A
labama’s employment rate is at a 10-year high, and the future looks even brighter. On the heels of powerful, jobs-focused legislation, as well as education and workforce development initiatives, Alabama featured prominently in the rankings for both job training and economic growth potential, taking second and fourth place in the nation, respectively, in a Business Facilities report last month. MINDY HANAN
These results reflect the experience of the Alabama Restaurant & Hospitality Association’s more than 1,200 member establishments. A supportive business environment is helping our enterprises thrive, whether it’s an iconic, family-run restaurant or the startup bed-and-breakfast of a retiree’s dreams. At our recent ARHA board meeting, Governor Ivey made clear her commitment to stand by our businesses and employees; continue to improve the state’s education and training systems and drive change that will propel the economy forward. President & CEO, ARHA
We are looking forward to celebrating the great accomplishments of our employees at the Annual Stars of the Industry on October 29. I hope you will make plans to be with us at the Grand Bohemian Hotel Mountain Brook as it is always a wonderful night to be remembered. The industry is on track for another banner year in 2018 and we have our wonderful workforce to thank for it. I look forward to continuing to celebrate the stars of our industry – the men and women who serve our customers each day with a passion for hospitality and truly make our state “Sweet Home Alabama.” On October 30, we will host the Grand Pineapple Golf Challenge at Oxmoor Valley. It is a fun-filled day of golf, networking, food, and fabulous raffle prizes. The tournament is a scramble format and our door prize drawing ensures that almost everyone will walk away with a prize that includes hotel stays, golf outings, dinners and more. All proceeds to benefit the ARHA PAC. ARHA is committed to helping develop our workforce. On October 3, we will hold a workforce development summit. The National Restaurant Association, American Hotel & Lodging Association and the American Culinary Federation will convene with employers, chambers of commerce and post-secondary educators to discuss the opportunities for industry apprenticeships in Alabama. Additionally, we are partnering with John Maxwell trainers to provide leadership training for our members and their employees throughout the state. In November, it will again be time to go the polls and elect both our state leadership as well as the U.S. House of Representatives. Our industry is tremendously dependent on having pro-business elected officials. Government decisions impact every aspect of our industry. Legislation and regulation affect everything from food safety and taxes to labor and payment systems. Sound public policy begins by supporting and electing candidates to office who understand our industry and know that a healthy, robust restaurant and hospitality industry translates into a stronger economy. Get involved, support candidates that support our industry, and most importantly, exercise your right to vote.

ARHA BOARD MEETING ARHA held the August board meeting at Arrowhead Country Club in Montgomery. We were honored to have Governor Kay Ivey as the keynote speaker. The restaurant, hospitality, and tourism industry greatly appreciates all she does for workforce development in our state. Attendees enjoyed several informative speakers including Elizabeth Kanter (Carr Allison), the Office of the Attorney General, Jeff and Deborah Miller (ARHA lobbyists), Lee Sentell, and Amy Hathaway (United Healthcare).

Focus on EDUCATION It is the mission of the Alabama Restaurant and Hospitality Association Foundation (ARHAF) to provide educational opportunities for restaurant and hospitality careers in Alabama. WORKFORCE DEVELOPMENT A skilled workforce is essential to our economy, and when industry and education work together, it creates a direct path to employment for Alabamians. The Alabama Restaurant and Hospitality Association and the Alabama Restaurant and Hospitality Association Foundation have long recognized the importance of workforce development for our industry. PROSTART PROGRAM ProStart® is a nationwide, two-year program for high school students that develops the best and brightest talent into tomorrow’s industry leaders. From culinary techniques to management skills, ProStart®’s industry-driven curriculum provides real-world educational opportunities and builds practical skills and a foundation that will last a lifetime. By bringing the industry and classroom together, ProStart® gives students a platform to discover new interests and talents and opens doors for fulfilling careers. The curriculum teaches all facets of the restaurant and foodservice industry, inspires students to succeed and sets a high standard of excellence for students and the industry. ProStart® is supported and operated by the ARHA Foundation in partnership with the NRA Educational Foundation.
KIRK KIRKLAND MEMORIAL SCHOLARSHIP PROGRAM The ARHA Kirk Kirkland Memorial Scholarship, now co-branded with the National Restaurant Association Educational Foundation (NRAEF) scholarships, annually provides Alabama students with the opportunity to further their education in the restaurant and lodging industry. The Alabama Restaurant & Hospitality Association Foundation is a 501 (c)3 non-profit organization that was founded in 1998. ARHAF exists to enhance our industry’s service to the public through education, community engagement, and promotion of career opportunities.

KIRK KIRKLAND MEMORIAL SCHOLARSHIP RECIPIENTS The Kirk Kirkland Memorial Scholarship provides Alabama students with the opportunity to further their education in the restaurant and lodging industry. The Alabama Restaurant and Hospitality Association Foundation (ARHAF) presented scholarships to five students to be used for the 2018-19 academic year as they pursue degrees in Culinary Arts and Hospitality Management. Students are evaluated on their desire to pursue a career in this industry, academic achievement, and leadership qualities.
LAUREN HART Lauren Hart received her Associate’s degree in Hospitality Management from Coastal Community College earlier this year and is now a Sophomore at The University of Alabama studying Hospitality Management. Lauren works for Brett-Robinson properties in Orange Beach and has received several internal awards for her work ethic and stellar performance. She hopes to work her way up through the ranks to be an Operations Manager, then Director and ultimately explore career options with Disney World, Disney International, or the Four Seasons. Also, Lauren was selected as a recipient for the 2017 Kirk Kirkland Memorial Scholarship.
ANAHI ORTIZA Anahi Ortiz is a freshman at the Jefferson State Community College Culinary and Hospitality Institute. She attended Albertville High School where she was a student of the ProStart Program and was also President of the Family, Career and Community Leaders of America (FCCLA). Anahi’s Prostart culinary team won the state competition in both 2017 and 2018 and represented Alabama at the ProStart national competition. She was the top baker on the ProStart team, head cook at the daycare where she worked during high school and runs a small business selling cakes in her hometown. Anahi has a large family and hopes to be the first in her family to attend college. Anahi’s commitment to her academics and the culinary industry will help her have a successful career in the future.

ELENA RITCHEY Elena Ritchey is a senior studying hospitality management at the University of Alabama. In addition to a full course load and holding a 4.0 GPA, Elena works part-time at the Sheraton Hotel in Birmingham as a Customer Service Representative and was nominated for Employee of the Month. She also received recognition for the Sheraton’s “Take Care” employee program. She is the fourth of 10 children, and her extended family owns many restaurants, exposing her to various facets of the hospitality industry. After graduating in 2019, Elena plans to work in the hospitality and event industry in the Birmingham area and be able to serve others.
NOAH KIRKLAND Noah Kirkland is a freshman at the Jefferson State Community College Culinary and Hospitality Institute. Noah attended Albertville High School and represented Alabama in both 2017 and 2018 at the ProStart national competition with his team that won the state culinary title both years. He has already gained restaurant experience working part-time at several restaurants during the past few years. In high school, Noah served as ProStart team leader, SGA Vice President, Family, Career and Community Leaders of America (FCCLA) Treasurer, and Reporter. He hopes to be the first in his family to attend college and plans to become a nutritionist to serve the public.
JAMES (ALEX) MCCOLMAN III James (Alex) McColman III is a junior studying hospitality management and culinary arts at Coastal Alabama Community College and is a member of the Phi Theta Kappa Honor Society. His instructors describe him as eager, intelligent and professional. His “go-getter” mentality pushes himself and others to their maximum potential. As a non-traditional student and veteran of the armed forces, Alex has dined at various restaurants across Europe and the United States. He feels he has finally found his calling and hopes to open his own restaurant after graduation.

TASTE OF MOBILE SCHOLARSHIP RECIPIENTS Each year, the proceeds from the Taste of Mobile event benefit a scholarship program that is awarded to local students who intend to pursue higher education in culinary arts.
JESSICA BYERS Jessica is a former student of Murphy High School where she was Head Chef of the Culinary Arts program. She currently attends Bishop State where she studies Culinary Arts. She hopes to continue her education at The University of South Alabama and pursue a career in the restaurant industry upon graduation. Jessica has a true passion for the foodservice industry and enjoys serving others.
KATHRYN SILBERNAGEL Kathryn is a junior at Coastal Alabama Community College studying Hospitality Management. She has helped plan several events at school and was named the 2018 Hospitality Student of the Year. Kathryn also works full-time a the Battle House Renaissance Hotel in Mobile as a front desk agent and concierge navigator. Born and raised in Mobile, she is a proud ambassador of the City of Mobile and enjoys offering visitors recommendations on local dining and tourist attractions. Kathryn’s supervisor says she handles her academic load and work responsibilities with great maturity.

CHEF PETER D’ANDREA It is great sadness that we share with you the untimely passing of Chef Peter D’Andrea this past May. Peter was the Corporate Executive Chef at Wind Creek Hospitality and served on the board of directors for the Alabama Restaurant and Hospitality Association. He was an award-winning, highly respected culinarian of 45 years and has worked in New York City, San Francisco, Nashville, and also served as the corporate chef for Marriott International. Among his accomplishments, he was invited to cook as a guest chef three times at the James Beard Foundation’s Town House in New York City in the Best Hotel Chef category, in addition to being invited to cook for Julia Child’s 80th birthday celebration. Chef D’Andrea was passionate about culinary education and was involved in several organizations including ARHA’s ProStart Program. He dedicated his time and expertise to help to develop the future of the restaurant industry by serving as a competition judge or working closely with high school students as a mentor. Peter’s leadership centered around service to others, and he made significant contributions to our industry by inspiring others interested in a culinary career. Peter had a contagious smile that will be greatly missed by all that knew him. He is survived by his wife of 39 years, Jo Ann D’Andrea, and daughters Mariel (Brandon) Zelhart and Grace D’Andrea.

REGIONAL RECAP T
he 2018 Bartender of the Year regional competitions were held in September in Mobile, Birmingham, Huntsville, and Montgomery. Guests cheered on 37 of the state’s best bartenders as they competed to create the most delicious Old Forester cocktails...but taste was just the beginning.
Regional 1st Place winners received $350, a plaque, and other prizes along with an invitation to compete at the state competition on Monday, October 29, 2018, in Birmingham against other finalists. The state winner will be crowned Alabama’s 2018 Bartender of the Year and take home the $1,500 grand prize and trophy!
Contestants were judged on taste as well as creativity, crowd interaction, showmanship, and speed at which they created these concoctions.

The shift to a four-day work week will impact more than 60 full-time managers in total. Like the growing trend nationwide, staffing and retention is a challenge for Baumhower’s Victory Grille. A recent report from global HR think-tank Reventure found that tourism and hospitality are experiencing a skills shortage of nearly 40,000 current unfilled vacancies. to generate another 84,100 new jobs by May 2022 [1]. The millennials seeking those jobs value experiences more than belongings, and intangible benefits far beyond just higher wages. Understanding that trend led former University of Alabama and Miami Dolphins football legend-turned –restaurateur Baumhower to upend the traditional gameplan. Baumhower credits the company’s operational infrastructure, the Aloha Factor, developed and honed over his nearly 40 years in the restaurant business, in making what some in the hospitality industry call a far-fetched dream become a reality. “You’ve heard the phrase ‘it takes a village,’ well in our case it takes a team! Everyone has to buy in, go the extra mile and support each other to make it work and our people are some of the best in the world at teamwork.” In 1979, Baumhower got a taste for the restaurant business when he became a partner in the famed Bachelors III restaurant with fellow gridiron greats Joe Namath and Richard Todd. Later, while playing as a member of the notorious “Killer B’s” defense for the Miami Dolphins, Baumhower visited a restaurant owned by Eddie Hauck, the first in Florida to serve Buffalo wings, and immediately knew he had his first restaurant idea. Wings and Things opened in 1981 in Tuscaloosa, AL where Baumhower played college football under Coach Paul “Bear” Bryant, and he has been in the industry ever since. Aloha Hospitality believes the new program will increase morale, retain team members, and enhance a sense of team ownership. The Aloha Factor program’s 4-day workweek allows managers time for extended rest, more time with family and friends, less of a rush to run errands, etc., etc. With two days off in a row, the plan at last mimics the much longed-for “weekend” in the hospitality industry, as well as an additional day off during each week. “So much of what we do is about celebrating, making memories, and enjoying amazing food,” Baumhower continues, “…we want our teams to be able to enjoy those things too. Allowing our managers to have the work-life balance they desire while being able to better serve our guests at the same time makes this revolutionary concept a no-brainer. It’s funny how ideas come to you, and you wonder to yourself – ‘why didn’t we do this years ago?’” According to a study by the Society for Human Resource Management, 43% of companies offer fourday workweeks to some employees, and 10% now make it available to all or most of their team [2]. The reason? Employee-centered flexibility positively impacts the bottom line. Studies show turnover rates drop, revenues climb, and workplace culture is revolutionized. Clearly, the metrics affirm the extra effort is worth it. For Aloha, the 4-day work week will actually produce more coverage on the restaurant floor.
