Jim Corcoran Jim (JC) Corcoran co-founded and served as president of VegMichigan, the state's largest vegetarian organization. He is a retired fire captain/paramedic/training officer, has a BS in Emergency Medicine and is certified in the Living Foods Lifestyle. Jim is also a certified fitness instructor and former softball tournament champion/all star. He has been leading life-altering programs on health and the environment for over twenty years. His presentations empower people to make informed and lasting changes in their lives. Since retiring from the fire service, Jim has been busy starting and developing several other successful outreach organizations. He founded Santa Fe Vegan and co-founded VegFund, an international organization which helps vegan activists spread the word through food and other means. Additionally, he co-authored Plant Peace Daily: Everyday Outreach for People who Care, and co-founded Root 66, a vegan food truck turned brick and mortar café. Jim is a board member of Animal Protection Voters of New Mexico and actively oversees its statewide activities, and he is an inductee of the Green Michigan Hall of Fame. Tammy Fiebelkorn Tammy Fiebelkorn is the first vegan, animal rights activist to serve on the Albuquerque City Council. She represents District 7 and took office in January of 2022. She is an environmental economist and advocates for projects that fight climate change with a focus on equity. Tammy is also the founder and director of Positive Links, a nonprofit dedicated to reducing all forms of family violence including domestic violence, child abuse, animal cruelty and elder abuse. Tammy has degrees in economics and finance from Northeast Louisiana University as well as a master’s degree in natural resource economics from Colorado State University. She lives with her partner Paul and their furry and feathered kids – Frida (17-year-old mutt), Frijolito (12-year-old mutt), Cinderella (9-year-old mutt), and Mr. T (69-year-old parrot). Page 10
Presenter Bios Gabriel Gaarden, MPH, RDN, LD Gabriel is a registered dietitian passionate about investigating and implementing the most effective evidence-based strategies for promoting improved human health, health equity, social justice, and environmental sustainability. One such game-changing strategy in the quest for Creating a New World is that of whole-food plant-based nutrition. This paradigm shifting nutritional approach has the capacity to simultaneously improve human health, while fixing the broken, exploitative, and unsustainable relationship that we have built with our environment and the countless but dwindling number of other animal species with whom we coexist on this beautiful planet. Carole Levy Carole Levy, an artist and chef, is the founder of The Veggie Vanguard, a company offering whole food, plant-based services, resources and recipes free of salt, oil and sugar. She is a culinary educator for Plant Powered Metro NY, The Marlene Meyerson JCC Manhattan, University of New Mexico - Taos, and a Food for Life Instructor for the Physicians Committee for Responsible Medicine. She currently divides her time between New York City and Taos, NM. “My desire is to encourage and inspire people to take chances in the kitchen, cook without fear, be open to creativity, and embrace delicious nutrient-dense food combinations for a healthier lifestyle.”
Paul Roybal Paul was born and raised in northern New Mexico; he began his acting career with background role(s) in Breaking Bad. Besides acting, he is an on-air radio personality at 89.1 KANW FM in Albuquerque, NM. Paul is also, an award-winning vegan chef, he won second place in the Vegan Macdown Santa Fe 2017 and first place in the Vegan Taco Takedown in 2018. Paul lives in Albuquerque, NM with his partner Tammy, four dogs and a 65 y/o parrot. Page 11
Presenter Bios Leslie Rudloff Leslie is the Program and Staff Attorney for Animal Protection New Mexico since 2021. APNM’s mission is to advocate the rights of animals by effecting systemic change, resulting in the humane treatment of all animals since 1979. Prior to her position at APNM, she was Director of Legal Affairs for the Physicians Committee for Responsible Medicine (PCRM), a nationwide organization of physicians and laypersons that promotes preventive medicine, especially good nutrition, and addresses controversies in modern medicine, including ethical issues in research for a decade. As Director of Legal Affairs, Ms. Rudloff directed the Physicians Committee's advocacy litigation, which challenges industry and government when they encourage the consumption of animal products and other unhealthful foods. Ms. Rudloff used the legal system to promote vegan diets and alternatives to the use of animals in medical research and education. Re Sikora Rae Sikora has been a spokesperson for animals, the environment and human rights for over 45 years. Her programs have been changing people’s vision of what is possible to create in our lives and in the world. Rae has worked internationally with participants ranging from teachers, students and prisoners, to businesses and activists. As co-founder of the Institute for Humane Education, Rae created interactive critical thinking tools that are now being used by people around the globe. She holds degrees in Cultural Anthropology and Environmental Education from the University of Wisconsin. Rae draws from years of experience to help individuals and groups discover how implementing changes personally and locally can bring about positive change globally. She is also cofounder of VegFund. Additionally, Rae was selected by the North American Vegetarian Society as the 2013 recipient of its Vegan Hall of Fame and is co-author of Plant Peace Daily: Everyday Outreach for People Who Care. Her semi-fictional memoir, Little Jew on the Soul Train is currently available on both Amazon and Ingram Spark. Her novel, Free to a Good Home, will be published in the summer of 2022. Page 12

Description: Respect begins with language choices. We’ll discuss how the words we use can elevate or diminish animals in the eyes of society. A deep dive into positive language choices as well as negative choices to avoid. Gabriel Gaarden Plant Diversity: The Ultimate Health Advantage Description: The American Gut Project (AGP), have you heard of it? If not, the AGP is a crowdsourced, global science citizen effort to improve our understanding of the microbiome and its impact on our overall health. A key takeaway from the AGP has shown that we should aim to eat at least 30 different kinds of plants each week to improve the diversity of our microbiomes and boost total body health. In this presentation, Gabriel Gaarden, MPH, RDN, LD, will share practical and tasty tips to diversify your plant-based routine. Super Green Pesto Description: Pesto, we all love it (or at least most of us do), and it is easy to make vegan! Pesto makes a delicious and nutritious addition to pasta, bread, crackers, vegetables, and more! In this food demonstration, Gabriel Gaarden, MPH, RDN, LD, will highlight a number of different ways to whip up amazing pestos that are sure to impress your palate and supercharge your health!

Leslie will discuss how to reduce the numbers of animals used in vivisection with non-animal alternatives. Lastly, she will discuss current bills to reduce the numbers of animals being used in vivisection and ways the audience can take action. Rae Sikora Everyday Outreach for People Who Care
