Although Leonardo DaVinci invented the Flying Machine,

Benny Castro, owner of Basque Tapas Restaurant in Piermont, NY, is also a Renaissance Man. He is creative, energetic, generous and gifted at serving authentic Spanish food that would make his father proud.

To the left of Basque’s entrance, Benny’s hands-on, layered paper mural stretches across the wall. His design is as balanced as the smiling servers carrying trays of food. The generous wooden bar flashes with copper sheets that Benny himself added. I hope diners look beyond the legs of the bar patrons to appreciate the copper sheets and make Benny happy. If he notices something that bothers him regarding décor, he takes apart the offending object and rebuilds it. Having had a long career in the restaurant business, Benny has a particular vision for Basque: to serve quality, authentic Spanish tapas in a casual, intimate setting. “Good food: that’s my main focus,” says Benny. “EverythingI buy in the kitchen has to be quality. I’d rather spend the extra money for the quality of food.” Sangria cocktails – made with Grand Marnier, Spanish Brandy, Triple Sec and Spanish wine - clean your palate as you relax in this

reclaimed wood oasis adorned with Dali-esque paintings. Lulled by Spanish guitar music, enervated by the smell of hot, delicious tapas, I don’t know what to try first – the imported seafood and meat delicacies or Paellas steeped in Benny’s elixir of white wine, olive oil, garlic, saffron and paprika. “For many years, customers have been so used to making Paella in the pot,” explains Benny. “We make our Paella the real Spanish way. It takes 25-30 minutes to prepare. It has chewiness and crispiness. It has flavor. It even has a distinct smell from our blend of seasonings.” After a few sips of fruity, red Sangria, I close my eyes and imagine myself visiting Spain. When I open them again, I realize that nothing is missing here, except the ocean. I settle for the ripple and glide of the Hudson River lapping at the pier. Benny’s energy peaks as he talks about his diverse tapas. He dreams tapas and new combinations to tweak his menu. “How do I make a brussel sprout tapas?” he recently asked himself. After a few experiments in the kitchen, he

soon developed “Brussel Sprouts a la Basque,” which I tasted and would order again. I noticed brussel sprouts in the fragrant clear sauce, but tasted only the blend of ingredients. Very creative. There’s a lot more to this savvy, friendly restaurateur. When he is not chatting with a customer, you can find him on his motorcycle, or dropping in at his volunteer job as Deputy Sheriff in Bergen County, N.J., where he shifts to a police motorcycle and uniform during celebrations and parades. Never one to settle, Benny is already scouting a second location for Basque. He might have been a pirate in a past life, cooking the first paella in the galley of his galleon. Ask him.

Step 1: In a large pitcher, approximately 3842 ounces, add your apples, oranges and lemons. To release some of their natural juices, give the oranges and lemons a half squeeze into the pitcher. Step 2: Add two teaspoons of quick dissolve sugar. Step 3: Add the Triple Sec, Spanish brandy, and orange liquor. Let this mix of fruit, sugar and alcohol marinate either at room temperature or in a refrigerator for a couple of hours. This will release some of the citric fruit essence and apple flavors into the mix.

BENNY’S SANGRIA RECIPE @ BASQUE Ingredients Needed: Sliced Granny Smith apples / Sliced oranges / Sliced lemons / Quick dissolve sugar / 2 ½ - 3 oz. Spanish brandy / 2 oz. Triple Sec (with alcohol) / ½ oz. Orange liquor preferably Grand Marnier or similar / Sprite or 7-Up / Rioja red wine

Step 4: When ready to drink, add ice into your pitcher and pour in your Rioja wine while stirring. Add a little splash or two of Sprite or 7-Up. Step 5: Drink and enjoy.

BENNY’S TIPS - You can also make Sangria variations with Spanish white wine, Rose or Cava. - If you like your sangria to be on the dry side, add more Spanish Brandy. If you like your Sangria less Sweet you can cut back on the sugar, Triple Sec and use Club Soda instead of 7up or Sprite.

At Lynch’s Restaurant in Stony Point, they don’t just serve food, they serve the community. “In business, there is a right way and a wrong way,” says Kevin. “I always tell my co-workers if you make a mistake, make it on the side of the customer. This concept has worked for me for many years and people can tell you that’s how my staff treats the customers.” The dedication of owners Kevin and Denise Lynch to their community is legendary, and many families down on their luck have found comfort from their troubles through the Lynch’s Serve program. “From my early years at the Boulderberg Manor and Lynch’s in Tomkins Cove, I’ve been taught that good service is good business,” says Kevin. “Through hard work we’ve been fortunate to be able to help others.” Kevin and Denise have quietly been helping families since the day they opened. On every table in the restaurant is a letter inviting patrons to hand the letter to anyone undergoing treatment for illness, someone who has lost their job or anyone in need. “I hope your situation improves and I hope you get some joy out of your Lynch’s Restaurant experience,” the letter states. Even if the family cannot make it to the restaurant, Lynch’s Serve will bring the food to them. “I’ve gotten so much joy out of helping others,” says Kevin. “If you know someone who could use a helping hand, you can reach me at the restaurant. You can help us help others.” Kevin comes from a family that has a long history in the restaurant business. “My grandfather opened a very popular tavern and restaurant in Harlem when he immigrated to America. He sponsored and gave work

Montecucco, the last frontier! Well at least in Tuscany. While Tuscan wines were getting DOC’s in the 1960s and DOCG’s in the 1980s, this area just started to be acknowledged in the late 1990s. Even though its viticulture dates back to the 8th Century, the first DOC came in 1998. This area is in the southern part of Tuscany. It is south of Montalcino, known for their wonderful Brunello’s. Montecucco, north of Grosseto and Scansano, is a beautiful area with rolling hills and quaint little hilltop towns. A quiet, charming area to visit, Castiglione della Pescaia is a lovely little fishing town with a medieval castle and Pitigliano is a village carved into a rocky outcrop. The red wines are primarily Sangiovese, a varietal in which you can taste the terroir. Brunello di Montalcino, Chianti, Vino Nobile de Montepulciano and Montecucco are all made with basically the same varietal, Sangiovese, but how different they are! It is the most planted varietal in Italy, but where it is planted makes all the difference in the world. This area is growing rapidly. At first there were only a handful of about 10 vintners with about 100 hectares. Today there are many more small producers, more than 70 farming over 800 hectares. They are farming organic and bio-dynamically. They even have a Strada del Vino that passes through the towns and vineyards to encourage visitors to stop and savor the local specialties and soak up some Italian joie de vivre! They also have a consorzio which confers a more serious respect for the wines.

Well-deserved because they ARE very serious wines. The consorzio is made up of a group of vintners, estate owners and investors, who want their wines to be known around the world. When they received their DOCG in 2010, new regulations came into place. The Montecucco Sangiovese DOCG must have a minimum of 90 percent Sangiovese, age for 12 months in barrel and 4 months in bottle. Whereas the Montecucco Rosso DOC must have a minimum of 60 percent Sangiovese and may be released the following September after harvest. The Montecucco Sangiovese Resrva DOCG also requires 90% Sangiovese, aged 24 months in barrel and another 6 in a bottle. Whereas the Montecucco Rosso Reserva DOC requires 60 percent Sangiovese, 12 months aging in barrel and 6 months in bottle before release. These full-bodied Rossos are made for the long haul. The Reservas can age for another 5 -7 years and still be powerhouses. Even though we have concentrated on information about the red wines of Montecucco, the area also produces wonderful whites as well. Made mostly from Vermintino, the whites can be aromatic with hints of white stone fruit and have a round mouth feel. These wines are DOC. Whether your preference is red or white, Montecucco will keep your interest with well-crafted wines. Should you get tired of visiting wineries, there’s always hang-gliding as this area is very famous for it!

have arrived in Rockland County on Thursday, January 31, 2019 with the grand opening of Remedy, a medical cannabis dispensary located at 345 Route 304 in Bardonia. Remedy is Rockland’s first dispensary and the 30th in the state. In New York, medical marijuana is available for purchase by a patient with severe debilitating life-threatening conditions. According to a recent report released by the New York State Department of Health, the three most common debilitating or life-threatening conditions that patients with active certifications have are chronic pain (53%), neuropathies (15%) and cancer (12%). “Many people in our community suffer needlessly from pain or can’t sleep at night or have appetite issues,” said Erik Holing, President of Valley Agriceuticals. “We have an experienced team of healthcare and wellness professionals who offer patient education, counseling and support.” Remedy offers a warm and inviting space for qualifying patients to seek relief from their pain symptoms. Upon entering the facility, a security guard coordinated by a former Chief Security Officer of the NYPD Central Intelligence, will greet patients at the door. Patient Care Coordinators at the front desk will scan the patient’s New York driver’s license, medical marijuana identification card, and a registered doctor’s prescription. The on-site pharmacist will consult with patients about their condition and symptoms and recommend the appropriate combination of products to use,

which includes different forms such as capsules and vape cartridges. Patients are given up to a 30-day supply. Stephen Asheckian, Chief Operating Officer of Remedy knows from personal experience the benefits of medical cannabis. “After seeing my mom battling cancer for six years, we went to Israel where they have been using medical cannabis for many years to treat illnesses. She was scheduled to

be placed in hospice and was given two weeks to live. I requested she be given medical cannabis. She revived, felt happier, and gained an appetite. It dramatically improved the quality of her life. She lived for six months before succumbing to the disease.” To alleviate concern in the community about having a medical cannabis dispensary in Bardonia, Holing says: “We are part of the community. are here to offer alternative pain relief for illnesses such as cancer, rheumatoid arthritis, multiple sclerosis, epilepsy, Crohn’s Disease, fibromyalgia, neurological disorders, spinal cord injuries, HIV/AIDS, and many more ailments. Recent changes to the Compassionate Care Act have expanded the list of qualifying conditions to include chronic pain, post-traumatic stress disorder and any condition for which an opioid may be prescribed. A Remedy patient, who works as an office manager, has a muscle and bone disorder and has had chronic nerve-ending pain for over 10 years. She started using medical marijuana six months ago to get more relief from breakthrough pain and skin sensitivity. It helped to reduce her traditional pain medications by half, and she has found that it works faster – sometimes within 15 minutes. “A lot of people think it’s for cancer,” says the patient who prefers to remain anonymous. “But people with chronic pain would benefit from this as much as I do.” Fred M., a former nursing home maintenance worker, described his experience with replacing traditional painkillers with medical cannabis, and the impact Remedy’s opening will have on him. “After my back surgery, my doctor gave me pain pills to help manage the side effects and the dayto-day pain. The painkillers made me feel groggy and have low energy,”

said Fred, who preferred not to reveal his full identity. “Five months ago, I discovered using medical cannabis as alternative pain management and had been traveling far to get it. Now I’m down from 10 painkillers a day to 2, and this new local dispensary will save me a lot of travel time. My energy level is up, my mind is clear, and I’m happier now than I was before I started using medical marijuana.”

As of June 2018, there are 1,718 registered practicioners in the state, 19 of them in Rockland, and there are 61,198 patients with active certifications to buy medical marijuana.

“We understand this type of medication is new to many people. We look forward to educating patients and the community, so they feel comfortable using this form of relief,” says Holing.

pulling cucumber pits out of my body hair. What is wrong with plain old soap? It used to do the job just fine. Remember Camay? And then there’s shaving. For centuries men just used a shaving brush, soap and a razor. Now we have to use a pre-shave lotion, soap in an aerosol can, followed by a post-shave lotion. Or an after-shave balm, as they call it.

Keeping it Clean When I was young – way back when dinosaurs still ruled the earth, as my younger friends tell me – I’d spend all day rolling around in mud and getting as dirty as any seven-yearold boy can. Then my mom would dump me in the bath and scrub me clean again. Using nothing but soap. Do you guys remember soap? Nobody today uses soap, apparently. Instead there are hundreds of different body washes with enticing names – Rainbath, Mountain Falls, Maximum Hydration, Stress Relief with Soothing Oat, even Cucumber. Now, with my apologies to the scientists who came up with these inventions, I don’t want to go around smelling of cucumber all day and

There’s even something called Bald Head, for those apparently who have lost the battle to keep their hair on. Whatever happened to good old Old Spice? And yet despite all these incredible breakthoughs in the art of shaving, they still haven’t invented a razor that doesn’t cut your throat! Then there’s water. Believe it or not I actually had water this week, straight out of the faucet. It was quite tasty - and it was FREE. Way back when those pesky dinosaurs ruled the earth, there was no Poland Spring in bottles. You had to chase the dinosaurs out of the pool and suck up some water.

God knows what it tasted like after all those dinosaurs did their business, but our predecessors obviously survived and grew up to be big, hairy, loin cloth-wearing cave men. And that’s who we are descended from. How come no one sells Dinosaur Water? That was meant to be a joke. But I decided to Google it just in case. Sorry folks, there really is a product out there called Dinosaur Water. Here’s what their website says: “Mike and Rudy are on a mission to bring to life the majestic dinosaurs of Earth’s distant past. Art and science come together in the form of a healthy and delicious beverage made from only fresh, all-natural ingredients provided by our planet.” As I used to say in my newspaper days: You can’t make this stuff up. • How do you ask a tyrannosaur out to lunch? “Tea, Rex?” • Why can’t you hear a pterodactyl using the bathroom? Because the ‘p’ is silent • What do you get if you cross a pig with a dinosaur? Jurassic Pork! • What do you call a dinosaur that gets in a car accident? A Tyrannasaurus wreck!

Demystifying “The Sport of Fitness” CrossFit is a sub-culture. Still evolving after 19 years, some could call it a cult. Both life-saving and torture-inducing, CrossFit is what you make it. Your motivations, the level of coaching, community support, and personal drive form your perception. Exhaustion can be glorious — or just exhausting. As a certified CrossFit Level 1 and Striking Coach, I’m here to help demystify this training method.

What is Class Like? Most CrossFit gyms break classes up into four sections: warm up; skill/ strength work; workout of the day (WOD); and cool down. Each day there’s a workout prescribed (Rx) for everybody that comes to a CrossFit affiliate (aka “BOX”). Instead of one workout for the average Joe and another for hardcore athletes,

there’s usually one scalable WOD. If you’re injured and can’t do squats, a similar movement can be substituted, or if the number of reps is too high, they’ll cut them. With more time you’ll get stronger and move towards Rx. Boxes operate and are structured differently depending on your experience. If you are just getting started, it can be one of three options: an introductory class, On Ramp course

The story of Welles Remy Crowther

is a profile in courage. He was raised in Upper Nyack, and he was a threesport varsity athlete and high honors student at Nyack High School. He joined Empire Hook and Ladder Co. No 1 at the age of 16 as a junior firefighter. Welles attended Boston College where he played varsity lacrosse No. 19. He graduated in 1999 with a B.A. in Economics and became an equities trader at Sandler O’Neill Partners on the 104th floor of 2 World Trade Center. He was in his office on September 11, 2001 when the attacks on the World Trade Center began. Welles’ remains were recovered on March 19, 2002 alongside the incident commander of the South Tower and members of the FDNY. Later Welles’ parents learned that he had saved at least 10 lives on that infamous day, returning to the burning 78th floor sky lobby of 2 World Trade Center several times to rescue the wounded. He was identified by the victims he saved because of the red bandanna he wore covering his nose and mouth, something he always carried with him since childhood. Award-winning ESPN correspondent Tom Rinaldi’s New York Times bestseller “The Red Bandanna” is read and studied in schools around the world, and movies have been made about his heroism. Welles has been acknowledged by world leaders including President Barack Obama who said of Crowther during the dedication ceremony of the September 11th Memorial and Museum: “They didn’t know his name. They didn’t know

But they knew their lives had been saved by the man in the red bandanna.” To honor his sacrifice, the Welles Remy Crowther Charitable Trust has developed a weeklong program called The Red Bandanna Program U’19 in partnership with the Rockland County YMCA and Dominican College. The inaugural Red Bandanna U’19 is a weeklong residential summer program focused on Leadership and Character Development for high school students. The program will be hosted on the beautiful campus of Dominican College in Orangeburg, New York and will run from Sunday, July 7 through Friday, July 12. Students from around the country will experience campus life as they join

In our world today, we need to remind each other that kindness, bravery and selflessness are to be treasured above all. As Welles’ mom, I can tell you that I am so proud to have had a son like him and so happy to share the values that Welles has come to represent. No More Tax Deductions for Employee Business Expenses

Now that we are a full year into the 2018 Tax Cuts and Jobs Act (TCJA), it is time for all of us to determine its impact on our wallets. Let’s take a look at one that will affect many who are filing their 2018 and future personal tax returns: the repeal of miscellaneous itemized deductions for employee business expenses. The former law allowed employees to claim itemized tax deductions for certain unreimbursed employee business expenses. The new law eliminated this deduction starting in 2018. The good news is we no longer have to track and document these miscellaneous expenses. The bad news is that our taxable income may increase as a result of these lost tax deductions. Employee business expenses that are no longer tax deductible include: a home office; automobiles or computers used for work; education & training expenses; employee liability insurance; small tools and equipment; dues and subscriptions; job search expenses; professional licenses and fees; research and travel expenses; employee business meals and entertainment; job-related union dues and expenses; work

clothes and uniforms; other unreimbursed employee expenses. Under the new law, employees are not able to claim the above listed items as itemized deductions for tax years 2018 – 2025. To overcome the loss of these tax deductions, employees should seek reimbursement of these expenses from their employer. These reimbursements are generally tax-deductible by the employer and not taxable to the employee. If reimbursement is not part of your current compensation package, try to renegotiate it to include an expense reimbursement plan. This can be a win-win for both the employee and the employer. Unfortunately, the list of miscellaneous expenses that are no longer tax deductible grows when we include other non-employee expenses that were formally tax deductible and are now repealed. These include: investment advisory fees; tax return preparation fees; other investment expenses. Prior to the new TCJA, many of the above deductions were marginalized by income phase outs and alternative minimum tax. Now that these restrictions will

no longer impact us, the loss of employee business expenses deductions may not be as painful as one may expect. Ask your CPA how the repeal of employee business, and other miscellaneous, itemized deductions will affect you, and find out how you can minimize the potential tax sting of the new law. Joseph A. TALES FROM THE CHESTNUT TREE A Sick Puppy of the Downward Dog For a diversion, I recently turned on the TV to watch Two and a Half Men. Charley was complaining to his mother about how she screwed him up and will never be normal… again. Evelyn was doing a yoga pose called the downward dog that had Charley averting his eyes, complaining wildly. Nothing I hadn’t seen before but still funny with the same, reliable outcome. After the show was over, it had me thinking: how many times will I see the same episode, the same plot line, with the same ending? Why would I think the ending would be any different? How does Charley’s aversion to his mother set an example for me to create a scenario with a different outcome? Think about the first time you signed up for your retirement plan at work, or started your IRA: have you reviewed it at all since you started it? The world is changing daily based on present events. While there are few things that can be counted on, you can be guaranteed (a word we are forbidden to use in my business) one thing: the markets will either go down or go up. Thus, managing your portfolio should or could be adjusted to account for world events, political surprises, economic trends, or just changes in general. I can’t tell you when to adjust, but I can say that periodic adjusting, or rebalancing, is part of managing money. Keeping on top of your fortune is your responsibility, regardless of who makes your financial decisions. Estate planning - the process in part of deciding how your holdings will be distributed - is decided by your will and beneficiary designations. Marital changes, new children and grandchildren, health issues, location changes and other issues may dictate changes in whom you want to leave your fortune to. Be sure that the people you name in your will are still alive and well and can serve their job as executor or guardian. You may be leaving your estate to people who have long been deceased: a fine gesture, but doubtful they need it. You may be leaving money to someone you don’t talk to anymore: good for them, not so good for you. Perhaps it’s time to dust off those old documents (if you have them) and update them. Just like the markets, insurance coverages change. When was the last time you looked at the declared value of your home and compared it to the fair market value and replacement value? When was the last time you looked at the death benefits of your life insurance to see if it is enough to have your loved ones continue to live it the manner they have been accustomed to? Remember: the theo-

ry in estate planning is for the remaining family members to live on the interest generated by the lump sum of the death benefit, not ON the principal. If you have a million dollars of death benefit at 5%, you can consider the policy to afford $50,000 a year to your remaining family members. Think about the $50,000, not the million dollars: is it enough or too much? Having too much insurance means paying more than you need to: be sure to evaluate how much you need and adjust accordingly. Just like getting in the car every day expecting it to start when we don’t service it, or expecting clean clothes in the closet when we don’t do the laundry, things change, and we need to keep things in check periodically. We need to review them, and do what is necessary to produce a positive outcome. Otherwise, the same things will happen over and over and over again - just ask Charley Harper.

HEROES OF THE MONTH GEORGE BERGER & CANDACE ROBINSON

The great cartoonist George Schulz once said, “Happiness is a warm puppy.” Candace Robinson and George Berger of Therapy Dogs of Rockland couldn’t agree more. That’s why Gary Parahus, the owner of Gary’s Gutter Services, and Rivertown Magazine have chosen them as the March 2019 “Heroes of the Month.” Therapy Dogs of Rockland is an entirely volunteer-based, not-for-profit organization whose registered teams of handlers and their dogs regularly visit nursing homes, hospitals, rehabilitation facilities, schools and libraries to bring the joy of human-animal companionship to everyone. “Reliable studies have shown that animals, especially dogs, have significant effects on humans’ comfort and well-being,” says Berger. “We want to provide companionship, relaxation, nurturing, entertainment, mental stimulation, and, at times, physical assistance.” Therapy Dogs of Rockland has 40 registered therapy dog teams in Rockland and Westchester that participate in the Reading Education Assistance Dogs (READ) program. The children in the program read to the dogs at schools or libraries. According to Robinson, the dogs’ loving and non-judgmental presence provides a calming effect on children, making them more confident readers: “The kids

really light up, and that attitude promotes more enthusiastic reading. And it is fun!” The READ program has been so popular that it has earned a nationwide reputation as an outstanding method for helping children of all ages to improve their reading skills and comprehension. Sometimes a dog is the only thing that can heal a broken heart. Therapy Dogs of Rockland also visits individuals at rehabilitation centers, senior citizen centers, and hospitals. “We’ve seen depressed, sick and lonely people literally come back to life when they interact with our dog and owner,” says Robinson.

As The Arc Rockland celebrates its 65th Anniversary as

a family-based organization for people with intellectual and developmental disabilities, Carmine G Marchionda, Chief Executive Officer, reflects on its humble beginnings.

“When Audrey McCue was told by a pediatrician 65 years ago that the best thing she could do with her child was to ‘put her away in an institution because she was going to ruin their lives, her brothers lives, and her marriage,’ she was shattered. Ms. McCue, along with other parents with children who had developmental disabilities disregarded the doctor’s advice and began to meet in the basement room of Finkelstein Library. George T. Ashforth, Director of Happy Valley School in Pomona made a room available to children with disabilities,” says Marchionda. Parents dug deep into their pockets to pay the salary of the lone teacher who would begin the process of educating their sons and daughters. Often, with other offspring in tow, mothers would sit outside the classroom door at Happy Valley School, glad that something was, at long last, available to their sons and daughters with disabilities. The success of the families’ first tentative steps in educating

their children gave the group the courage to move forward. If the children could learn to speak, perhaps some of them could learn to read and write. By 1954 the network of parents had grown in numbers and determination. Emboldend, they established The Association for the Help of Retarded Children (today known as The Arc Rockland), a chapter of The Arc New York. In addition to providing services to 1,200 individuals with developmental disabilities, “The Arc Rockland is the 16th largest employer in the County with more than 750 employees,” notes Marchionda. “From educators, to therapists, to the people who work in our business office, to our Direct Support Professionals, we pride ourselves on teamwork.” Agency offerings include a preschool, employment training and job placement, residential opportunities, volunteer experiences, a primary care medical practice and recreation for people of all ages. “Our children’s services division is located in New City,” says Marchionda. “We oversee 30 homes for adults with developmental

disabilities situated in towns and villages throughout the County. And, we operate a series of hubs located in Suffern, Congers, Orangeburg, Pearl River and Nyack.” Marchionda explains that small groups of men and women with similar interests begin and end each weekday at one of the hubs before setting out for activities within the community-at-large. “For some, this might mean a session at the local fitness center. For others, it might include a visit to a local art gallery, lunch at a local pizza shop or volunteering at one of more than 100 not-for-profit agencies in Rockland and surrounding communities.”

Bowen succeeds Gretchen Bell, who retired in October after serving as Nanuet’s Director since 2000. “We are excited to welcome Jessica as our next visionary leader,” said Michelle Mattei, President of the Nanuet Public Library Board of Trustees. “She brings a wealth of experience and expertise and will be an asset to our community as we further the library’s mission of providing free and equal access to information through exceptional programs and service.” Previously, Bowen was the Director of the Dennis P. The median sales price in Rockland (inclusive of the rivertowns) was $430,000, up 0.5% over last year.
