I just got my first Christmas present – and much to my surprise it knocked me out. I’d had a bad day. I was stressed out and my computer had crashed right on deadline. Then my wife Candice walked in with the perfect gift. It was a snow globe and music box with a penguin in it. Shake it up and snow falls around the penguin. That’s all. I’m not quite sure why, but I’m a bit nutty about penguins. I love that movie where they huddle together in ffffrrreeezing winds passing their eggs to each other on their feet. Then their wives head out across the Antarctic to find food. Hundreds of miles away. Doesn’t anyone deliver? So this gift moved me almost to tears. I loved it. It didn’t cost hundreds of bucks. It didn’t have high-tech gadgets that told you how many calories you’ve eaten and how many stairs you climbed. It was just perfect. And I thought about the other gifts I’ve had that meant the most to me. My wife gave me a man necklace once. It was very plain. But it had the Number One on it. I wear it every day. In fact I never take it off. So a Merry Christmas and Happy Holidays to all my readers. And remember it’s not the price of your gifts – it’s the thought behind them. When you read this joke remember that Scotsmen – and I’m one – are known for being tight with their money. A Scotsman and his wife walked past a swanky new restaurant. "Did you smell that food?" she asked. "It's smells absolutely incredible!" Being a 'kind-hearted Scotsman', he thought, "What the heck..., I'll treat her!" So, they walked past it again... And now for some Christmas jokes: • The Santa Claus at the shopping mall
was very surprised when a young lady called Emily, aged about 20 years old, walked up and sat on his lap. Now, we all know that Santa doesn't usually take requests from adults, but she smiled very nicely at him, so he asked her, 'What do you want for Christmas?' 'Something for my mother, please,' replied Emily sweetly. 'Something for your mother? Well, that's very loving and thoughtful of you,' smiled Santa. 'What do would you like me to bring her?' Without turning a hair Emily answered quickly, 'A son-in-law.' • Question: What do you call people who are afraid of Santa? Answer: Claustrophobic. • Question: Why was Santa's little helper depressed? Because he had low elf esteem. • Santa was very cross. It was Christmas Eve and nothing was going right. The elves were complaining about not getting paid overtime. The reindeer had been drinking all afternoon and the sleigh was broken. Santa was furious. ‘I can’t believe it!’ he yells. ‘I’ve got to deliver millions of presents all over the world in just a few hours – all of my reindeer are drunk, the elves are on strike and I don’t even have a Christmas tree! I sent that stupid little angel to find one hours ago! What am I going to do?’ Just then, the little angel opens the front door and steps in from the snowy night, dragging a Christmas tree. ‘Hey, fatty!’ she says. ‘Where d’you want me to stick this?’ And thus the tradition of angels atop the Christmas trees came to pass.

Rivertown Film ChitChat is a big success "What inspires me" was the theme of a recent overflow gathering organized by Rivertown Film at the Nyack Center. Using the "Pecha Kucha" format, thirteen performing and fine artists spoke for four minutes each while showing slides and then interacted with an enthusiastic and diverse crowd over desserts and coffee. Spontaneous singing and music and dancing occurred before the night was out. Pecha Kucha - which began in Japan and means “chit-chat” - encourages various artists to talk briefly about what inspires them. It’s a wonderful chance to share ideas. Event organizers included Gloria Fleming, Debbie Silverstein, and Judi Peacock plus a dozen volunteers. Mayor Jen White welcomed the gathering stating that Nyack was a rich venue for artistic expression. Rivertown Film Board Chair Barrie Peterson explained the group's purpose in creating a venue for the various arts to be honored and shared. Montebello film maker Suzanne Mitchell introduced the artists who included: Josh Page, 24 year old tenor and America's Got Talent finalist; Gabrielle Lansner, Piermont choreographer and film maker; Lisa Sokolov, jazz singer and music educator; Glenn Schloss, drummer and beat boxer; Anna de la Paz, Spanish dancer and artist in Nyack schools; Sean Jones, photographer and Clarkstown school psychologist; David Means, award winning short story writer and Vassar professor; Minh Uong, former Art Director of Village Voice and now NY Times artist; Natasha Rabin, collage, portrait, and mixed media artist; David Sugar, internationally known glass artist; Spencer Tunick, photographer, sculptor and performance artist; Stan Warnow, cinematographer and documentary film maker; Charles Conyers, film maker: "Rockland County Closeups" The major business sponsor was Avida Wine Bar of Nyack. Snacks and desserts were donated by: BJ's Wholesale Club, Palisades Mall; Corner Bakery Café, Shops at Nanuet; Harry's Burritos, Nyack; Hub and Spoke Gourmet, Rockland Lake; Johnnycakes, Nyack; Lulu's Café, West Nyack; Panera Bread, West Nyack; Pie Lady and Son, Nyack; Runcible Spoon Bakery, Nyack; Starbucks, Nyack and also Shops at Nanuet; Stop and Shop, Blauvelt; Trader Joe's, Paramus and White Plains; Turiello's Pizzera, Nyack; West Gate Restaurant, Nyack. Another Pecha Kucha is being planned for next fall and interested artists, scientists, entrepreneurs, and philanthropists are encouraged to contact Rivertown Film at www.rivertownfilm.org or 353-2525. Readings and Music in the Holiday Spirit at Nyack Center The Nyack Center will host its 19th annual holiday festival and community gathering on Sunday, December 7, at 7PM. This year, as in years past there will be both Readings and Music in the Holiday Spirit, this fun filled holiday extravaganza will be co-produced and cohosted by Kevin Pariseau & Elliott Forrest. The evening will feature scores of local talent. The hottest ticket in town for the holidays will be ushered in with Celtic Rock musician Sean Fleming, Nyack Sketch Log artist and writer Bill Batson, Beth Fowler who plays “Sister Ingalls” from Orange is the New Black, Alli Mauzey from Wicked and Hairspray on Broadway, Rockland Youth Jazz Ensemble under the direction of Peter Furlan, Dancer Heather Cornell accompanied by bafaloon and percussionist Andy Algire, on flute and steele pan Sarah Ratcliff. As many Rocklanders know, non-profits like Nyack Center get grants from The County of Rockland. These funds help non-profits to provide vital services and programs to Rockland residents. This October, The County Executive proposed a 100% cut in funding to those agencies for 2015. This would translate to a $43,960 loss in revenue for Nyack Center. Every dollar of the county grant to Nyack Center is multiplied by $14 more from other grants, fundraising and donations by community members. Fundraising efforts like Music and Readings in a Holiday Spirit are more important than ever to maintain the important programs and services Nyack Center provides to children and families in our community who have less.
Please support Nyack Center and join us at this beloved annual event celebrating the holidays and puts the spotlight on local talent (often national celebrities) for the benefit of Nyack Center’s community and youth programs. Bring family and friends and share the joy of the holiday season with neighbors performing for neighbors. This year’s event is sponsored by Newman and Simpson, LLP

People in the News Since August 2011, Bill Batson has published a weekly sketch and short essay about the Village of Nyack on NyackNewsAndViews.com. In three years, Batson has posted 165 columns and received over 100,000 page views for his serialized celebration of the one-square mile village where his family has lived since the 1890s. The book, entitled Nyack Sketch Log: An Artist and Writer Explores the History of a Hudson River Village is a compilation of his columns. Here is what several some Nyack notables are saying about the publication of Nyack Sketch Log: "Bill Batson is a modern storyteller, and his words, his art, his topics, the rhythm of his prose and the slant of his ink pen gather us to a warming hearth, before a fire, in coziness and revelation." - Art Gunther III, retired editorial page editor of the Journal News. “I keep up with the village via the Nyack Sketch Log.” - Bill Irwin, actor, clown, vaudevillian, comedian “Bill Batson has managed, in each and every drawing, to cherish Nyack history, piece by piece”. - Jen Laird White, Mayor, Village of Nyack. “Bill Batson uses his pen to create not only visual gems, but the backstory behind each subject. The ultimate visual journalist and historian for Nyack.” - Guantanamo Courtroom Artist Janet Hamlim, recent author of Sketching Guantanamo. Batson serves as the artist-in-residence at the Nyack Farmers' Market, where he sells art, organizes entertainment and develops promotional tools to attract tourists and shoppers to Nyack for the Nyack Chamber of Commerce. In November, he served as illustrator, writer and project manager for the second editionof the Chamber’s popular Map & Guide of Nyack. A collection of Bill's drawings from the Farmers' Market are on permanent loan to the Nyack Library, where they are on exhibit in the central stairwell. In 2012, Batson organized a Flash Sketch Mob that brought 100 artists to Nyack to create a composite landscape portrait of the village. A second Flash Mob is scheduled to coincide with the 10th Annual Nyack Art Walk in June 2015. A lif long artist and activist, Bill is dedicated to using the
visual arts to promote preservation, cultural education and community empowerment. Bill says: "The people, the history, the culture, the small businesses, the natural features, the diversity make this place, in my mind, the finest stretch of the Hudson. My sketches and short essays form my argument that there is no spot sweeter than Nyack." Sabrina Weld Feldman, president of Weld Realty, says: "Bill Batson gives a resonating voice to the lives, the history and the architecture that make our community so extraordinary.” Batson will celebrate the launch of Nyack Sketch Log and sign books at Hudson House, 134 Main Street from 6-8p on Thursday, December 4. Jeff Doctorow, curator of ArtsRock's Guitar Magic series, will perform. To learn more about Bill Batson, visit billbatsonarts.com

Year end tax planning for individuals Although tax day may seem like it’s a long time from now, now is the time to evaluate your current tax situation. Doing so can enable you to take a few last-minute steps in 2014 that may save you big when tax day arrives in 2015. Tax planning strategies for individuals this year, and for the next several years, requires careful consideration of taxable income in relation to threshold amounts that might bump a taxpayer into a higher or lower tax bracket, thus, subjecting him or her to additional taxes such as the Net Investment Income Tax (NIIT) or an additional Medicare tax. Accelerating Income Accelerating or deferring income into 2014 or 2015 is an especially good idea for taxpayers who anticipate being in a higher tax bracket in one of those years or whose earnings will be close to threshold amounts ($200,000 for single filers and $250,000 for married filing jointly) in one of the years and that makes them liable for additional 3.8% Medicare tax or .9% Net Investment Income Tax. Here are two examples of what a taxpayer might do to accelerate income: • If you are expecting a bonus at year-end, try to get it before December 31. • If you're self-employed, send invoices or bills to clients or customers this year in order to be paid in full by the end of December. Deferring Income and Accelerating Deductions Traditionally CPA’s advise taxpayers to defer income into a future year and/or accelerate deductions into the current year. For those of us who are not facing the above mentioned $200,000 & $250,000 income thresholds this traditional advice still applies. Here are some examples of what a taxpayer might do to defer income or accelerate deductions: • If you are expecting a bonus at year-end, try to delay it until after December 31. • If you're self-employed, send invoices or bills to clients or customers in early January instead of this year. • Increase your employer sponsored pension or self-employed pension contributions for
You and Your Taxes By Joseph A. Lux, CPA, PLLC 2014. • Pay a state estimated tax installment in December instead of at the January due date. • Pay your entire property tax bill, including installments due in year 2015, by year-end 2014. (This does not apply to mortgage escrow accounts.) Other Tax Planning Strategies • Try to bunch "threshold" expenses, such as medical and dental expenses and miscellaneous itemized deductions. For example, you might pay medical bills and dues and subscriptions in whichever year they would do you the most tax good. (Threshold expenses are deductible only to the extent they exceed a certain percentage of adjusted gross income (AGI). By bunching these expenses into one year, rather than spreading them out over two years, you have a better chance of exceeding the thresholds, thereby maximizing your deduction.) • Prepay deductible expenses such as charitable contributions and medical expenses this year using a credit card. This strategy works because deductions may be taken based on when the expense was charged on the credit card, not when the bill was paid. For example, if you charge a medical expense in December, but pay the bill in January, assuming it's an eligible medical expense, it can be taken as a deduction on your 2014 tax return.
• In cases where tax benefits are phased out over a certain adjusted gross income (AGI) amount, a strategy of accelerating income and deductions might allow you to claim larger deductions, credits, and other tax breaks for 2014, depending on your situation. (Such tax benefits include Roth IRA contributions, conversions of regular IRAs to Roth IRAs, child credits, higher education tax credits and deductions for student loan interest.) • Minimize taxes on investments by judicious matching of gains and losses. Where appropriate, try to avoid short-term capital gains, which are usually taxed at a much higher tax rate than long-term gains--up to 39.6% in 2014 for high income earners. Offset taxable capital gains with capital losses whenever possible. • If your tax bracket is either 10% or 15% (married couples making less than $72,500 or single filers making less than $36,250), then you might want to take advantage of the zero percent tax rate on qualified dividends and long-term capital gains. If you fall into the highest tax bracket (39.6%), the maximum tax rate on long-term capital gains is capped at 20% for tax year 2014 and beyond. • Starting in 2013, a 3.8 percent tax is applied to investment income such as long-term capital gains for earners above certain threshold amounts ($200,000 for single filers and $250,000 for married taxpayers filing jointly). This information is something to think about as you plan your long term investments. • If you know you have a set amount of income coming in this year that is not covered by withholding taxes, increasing your withholding before year-end can avoid or reduce any estimated tax penalty that might otherwise be due. On the other hand, the penalty could be avoided by covering the extra tax in your final estimated tax payment and computing the penalty using the annualized income method. • The American Opportunity Tax Credit, which offsets higher education expenses, was extended to the end of 2017. It may be beneficial to pay 2015 tuition in 2014 to take full advantage of this tax credit, which is up to $2,500 per student. Ask your CPA what you can to do now to save big on tax day. He can help. Inspiring movie about Haiti earthquake to be featured by Rivertown Film After the 2010 earthquake, Haiti was left in ruins - towns were destroyed and families were displaced. A moving new feature documentary, Lakay, tells the story of two brothers, Alexius and Romeo, who go on a mission to locate and find their loved ones. Drawn back to Haiti by the devastation, these filmmakers reveal the tragedy caused by this natural disaster from an intimate and personal perspective. The film has brought acclaim around the world and next month it will be a special featured presentation by Rivertown Film.
The director Tirf Alexius says: “I never thought that I would work on a project that would put so much of myself out there. I wanted to do a film that explored what it meatn to be American as well as Haitian and not be mutually exclusive. “Haiti is more than just devastation. It has an innate beauty, although rarely shown, and I sought to capture its vibrancy.” He added: “Lakay isn’t just about cap-
turing history. It’s about family - my family. I’ve learned so much about myself and my Haitian brothers and sister. “It captures how even in the face of tragedy we find moments of inspiration and laughter - ways to strike a balance between suffering and joyh. To figure it all out, sometimes you just need to go home!” Lakay will be featured by Rivertown Film next month. See January’s Rivertown magazine for more information.

What’s the buzz? DSZ Barbers brings a renaissance to traditional barbering in Nyack
Have you heard the buzz? Everyone is talking about the new barbershop on Main Street in Nyack, D.S.Z. Barbers Inc. After many failed restaurant openings, this impressive storefront is happy to have the husband and wife team of Steve and Diane Zuccato call Nyack home. Local residents may wonder why the new proprietors left New York City to set up shop in Nyack and what makes them different. The answer is simple: The renaissance of traditional barbering has begun, and there is not a better team to bring this to Nyack than Steve and Diane Zuccato. “Over the last five years the barbershop business started booming,” says Diane Zuccato, second generation Master Barber and president of D.S.Z. Barbers Inc. Diane is no stranger to the industry. Her family has owned and operated a 100+ year-old barbershop in New York City. She adds, “My father taught me the trade at an early age. “I graduated from college, put my hours in at barber school, and learned the business side of the industry working for UK based men’s toiletry company King of Shaves - so it’s my time to shine now! I couldn’t think of a better community than Rockland County to build our new shop and start my own family.” D.S.Z. Barbers Inc.’s man cave of a tra42
ditional barbershop consists of 1,500 square feet with six custom barbering stations. The moment a patron steps inside the shop, he has the sense of stepping back in time to be enveloped in warm and welcoming familiarity. Each barbering station is beautifully handcrafted from stained oak and Italian granite. D.S.Z. Barbers Inc. is tastefully decorated with barbershop antiques including old-school Belmont and Emil Padar chairs from the early 1930s and 1950s, which add extra comfort to their clients’ experience.
To let their patrons know that they truly value their time, complimentary espresso is served upon each client’s arrival. The barbershop offers a large selection of magazines and daily newspapers for their patrons to enjoy. Their signature service is a traditional, hot towel, straight razor shave, and an exquisite pampering experience for every man to enjoy. During this service the barbers spend 30 minutes with each client. The nostalgic shave begins with an application of a refreshing pre-shave product and two hot

towels to help soften the hair and prepare the skin to be shaven. The skilled Master Barbers use a straight razor with precision and mastery to shave with the grain of hair growth, and then another hot towel and re-lather for a second time over. Next, a cold towel infused with essential oils is applied to the face to provide soothing nourishment while
helping to close the pores. Finally, this service is completed with a facial massage. “Our type of haircuts were hard to come by in the common suburban barbershops, until now.” said proprietor and Head Master Barber, Steve Zuccato, who spent years learning from the best barbers on the Upper East Side of Manhattan at the world famous, Paul Molé Barber Shop (Est.
1913.) He continues: “Our signature haircut is a business professional, clean cut with a slight taper along the neckline that gradually layers the hair through a scissor-overcomb technique. “Rich, hot lather, straight razor neck shaves are always included in our haircuts and are also available for clients who want to be “cleaned up” in between haircuts. Looking for a trendier cut? No problem, we can use clippers too!” D.S.Z. Barbers Inc. is located in the corner storefront of 140 Main Street, Nyack and is open 7 days a week. The husband and wife team prefer working by appointment so you do not have to wait for your service (although walk-ins are always welcome.) Credit cards are proudly accepted. When you walk through the front door of D.S.Z.Barbers Inc., it’s like taking a step back in time. It’s a place where a man can be a man. Their barbers truly love their trade and always follow the time-honored traditions of barbering. This young but experienced team of Master Barbers has recreated the way a classic barbershop should look and feel. They offer the friendly customer service to match. Sparkill Steakhouse owners Sal Derguti and Carlo Cungu have lengthy experience at the legendary Sparks Steakhouse.
Sparkill Steakhouse where you’ll find the best steaks ever! Story/Photos: Tom Riley A great steak is hard to find these days. But that’s exactly what they’re serving at the beautiful Sparkill Steakhouse. Owners Sal Derguti and Carlo Cungu have lengthy experience at the legendary Spark's Steakhouse in Manhattan. Carlo was the wine buyer and manager there and Sal worked there for many years. Sal told us: "Many people have told us this is the best steakhouse in the county. We have a banquet room for 150 guests, a 35 person semi-private window dining room and a 25 person party wine cellar with TV, that is often used for corporate events.” This is a great place for that special Holiday occasion. Sal commented: “We will have live music and specials throughout the Holidays. You will love our prime aged meat, Porterhouse steak and prime sirloin. “We have a prix-fixe three-course lunch for $21.95 Monday through Friday. That includes salad, steak, chicken, pasta, coffee or tea. We have special fish and steak every day. We source our steaks from the same place as Spark's Steakhouse and Peter

Sparkill Steakhouse Lugar. “A popular item is cowboy rib eye steak. We also have wonderful lobsters of all sizes. We offer tuna, Norwegian wild salmon, broiled lobster tail, seafood tower, great crab cakes, baked clams and pan seared scallops. “Our chef, John, worked for Spark's Steakhouse for 15 years and Ben & Jacks in the city." Sal added: "We have the best wine list for price and quality. Most of our wines are from California and some are from France, Italy, and South America. They are reasonably priced. Jordan Alexander, a well known wine goes for $79.95 a bottle. Prisoner from Napa Valley goes for $59.95 a bottle. We offer our wines at 30% less than other restaurants. “Some of best dishes include Porterhouse steak for two, prime sirloin steak and Colorado lamb Chops. For dessert we offer mixed berries with homemade slog (a tasty variation on whipped cream), chocolate mousse and apple strudel. "Call us and use one of our private party rooms or wine cellar. You'll have an event you won't soon forget.” Customer Kamil from Piermont had this to say about Sparkill Steakhouse: "Great food, great hosts and great service. I have been to Sparkill Steakhouse quite often since they opened and never have been disappointed. “Their steaks are excellent and compare to the best steakhouse in New York City. Carlo and Sal are terrific hosts and make you feel welcome every time. The service is great even on busy nights. “My wife and I used to always order the Porterhouse for two until we were introduced to the filet mignon on the bone. The seafood is also excellent. “Carlo’s recommendations for wine have always been right. The prices are fair for this quality of food and I never felt that the meal was overpriced.” If you are looking for a seafood platter that features half a lobster, oysters, shrimp, crab meat and high quality seafood come to Sparkill Steakhouse. • Sparkill Steakhouse, 500 Route 340, Sparkill. 845-398-3300. www.SparkillSteakhouse.com. 48

Nyack Farmers Market goes indoors Are you ready for the Indoor Farmers’ Market? Every Thursday, step in from the chilly weather and stop by Mostly Myrtle’s for a cup of hot, spiced apple cider. Feel your fingers thaw out around the warm paper cup as you inhale deeply the smells of the season - earthiness, baked goods, and spiced fruit. Experience the slowing-down of life that takes place at the Nyack Indoor Farmers’ Market to the sound of low-key guitar music. Feel a space where once a week, “local,” “community,” “food” and “fun” all come together. As the weather turns brisker, the whole market will move indoors. Housed in the Nyack Center, this year’s market will go inside from December 4 – March 26, , from 8:00 a.m. – 2:00 p.m. every Thursday. Nyack Center is located at 58 Depew Avenue (at South Broadway). Street parking is free until 11:00 a.m. and the municipal lot at Artopee and Cedar is free during market hours. While the market goes indoors right after Thanksgiving, there will be a two week break for Christmas and New Years, both of which fall on a Thursday. As the holiday season quickly approaches, don’t forget that the market is a great venue to buy gifts. For the first time in market history, there will be artisan craft vendors and prepared lunch food. Stop in on your lunch break and find the perfect handmade holiday gift, all while enjoying a steamy, wholesome cup of soup. Ula Robertson of At Your Service Catering will be hosting cooking demonstrations in addition to providing delicious, lunch items, many made from market ingredients. Market artist-in-residence Bill Batson offers cards, sketch artwork, and unique canvas tote bags that feature Nyack circa 1884 – which is the perfect gift for that longtime Nyack resident friend, school teacher or even yourself. His book, Nyack Sketch Log: Artist and Writer Explores the History of a Hudson River Town will be released on December 4th for a book launch and signing at Hudson House from 6-8. A great surprise for the culinary junkie on your list is the gift of razor-sharp knives. From kitchen knives and scissors to hair shears, bring them to X-Calibur and get that cutting edge. In addition to the regular vendors, each week the market will feature a different craft person or artist who will bring their creativity and designs to help you find the perfect gift. Another new item is the convenient new method to pay for your market shopping. In the past the Farmers’ Market was cash only, but now you can use your credit card or SNAP benefits card to get tokens that can be spent at the market. There are a variety of vendors who accept SNAP, making it possible for more families and individuals on public assistance to have access to fresh, locally grown food. Find the market manager and take advantage of this new convenient way to shop the market. Additionally, in support of local business,
any Nyack Chamber of Commerce member can schedule a day at the market to promote their business and publicize upcoming events or products. To find out more call the chamber or go to nyackchamber.org/category/farmers-market. Adding to the atmosphere every week are local musicians who showcase their musical talent for the local crowds. From Irish fiddle to classic rock, a variety of artists gain notoriety and are able to promote their music through this weekly platform. If you are a local musician, contact the market to get on the calendar! On December 4 there will be a review of local performers including Jesse Frayne at 9:00 a.m. Brian Ahren at 10:00 a.m., David Frye at 11:00 a.m., Danielle Wasserman at noon and Jeff Doctorow at 1:00 p.m. And throughout the day Silly Pencils will be sketching caricatures for one and all! Story: Murray Phillips The condo at Harbors at Haverstraw is one of the most spectacular we’ve seen in our area. On every single floor there’s a spectacular view of the Hudson River. And the view gets better the further up you go. This home is one of a kind. Realtor Karen Steffanato told us that people who have seen it are knocked out. She said: “On every floor they say: This is spectacular. It’s a wow. And, of course, OMG.” This home definitely has the OMG factor. As Karen says: “Imagine waking up every morning to watch the sunrise over the Hudson River. What more could you want?” So let’s give you the facts: It’s a four-level townhouse end unit in the prestigious upscale Harbors waterfront community – ¾ bedrooms, 3.1 baths, open floor plan 2nd level, gas fireplace, kitchen, pull-out kitchen cabinets, central vac, custom California closets, wood floors throughout. Riverside patio. Deck off dining room and a spacious roof-top deck. Yes it really does have it all. And then there’s the fabulous community that makes up the Harbors at Haverstraw. This place is the only resort-style community in Rockland County. The amenities are amazing – 24 hour concierge, private movie theater, two heated swimming pools, spa with massage

Merry Quiche-mas! Didier’s baaaaack! He’s baaack! Nyack’s favorite baker Didier Dumas is about to reopen his Patisserie this month after nearly six months. And already his loyal customers are lining up. “I’m craving your quiche,” said one on Facebook. “I miss the goat cheese tarts with the tomatoes.” Hundreds if not thousands missed his macaroons and his almond croissants. Another Facebook fan cried: “I’m longing for les buches de Noel and crepes bretonne.” Don’t worry. Didier hopes to have all those and more. And in the New Year he has some exciting additions lined up. Didier’s nightmare began back in July. He remembers it vividly. He was in a nearby wine bar watching the World Cup soccer. He stepped out for some fresh air. It was raining. Then suddenly there was a big flash of lightning and an earth-shaking crack of thunder. “I was scared,” Didier admits. He ran back into the bar for shelter. Minutes later someone ran in and told him his building was on fire. It had been hit by the lightning. The resulting fire did heavy damage to 74
Didier outside his fire-damaged Patisserie with some of his trademark maccaroons and Buche de Noel.

Didier’s baaaack! most of the building, though the Patisserie itself survived everything apart from water damage. But repairs took months. He’s grateful for the friends who came to his help. Jose and Paulo at Union Restaurant in Haverstraw offered him the use of their kitchen and anything else he needed. Nyack Mayor Jen White was a loyal supporter. While he waited, Didier kept himself busy. He took part in local charity events such as Corks and Forks. He went back to his native France and took a course at the prestigious baking school, Bellouet Conseil in Paris. And he learned some exciting new ideas which he hopes to unveil to his loyal Nyack fans over the next few months. At time of going to press, Didier expected to reopen around December 16. At first he’s just going to concentrate on his regular pastries and cookies. But after the Holidays he’s going to start unveiling some new ideas and new tastes. And he hopes to announce an exciting addition to Patisserie Didier Dumas, including a wine bar and nighttime crepes. We can’t wait!! • Patisserie Didier Dumas 160 Main Street, Nyack. 845-353-2031 info@didierdumas.com

Boomer Esiason to be keynote speaker at JCC sports dinner When JCC Rockland hosts its firstever sports dinner in January, it’s asking participants to “Play it Forward.” And what better way to get the idea that sports and altruism go hand-in-hand than to feature former NFL quarterback Boomer Esiason as a keynote speaker. The “Inside NFL” co-host for CBS and half the popular team on WFAN of “Boomer and Carton in the Morning,” also has a longstanding reputation for generosity, having dedicated time and support to his foundation, which seeks a cure for cystic fibrosis. Esiason, who played for the Cincinnati Bengals, the New York Jets, and the Arizona Cardinals, will be at the Crowne Plaza Hotel, in Suffern on Thursday, Jan. 15, lending his support to an evening celebrating the JCC’s sports program, two outstanding honorees, and two high school recipients of the Larry Weiss Sports Teen Leadership Award. “Boomer Esiason is a great choice as a speaker for our first sports dinner,” says JCC Rockland CEO David Kirschtel. “He’ll really set the tone and expectations that this new event will be an exciting way to support the JCC.” The evening kicks off at 6:30 p.m. and tickets are $99 each. There is a journal that pays tribute to the honorees, Clarkstown Town Councilwoman Stephanie Hausner and longtime JCC board member Steven Beldock, as well as two high school students – one male, one female -- who will be selected in advance. The funds raised from the event support not only JCC operations, but also will bolster its youth sports programs and will provide future financial assistance for a variety of JCC programs. Some of those are its new early childhood program, day camp and after school programs. There are many ways to support the evening. In addition to attending, members of the community and area businesses can be sponsors.. The Crowne Plaza, which is hosting the event, is the lead sponsor and organizers hope that other businesses will follow the hotels lead. “We are pleased to partner with the JCC on this event," says Robert Wilson,

general manager of the Crowne Plaza. "We strive to be a corporate leader and role model in the community, where most of our employees reside. We are looking forward to a great evening.” Another way to support the program is by taking an ad in the journal honoring Hausner and Beldock, both of whom have been supportive of the JCC. According to Kirschtel, Beldock does not know the meaning of the word “no.” He has served on the board of directors of JCC Rockland for 15 years, cochairing the governance committee, as well as taking an active role in the JCC’s strategic planning and in the Rockland Jewish Community Campus’ capital campaign. He is a partner of the law firm, Birbrower & Beldock, P.C., and is active in New City Rotary, the N.Y. State Trial Lawyers Association and the Rockland County Bar
Association. Hausner is quite accomplished in her own right. She is one of the youngest elected officials in New York State, having served on the Clarkstown Town Council since 2010. An avid sports fan, she knows how to rally the troops, and helped recruit hundreds of volunteers to fill more than 2,000 shifts during the JCC Maccabi Games as the chair of volunteers, when JCC Rockland hosted in 2012. She is a vice president at Congregation Sons of Israel in Nyack, and she currently works for the Jewish Federation of Northern New Jersey. The two high school seniors who will be selected will each receive a $1,000 State of Israel bond. These nominated recipients will be selected based on their academic and sports achievement as well as their commitment to community service.

There wasn't a dry eye at the commemoration when Barry spoke movingly about the incomparable courage of Father Vincent Robert Capodanno (1929-1967). The toys of yesteryear - a fascinating exhibit by the Historical Society of the Nyacks The Historical Society of the Nyacks is hosting a new exhibit titled “TOYS OF THE PAST: CHILDHOOD MEMORIES BEFORE 1955.” This holiday-inspired display will open on December 6th at our museum in the DePew House, 50 Piermont Avenue, Nyack, NY 10960 (across from Memorial Park). We will show dolls, doll houses, stuffed animals, puppets, children's books and games, toy soldiers, model cars, trucks, planes, trains and other interesting items enjoyed by children prior to 1955. The exhibit will include cast-iron toys that were popular from the 1870’s until World War II. The industry began after the Civil War, when vast iron ore reserves were discovered. A Victorian era dollhouse furniture set and horse-drawn fire patrol carriage, as well as a “Model T” era car will be among the cast iron toys that will be shown. Thanks to the enthusiastic response to our call for toys, we will have an extensive and eclectic collection of beloved playthings on display not just priceless dolls or vintage miniature trains, but the quirky and much-adored playthings from our youth. Our museum is open on Saturdays from 1 p.m. to 4 p.m. This exhibit will run through February. For more information about our programs, and to join the Historical Society, please visit our website at www.nyackhistory.org. 84

Chazen Jazz Concert highlights some great music When Vince Giordano and the Nighthawks swing into Rockland County, they’ll conjure up an era of bathtub gin and speakeasies, beaded flappers and gangsters in spats. And that’s just fine with Giordano, an accomplished Grammy-winning musician who is as much archivist as he is bandleader. To hear him tell it, jazz has an American story to tell and each generation can learn to retell it. "It's a wonderful language, it's something like Shakespeare," says Giordano, whose work has given a pitch-perfect period flair to HBO’s award-winning “Boardwalk Empire. "His work has been around for hundreds of years, but people have willingness and love to take Mr. Shakespeare's words and recreate them. The same with Mozart, Brahms and Chopin...That applies to us. We shouldn't just forget about this music. "It should be played again and again and again." And play it he will at Rockland Community College’s Cultural Arts Center when JCC Rockland hosts him for the annual Chazen Jazz Concert on Saturday, Dec. 6 at 8 p.m. Tickets are available at jccrockland.org and cost $25 for general admission and $75 for patrons, which includes reserve seating and a dessert reception. Sponsored by Nyack residents Jerry and Simona Chazen, the concert is meant to bring the best of the contemporary jazz scene to the county. For Jerry Chazen, the event's sponsor, the concert offers a chance for jazz lovers to whet their appetite for the kind of highcaliber performance they would take in at Jazz at Lincoln Center without traveling into Manhattan. And Giordano will offer a sharp contrast to last year's headliner, Anat Cohen, with her contemporary, Brazilian-inflected sound. "I am a big Vince Giordano believer. I 88

love the music he plays," says Chazen, a self-described lover of jazz spanning the 1920s through the 1940s. "I appreciate our jazz history and Vince is the best at it." For the Rockland gig, Giordano will bring what he calls a "small big band" of 11 pieces. Giordano plays bass tuba, string bass and bass saxophone, which in the early days of recordings helped provide rhythm at a time when studios were technologically primitive, placing the piano and drums far from the horns, or funnels, that collected the sound. Although for "Boardwalk Empire" he turned in Grammy-winning work with such atypical vocalists as Patti Smith, Rufus Wainwright and Elvis Costello, he's been known to do some of his own singing. "Not enough to hurt anyone," he laughs. But for the Rockland set, the sound will be rounded out with vocals from Catherine Russell,
who worked with Giordano on “Boardwalk” and also walked away from that series with a Grammy for the soundtrack album. “I’m always happy to work with Vince and his orchestra,” says Russell, who first met Giordano at a club where he was playing several arrangements by Luis Russell, her father, a noted musician. “We bonded right there. He hired me for a few gigs, and then for what turned into the ‘Boardwalk Empire’ soundtrack. “I love singing with arrangements and Vince is really one of the best.” Giordano developed his love of jazz listening to old albums on his grandparents’ Victrola. They would crank up the player and talk about their days of rolling up the rug to dance and sing along. The music of Al Jolson, the old Vaudeville routines, and that era’s syncopated sound captivated Giordano. Giordano found not only a musical career, but also a calling. He collects and preserves old scores, having more than 60,000 in two houses in Brooklyn to his name. He finds enormous satisfaction and inspiration in trying to recreate the music of this bygone era. Nyack resident Elliott Forrest will serve as master of ceremonies for the evening. Forrest, who performed that task for Chazen Jazz last year, is heard on both WQXR and WNYC radio, and is well known as a radio producer, concert host and interviewer. For many years he hosted Breakfast with the Arts and Biography on A&E. For the JCC, the third Chazen Jazz concert is definitely a charm. Last year’s concert was a sellout and the JCC expects Giordano to have wide appeal, according to CEO David Kirschtel. “This is an outstanding event to bring to Rockland and we’re thrilled the Chazens have made it possible for the JCC to do so.”

Madeline Wiebicke takes the stress out of your real estate moves Story/Photo: Tom Riley Moving can be an extremely stressful process for people. How do you know the right price to list your home? Is your home staged properly so the pictures will look incredible and bring buyers to look and purchase your home? How are you going to both sell your home and buy a new one without having to move twice? The answer to all the above questions is simple: Madeline Wiebicke. Madeline is a licensed Associate Broker with Keller Williams Hudson Valley Realty. She has been working full time for the past 10 years helping both buyers and sellers to have a stress free move. Selling homes is a passion that Madeline has and it is a great benefit to all her clients. Buying or selling a house requires the best professional assistance available. It would be difficult to find a more qualified and likeable partner to help make that decision than Madeline Wiebicke. For her sellers, Madeline is an expert on properly pricing a home so it sells for the most amount of money in the shortest amount of time. That is the key to eliminating stress. Having to keep your home in perfect showing condition for a prolonged period of time will be very difficult for most people. Also, the longer your home is on the market, the more likely that buyers will want to put in low offers. Madeline also has incredible statistics when it come to sale price to list price ratio. Her ratio is 98.6%. "My sellers get very close to the asking price for their home and sometimes they get over asking. This is only possible when an agent has a very strong knowledge of the prices that other homes are selling for in the 96
current market," said Madeline. Fantastic pictures of your home are critical to get people to come and take a look. Madeline uses a professional photographer who is probably the best photographer in this field. She is able to look through the lens and then will go above and beyond to make sure the room will look spacious, inviting and well fit. Staging is a huge part of this process. Unless a home looks perfect in the pictures most buyers will eliminate it on their computer and will never come and take a look
for themselves. There are many homes on the internet and pictures are how most people do the initial elimination. Two of Madeline's recent clients who both bought and sold with her to make one smooth move are Philip and Elena Murphy of Bardonia. "We would never have dreamed of buying a house before selling ours except that we had total confidence in Madeline Wiebicke. “She sold our home quickly and for a good price. We had 4 offers on our home and we only had to show it for one week-

end. She was able to schedule the closing so that we only have to move once, and with four children that was important to us." Thinking of moving but afraid of the whole process? A’s + Tobacco offers a new way to smoke or stop smoking
Story/Photos: Tom Riley Minh Vong is living the American dream. He escaped from Viet Nam in the 80's and by 1982 he was living with foster parents in Garnerville. He graduated North Rockland High School in 1987 and has owned his own painting business for 22 years. He saw an opportunity to help others stop smoking and started A's + Tobacco located at 25 S. Route 9W in West Haverstraw. His new store offers both traditional and new ways to smoke or stop smoking. Minh Vong sells organic cigarettes and tobacco and new Vapor cigarettes. He also retails Ecigarettes and starter kits, Clearomizers, Atomizers, and Accessories. So what are these Vapor cigarettes? They look like the real thing. The end glows as you inhale. As you exhale, you puff out a cloud of what looks like smoke. It’s vapor, similar to the fog you might see at rock shows. Vong says Vapor cigarettes, also known as E-cigarettes, are new smoking options. "Everything is natural and fresh. We sell 100

Vapor cigarettes are better than regular cigarettes because there are less chemicals and no tar. “The tar kills people. users of Vapor cigarettes can begin with nicotine, but can reduce the use of nicotine and then eventually have cigarettes with no nicotine. Many people often use them as a way to end their smoking habit. My cousin used to smoke two packs of cigarettes a day. He is down to one pack and his goal is to stop complete-
ly." Minh added: "The Vapor cigarettes come in hundreds of flavors, including fruit flavors. My store features a Vapor cigarette tasting bar where you can taste the flavors you like. There are no health difficulties related to Vapor cigarettes. “There is no second hand smoke from them. Second hand smoke is killing people, with Vapor cigarettes you don't have to worry." Michael Siegel, M.D., MPH, is a professor at Boston University School of Public Health said, "Obviously it would be best if smokers quit completely, but if that is not possible, I think they'd be a lot better off with E-ciga-

I tried electronic cigarettes and I'm now free of thousands of harmful chemicals that are produced in tobacco cigarettes. “I can breathe, I can smell, my blood pressure is normal and I can see a future. Do you believe in love? Sometimes true love comes only once in a lifetime. For some lucky people, it is possible to love again. Local contemporary romance author, Mya O’Malley has a new holiday romance, a touching love story arriving just in time to warm your heart for the holidays. Melody and Jack had shared an unforgettable love story that abruptly came to an end. Melody, left picking up the pieces, finds herself alone years later, with no hope or desire to date again. With the holiday season approaching, Melody finds it particularly difficult to get Jack out of her thoughts. Jack isn’t sure if he’s an angel or a ghost, but his mind is set on one thing only, finding a new love for Melody by Christmas Eve at midnight. Easier said than done, with many obstacles to tackle, Jack underestimates how difficult the task is. With conflicting emotions, Jack takes it upon himself to find a man for a woman he still loves. With the clock ticking as the holidays approach, this charming story of finding love the second time around will have you laughing and crying, but ultimately, it will have you believing in true love. Mya is excited to speak about her latest release. “The holidays are my favorite time of year. One of my goals for writing was to create a magical holiday story. I decided to create a paranormal holiday romance in which a lonely widow is visited by her late husband in disguise. “This story is absolutely one of my favorites, it’s sweet, funny and heartbreaking all at the same time. I was thrilled when Astraea Press offered me a contract for this story.” Mya states. What makes this story so magical? “If You Believe touches the reader and makes one believe that true love never really dies, it reaches through boundaries and doesn’t fade away. The story of Melody and Jack covers such a wide range of emotions.”
Mya shares. If you enjoy romantic stories, you’ll want to read more from Mya O’Malley. At First Sight, a contemporary romance, was Mya’s first novel to be published. This is a fun story of a divorced young woman out in the modern dating world. Pressured by her friend to give online dating a try, the main character, Annie, initially resists the idea, only to find herself giving in. Annie’s experiences are both hilarious and disheartening. Annie would like to believe that love at first sight truly exists. The question is, will Annie find it? Where There is Love is an inspiring story about a young woman facing her past and opening her heart to love. Mia touches the life of a troubled teenager named Cassidy. A powerful relationship built on trust enables both characters to overcome personal obstacles and learn from each other in this dramatic, moving story. Where There is Love, published by Solstice Publishing, is the first novel that Mya wrote. Look for upcoming releases from Mya. Calm After the Storm, releasing soon with TouchPoint Press, is a contemporary romance set in the aftermath of Hurricane Sandy. The process of writing can be exciting and challenging. “My journey has been filled with many emotions. I’ve often been asked what advice I’d give to aspiring writers. I would tell new authors to keep at it. Have others critique your manuscript, accept advice, don’t be discouraged. There’s nothing quite like sharing your stories with others and holding your own book in your hands, it makes up for all of the
challenging times.” Presently, Mya spends a considerable amount of her writing time marketing her books and thinking up creative ways to reach her readers. She has recently started writing another contemporary romance and looks forward to experiencing the entire process once again, starting right from the beginning sparks of an idea. Do you believe? Story/Photos: Tom Riley You’ll love the culinary magic that is served up every night at Bon Giovanni just across the Rockland border in Ramsey, NJ. It has captured the imagination and appetites of thousands of diners with its extraordinary Italian dishes with an exotic blend of Brazil. It is so busy on weekends it has to turn away diners. With Christmas and New Years Eve coming up it is wise to make reservations early. Owner Sam Mussa told us: "We go to extraordinary lengths to please our customers. We are innovating the traditional Italian cuisine by adding a new flavor that has really caught on. “We bring Italy's most famous recipes to our table in a unique way by adding a Brazilian touch to our menu from entrees to pastas and desserts. We have a professional staff with a warm, informal attitude, Italian style, serving in a cozy and romantic environment in order to satisfy you to the limit. “You can bring your own bottle. We welcome and encourage the whole family to dine at Bon Giovanni because we have a great kid's menu also. “Taste always comes from freshness. We prepare foods from scratch, using only the highest quality and freshest ingredients." Sam added: "We also have a Brazilian grille section in our menu that includes a Pincanha cut of beef popular in Brazil with beef brochette with rice. Grilled swordfish over spinach and potatoes is another favorite." Customer Marty B. gave Bon Giovanni 5 stars and said:. "I had last been to Bon Giovanni many years ago when the restaurant was located in Suffern. “We started with Spiedini Romano which fortunately we decided to share. It was incredibly tasty. My wife had Sam's Chicken and I had the veal Milanese. We enjoyed every bite and the portions were large.. For dessert we ordered the Apple Crisp with vanilla ice cream.” Sam continued: "We are all about our home-made pastas and desserts. Our lunch

Iona Island phragmites control - and what it means for Piermont
By Daniel Spitzer MD A plan put forward over the past year by New York State Department of Environmental Conservation (NYSDEC) calls for the eradication of much of the phragmites – a hearty but invasive reed – from the Piermont Marsh. Most residents of Piermont fear that eradication of the phragmites will leave the village vulnerable to any significant wave action coming up the Hudson River – and point out the fact that the Piermont Marsh served to protect the south side of the village from the worst effects of Superstorm Sandy. Phragmites are indeed an invasive, nonindigenous plant, and NYSDEC has proposed eradicating the Phragmites from large areas of the Piermont Marsh in order to return the marsh to a more balanced ecological state and promote biodiversity. While the residents of Piermont largely endorse these goals, the means involved – spraying an herbicide (Roundup) directly onto the marsh, and thus into the River – as well as the delay in the growth of a replacement population of marsh-stabilizing plants (NYSDEC assumes that Cat-Tails will grow once the Phragmites have been exterminated) have been causes for considerable concern. Indeed, this concern has been volubly conveyed to the DEC representatives at several Village Hall meetings. Meanwhile, at Iona Island Marsh near Bear Mountain, some 20 miles to the north, NYSDEC has been experimenting with just such a plan. The first photo, taken from the Bear Mountain lookout on May 18 2014, shows a large swath of the Iona Marsh having been cleared of phragmites by, I have 116
been told, both chemical application and aggressive mowing. NYSDEC representatives maintain that the native Cat-Tails will rapidly re-grow and stabilize the marsh area. The second photograph, taken from an airplane overhead over 5 months later, at the end of the growing season, shows that only minimal re-growth of vegetation has occurred on the section of the Iona Marsh cleared by NYSDEC. This area of marsh is now destabilized, and will be prone to severe erosion in the event of any storm. Furthermore, should a storm with wave action occur, the waves would cross almost unhindered across the denuded marsh area. This experiment at Iona Island demonstrates that, were NYSDEC to clear the
Piermont Marsh, and when a storm or hurricane occurs, the Piermont Marsh itself would be left severely destabilized, and the Village of Piermont would have little protection against wave action coming up the Hudson River. Finally, it is worth noting that the second photograph was taken at the end of the growing season. Therefore, this clearing of the Marsh (Iona, in this case, or Piermont, if performed) will last AT LEAST one full year. Since the NYSDEC experiment is ongoing, it is unclear how long it will actually take for the denuded area of the Iona Marsh (and by extension how long it would take for the Piermont Marsh) actually to recover, but clearly the interval will be significantly longer than one year.

Income or cash flow - How do you get paid? When or if you are or were working as an employee- or drawing income from a selfemployed business every two weeks like clockwork, you received your paycheck. Taxes were taken out, and hopefully, so was your retirement contribution. You counted on it, budgeted for it, and knew it was there on time to pay your bills. It was (hopefully) a constant, and as long as you went to work, you got paid. Nary was a thought given to paying your taxes on your own as it was automatically deducted and sent in for you, and only at tax time did you give it any attention- mostly hoping you were due for a refund. The key point is that the paycheck you received to keep you afloat monthly had nothing to do with your savings or investments for the most part- you were supported from your weekly or monthly income earned from wages. Now that you’re retired or not earning wages from working- and the whole ballgame has changed. While some of your income may remain a constant as in Social Security income or pension checks, once you stop working, depending on how you receive your new non-wage income, it now can or may be classified as cash flow as opposed to income. Why you ask? Because the definition of income for the most part usually changes once you stop working from income to cash flow. While income is defined above, most income is reclassified as
126
Tales from the Chestnut Tree
By Neal A. Deutsch, CFP cash flow because of the way it comes to you. It may be in the form of interest, dividends, and capital gains: it’s different as it is dependent on your type and classification of investment generating the income. If your “income” is from an immediate annuity with a lifetime payout, the income is classified partly as income and partly return of principal. In a Master Limited Partnership, what looks like “tax sheltering” is actually because your income is partly return of principal. This article is by no means meant to be giving tax advice: only that can be obtained from your trusted tax advisor. The purpose it to discuss how money comes to you in retirement, and how it is classified. Confusion occurs when a person thinks the check coming to them is income, when in fact it may contain a part of your principal. One day when you least expect it, you may find that your principal is all gone, and so are your monthly payments. Knowledge is power, and I cannot express to you more how important it is to speak with your tax advisor or Certified Financial Planner™ professional to make sure this doesn’t happen to you someday, when your working years are far behind you. Durable income is defined as income you cannot outlive. Based on mortality tables, people are living much longer these days. Diversification and a portfolio tailored specifically for your
specific situation is therefore so important to include suitability, tax ramifications, liquidity needs, and well within your risk tolerance. Working with a financial professional is so important at this stage of your life, but it important to remember that it is your money, and whether you choose to spend principal is entirely up to you- as long as you understand the ramifications. Dying and leaving a lot of money means simply how much you’ll leave to your kids. The question is how much are you willing to sacrifice when living in your golden years to leave it to them? If your income is a combination of income and principal, little by little, will you will dissipate your principal? How long will it last until you run out of money entirely? If you are careful and are on top of your investments, gauge how much principal you use annually and make sure it’s enough to be “durable” you should have enough to last your lifetime- this would be classified as “cash flow-“ using income, dividends and some of your principal all at the same time. While using principle is usually classified as a no-no, at some time in your life you may find the need… be careful- the one thing we don’t know is when our time is up. If you spend your principal, you may find yourself outliving your money- not a desirable occurrence. In the case of IRA’s or other before tax, qualified plans, it gets a bit more confusing: once you reach the age of 70 ½ and you have to start taking out due to the Required Minimum Distribution rules, you are taking out principal, but for tax purposes it’s defined and taxed as income. The main reason for this article is to make you aware that the check that comes to you each month may change in the eyes of the IRS- and you may find yourself in a tax bind you never encountered before. Income planning takes time- it doesn’t just happen. If you know in advance that you will need cash flow as opposed to income, the best time to plan is the earliest you can. Be sure to confer with your trusted advisors. Don’t wait until it’s the 12th hour- waiting may be hazardous to your wealth! To all my readers: I wish you all a wonderful holiday season, filled with health, family and most of all…lots of fun, fun, fun! Neal A. Wine Talk By Sandi and Bonnie Owners of Nyack Wine Cellar From the Douro region in Portugal comes a very special product, Porto. Nowhere else in the world is Porto produced. Sure wineries try to copy it and they make port but not from the same grapes. Terroir speaks here. Travel through the area and see the steep terraced rows of vines growing a variety of Portuguese grapes: Touriga Nacional, Touriga Franca, Tinto Barroca and Sousão among them. If you have had some great red Portuguese wines they too come from the exact same varietals. Port was traditionally shipped down the river in “taverner barges”, vessels outfitted with huge, colorful sails. The port house relied on these barges to transport the port to the lodges in Vila Nova de Gaia. As more and more port was made more casks were carried on these sailing barges. As they were made bigger and bigger in order to increase delivery they were more prone to accidents. The last journeys of these signature vessels were in 1964. Vila Nova de Gaia, across the river from Oporto, is where all the action is. You can walk across the Luis 1st Bridge built by Téophile Seyrig, a disciple of Gustave Eiffel. This is the area the port houses have long stored their Port Pipes (a barrel that holds 145.2 gallons or 60 cases of Port). There are more than 50 Port houses in this area and many are open to Bonnie and Sandi visitors. Port as you know is a fortified wine. Since it is high in alcohol the Quintas (farms) that make it are still allowed to stomp the grapes in a lagare, which is an 18 sq ft granite holder with sides about 3 feet high. Many Quintas have a robotic treading machine that simulates the same thing. During fermentation a 150 proof brandy is added. This stops the fermentation, killing the yeasts, and gives a zip to the Porto by bringing it up to 15-20 % alcohol. It leaves some residual sugar so you now have a sweet fortified wine, Porto. There are many styles of Port to satisfy different palates and budgets. There are two major styles: wood and vintage. Wood comes in the form of Ruby and “LBV”. These are less complex, more youthful and ready to drink. They have been aged 4 to 6 years in pipes. Tawny which is also in the wood family can be labeled 10 year old, 20, 30 or even 40. These are blended wines which are in the style of the winemaker for that particular port house. The wine selected has been aging in the port pipes. The most famous of course is Vintage Port, which is a specific year from which a particular port house declares a vintage. It could be a few houses or all of them. These wines are aged for 2 years in wood and then mature in the bottle for 10 – 20 years or more. You will then have a rich, opulent port – the perfect ending for a dinner party on a cold, winter night!

Starch! It’s here again, just as they said it would be, the HOLIDAYS, and with them comes the dreary rainy snowy cold weather that makes everyone want to stay in bed with a book, a nook, and a leftover piece of Thanksgiving pie. Maybe drink some green tea (ECGC, mmm) so you don’t feel so guilty. What to do about the carbs. You can stop “gavone-ing” them down for a while, but we all know that doesn’t translate to lifestyle changes in the end for many of us, at least not the jolliest of us who like the holidays for the foods we all get to eat legally and without remorse until bathing suit season. The more carbs you eat, the more you want. Why? Because carbs turn to sugar, which stimulates insulin, which lowers your blood sugar below normal, so you want more. Then the insulin becomes ineffective, because your little cells resist too much, you become insulin resistant, and your little cells are not fed, and they scream for high glycemic or high sugar pastry, Poirot. Better to have the foods that have a low glycemic number which generally contain fiber so the rate of all that sugar coming in slows down a bit. But if you have to have pie at Thanksgiving, as I admit I must, and you are not the type who makes gluten free, sugarless, flourless, eggless, useless, butter-less, lessless and more less, very well, nor do your friends, here’s a thought; something that happens to me from time to time. Baked goods have starch. If you want to convert some of your starch, not the starch in your collar but the starch you eat, into healthier, pre-biotic, not bionic, but probiotic friendly (howdy neighbor!) fiber here is the news about that, Stiffy. Transglucosidase, (you knew I’d have to come up with a mega, megaword, dintcha?) pronounced “trans gluko side ase”, can do that very thing. Ok now you can pronounce it, so go show off for your friends. Many studies now published show that each capsule of some of these guys, TG for short, may “contain a whopping 450,000 TG activity units of this enzyme”, which sounds very impressive, (though it may be like the peso in that regard) they go on… ”taken with starch meals helps avoid the flood of glucose into the bloodstream that results from eating carbohydrates.” Woweeh! It can reduce the level of starch by 31%, so they say, these guys who are very, very, excited about this exciting news isn’t that exciting? Who orders food at a restaurant and asks for starch anyway. “I’ll have the hamburger with a side of starch.” May it iron out our wrinkles? Sadly, no. But one of the studies looked at people who already had
128
The ABC’s of Health and Nutrition By Dr. Joanne T. Gjelsten Type 2 diabetes, who looked back and said who are you looking at? They, the diabetics, were given 900,000 units of TG and saw their insulin levels drop. Well the researchers that is, did the looking, and found results. And, as we have no glass window to peer into the body for levels of anything whadashame and a dipstick just isn’t classy, we have to look at blood, and then measure things, like insulin. The levels of insulin (reduction) in the diabetics were similar to the reductions of insulin from the drug Metformin. BUT!!!! DO NOT replace we must insist, the researchers said, one, with the other. Similar does not mean same we hope you know. So then Dr. Jo if insulin is what helps us use sugar, what is so bad about chronic insulin elevations? I say again, as they do on TV now, where they tell you what they are going to tell you, then they tell you 3 or 4 more times using a different person and different words to say the same one thing you got 10 minutes ago, and you could have had 10 pee breaks and they’d still be on that one thought when you got back, but maybe you stayed to hear the whole story, but there is never more than that one sentence they already said, which you have to hear AGAIN; are we all so stupid? Don’t answer that. Thanks for letting me rant. Ok, insulin is supposed to take sugar and convert it to energy right? So what is the big deal? When your body has too much sugar, you need to put out more insulin. Fine, but insulin is also a growth factor, so never use it on your joy stick guys, it’s not for that purpose, however too much promotes growth where you don’t need it, like in the lining of your arteries and in tumors, say. You don’t say? Over time, with too much insulin the cells begin to resist the insulin it’s making, so it makes more. “High levels are associated with a 37% increase in the risk of dying from cancer whether or not you have diabetes”. Aren’t you glad you started reading? Me neither. Type 1 diabetics don’t make enough insulin; a different story there. Type 2’s eventually may not make enough either, and glucose spills into the urine.
Back to the study. “Not only did transglucodase lower insulin and starch, the participants also had reductions in triglycerides and diastolic BP.” Ducky! Systolic is the top higher BP number, and diastolic is the low one. The top represents the pressure during the contraction of the heart, and the bottom the pressure at the relaxation of the heart, when the heart is filling up, with high test cash price only. Systolic BP is dangerous when high, but diastolic is considered much worse when high, and you can scare your Doc and raise his/her/ mine and our blood pressure, so don’t let this happen, Hagar. High diastolic BP can have many causes; stress, diabetes, sodium sensitivity, excess salt, a Vitamin D deficiency smoking, your tax bill, and obesity, whichever comes first, but sometimes we just don’t know and hate to admit this; an unidentified flying diastolic increashun. Ok, not a real word, but I happen to like it. This is called “essential hypertension”; why they came up with that baffles me as essential it’s not, but it’s nice and confusing to patients. However, “In approximately 10% of cases, the cause of chronically high diastolic BP is identifiable. (whew) Doctors refer to these as secondary hypertension, because here elevated diastolic BP stems from complications in one or more non-cardiac organs. Oh boy. Some of the more common conditions leading to secondary hypertension include the overproduction or underproduction of certain hormones, preeclampsia during pregnancy, narrowing of the aorta and sleep apnea. Other conditions include the side effects of certain medications and some kidney diseases, particularly those that result in the formation of renal cysts” isn’t that lovely. If meds we may be taking can increase diastolic BP that would be a need to know situation, “I NEED TO KNOW now or I may get upset and raise my BP Bubba”. So enjoy the holly days. Have a nice time eating all that carby food, and if you are overcome with guilt you may want to, with your Doc’s guidance, get some of this Transglucoside transmutable transcendental starch converting stuff before the holidays. Those on glucose lowering meds, consult your Doc, as this can lower it too, or if you tend to have low blood sugar, same advice. Available here there and everywhere they sell it, health food stores and such, so they say. In our three decades, we have cared for more than 34,000 children locally and globally. Healing the Children® New Jersey delivers medical and humanitarian aid to people in need worldwide. This year alone, our Medical Teams Abroad program has traveled to four countries. While the intrinsic value of our contribution to a chronically ill child is immeasurable, we expect to exceed three million dollars of pro bono medical care this year, thanks to hundreds of volunteers and the generosity of hospitals and medical professionals here and abroad. In its International Inbound program, HTCNJ recruits host families and arranges for children from throughout the world to travel to New Jersey to receive pro bono medical and surgical treatment. The HTCNJ Domestic Aid program purchases
prescription medications; measures children for eyeglasses, hearing aids and orthotics; and funds specialized child care and summer camp for children with developmental disabilities. We seek funding to ensure that Healing the Children® New Jersey will remain a viable resource for families with critically ill children in 2015. Proceeds will benefit Healing the Children New Jersey. At the Historic Salyer House, 213 Blue Hill Road, Pearl River. Saturday, December 6th.
The Museum will open at 1pm. Our program begins at 2pm. Embracing the warmth of the holiday season, join the Orangetown Museum and the Tappan Reformed Church for an afternoon of historical reflection. Our earliest Dutch ancestors brought with them to our community a tradition of tolerance and a spirit of giving that informed not only how they celebrated and worshipped but how they conducted their daily lives. Join us for a conversation about the faith of the Dutch who settled in Tappan in the 17th century – and how their traditions unfolded to encompass ‘a New York state of mind’. Sinterklass will be in attendance to greet all children and visitors to the museum, which will be decorated with its Christmas best. A cup of mulled cider, spice cookies and a hearty welcome await you for this look back at Orangetown’s historic past.
