l 1 lb. sirloin steak, sliced thinly against grain l 2 tbsp. vegetable oil l 3 cloves garlic, minced l 1/3 c. low-sodium beef (or chicken) broth l 2 tsp. Sriracha (optional) l 1 head broccoli, cut into florets l Juice

Creamy Lemon Parmesan Chicken
DIRECTIONS
It's simple, creamy, and so satisfying.
1. On a large plate, combine flour with 1/4 cup Parmesan, garlic powder, and lemon zest. Season generously with salt and pepper and mix thoroughly with a fork. Dredge each chicken breast on all sides with flour mixture. Set aside. 2. In a large skillet over medium-high heat, heat oil until shimmering but not smoking. Add chicken and sear until golden, 6 minutes. Flip and cook until opposite side is golden, around 6 minutes more. Remove from pan and set aside. 3. Turn heat down to medium and add butter to pan. When butter is melted add garlic and cook until fragrant, about 1 minute. Add spinach and cook until wilted, 1 to 2 minutes. Add chicken broth, cream, and remaining 1/2 cup Parmesan and season with more salt and pepper. Stir to combine. Add lemon slices and bring to a simmer and cook until thickened slightly, 3 to 4 minutes. Return chicken to skillet and simmer until chicken is cooked through, 5 to 6 minutes more. 4. When chicken is cooked, remove skillet from heat and garnish with basil before serving.

How HIIT can help you
There are many reasons you may want to change the way you workout.
M
any people are still concerned with recent affairs, yet want to maintain an exercise regime during this time.
What's difficult is figuring out what to do. How do you set up an effective workout? What do you do if you don't have much equipment or space? And staying motivated. This is where high-intensity interval training (HIIT) could help you get fit, boost your health in a matter of minutes and it doesn’t take up space. You typically perform these exercises at 80 to 95 per cent of your maximum heart rate, for anywhere from five seconds to eight minutes. Generally, the shorter the interval, the higher the intensity and vice versa. The work intervals are alternated with periods of complete rest or active recovery lasting for the same duration, this can differ depending on your fitness levels. HIIT is highly adaptable for varying fitness levels and goals, which partially explains its popularity. HIIT has been shown to improve fitness, cardiovascular health, cholesterol profiles and insulin sensitivity, which helps stabilise blood glucose or sugar levels. HIIT also reduces fat, both abdominal and the deep visceral fat that surrounds your inner organs. Studies state HIIT can also effectively delay ageing

at the cellular level, by increasing the production of protein cells for the mitochondria, your cells’ energyreleasing powerhouse, which otherwise deteriorates over the years. Studies have also shown that muscle cells in the brain and heart, wear out and aren’t easily replaced, so if exercise prevents deterioration of mitochondria in muscle cells, or even restores them, then it likely does so in other tissues too. Similarly, HIIT beats continuous moderate-intensity exercise when it comes to releasing brain-derived neurotrophic factor (BDNF), a protein that protects nerve cells. This promotes plasticity (the forming of new connections, which aids learning and memory) and may even help regulate eating, drinking and body weight. Perhaps HIIT’s biggest selling point is its efficiency: a workout can last up to an hour or, be completed in 20 minutes. Tabata, one of the most well-known HIIT protocols, consists of 20 seconds of work followed by 10 seconds of rest, repeated eight times for a total of just four minutes, not counting the warm-up and cool-down. However, if that feeling lingers long enough, it creates doubts in your mind about said decision, the timing of the whole thing, its consequences, your capabilities, the what-if’s, the howcan’s etc. This creates hesitation, making one unsure of opportunities and experiences, and in the long term, stunts personal growth.
From hustling to stillness. A standstill. The effects of Covid-19 have made a permanent impact. Human patterns of spending and consumption have changed drastically. From a time where every luxury was a need, we are now forced to stick to our needs. No amount of luxury gave any advantage to anyone. It is a perfect time to let go off all redundant things. I personally enjoyed that people were learning new skills and reliving their hobbies. It also gave us time to connect with our loved ones, making us adapt to the new normal. I took it as a perfect time to dwell into the past, to pause and to reflect. As a life coach, I did this process of reflection by answering simple questions.…Very useful… Try it out! • What new activities or old hobbies did you enjoy doing? • What’s one thing you would change about your lifestyle permanently? • What’s the one redundant activity you were forced to let go of that was previously impossible? • Identify your closest people. How can you manage to keep in touch on a regular basis? • What’s the one life lesson you remember moving ahead? This made me aware of the basics. I felt more centered prioritizing what mattered and will keep these lessons in mind moving ahead n

Instead of striving for perfection, we should just jump and learn to fly on the way down. It could be something as simple as learning to cook or as complex as moving across continents. If it drives you, excites you, or moves you, don’t wait to be ready. Take that risk, bake that cake, run that marathon, backpack around the world. Basically, just shoot your shot. What’s the worst that could happen? Failure? One of my favourite stories is of Thomas Edison’s reply to a journalist who asked him if he felt like a failure since he had tried so many times and failed to make a light bulb. He said “Why would I feel like a failure? I now know definitely over 9000 ways an electric bulb will not work. Success is almost in my grasp.” That kind of positive mindset only comes when you’ve undergone failure enough times to make it your friend and use it for your own good. hat time should you workout? Pick a time when you are fueled but still have an opportunity to fit in a post-workout meal. For early birds, the best time to work out may be just before your morning suhoor. This way, you will have energy from the previous night’s meal, yet still have an empty stomach. You can hydrate while you exercise and once you are done you can eat again to refuel. This method will also get you get energised for the day ahead.

flexibility. High intensity exercises that throw the heart rate to above 150 per minute should be avoided, especially if you have yet to break the fast. You can try doing slow or moderate exercises. Strength Training Strength training helps to preserve muscle mass, so opt for bodyweight exercises such as squats, lunges and push-ups or add in weights for deadlifts, shoulder press, chest press and rows. Cardio Training If you want to do some cardio during the day, a walk just before iftar is a good option to safely burn some calories. Always remember to engage in low intensity training during fasting as high intensity will use up your glycogen stores and force the body to use protein for energy. Flexibility Flexibility training can improve mood by releasing muscle tension and facilitate relaxation. Every workout regime needs rest built into it so engaging in some flexibility exercises can be beneficial. What to eat? Eating a balanced diet and taking adequate amount of liquids are necessary to help maintain a healthy exercise routine during the month. Before and after training you want to top up your depleted energy (glycogen) stores by taking in some carbohydrates. Choose healthy options such as vegetables and wholegrain alternatives to pasta and rice, also add in protein (for muscle repair) through lean meats, beans, lentils or protein shakes. And don’t forget to hydrate before, during and after training. n

In this feature, we speak to Nada Alawi, co-founder of Annada, who is trying to raise awareness and spread positivity through face masks. How has the current coronavirus pandemic affected the fashion industry in your opinion? I think that the coronavirus pandemic has reduced the demand for fast fashion items, with consumers shifting more towards things that are sustainable, and of higher quality. While people are still shopping - especially online - I believe they are more mindful of their purchases.

Tell us more about the masks, where did you draw the inspiration for this? We saw that there was an urgent need for masks in the community, and in the world during this time. We wanted to contribute in our own way –so we repurposed our cotton scarves, by cutting them and transforming them into masks that are sustainable. We went with a very simple design. It was very important to us to keep the mask entirely made of natural fibres. We wanted them to be durable, comfortable for the wearer, washable and also reusable. We hope that the artwork on the face of the masks also spark joy for the wearer, as this is an intrinsic part of our DNA as a brand. Where will the proceeds from the mask go? We have pledged 25% of all the proceeds to go to a local charity in the Kingdom of Bahrain; The International Ladies Association, who support more than 600 families in the Kingdom.

ell us a bit about yourself. What is your background?
I grew up in Texas, but have lived most of my adult life near Washington, DC which is where I consider "home" now. I moved to Bahrain in 2016 with my husband and two beautiful daughters who are now 5 years and 3 years. It is always funny to describe my professional background because none of my education or work experience before this had anything to do with photography. My university degree is in Music Education. Though right after college, I taught math and science for a few years, and then ended up working for a publisher of textbooks for almost ten years. When my oldest daughter was born, I quit full time work and that is when I got involved in photography.
You have traveled a lot of places and took many photographs during your course of work. Which photograph do you most identify yourself with? My absolute favorite photo I have taken while traveling is one of

my oldest daughter in Sri Lanka. We were exploring one evening at sunset and she spotted a treehouse, which she had never seen before. She ran over and started climbing, so excited, and I was able to quickly get my camera ready, back up a little, and capture it all. The light in that photo is gorgeous, but more than that everything about it embodies what I love about photography. I was able to freeze that moment in time and looking at the photo takes me right back to that garden in Sri Lanka and the wonder she had climbing those stairs to the top of the tree. This is my favorite kind of photography, documenting everyday moments as they happen, and making those ordinary moments look magical.
What does photography mean to you? What first drew you to take photos? When my oldest daughter was born a little over five years ago, I bought my first DSLR camera because I didn't want to miss a second of her growing and thought it would be fun to capture all those little moments myself. I have to admit - looking back now

- I was terrible those first couple of years! However, my desire to have beautiful photos of life with my girls motivated me to learn more about my camera settings and about things like light and composition. Slowly over time I improved and then very organically my hobby turned into a business when I started taking on clients in late 2016. The reason I loved photography from the beginning hasn't changed: it is just as fulfilling to document these moments for clients now as it has been for my own family over the years.
How important is it for photographers/artists to “connect� with their subjects? Connection is what transforms an image from just an ordinary snapshot into art. This is particularly important in family photography, I find. I want clients to feel connected to me and comfortable during our photo shoot. Me getting to know them and what makes their family unique helps me make each photo shoot special. Particularly with children, if they feel like they need to perform or be perfect, it doesn't work out very well. However, if they feel connected to me, it is a lot smoother for everyone and their personalities shine. One of the best compliments I ever got from a client is that it didn't feel like they were at a photo shoot, but just hanging out with a friend who happened to have a camera. That
is the kind of connection I hope to have with all my subjects.

Which part of Bahrain is your favourite and why? It is impossible to choose one part! I work with clients a lot at Bahrain Fort, it is a favorite for family photos. So I feel a special connection to that place because I am there so often and have gotten to know it so well. The Camel Farm is a close second. I also love Adliya: the art, the quirkiness, all the yummy food. Wandering around Muharraq is a photographer's dream with the mix of interesting history and the modern murals. I am a water girl at heart though, so I love to be anywhere in Bahrain that is near the water which is easy to do on an island. n

as it happened to you that you were onto something, and somewhere somehow it reminded you of someone and a thought crossed your mind that you want to call that someone up? The mere thought of doing so makes you smile, you subconsciously even start framing the sentences that you will be saying to them over the call, with the exact words and with the exact expressions spreading across your face as you imagine what their reaction to your conversation would be (given that you know their every reaction by now; even them frowning upon their Starbucks double-shot espresso, which didn’t turn out as strong as they had asked for it to be).

Feature Oddly so, we live the thought, we relish the moment, we even begin scrambling on our couch, looking for our not-so-lawfully wedded companionour mobile, even go looking into contacts to dial and then somehow, drop the idea and keep the phone aside, thinking, “nah, I’ll do it later!”. What is this “later”? It could be tonight, tomorrow, day after or never. And what is the backstory to the “let’s drop the idea”? Perhaps another episode of Money Heist on Netflix that keeps you totally engrossed; so good you can’t hit pause even if your mum screams “Take a look, I think it’s begun snowing in Bahrain!”. You know when you type tiktok on your phones and you see it get auto-underlined as a spelling error, so you hit backspace to get it autocorrected? Even the smartest gadget of this world, an iPhone, will give up on us and our mindless non-productivity, and say “No Replacements Found”. I’ll bet you my private jet (because I don’t have one), that most of you would agree, we surely have lesser things to do in these times, but we surely have way nicer things to do too! Very recently, Kylie Jenner tweeted that Snapchat does her no good, costing the company 1.3 Billion USD in a day. Will it always take an influencer to see the obvious- that we can befriend apps, but we could as well spend time doing normal human things, such as bonding over wine and cheese!

Perhaps this is the chance to say all that was left unspoken, to say all those “love yous” that never made it through after the “I”. Ladies & gentlemen, we really don’t have to wait till the Thanksgiving dinner to convey how grateful we are for the fact that our lives are gifted with people we love and people who truly, truly matter. The date of Thanksgiving sure is marked as, November 26th this 2020, but looks to me, that, that day is already here, each day, everyday, ANY day. All you need is a few minutes and a choice (oh and good network).n

A watermelon is made up of 92 per cent water, and 8 per cent fruit. The fluids that are found in the watermelon include salt, calcium and magnesium, which are perfect components to re-hydrate the body after a long day. Pair watermelon cubes with some sharp feta cheese and a sprig of mint for a more exciting dish.
If you have the option, choose a clear soup rather than a creamy one and start your meal with a nice hot bowl. It’s a great way to boost your water intake and energy levels and will keep your body full of water.

It's a no brainer. Tea is 100 per cent water, but flavoured with herbs. Try not to add sugar, so you can enjoy the benefits. Herbal teas are best.
Pick some fruit with high water content such as oranges, watermelon, apples, pineapples, and peaches and make a smoothie! Instead of adding yogurt or milk, try adding water and some ice instead. It will keep you hydrated for longer and you can make a large batch and drink it during suhoor.

Banana Bread Here is an easy way to use up the bananas on the countertop, or brown ones thrown in the back of the freezer. Don’t overmix the ingredients, and make sure the bananas are very ripe. Ingredients For the bread • ¼ pound cool butter (1 stick), more for greasing pan • ¾ cup dark brown sugar • 2 eggs, at room temperature • 2 ⅓ cups very ripe bananas (about 5) • 2 cups all-purpose flour • 1 teaspoon baking soda • ¼ teaspoon salt For the topping • 3 tablespoons chopped walnuts or pecans • 1 tablespoon granulated or coarse sugar • ⅛ teaspoon cinnamon Preparation 1. Heat oven to 350 degrees. Lightly grease a 9-by-5-inch loaf pan. Using electric mixer, cream butter until smooth and fluffy. Add sugar and cream together 2 minutes more. One at a time, mix in eggs. Mix in bananas until only small lumps remain. 2. Stir dry ingredients together and mix into banana mixture just until combined. Pour into prepared pan. If making topping, stir ingredients together and sprinkle over batter. 3. Bake about 55 to 65 minutes, until a toothpick inserted into center comes out clean. Let cool in pan 10 minutes, then turn out onto wire rack and let cool completely before wrapping tightly for storage.

Simple Bread Pudding This recipe is proof-positive that leftover bread can easily be converted to dessert without much work. Ingredients • 2 cups milk • 2 tablespoons (1/4 stick) unsalted butter, more for greasing pan • 1 teaspoon vanilla extract • ⅓ cup sugar • Pinch salt • ½ loaf sweet egg bread like challah or brioche, cut into 2-inch cubes (about 5 to 6 cups) • 2 eggs, beaten Preparation 1. Heat oven to 350 degrees. In a small saucepan over low heat, warm milk, butter, vanilla, sugar and salt. Continue cooking just until butter melts; cool. Meanwhile, butter a 4-to-6-cup baking dish and fill it with cubed bread. 2. Add eggs to cooled milk mixture and whisk; pour mixture over bread. Bake for 30 to 45 minutes, or until custard is set but still a little wobbly and edges of bread have browned. Serve warm or at room temperature.

Dining Preparation 1. Heat oven to 325 degrees. 2. In the bowl of a food processor, combine graham crackers, brown sugar, salt and cinnamon (if using) and process until you’ve got fine crumbs. Transfer the crumbs to a medium bowl and add melted butter. Using your hands, mix well until no dry spots remain (crumb mixture should not be sandy or dry, but hold small clumps when pressed together). 3. Press crust evenly into the bottom and at least 1 1/2-inches up the sides of a 9-inch spring form pan. Use the bottom of a measuring cup to make sure the bottom is as even as possible. Bake on the middle rack until crust is set and just starting to brown around the edges, 20 to 25 minutes.
Classic Cheesecake If there’s one dessert that would least benefit from innovation, it would have to be New Yorkstyle cheesecake. No tricks, no twists; just a crumbly graham cracker crust and lots of lightly sweetened cream cheese. Ingredients For the crust: • 18 whole graham crackers (about 10 ounces/284 grams) • ¼ cup/55 grams light brown sugar • ½ teaspoon kosher salt • ½ teaspoon ground cinnamon (optional) • ¾ cup/170 grams (1½ sticks) unsalted butter, melted For the filling: • 2 pounds/904 grams cream cheese (four 8-ounce/226gram packages), room temperature • ½ cup/113 grams sour cream • 1 cup/201 grams granulated sugar • 1 teaspoon vanilla extract • ½ teaspoon kosher salt • 4 large eggs plus 1 large egg yolk • ¼ cup/32 grams all-purpose flour
4. Remove pan from the oven and set aside while you prepare the filling. Reduce heat to 300 degrees. 5. Prepare the filling: Combine cream cheese, sour cream, sugar, vanilla and salt in the bowl of a stand mixer. Using a paddle attachment, beat on high until mixture is completely smooth, scraping down the sides and bottom of the bowl as necessary, about 4 minutes. 6. Reduce speed to medium and 1 at a time, add eggs and yolk, scraping down the sides and bottom of the bowl after each egg is added. With the mixer on low, add flour and beat just to blend, until no lumps remain. 7. Pour filling into prepared crust (if filling goes above the crust that is O.K.). Bake until the edges of the cheesecake are completely set and the 2-inch inner circle of the cheesecake wobbles just slightly, 60 to 70 minutes. 8. Turn heat off and let cheesecake remain in the oven for another 10 minutes. Remove cheesecake from oven and let sit on a wire rack to cool completely at room temperature. When cool, transfer to refrigerator until totally set, at least 6 hours, preferably overnight.

Pumpkin Bread Moist and tender, delicately flavored with pumpkin and cinnamon, this humble loaf needs no bells and whistles. Ingredients • • • • • • • • • • • •
½ cup/120 milliliters vegetable oil, plus more for greasing the pan 2 ¼ cups/285 grams all-purpose flour 1 teaspoon baking powder 1 teaspoon ground cinnamon ¾ teaspoon kosher salt ½ teaspoon baking soda 1 (15-ounce) can ((about 2 cups) pumpkin purée 1 cup/200 grams granulated sugar ¾ cup/165 grams packed light or dark brown sugar 2 large eggs ¼ cup/60 milliliters full-fat sour cream or plain yogurt 1 ½ teaspoons pure vanilla extract
Preparation 1. Heat the oven to 350 degrees. Oil a 8 1/2- or 9-inch loaf pan; line with parchment, leaving a 2-inch overhang on two sides. 2. In a medium bowl, whisk together the flour, baking powder, cinnamon, salt and baking soda. In a large bowl, whisk together the vegetable oil, pumpkin purée, granulated sugar, brown sugar, eggs, sour cream and vanilla. Fold the dry ingredients into the wet ingredients until fully combined. Transfer the batter to the prepared pan and smooth into an even layer. 3. Bake until the loaf is puffed and set, and a skewer inserted into the center comes out with moist crumbs attached, 60 to 75 minutes. Transfer the bread, in the pan, to a rack to cool for 20 minutes. Use a paring knife to cut the two exposed sides of bread away from the pan, then use the parchment to transfer the cake to the rack. Let cool completely.

Samoa Dessert Lasagna Don't wait for cookie season! This Samoa dessert lasagna recreates an amazing dessert in four perfect layers. Ingredients • • • • • • • • • • • •
1 1/2 c. crushed Nilla wafers 1/2 c. toasted shredded coconut 6 tbsp. melted butter 1 (10.4-oz.) jar caramel 2 (3.9-oz.) boxes instant chocolate pudding 2 c. cold milk 2 c. heavy cream 1 (8-oz.) block cream cheese, softened 1/2 c. powdered sugar 1 c. toasted, sweetened coconut flakes 1/2 c. chocolate chips, melted Caramel, warmed, for drizzling
Preparation 1. Preheat oven to 350°. In a medium bowl, combine crushed Nillas, coconut, and melted butter. Press into the bottom of a 9”-x-13” baking dish and bake until golden, 10 to 12 minutes. Let cool. 2. Pour caramel over cooled crust and spread into an even layer. 3. In another medium bowl, combine pudding mix and milk; whisk until thickened. Pour over caramel and smooth into an even layer. 4. In a large bowl, beat heavy cream into stiff peaks. In a medium bowl, beat cream cheese and powdered sugar until no lumps remain, then fold in whipped cream. Spoon mixture over pudding and smooth into an even layer. Refrigerate until well chilled, at least 2 hours. 5. When ready to serve, top with toasted coconut and drizzle with melted chocolate and caramel.

Personality Profile How are you finding Bahrain? Bahrain is a melting pot of cultures, thoughts and ideas. It has its own unique identity and some of my very unique memories have been here because it has a healthy balance between work life and social life. What’s your favorite place in Bahrain and why? The Qal'at al-Bahrain also known as the Bahrain Fort. It marks a legendary era in the country’s civilization and it is an important historical heritage site which I believe everyone should know about. What do you most like, and dislike, about your work? Our work place is a dynamic environment which allows communication with people from different industries and it motivates me to be creative. If you choose hospitality industry as your line of work, there is no room for dislike – I enjoy meeting people and this job plays to my strengths. Biggest lesson in life Croatia had a domestic war from 1990 to 1995.

If you can change anything in your life, what would it be? I know people say it’s never too late to learn something new but when I was younger I wish I could have studied more languages. What makes you happy? Spending time with animals and having good food. Just thinking about it a Chocolate Lava cake with ice cream on the side always makes my day! Who are you listening to at the moment? My taste of music hasn’t changed much and I admire music from the 50’s & 60’s. Favorite motto or saying: Winners never quit and quitters never win – But sometimes it is healthy to understand that quitting is just a way of moving forward.n
