THE WELL FED YOGI BY MARY CALLAN

So many people have food preferences these days. And, this can become a tricky proposition when planning a party! One of the healthiest and fastest-growing trends is a vegan diet. With absolutely no animal products allowed, planning a vegan menu can feel daunting. Here are a few delicious purely vegan recipes perfect for a wedding, or any party. You will never miss the meat or dairy, I promise!

INGREDIENTS FOR THE LEAFY GREENS • • • • • •

1 whole wheat sourdough baguette or boule 1 clove of garlic 2 tablespoons of toasted pine nuts 1 tablespoon of olive oil 2 cloves of garlic, minced 1 bunch of your favorite leafy greens chopped— kale, spinach, chard, broccoli rabe, dandelion greens—or a combination is really lovely ¼ cup of water a drizzle of balsamic or red wine vinegar the juice and the zest of a lemon fresh basil and parsley for topping

FOR THE TOMATO BRUSCHETTA • • • • • • • •

1 whole wheat sourdough baguette or boule 2 cloves of garlic a quality hummus 1 packet of cherry tomatoes, preferably tri-colored 2 tablespoons of olive oil 1 tablespoon of balsamic or red wine vinegar 1 – 2 teaspoons of minced red onion a scattering of toasted pine nuts

Method:

For the Leafy Greens Bruschetta 1. Toast the bread. Cut one of the garlic cloves in half and rub the toast with the garlic. Toast the pine nuts by placing them in a dry pan over a medium heat. Watch them closely and shake the pan every so often so they brown evenly and don’t burn. When golden brown, remove them from the heat to cool. 2. Place a tablespoon of olive oil in a pan and add the minced garlic cloves. Sauté for a couple of minutes. Then, add the washed greens and add a quarter cup of water. Stir and cook until tender. Remove from heat, drain well, and drizzle a bit of balsamic or red wine vinegar. 10 / Rivertown Magazine March 2020

3. Spread some hummus over the toasted bread and top with the greens. Squeeze over a little lemon juice, lemon zest, a drizzle of olive oil, a few pine nuts, and some freshly-chopped parsley and basil. Serve immediately. For the Tomato Bruschetta 1. Toast the bread. Chop the tomatoes into quarters, place in a bowl, and mix with the olive oil, balsamic or red wine vinegar, garlic, and red onion. 3. Spread some hummus onto the toast, top with the tomato mixture, and sprinkle over some freshlychopped parsley and basil, a squeeze of lemon juice, and a drizzle of good olive oil. Serve immediately.


Method: For the cake Pre-heat the oven to 350° F. Line a cupcake tray with paper liners. In a large bowl, mix together the flour, baking soda, and salt. In a medium-sized bowl, mix together the sugar, vanilla extract, canola oil, apple cider vinegar, and almond milk. Pour the wet ingredients into the dry. Stir well until the lumps have dissolved. Fill each cupcake liner ¾ full. Place in the oven and bake for 20-25 minutes until the tops bounce back when you touch them. Remove from the oven and allow to cool in the tray for 5 minutes. Then, transfer to a baking rack to cool thoroughly. Don’t be tempted to frost until the cupcakes are completely cooled down!

PINK GIN! • • • • • •

3 oz of gin, chilled 1,275 ml bottle of rose lemonade, chilled lemon and lime slices 3–4 raspberries a sprig of fresh mint ice cubes

For the frosting Place all the ingredients in the bowl of an electric mixer, and beat until smooth. If the frosting is too thin, add a little more confectioners’ sugar. If it’s too thick, add a tablespoon of almond milk. Frost and decorate. E

Method: Pour the gin into a glass and add the rose lemonade. Rub the mint leaves gently between your fingers to release the oils and aroma. Add the mint, lemon, lime, raspberries, and ice cubes. Stir, sip, and enjoy.

VANILLA CUPCAKES WITH VANILLA FROSTING

For the cake • 1 ½ cups of all-purpose flour • 1 teaspoon of baking powder • ½ teaspoon of baking soda • ½ teaspoon of kosher salt • ¾ cup cane of sugar • 1 teaspoon of vanilla extract • ¼ cup of canola oil • 1 tablespoon of apple cider vinegar • 1 cup of almond milk For the frosting • 3 cups of confectioners’ sugar • 6 tablespoons of vegan butter (Earth Balance is perfect) • 1 teaspoon of vanilla extract • ½ teaspoon of kosher salt • 1 tablespoon of almond milk (add only if the mixture seems too thick)

A

rmando Cerdeira is a traditionalist. He’s been running Quinta Steakhouse for 16 years and has done very little to change the menu or the aesthetic of his restaurant. This is a deliberate choice. “I like the idea of consistency,” explained the chef, “I want today’s customers to come in and enjoy the same steak in the same spot three years from now.” His patrons are happy to oblige him. Quinta Steakhouse is a staple of Pearl River’s dining scene, with fiercely loyal customers who love the restaurant for its welcoming atmosphere and classic entrees. After years of operating a French bistro alongside celebrity chef, Anthony Bourdain, Armando longed for a place where he could share his food at a slower pace and in a more relaxing atmosphere. “I wanted my restaurant to feel comfortable, almost like a living room.” Armando had grown tired of living and working in NYC. When a suitable location opened up on Pearl River’s Main Street in 2004, the chef was happy to move in and quickly developed a real appreciation and understanding of his new home. Quinta opened its doors on St. Patrick’s Day, Pearl River’s most celebrated holiday. He has continued to respond to his clientele. Armando knows his customers. His latest promotion, “March Seafood Madness,” is a case in point. During a month when many diners will be abstaining from meat, Quinta will serve a smorgasbord of seafood entrees at special prices. Lobster tails imported from South Africa, branzino from Spain, and Blue Point oysters caught right here in New York are just some of the highlights of a menu packed with fresh seafood. Quinta will also be offering special deals on some of its most popular seafood offerings including a savory seafood risotto and grilled Atlantic salmon. “I can never make enough salmon,” Armando wryly observed. Other dishes include shrimp cocktail, lobster stuffed with crabmeat, cockles served in a garlic sauce, and clams oreganata. “I believe in the classics,” said Armando. Quinta Steakhosue is known not only for its steaks. They serve a blend of French, Portuguese, and American cuisine—including lamb chops, vegetable paella, and Pasteis de Bacalhau Cod fritters with smoked paprika aioli. The prix fixe lunch menu features a selection of sixteen entrees and a soup of the day for only twelve dollars. It’s a great opportunity to try out menu staples like Paella Valenciana with saffron rice, chicken and chorizo, or

Pork Paillard, thinly sliced pork loin with port wine sauce. To complement the dishes, the bar stocks an impressive selection of wines from Portugal and Spain. Armando and his steakhouse have built a wonderful relationship with the town. He is proud to share that 95% of Quinta’s business comes from regular customers who visit at least once a month. A priest, a rabbi, and a mediator walk into a coffee shop… …and a Rivertown reporter asks them,

I

t’s not easy,” says the mediator, Mark Paige. “It’s a lot of compromise and hard work.” “It’s not something static,” adds Father Francis Conka. “It’s dynamic. You have to build a relationship every day, over time.” “It’s more about self-sacrifice,” says Rabbi Chaim Zvi Ehrenreich. “If you move to the side to make space for the other, they make more space for you.” The reporter sits back and reflects on their responses. “Are you married?” they inquire, almost together.

The reporter shakes his head. No, he’s just looking for some perspective. The three men have all just met each other, but it’s already starting to feel like they are on the same page. That’s fitting in a way. Despite their seemingly divergent philosophies and backgrounds, each man has devoted a part of his life to the same mission: helping couples get along. They agree that a good marriage means hard work. It takes consistent effort and a degree of self-sacrifice to maintain a healthy union. So, what does that effort look like? It’s a matter of mentality. According to Rabbi Ehrenreich, “In popular American culture, we look at marriage as We are going to get X, Y, and Z. We are consumers. If a couple approaches a marriage as What can I give? and not What can I take?, then they are on a totally different playing field.” “Communication, I think, is the key,” says Mr. Paige. A happy couple makes the time to talk to each other. “That’s the biggest factor to a successful marriage. You have to foster trust and put your egos aside.” Father Francis agrees. “When parishioners come to me, my very first question for them is: How much time are you spending with each other? You need to have time for each other,” he urges. “Don’t forget you need to be each other’s number one.” A healthy couple prioritizes each other’s needs.

Ok, so what is the common thread among these answers? “All of that brings it down to a sense of intimacy,” surmises the mediator, “and I’m not talking sex. Intimacy is a lot more than that.” The holy men nod in agreement. “You want to have a person you can respect, you can trust, you can tell them anything without fear of judgment. It’s a very difficult thing to do, but that’s the goal to strive to,” continues Mr. Paige. Alright, the ultimate goal is intimacy, and a couple achieves intimacy through honest communication and dedicated empathy. Now, what does it take to establish that? Rabbi Ehrenreich encourages troubled couples to keep a daily log of things they see their partner doing. Every day, for one month, he asks them to write down something they saw their spouse do that they really appreciated. “That can help healing, and they can see that there are things they do like about their partner.” Even small steps like that can help save a marriage. Sometimes, couples just need to be reminded why they chose each other in the first place. “Romantic love fades,” concluded Mr. Paige. “What’s more important, in my view, is that you like the person. There is a big difference between love and like.” Then, companionship, it seems, is the heart of intimacy. If and when passion fades, affection must take its place.

“The most beautiful love is at not at the beginning but at the end—when they comfort and support each other,” said Father Francis. A lasting marriage is built on three things then. The will to work at it every day, the humility to understand someone else’s needs and to put those needs first, and an appreciation for your partner as a person. Marriage, these men agree, takes real effort. “We’re living in a throwaway society,” laments Mr. Paige. “Marriages fail because people don’t want to try, and it’s easy to give up.” “It’s like a one-time use plastic cup,” Rabbi Ehrenreich quipped. Their solution? “Don’t base marriage on what you see in the movies,” recommends Rabbi Ehrenreich. “It’s not a lottery where you bought the winning ticket and you’ve made it for life.” “Commitment is the biggest factor for a healthy relationship,” said Mr. Paige. “People need to put in the work.” “It’s about the forgetting of me because of you,” believes Father Francis. “A marriage will succeed when a couple puts their all into making it a success.” So what’s the punchline to this meeting of the minds, who went into a coffeeshop to reflect on the maintenance of sacred unions? Perhaps it’s this: Marriage is a practical meeting of the hearts. And, that’s no joke.

I’m going to be a June groom. As the pace of my march toward matrimony quickens, my mind is a jumble of too-near deadlines and overthe-top possibilities. One thing that has eased our anxiety is that everything in our wedding will be local— the venue, food, and jewelry will be selected from small businesses here in Nyack. (The dress is hyper-local: my maker-mate, Marisol Diaz, is attempting to design and fabricate her own wedding gown, while keeping her eye out for a local plan-b option.) So as I reflect on all of the vendors that I have come to know through my Nyack Sketch Log, here are some for you to consider for your short list of places to get flowers, rings, cakes and gifts when you and yours chime the wedding bell. Bluefield Farm Joy Macy’s abundant and aromatic flower farm will soon be in full bloom. Joy can tell the love birds, because they show up early. The worm they seek is the brightest bouquet of flowers from her Bluefield Farm. I’m in that flock. Every week for the last three years, when in season, I buy flowers for my sweetheart. People see me with an armful of color and fragrance and ask,“What’s the occasion?” I say, “It’s Farmer’s Market Thursday in Nyack.” Antique Masters In the age of reduce, recycle, reuse, why not salvage a treasure from Antique Masters as a wedding gift? You might think that Mohamed Mahmoud’s passion for antiques was inspired by the ancient monuments from his Egyptian homeland: the pyramids packed with antiquities that have lured tomb raiders, scholars and tourists for centuries. But it was the French occupation of Egypt that introduced decorative furniture into their popular culture. “Every home, rich or poor, had fine furnishings,” Mohamed says.

We are constantly trying to reinvent a shot that we have done before, not wanting to give our current bride something that she has seen us do. The sun setting ever so slightly in the background was the inspiration to move the subject off the band shell, with the shell’s incredible texture as the main focal point. We have ten different versions of this structure— none of them are the same!

One of my favorite shots we have ever created. As we stood under cover, allowing a freak rain downpour to pass, we noticed that this part of the dam was a perfect perch. It’s become very trendy for the bride to get her bridesmaids matching robes. As you can imagine, shooting this differently every time is nearly impossible. Not this time. Danielle had the idea— we just had to make it a reality. Who knew she would be so good at it? All we had to do was smash the shutter button as she kicked off the party.

Ring shots are a staple at every wedding. When I started it, was always done in someone’s palm, or on the fingers of the bride and groom. We quickly became bored with that. Let’s admit it, shoe shots are boring. As we wait for the bride to finish her prep, we are constantly seeking an alternative to shooting shoes on a dresser or on a bed.

THE SHOW MUST GO ON! My toughest catering gig was a wedding during a hurricane. No power, everything was going wrong, but I knew I couldn’t tell the bride that we would have to cancel. So I worked with a generator in the kitchen, and sent the staff out to buy as many candles as they could find to light the tables. Once we got it set, the room was so romantic— candelabras everywhere. Everyone embraced the moment and enjoyed themselves. PREPARE TO BE PREPARED Give yourself ample time to order the dress—it needs time to arrive, for the alterations, and for multiple fittings; also make sure to have scheduled trials with your makeup artist. Make sure you love the agreed-to style of makeup and that your artist is reliable. Don’t compromise regarding how you want to look and feel. If you haven’t found someone yet, keep looking; there are so many great local services to choose from. That way, when the big day comes, you are comfortable knowing what you will get, and you will be that beaming bride you deserve to be. In my 17 years in the wedding dress industry, I have had brides come into my shop in tears on the day of their wedding, just hours before the ceremony—looking for a dress and asking to use our bathroom in order to completely remove and re-do their makeup. HANG WITH THE DJ My advice for brides and grooms who are considering a DJ for their upcoming wedding is to make sure the person you hire gets to know you. When I'm hired for a wedding gig, I want to know what music the bride and groom grew up with, what they like now, and what they think will appeal to their freinds and family. WHAT THE BRIDE DOESN'T KNOW... Before opening 14 & Hudson, I was a wedding planner. During one wedding, moments before the ceremony was about to start, the groom’s mother fell over a parking cone and broke her arm. The ambulance took care of her right after the ceremony, and no sooner had she returned to the reception did her twin sister slip in the bathroom and break three ribs! We decided not to tell the bride until later—and we asked the ambulance to keep the flashing lights and sirens off!

DIARY OF A BRIDE-TO-BE BY JESSICA CHOI

DEAR DIARY, A

fter two and a half years of dating a.k.a. two and a half years of making it a point to see each other every day minus the occasional out-ofstate work trip and regardless of the hours and hours of commute time, back and forth, we are now engaged…! I’m happy to report that tucked away in some of our most unexpected moments of this chapter—if we look close enough— were lessons I am more grateful to have learned than not. That there is hardly a right or wrong way in going about this wedding prep journey (or any life journey) was one of my greatest takeaways. Guides and budgets can help tremendously, but at the same time, I have found that there is no one formula to perfectly planning the day of the wedding. In fact, I no longer believe engagements and weddings are meant to be the perfect occasions they are chalked up to be—and that is okay. At least what I mean is that the picture of perfect talked about everywhere, by everyone, is hardly what makes the day a good one, a memorable one; those elements tend to be a part of the larger illusion—that the

party is what makes the day. For fellow brides-to-be who are feeling stressed out, I get it—how can we not be—when trying to orchestrate a day around satisfying a room full of arguably the most important people in our lives—all the while looking like cake toppers? As much as it is, it also isn’t about the party. When the nittygritties of putting on this celebration start to become overwhelming again, I now like to give myself this reminder: the bare minimum required to make your special day the best it can be is a happy you, a happy hubbyto-be, a happy as can be family and happy friends—your guests will ideally be there to celebrate the love; it is not a celebration or a judgment on how spectacular your event planning skills are per se. Efforts in planning can make paramount differences, no doubt, but not when it’s to the point you’re pulling hair and it’s stirring negativity internally or between you and your partner, or to those around you. While stress is natural, I think there are ways to rebuff it. There may be an excess of pressure and focus put on these special milestones nowadays or maybe it always was like this and always will be—the proposal, the first time trying on a wedding dress, the day of the wedding—versus what got you two to that point. Yes, these are supposed to be the “best days of your lives” as a couple. However, I don’t believe that it’s entirely

in the planning of it all—down to how many tiers your cake will have—that will have made your special day that much more perfect. What makes the day feel perfect though when looking back on it, ten, twenty, forty years down the line, I imagine, is how connected you had felt to your partner the day of and how happy your loved ones are to see you together. I say prepare to be each other’s family and focus on how to build the best family of your dreams even if it’s just you two; you are vowing to become one, a family unit. Understand that imperfection can be a part of happiness. Happiness can come from the feeling of overcoming obstacles hand-in-hand or understanding even better what makes each other tick through the challenges—I believe that there is always more to learn about a person, even if that person is already your best friend. With this in mind, bouts of happiness are sure to spring up in the most surprising moments. The best thing I could’ve done for myself was, at some point in the process, chucking the idea of that picture perfect wedding; in my experience, this has given me greater peace of mind and has left me the room and given me the liberty to re-align with the stuff that matter. Here is my reverse checklist—what I ended up checking off—some intentionally, some inadvertently, and am most importantly grateful to have done.

SOME WORDS OF ADVICE FOR BEFORE THE WEDDING 1. Don’t forget that you are prepping for your marriage as much as you are prepping for the day of your wedding. (Seek a form of professional pre-marital counseling to make sure you are on the same page before saying “I do.”) 2. After the proposal, you will get asked questions—lots of them and on repeat—from everyone you know and don’t know. It’s okay though because it’s natural for people to care and be curious. Brace yourself and enjoy the moment. Don’t let stress start overtaking the process from the start. Stress will inevitably come; as easily as it arrived, let it go. (And, when you are overwhelmed, seek out your girlfriends. Have dinner and wine; blow off any steam. Encourage him to do the same.) 3. Spend time with your fiance's family and, organically, get to know them even better. (Become family before you officially become family at the wedding.) 4. Go on a mini “Me, Myself, and I” trip. In this time of everything couple-focused, re-connect with yourself and understand that the two of you are individuals as much as you are a pair. (Enjoy yourself and learn not to feel guilty about having “me” time. I don’t care what anyone says, having the periodic “me” time is so important and healthy for everyone.) 44 / Rivertown Magazine March 2020

8. You don’t need to rush it at all but do try and have a tentative date in mind; then, be flexible if it gets pulled forward or pushed back. The day will happen, and when it does, trust that the time will be right.

5. Get into each other’s hobbies now if you haven’t yet and also come up with new hobbies you will enjoy doing together—especially for couples who are not yet living together. (One great activity you can transform from chore to hobby is cooking—either take a course or get creative and stir up new recipes at home. Eating multiple meals a day is something no one can avoid. Cooking together can be fun and is great practice for doing everyday life together.) 6. Purchase a man-gagement ring. (The whole world knows you're taken, so they should know he is too! Just kidding—no, but, really. I love that people ask him about the ring and it brings “us” into conversation and gets him to talk about the fact that he is engaged too, throughout his day, even when I am not there. This doesn’t have to be super expensive because the band is on its way! Have him wear the mangagement ring on his right hand and save the left hand for the wedding band. It’s also great practice for men who don’t normally wear jewelry.) 7. Do something nice for him. (Don’t make the mistake of thinking you are the only one meant for surprises! Sprinkle big and small surprises into the time you spend together. Have fun; chase after and remind each other of the spark and the joy of life.)

9. Make sure you have other couple friends to hang out and chitchat with; these conversations may be different than those you have with your single friends. Be open, relate, and share your experiences! Or else, make new friends together. (This doesn't mean to kick your oldest friends to the curb—but I think there is something to be said about meeting new people together and continuing to forge new connections both individually and as a couple!) 10. Ultimately, put you and your fiance's happiness before the material beauty of the day. (Choices, choices, choices—they're endless. So, how not to get swamped by decision fatigue? A recent piece of advice from an amazing friend has really stuck with me. Go relentlessly in the direction that makes you feel the most yourself; seek what makes you feel the most joyous. Is it going to be sneakers instead of heels under your wedding dress? The aesthetics will follow when you can stand by what you decide because it makes you smile—despite what anyone else might think, the love will shine through; so pat yourselves on the back, be grateful, and enjoy what you have put together for this day!) Plus, as my friend has also reminded me: we live in the era of photoshop. (Erase a blemish here or digitally enhance the light or hues of a room.) But, you can never relive the day and the days leading up to these most cherished blips of time—so, be happy and practice love. Cheers.

There are weddings throughout the year of all different types—destination, Black-Tie, beach, winter, summer, outdoor...and the list goes on. Sometimes, it can be difficult knowing what suit or what shoes to go with for the occasion. The Many Facets of Barry Fixler

“Don’t move or I’ll kill you!”

U

ndaunted, Barry Fixler ignored the threat, slapped away the gun pointed in his face, and slid along the counter to retrieve his own weapon and fire at the armed burglars. Barry is widely known for his 2005 Valentine’s Day thwarting of the could’vebeen-deadly robbery attempt at his Bardonia jewelry store (two suspects in the getaway car had donned surgical gloves and were carrying a body bag). But to truly know Barry is to know him in all his dimensions: A master jeweler, a charitable humanitarian, and a proud Marine. As a mischievous 18 year old, Barry decided, independent of his parents, that he needed the discipline and rigor of the United State Marine Corp. He enlisted right out of high school and was sent to Vietnam to join a unit that was ultimately commended for their role in the legendary siege of Khe Sanh. After completing his tour of duty, Barry returned home, where he met the love of

his life, and married her (after one date). He took classes at Queensboro Community College to earn his degree as a gemologist. And this degree, combined with the legacy of his father’s and grandfather’s wellestablished jewelry business, propelled him to open Barry’s Estate Jewelry in the Empire State Building. “I just had to be on my own. I left my father and just had to do things myself. When I approached the building to be a tenant, they wanted to put me on the 90th floor because everything else was filled up. Then they told me there was space on the 13th floor, but nobody wanted it. ‘I’ll take it,’ I told them. And I was there for 16 years.” Subsequently, Barry opened up shop in Bardonia, where he specializes in estate jewelry and the highest quality diamonds. He is a G.I.A. certified gemologist with an acute eye and appreciation for finely-made unique estate pieces. He has an exclusive collection of jewelry dating back to the 1920s, from art deco pieces to contemporary must-haves. Barry and his staff pride themselves on

taking the time to help each and every one of their customers to find the perfect gift for any occasion. Barry does more than help people with jewelry. He is also a true philanthropist and is the founder of The Barry Fixler Foundation. “Between 2002 and 2004, I saw all the men and women coming back from Afghanistan and Iraq severely wounded. This country didn’t know what to do with them, and they needed support. They totally inspired me.” Sergeant Ed Ryan was shot twice in the head in Iraq in 2005, the same time of the shootout at Barry’s Estate Jewelry. “He gets shot in Iraq, is close to death, and I have this incident. It’s almost impossible to think how these two events could be connected.” Barry felt it was serendipity. He went to visit Sergeant Ed Ryan who was recovering at Helen Hayes Hospital. “He needed $50,000 to equip his house to be accessible—so that he could return home. The government was not going to take care of him. A light went off: I’m going to give Eddie Ryan back to the community, back to America.” And, so

began Barry’s legacy of veteran support. He successfully raised the funds to bring Sergeant Ryan home with the help of the community who so wholeheartedly supported him after the burglary. In 2010, Barry published the autobiographical Semper Cool: One Marine’s Fond Memories of Vietnam. The subtitle might perplex some with his referring to memories of war as “fond.” Barry explains, “When I look back at the friends I made, witnessing life and death on a daily basis and seeing myself grow into a man, it made me love this country even more. You realize the best thing in life is giving back to your family, your community, and your country.” One of the hallmarks of a true hero and a fearless leader is to do the things that most others are not willing to do. THE LINDGREN SCHOOL & SUMMER CAMP Where Childlike Wonder is Alive and Well

A

t a time in our society when it often feels like simple virtues such as patience, stillness, and natural creativity are almost nonexistent, The Lindgren School is a breath of fresh air, quite literally. Situated among majestic trees and 3 ½ acres of tranquil forest, the school is a suburban oasis where children learn through the magic of play and the power of imagination. Founded in 1944 by engineers, Jean and Ted Lindgren, the school served the wartime needs of women being called to the workforce. Adri Lindgren-Turrell recalls her mother, Jean, saying, “I told the mothers, ‘You go to work, I’ll take all the kids.’” Lindgren-Turrell is proud to say, “It is still the second generation running the school. But now, sitting next to me, is the third generation.” Adri laughs, prodding at her daughter, Olivia Turrell, current Lindgren teacher. 72 / Rivertown Magazine March 2020

Lindgren’s legacy is not only rooted in its family ownership, but also in the families who attend year after year. This past December, the school celebrated its 75th anniversary with alumni ranging from ages 6 to 72. Next year, we will see the first third generation students. Teacher Olivia explains what makes Lindgren unique. “The grounds and facilities here are unlike anything in the region. Our architecture and landscape were all designed with a young child in mind, for their intellectual, physical, social and emotional growth. We have large, sunny classrooms that have a home-like feeling. We have a natural sand playground, with trees to climb and boulders and logs. We are probably one of the only schools in the area that has its own organic garden. We have goats, chickens, horses, pigs and a donkey,” she laughs. “It really offers a rich environment for learning.”


Adri adds, “Two main features that set us apart are our play-based curriculum and philosophy, and the amount of time we spend outside. We go outside every day. I wanted to be on the big stage, so I finished my BA in three years, instead of four, and completed my MM as well. I then, came to the United States and applied to all the big New York City music schools. I was accepted to Mannes College of Music at New School University and then was lucky to be one of the few chosen to take a master class with Renata Scotto. It was just amazing to learn from such an accomplished star. I have also had the privilege of working with Placido Domingo. JD: What is your most memorable performance? AV: There are many that stand out. But, probably my strongest role was Lucia Di Lammermoor by Donizetti. This role was to determine whether or not I would perform at the Columbia Artists Management Nation Tour in the USA. At the end of the last aria, I had a long standing ovation! it was such a long ovation! JD: Who most inspires you? AV: I’m inspired most by the achievements of my parents and grandparents. One of the biggest inspirations is their accomplished social stature and how they inspired me to really push myself and push the limits. Another huge inspiration for me is the audience. The audience is always, even in hard times, there for me. I always go out and sing for them. At a time when opera and culture are in the shade, it’s very important to pay attention to the classical arts, because they are the source of modern art as well. In our society, there are so many unimportant things, with no real value, in your face all the time. So I appreciate and am proud of inspiring young people to learn about opera and classical music through my performances.

Jeannine Deramo: Your voice is incredible. How and when did you first begin singing? At what age was your first performance? Anna Veleva: I remember loving music and the arts since I was very young—probably around two years old. My grandparents were accomplished musicians. My uncle taught me voice, and I took private lessons in piano, as well. When I was about thirteen, I took the initiative and organized my school’s first concert. The performance was so successful that it went on to become an annual tradition. JD: Tell us about your education—musical and otherwise. AV: My grandfather Georgi Zlatev-Cherkin was the founder of the Bulgarian Classical Vocal Schooling Method and aProfessor at the State Academy of Music in Sofia Bulgaria. My parents wanted me to go for a more traditional profession, to become a doctor, but I decided I wanted to go to the State Academy of Music in Bulgaria and become an opera singer. I committed to this goal and started preparing six days a week, which paid off, as I was accepted. I knew 74 / Rivertown Magazine March 2020

JD: What do you want our readers to know about opera? AV: My mission is to make opera popular for everyone. It’s considered exclusive for certain people and the reason is only because they have listened to it at a young age. When a musical piece is beautiful and well-performed it touches everyone’s soul! I’ve experienced singing at various events and on stage, and younger people will say after, “Wow! This was so amazing! I didn’t realize how much I love it.” Opera is beautiful music that can be loved by everyone. I don’t believe that opera is just a high-class art form. Mozart’s Komische Oper was considered pop culture during his time. It needs to be introduced to young adults! Children are simply unfamiliar with opera—they don’t know about it. But when they hear it, they enjoy the beauty of it. The classics and the arts are fundamental for the development of a human being—they enrich the soul and the brain. ANCE CRAZY: I’m a comparative newly-wed. I first met Candice when she advertised in this magazine, Rivertown. As she often says even to this day: it pays to advertise. She got a lot of good business through the ad—and we met and fell in love. For the big occasion, I knew I’d have to to learn to dance so we went to a local school run by Russians. The history of me and dancing is a sorry one. Having gone to a boys-only school, I didn’t have much chance to practice with the opposite sex. And, when I DID learn to dance, I could just about master a very wobbly waltz. One, two, three, four, TRIP. Anyway, for our wedding we practiced, practiced and practiced—cheered on by our Russian teachers. Finally, we graduated and the Russians applauded us out the door. 78 / Rivertown Magazine March 2020

Then came our big day. I was dressed in a kilt to celebrate my Scottish ancestry. Candice looked gorgeous in a traditional white gown. The service was at Grace Episcopal Church in Nyack. The weather was great, all our friends were there, and it was a wonderful day. A dream day for any bride or groom. Then, the party continued at the nearby Hudson House. That was when I was due to make my big dancing debut. We’d rehearsed it dozens of times. There was no way we could get it wrong. Right? Uh-huh, Wrong. We started off beautifully. Then, my three left feet kicked in—literally. Our big wedding number slowly turned into the dance of the Sugar Plum Fairy performed with arthritic elephants. I was the elephant. Candice, god bless her, was the fairy. As the dance stumbled to a climax, I forgot my final, supposed-to-be graceful finale. When the dance ended—before I did—I suddenly remembered that big graceful bow. We both came to a sudden stop. We bowed—and giggled, the disaster at an end. So, to all of you who plan on getting married this year and plan on taking the dancefloor spotlight, let this be a caution. Practice, practice, practice. You don’t want the celebration of your holy vows to end up being an unholy disaster. And to my wonderful wife, Candice, thanks for an amazing nine years.

And, now, for some wedding-themed jokes: Why does a man twist his wedding ring on his finger? He’s trying to figure out the combination. A man tells his doctor that he’s incapable of doing all the things around the house that he used to do. When the examination is over, he says, “Okay, Doctor. In plain English—what’s wrong with me?” “Well, in plain English,” says the doctor, “you’re just lazy.” The man nods. “Now give me the medical term so I can tell my wife.” After we had lunch with another couple, the women went shopping, and the men opted to go sailing. Bad decision—a storm blew in while we men were out on the water. Making matters worse, the tide had gone out, grounding the boat. We had to climb overboard and shove it back into deep water. As my friend stood there—ankles deep in muck, muscles straining against the weight of the boat, and rain pelting his face—he grinned broadly and with unmistakable sincerity said, “Sure beats shopping!” At the cocktail party, one woman said to another, ‘Aren’t you wearing your wedding ring on the wrong finger?’ The other replied, ‘Yes, I am, I married the wrong man.’ Rodney Dangerfield: My wife and I were happy for twenty years. Then we met. George Burns: I was married by a judge. I should have asked for a jury. L

r. Miriam Aronoff’s office feels a little cozier than the average medical building. When you step into one of her exam rooms you’ll find everything you’d expect to see when visiting the dentist: X-ray machines, a reclining chair, delicate silver instruments carefully arranged on sterilized tray. You’ll also notice a television angled toward the exam chair, a giant jar stuffed with stickers, and a sizeable collection of toys. Dr. Aronoff and her staff want to provide more than just a dental treatment. They understand the apprehension that so many people—especially children—feel about going to the dentist. They know that making patients feel comfortable is the first and most 80 / Rivertown Magazine March 2020

important step toward helping them. “We work very hard to put each person at ease,” explained Dr. Aronoff. “We care here.” Dr. Aronoff has been practicing dentistry in Rockland for over a decade and in that time has grown her office into a county institution that helps thousands of people. She began her career studying at NYU College of Dentistry before completing her residency at Coler Specialty Hospital, a long-term care facility on Roosevelt Island. During her tenure, Dr. Aronoff worked on everything from routine cleanings to full-mouth reconstruction and developed a diverse skill set. “I was exposed to everything while I was working there,” she reminisced.


Thanks to her vast experience and friendly demeanor Dr. Aronoff’s practice quickly became one of the most popular offices in Monsey. In fact, they became so popular that they were soon able to expand to a second location in Wesley Hills. Dr. Aronoff credits her success to the personal rapport she and her staff strive to establish with every one of their patients, especially the younger ones. “I get a lot of parents who tell me their kids were traumatized by going to the dentist, and I work very hard to make sure they don’t feel that way here. I come up with options that they can chose from so they feel more comfortable and in control.” The practice has a total of has eight dentists on staff, and each one of them works with their own specific pool of patients. The dentists who treat you during your first visit will be the dentist who works with you during every subsequent examination. “That way the dentists get to know you and your mouth, while you, as a patient, get to know them.” The dentists build lasting relationships with their patients and “work hard to establish a treatment plan that makes [patients] feel more comfortable.” Sometimes that means scheduling fillings one at a time so a patient won’t feel overwhelmed with a procedure. Sometimes it’s as simple as providing them with a fidget spinner to play with during a tooth cleaning. Dr. Aronoff’s practice treats patients of all ages and incorporates “state-of-the-art equipment” to provide general, cosmetic, and pediatric dental care. They offer treatment plans for all of their patients “which tell you everything that needs to be done from A to Z” and a 24hour phone line for emergencies. ADORE YOUR BODY YOGA IS YOGA A RELIGION?

Y

oga newcomers sometimes wonder if it’s a religion. You may recall a prior column in which I went over various styles of yoga. Some place more emphasis on the spiritual aspects of yoga (Kundalini, for instance), while others have strived to make yoga absolutely secular, translating the teachings of yoga into self-help and wellness messaging (e.g. Hot Power Yoga). It’s undeniable that yoga has roots in Vedism, Indian holy texts composed around 1900 B.C. Vedism’s offspring are Hinduism, Jainsim, and Buddhism. Other more recent texts yogis may read are The Bhagavad Gita (The Gita, for short) and The Ramayana, epic poems with stories about gods, demons, and people, caught in crucibles of ethics and morality. It’s more likely that a modern yoga student might read The Yoga Sutras (The Sutras, for short) before ever digging into those others. The Sutras are a short guidebook to understanding the nature of consciousness and human suffering. It’s important to note that these texts say little about yoga postures which comprise the majority of what’s taught in modern yoga classrooms. A better question might be, “Can religion and spirituality be pried

apart?” In other words, “Is it possible to be spiritual without being religious?” This question also begs the inverse: “Is it possible to be religious without being spiritual?” I often find that definitions are helpful. Religion (noun): the belief in and worship of a superhuman controlling power, especially a personal god or gods. Spirituality (noun): the quality of being concerned with the human spirit or soul as opposed to material or physical things.

Can one be concerned about the spirit or soul without wondering what or who made the world? This question may explain more clearly why we so often conflate religion and spirituality, as if they are one and the same. They are tricky to tease apart. In my own work as a modern, American yoga teacher, my primary concern is to help our people suffer less. People suffer in so many ways. Bodies hurt. Emotions hurt. Thoughts hurt. The moral and ethical dilemmas we encounter chafe and sometimes cut. The definition of spirituality is

eather Koubek “has always wanted to be in the helping field.� A social worker turned massage therapist (LMT), Heather has spent most of her career helping others recover from physical and emotional trauma. She has a talent for getting along with people and a passion for healing. Her new office in New City allows her to share that passion with an even larger community. Yemaya Massage & Wellness Center was established in 2003 and has grown over the last 17 years into a thriving bodywork practice that is a bit of a departure from the standard spa. Heather has made her office more accommodating while also offering more in-depth and personally tailored treatments than that of an average spa. She and her fellow LMTs offer pre- and post-natal massages, deep tissue massages, and trigger point treatments that target knots in soft tissue. Often, they will employ a combination of many massage modalities depending on the specific needs of their clients.

“We don’t just do a Swedish massage here,” explained Heather. In fact, Yemaya LMTs “never do one modality,” unless a client asks for something specific. Instead, they work with a client to figure out the best approach toward treatment and charge the same rate for every massage. Heather also practices craniosacral therapy, a gentle touch-based form of bodywork “that releases tensions deep in the body to relieve pain and dysfunction, and to improve your whole body’s health and performance.” Craniosacral therapy, and all massage therapy to some degree, addresses the central nervous system—essentially “telling the brain to relax the muscle being worked on,” and allowing a patient’s body to shut down and reboot. Heather’s methods can help patients recover from joint replacements, fibromyalgia, orthopedic injuries, and even conditions such as insomnia and severe stress. A central tenant of Heather’s treatment is sitting down and talking with her clients before every massage to find out exactly what’s bothering them. “I start a dialogue that initially helps to relieve some tension; my LMTs and I listen to what they say and ask questions about everything.” Her goal is to get an overview of a client’s life in order to more fully understand them, and to establish the most effective treatment plan. She believes that pain and trauma are cumulative, and that addressing any traumas a client has endured throughout their life, physical or otherwise, can be useful in helping them recover. Although her treatments have assisted countless clients in recuperating from injuries and trauma, Heather doesn’t like to call herself a healer. “We are just conduits, allowing our patients’ bodies to do the work.” She asserts, “There is no voodoo or magic; we help patients to heal themselves, and we can’t go any deeper than they allow.” Heather works with both adults and children, and her practice provides plans that allow every member of the family to stop in for a massage session. Melvin formerly owed three unisex salons with a combination of 36 years of experience in the Bronx, Queens, and Westchester counties before coming to DSZ. Edwin has been a barber in New York since coming from his home country of Puerto Rico. He is a quiet and reserved but also a very dependable barber. He never calls out sick, works on weekends, and will often stay late just to accommodate his clients’ busy schedules. He specializes in scissor cuts for a great business look. Their charitable activities as owners of Sorce Funeral Home in West Nyack and Sorce Assumma & Shankey Funeral Home in Pearl River are legendary. Many times, when an indigent person passes away, the county calls Sorce and asks if they could “take care of things.” And they always do. The Sorce family believes everyone should die with dignity. “I’m on the Board of United Hospice of Rockland County and every year we donate The Marlene & Joseph Sorce Memorial Cup in memory of my Mom and Dad. YOU AND YOUR TAXES Cash Flow: A Central Part of Your Business & Tax Plan

I

suspect that many taxpayers who paid mortgage interest during 2018 took mortgage interest deductions on their tax returns for amounts that they were not entitled to deduct. While the loss of a tax deduction usually simplifies the tax code, repealing the home equity interest deduction substantially complicates personal tax return preparation because of the difficult tracking rules related to taxdeductible mortgage interest. Previously, the interest paid on up to $1 million of debt to purchase or improve a personal residence (acquisition debt) was fully tax deductible. In addition, interest paid on up to $100,000 of home equity debt, no matter what the funds were used for, was also tax deductible. Under the new law, only interest paid on acquisition debt up to $750,000 is deductible. (Up to $1 million for debt that existed as of 12/15/2017). Here’s the kicker: Interest on home equity debt is no longer deductible. Home equity debt is defined by the use of the money borrowed and not what the lender calls the loan. If you borrow what the lender calls a home equity loan or open what the lender calls a home equity line of credit and use the proceeds to pay for improvements to your home, this loan is acquisition debt; the interest on all acquisition debt combined is fully tax deductible up to the $750,000 debt limit. It is crucial to keep separate track of acquisition and home equity debt. Homeowners must go back to the original purchase mortgage for each property and forward through all subsequent refinancing, borrowing,

and consolidation to separately identify acquisition debt and home equity debt. Unless the homeowner has only had one mortgage loan—the original purchase mortgage for the property— and has never refinanced, the interest reported on the form 1098 issued by the lender is not the amount of the interest that can be deducted on his tax return. When an existing acquisition debt loan is refinanced, the new mortgage is treated as acquisition debt only up to the balance of the old mortgage principal, just prior to the refinancing plus any additional debt used to substantially improve the residence. Any excess principal including amounts used to cover closing costs is considered home equity debt, and the related interest is not tax deductible. In this case, you can avoid the home equity debt classification by refinancing only the principal from an acquisition debt mortgage and paying all closing costs with separate funds. For example, Joe and Gayle purchased a home in 2014. They have a principal balance on their original mortgage for $110,000 and no home equity debt. They refinanced their original mortgage in 2018 to get a better rate. The closing cost for this new loan was $3,000—and the new mortgage’s principal balance will be $113,000. Joe and Gayle now have acquisition debt of $110,000 and home equity debt of $3,000. Only the interest on the $110,000 portion is tax deductible. Form 1098 issued by the lender will show the interest paid on the entire debt. The tax-deductible portion will equal $110,000/$113,000

= 97.3% of the total mortgage interest reported on form 1098. If Joe and Gayle had refinanced and borrowed a total of $200,000 in 2018 and used $40,000 of these funds to improve their home, their tax deductible interest would be limited to the interest on the original acquisition debt of $110,000 plus $40,000 of additional acquisition debt. The $50,000 excess would be considered home equity debt. Interest on the $50,000 would not be tax deductible since it was not used to improve the home and would not be considered acquisition debt. Ask your CPA to help you to determine the amount of mortgage interest that you may deduct on your 2019 tax returns. If your house is lacking in the square footage department, be cautious not to decorate with oversized furniture or dark colored walls which would close it in further. Use brighter tones to

decorate and make any changes to allow for plenty of natural light. 4. Upgrade appliances. New and shiny appliances do not just look super nice, they add value. Imagine you were reading a new listing in the paper with the tagline “New Stainless-Steel Appliances!” That screams updated and most of all, valuable!

According to the National Center for Family & Marriage Research, almost six times as many millennials are living together before marriage compared with their parents’ generation. And, the younger generation is waiting longer than any previous generation to get married. This doesn’t mean that couples are also waiting to buy a home. In the past, it was rare for couples to buy a home before

The median sales price in Rockland (inclusive of the Rivertowns) was $435,000— up 1.2% over the same period last year.

The number of condos coming on the market increased 37.5% (11 in YTD 2020 vs. 8 YTD in 2019). The number of sales held steady (3 YTD in 2020 vs. 3 YTD 2019). The average sales price decreased 49.1% to $289,100. The median sales price decreased 68.7% to $197,000. light has been a dream for humans since the beginning. I am sure that during the Stone Age, humans saw flying animals and thought: “Wow, I want to do that.” While science was trying to perfect flight, magicians were developing methods to simulate flight, levitation, suspension, and anything that would ostensibly break the laws of gravity. Arthur C. Clark famously wrote, “Any sufficiently advanced technology is indistinguishable from magic.” Magicians have always been at the forefront of science and technology. If you research the shows of early magicians, you will see that the film industry had its roots in magic shows. Early magic lanterns were used to project ghosts and spirits on stage. Magician Georges Méliès, often referred to as the “father of special effects,” revolutionized filmmaking by using magic techniques to create illusions in films. Magicians have done what seems impossible with their imagination and problem-solving as tools. Today, I will teach you how to defy gravity using these techniques. Unlike my previous columns, you will have to build your own special bill with a counterbalance that will help in creating the illusion.

What really happens: The dollar bill has a weight secretly hidden inside it which is used as a counterbalance.


1 To make this work, you will need to prepare the dollar bill using some simple arts and crafts skills. Items you will need: • Two identical one dollar bills • A quarter or any small coin • Scissors • Double-sided adhesive tape or glue • Two glasses

Begin by cutting the lower left corner of one of the dollar bills as seen in Photo 1. The size is not critical, but I try to make it around one-eighth the width and one-quarter the height of the dollar bill. You will then attach a quarter (or any small coin) using adhesive tape or glue to the lower left corner of the other bill, and cover it using the corner piece you just cut out as seen in Photo 2. Try to align the artwork of the bills as closely as possible. It is a good idea to match up the size of the borders of the two bills you decide to use before starting. It is mind boggling that in this day and age, the U.S. mint can’t cut the bills so that they are all the same.

Once you let the glue dry and the special dollar bill is ready, you will have to pre-fold it, lengthwise, as seen in Photo 3. The bill should be very innocent-looking and can be carried in your wallet with all your other money. For the trick, you will need to balance the bill between two upside-down glasses as seen in Photo 3. The corner with the coin is over the bottom of the left glass. To do the impossible, you will slowly remove the right glass, leaving the bill impossibly balanced and suspended in thin air. Move your hand above, below, and around the bill proving there are no external connections to the bill as seen in Photo 4.

You can then place the glass back, remove the bill, fold it in half, and put it away. Have fun. -Meir.
