Thank You, Lord, for all that You allowed into our lives this past year—the good along with the hard things—which have reminded us how much we need You and rely on Your presence filling us every day. Lord, give us wisdom, strength, and power in any hard times and make us strong and courageous for the year ahead. We ask You to guide our steps and direct our decisions in the new year. Turn our hearts to desire You above all else. Lord, open the doors You want opened for us and close the ones You want closed. Help us release our grip on the things that aren’t in Your plan for us and cause us to desire the things that are. Let Your gifts flow through us, so others are drawn to You. Lord, we invite You to make all things new in 2024—in our hearts, in our minds, in our lives. Amen.

The city of Mansfield will be right in the mix of the happenings in our region. The annual Martin Luther King, Jr. program will be conducted at the Bethlehem Baptist Church on January 14 at 5 p.m. sharp. Come out and participate in an uplifting program that will include local and regional talent from people of all walks of life.
If you want to learn about the direction of the city of Mansfield, The State of the City Address will be open to the public on January 16th at the Grandview Event Center, located on the campus of the Sellmark Corporation. We will offer two opportunities on that day for the public to hear about the great happenings of our remarkable city.

The award recognizes communities for outstanding participation and engagement during the annual Night Out event. This marks the third time in four years the American Dream City has taken top honors for cities with a population of 300,000+. In fact, Arlington has placed in the top three nationally every year since 2015. This year more than 150 Arlington neighborhoods, organizations, and businesses hosted National Night Out events. Pretty amazing! The goal of NNO is to bring together neighbors, community leaders, police, firefighters, and other city employees in a fun, relaxed environment to forge lasting relationships and strengthen our community. ARLINGTON And while we’re talking about people who make our city awesome, I want to recognize Arlington’s own Drew Smith who, after his deployment in the United States Army, came home and founded a company with the purpose of employing his fellow returning veterans. the mirror TEN WORDS TO WAKE UP THE AMERICAN CHURCH BY M IK E M AZYC K
I was sitting in my living room, watching the recording of a twenty-year-old sermon, when I heard those ten unforgettable words. II could not believe my ears. In an instant, I was glued to the screen. And even though I wasn’t physically in the room with them, I saw the countenance of the entire audience shift. Tension filled the atmosphere!

At a 2002 youth conference, a man steps up to the pulpit, preparing to preach to an eager audience of over five thousand teens. He opens up his message with great boldness and delivers a stinging rebuke of the lukewarm version of Christianity being walked out in America. Immediately, the entire room erupts in applause, giving their enthusiastic approval of his admonition. But then, as the applause finally subsides and the room gets quiet, something else happens. The preacher looks down for a moment in silence. Taking a somber step forward, he slowly raises his head, looks out into the audience, and then, pointing his finger at them, he delivered ten of the most sobering words those youth had ever heard; “I DON’T KNOW WHY YOU’RE CLAPPING; I’M TALKING ABOUT YOU!” As if a bucket of ice water had been thrown in their faces, thousands of youth were instantly jarred awake from a sleep they had no idea they were in. But they weren’t the only ones. Because sitting there, alone on my couch — twenty years later — those ten words shifted the atmosphere in my house, too. That stinging cold water had just jolted me from my own apathetic slumber as well. There was no more applause for the remainder of that 57-minute sermon. Not one clap. Only deafening silence as Paul Washer delivered one of the most powerful sermons I have ever heard preached. That sermon is now widely known throughout evangelical Christianity as “The Shocking Message.” It has amassed millions of views on YouTube and has had a profound impact on not only my own life but the countless others who have heard it as well. I would argue though, that if it had not been for those ten courageous words he was willing to speak, this sermon — like many in America today — would have fallen on deaf ears. The audience would have listened, applauded, and amened his message without ever truly hearing it! Those ten bold words infused his sermon with power. Those ten words caused five thousand teenagers to look in the mirror! (James 1:22-25) Sadly, I am noticing a peculiar sort of preaching in many churches today. I see a seemingly sincere preacher. He’s a
graduate of the right seminary. He’s read all the right books. He is, for the most part, doctrinally sound. His theology is solid. His church is growing. Every Sunday morning, he steps up to the pulpit and says all the right things. He talks about the broken and lukewarm state of the church. He may even be so bold as to use that “offensive” and forgotten word repentance. He undoubtedly speaks of reformation and revival. Yet, in the midst of all the words coming out of his mouth, he somehow manages to say nothing at all. His sermons bring about applause and amens each week, but his words are impotent. They lack any power to bring about the very repentance and revival of which he speaks. Why is this? Why are his heartfelt words so powerless? His message is powerless because the people in the pews — just like those deceived youth from twenty years ago — don’t actually believe that he is speaking to them. They envision someone else. A different church. Some other Christians. This preaching — if it can be called that — is quite possibly some of the most dangerous. Why? Because it affirms what we know to be true within us while never turning the mirror fully toward us. This weak preaching is only another form of the “tickling the ears” that the Apostle Paul warned young Timothy about. (2 Timothy 4:3). It comes from shepherds who lack the courage to do what true love requires; to be direct with their sheep. They sacrifice boldness to fill more seats and then justify it to themselves in the name of “gentleness.” The result of this has been catastrophic! Every Sunday morning, in churches across America, we hear amens and applause break out. Preachers finish sermons to standing ovations from the audience. Meanwhile, a lukewarm church is getting ready to be spit out of His mouth. (Revelation 3:16) Countless numbers of professing Christians — totally deceived — are clapping their way to eternal damnation because their shepherd doesn’t have the grit to speak to them like a man! Those listening to this sort of preaching become like one of those foolish and proud NFL players whose team is down by 40 points, and yet he does an endzone dance after finally
scoring a touchdown! Is he blind? Does he not see the scoreboard? My friend, now is not the time for applause. Now is a time for silence and reflection. Now is a time for selfexamination. Are we looking at the scoreboard? The church in America is losing! This version of Christianity is broken! It does not line up with the Word of God. It does not line up with the version that was practiced in past generations. It is a slap in the face to the countless numbers of martyrs who have shed their blood over the last two thousand years. It is a slap in the face to our Savior Himself. It makes Him nauseous (Revelation 3:16). We must look in the mirror before it is too late! Approximately three years ago, God handed me a mirror and forced me to look squarely into it. It was a dark and difficult season of self-examination. As I wrestled with what His Word really said, I did not like the reflection looking back at me. As your brother in Christ, who has had to repent myself, may I ask you some questions? Is it at all possible that the version of Christianity that you have bought into is not the real one? Is there a part of you - even a tiny one that knows this version of Christianity in America doesn’t seem quite right? Is it at all possible that you could be deceived as to what it really means to be a Christian? Is there even a hint of you that wonders… Am I truly saved? If you have answered yes to any of those questions, I invite you — no, I beg you — please go listen to The Shocking Message by Paul Washer. It is quite possibly the most powerful sermon I have ever heard. It is not just for youth. It is for every man and woman in America, professing the name of Jesus Christ in 2023. It is a mirror! Please, I beg you, take this mirror and prayerfully examine the reflection. Watch this sermon, and by all means, share it with those you love!

To Dr. McCabe, each item represents a relationship, a life well lived, and a family he’s been able to touch through caring for their loved one. For Dr. McCabe, his private practice is as much about forging these relationships with his patients as it is about addressing their foot and ankle issues. PREVENTATIVE DIABETIC FOOT EXAM One way to do that is to begin with a preventative diabetic foot exam to evaluate your overall health, your diabetes, as well as identify any problems that could arise related to your feet—ideally before they arise. “The purpose of a preventative diabetic foot exam is to identify, manage, and potentially prevent complications related to diabetes that could end in infection or even amputation,” Dr. McCabe said. “I am fellowship trained in limb preservation. That preservation begins with any patient with diabetes—either controlled or uncontrolled—getting regular diabetic foot exams.” Most insurance companies— including Medicare and Medicaid—cover these preventative exams.

Within his Matlock Road office, he treats men, women, and children suffering with conditions of the foot and ankle including bunions, heel pain, plantar fasciitis, diabetic neuropathy and diabetic wounds, flat feet, neuromas, hammertoes, and Achilles tendonitis. “These aren’t ‘sexy’ topics to talk about, but they are conditions that can affect quality of life and productivity,” Dr. McCabe said. “We handle cases as complicated as total ankle replacement and as simple as toenail fungus. With each, our strategy is to begin with the most conservative treatment option then progress if we need to.”
PERIPHERAL DIABETIC NEUROPATHY Diabetic neuropathy is a type of nerve damage which most often affects the legs and feet of those with diabetes. For some people, symptoms are mild. For others, symptom—including numbness, tingling, and/or burning in the extremities — can be painful, debilitating, and in rare cases even fatal. “Too often I see patient going to their primary care doctor with diabetic neuropathy and they’re either misdiagnosed or given medication which doesn’t help their condition.” If you think you may be suffering with peripheral diabetic neuropathy, Dr. McCabe recommends getting a referral for a podiatrist and requesting a thorough diabetic foot exams. “The first thing I tell my patients is, you don’t have to live in pain,” he said. “It doesn’t have to be this way. Let’s start over and try something different. There are oral medications but there are also topical medications that have been highly effective

“One of the best things I can do for any patient is to slow down and really listen to them,” Dr. McCabe said. “Then, I want to take the time to explain to them, in words they understand, all of their treatment options—conservative and surgical—how each treatment works, and the pros and cons of each approach. The more the patient understands about their condition and all the treatment options available to them, the better decisions they can make about their care. It’s my job—and my blessing—to empower patients and to partner with them in their medical decision-making process.”

MEET DR. MCCABE Matthew McCabe is fellowship trained in limb salvage, reconstructive surgery, and orthoplastics (a field that combines plastics techniques and orthopedic techniques with the goal of salvaging limbs after trauma or chronic wounds and infection). Even so, he considers surgery a last resort only after all non-surgical options have been explored.

t is time to get ready for the new arrival. They will need a place to sleep. You may want to buy a few toys for playtime. Oh, and be prepared for some sleepless nights while they adjust to their new surroundings.

In this case, however, the new arrival is not an infant but a fur baby. And caring for a puppy or kitten presents some of the same challenges a newborn poses.
If you are considering pet insurance, ask your vet for a recommendation or do your own search. Pet insurance for cats and dogs ranges from the low $20s a month to $40 or more, depending on the type of policy. Most pet owners will choose accident and illness coverage with a low deductible of $250. Be forewarned — premiums increase like ours, and most insurance options do not cover preexisting conditions.
A puppy should spend the first few nights sleeping in a crate in your room. Put a puppy pad in one corner of the crate because they likely will not be able to get through the night without urinating. As for kitties, make sure they know where the litter box is. You can also place a cozy cat bed in your bedroom. Cats will meow, and puppies will probably whimper and cry at first, especially if they have just been separated from their mom. We humans know how critical health care is, so make sure you have selected a veterinarian to give your new pet a thorough exam and set a vaccine schedule as soon as possible. Talk with your vet about when your pet will be spayed or neutered and about

Experts recommend interactive playtime with your kitty at least twice daily for about 15 minutes each session. Many suggest four 10-minute sessions a day for mental and physical enrichment. Dogs require more hands-on care, so be prepared for the commitment needed. Take the pup out on a leash every hour for potty training. Depending on the breed, your dog may need a lot of exercise; otherwise, prepare for them to get into some mischief in the house. Keep puppies and kittens away from exposed electric cords and cleaning
supplies. Yes, even for cats who have nine lives. Speaking of cats, buy a scratching post or two, or the kitty will likely use your couch for one. Puppies explore with their mouth and nose, so train yours early with treats to stay away from your comfy slippers and keep their snout out of the trash can and away from the table when food is present. Because cats are climbers, be prepared to find them where they don’t belong. A pet clicker effectively discourages pets from misbehaving without shouting at them. Even if you work remotely and are home every day, it is healthy for puppies to socialize. Enroll them in doggie daycare, where they can interact with other dogs and people. Leave the house for a half hour or so a few times a week so your puppy won’t develop separation anxiety. The safe bet is to keep your dog in a crate when you are away, and no one else is home. They will be thrilled to see you whether you have been gone for 15 minutes or a couple of hours. Cats may be more independent but must also get accustomed to some alone time. Pet care is a lot of work but look at it this way: Your fur baby will never ask whether they can borrow the car on weekends.

Make sure the remodeler provides a complete and clearly written contract for your mutual benefit. This document can be your salvation or your ruin, so consider it carefully. It should contain a bid price, a detailed list of all the work to be done, a schedule of payments for work rendered, and a waiver of lien. BUT SOMETIMES IT’S YOUR BEST AND MOST VIABLE CHOICE. General surgeons are educated and trained in the diagnosis and preoperative, operative, and post-operative management of patient care. Some surgeons put in the extra time required to offer state-of-theart robotic surgery for greater precision and more favorable outcomes. Some conditions that may have you shopping for a surgeon are hernia, appendicitis, hemorrhoids, thyroid or parathyroid disease, breast c a ncer, ga l lbladder, Crohn’s disease, or complications from a previous surgery. If your primary care provider is the one recommending a surgeon, they’re a good place to start. Ask for surgeons they recommend. But be sure to inquire, “Why are you recommending this surgeon?” If the answer is, “They accept your insurance,” that’s not a great recommendation. If the surgeon is board certified, you know they’ve completed at least five years of residency training following medical school, met all American Board of Surgery training requirements, completed a rigorous examination process, and adhere to periodic retesting. Reading what other people are saying online about a doctor can provide some insight. Are patients generally happy with the care they received? Do they report positive outcomes? Online patient satisfaction surveys also typically ask about appointment scheduling, wait times, office environment, and office staff friendliness. As you narrow your list, call each surgeon’s office to schedule a consultation and meet the doctor. Once there, inquire specifically about their experience with your condition and the procedure you
require. What complication might you experience? What are your risk factors? Inquire which hospital or out-patient center they use and do a little homework on them, too. If you’re suing someone, you can often arrange contingency legal fees, which means your lawyer will take some percentage of any settlement you receive. If you’re paying hourly, expect to pay some portion of your expected fee upfront as a retainer. Ask for an itemized
statement detailing what you can expect a lawyer to do and negotiate an appropriate retainer accordingly. While you’re at the office, ask to meet any paralegals, legal assistants, or other non-lawyers who’ll be working on your case. So how do we choose during normal moments of peace and quiet what we won’t want to take precious time to research when our health and safety may be at risk? Accreditations are a good place to start. According to the Urgent Care Association of America (UCAOA), there are two criteria by which urgent care facilities are recognized. The first is the USAOA Accreditation Program. The other certification program recognized by the UCAOA is the Certified Urgent Care (CUC) program. The CUC is used to recognize urgent care facilities that meet all the criteria that are standard in the United States for demonstrating an urgent care facility’s accessibility to all patients, the capability of the staff to treat a wide range of injuries and illnesses, and the clinic’s capacity to respond to an outbreak of disease in the local community. These facilities operate with a sense of, yes, urgency. It’s for this reason that it might
take a few tries to pin a person down on the phone long enough to get the details. With a little patience and an extra portion of polite-ness, you can find someone with a few free minutes to provide you with the answers you’re looking for. To start with, ask about the certifications mentioned in this article. You might also inquire about services a clinic provides above and beyond primary care, such as occupational, physical, or weightloss therapy. We rang in 2024, and now it’s time to kick off your New Year’s resolutions. If getting into better shape is one of them, try out a few options instead of giving up before you start. Chances are, you’ll find one or more new ways to add physical fitness to your lifestyle.
WALKING AND HIKING Don’t overlook walking and hiking because it seems too easy or enjoyable. Invest in some good walking shoes, then get out in the sunshine and fresh air to walk around your neighborhood or a local park. If you have a hiking trail nearby, change up your routine with a hike now and then. You can walk and hike alone or with a friend or look for an organized walking or hiking group to join. When the weather’s uncooperative, use a home treadmill, walk around your house and up and down the stairs for 20 to 30 minutes, or incorporate another form of exercise into your routine, such as dancing or calisthenics.
DANCE Create a playlist of your favorite tunes and bust a move for at least 30 minutes. Mix it up and incorporate different moves into your dance to keep it fresh and to exercise different muscles. If you want more structure or additional ideas for your dance routine, fi nd an online dance video to dance along with. They cover different styles, including salsa, hip-hop, jazzercise, and belly dancing. Or try Zumba, a popular Latin-inspired fitness program combining aerobic and dance movements. Either sign up for a class or follow along to a video at home.

CALISTHENICS Remember the exercises you used to do in school gym class? They’re still beneficial. Push-ups, squats, lunges, planks, leg raises, sit-ups, jumping jacks, and more can be done at home without special equipment. Watch a few instructional videos before you start so you know how to maintain proper form and minimize your risk of injury. Browsing through these, you might even find an online session or two you enjoy following along with.
CYCLING Whether you’re outside on an actual bicycle or indoors on a stationary bike participating in a virtual spin class, cycling is a great aerobic activity that gives your lungs and heart a good workout and strengthens and tones your leg, buttocks, and core muscles. Start slowly and work up to a more intense cycling routine. And since it’s a non-weight-bearing activity, cycling is easy on your joints.
SWIMMING If you know how to swim and have a pool in your backyard or a community pool, swim laps if it’s large enough. Or look into swim classes at your local YMCA. If you don’t want to get your hair wet or stuff it into a swim cap, try pool exercises such as water aerobics and workouts with weights, or use a kickboard and do flutter and frog kicks. Look online for inspiration and to help ensure you grasp and use the kickboard safely and effectively. You can also go pool-walking for 30 minutes or more to improve your cardiovascular health.

ho hasn’t dreamed of winning the lottery and becoming a multimillionaire overnight? Who hasn’t wished they had a wealthy relative who would leave them millions one day? Or, as the Dire Straits song “Money for Nothing” laments, who doesn’t wish they were a rock star rolling in cash doing something that barely passes for work? Sorry, but for most of us, building wealth is a long-term process. Financial experts warn about investing in get-rich-quick schemes or looking for other shortcuts. And with anywhere from 55-to70% percent of Americans saying they live paycheck-to-paycheck, financial security may seem to be an unattainable goal. Still, you have to start somewhere. A new year is an opportunity to make an accounting of your finances. Many American households have lost track of the ratio of revenue vs expenditures. The Federal government may not have had a balanced budget since 2001, but we need to do better. So, start with a budget and trim the fat. Some experts even suggest Americans

should live below their means to ensure financial security. Start early. Even if you have a college loan to pay off, it is easier to begin saving in your 20s, before you add a mortgage, house repairs, and children to the equation. income on luxury items or expensive vacations. Hey, no one said this would be easy. Financial experts agree that pursuing business opportunities is a pathway to building wealth. Starting a business will mean surviving growing pains, but if successful, the benefits may provide more financial security. You are your own boss and not subject to layoffs and downsizing. Perhaps investing in real estate investment trusts (REITs) is more appealing. These companies buy and sell properties, and while the market can be volatile, real estate has shown to pay dividends over time. And consider furthering your education, either by learning new skills or refining those you already have. This may lead to more job opportunities or an increase in your salary. All these options won’t be fruitful overnight but may provide a more carefree lifestyle as you age.
LIFE CHOICES No one wants to think about it, but life insurance is a must to provide security for your partner and children in the event of an early death. The question is, what type of life insurance policy should you buy? It depends on your age. If you are in your 30s, consider a 30-year term-life policy. The premiums are lower than whole life, and the policy will pay out the insured amount for those 30 years. The risk is that you will not have coverage after the term expires. Or you can continue and pay much higher premiums. Whole life insurance is a policy that guarantees payment of the insured amount until the death benefit is paid or the policy is it is cancelled. It also accrues value, and a policyholder can borrow against the cash value as it accumulates, although that will decrease the benefit amount. Whether the policy is whole life or term life, the goal is to reach a point where the policy can be cancelled, and a person’s retirement fund and savings will cover burial costs.

Becharmed by the Comal and Guadalupe rivers, New Braunfels punches above its weight class with outdoor fun. Abuzz with revelers and lined with cypress trees, the streams attract tubers and launch visitors around Schlitterbahn West. But the city is more than a water wonderland. Once you’ve dried off, stroll through historic Gruene or the awe-inspiring Natural Bridge Caverns. Or wander by the German-themed festivals like Wurstfest and explore a charming downtown at Wassailfest. Check out why you should add New Braunfels to your travel plans in 2024.
FLOAT THE RIVER Not all donuts are glazed. Some are inflatable inner tubes, hitched together with rope, gliding groups over the Comal and Guadalupe rivers. Many outfitters offer parking lots and shuttle rides for a fee, with tubes and other necessities also for rent. Bring your tube to dip into the river’s varied access points and keep cold drinks at hand with small coolers with a top (no foam) for netted tubes. Floats range from one to four hours long, depending on entry and exit points.
DO THE CHICKEN DANCE AT WURSTFEST

Get ready to shimmy to the chicken dance — originally called Der Ententanz. At Wurstfest, you’ll hear nonstop music by German bands over multiple stages and see lots of lederhosen and dirndls. Der Ententanz is a favorite and gets tons of audience participation from kids and adults. Alpine hats also make a heavy appearance, pinned with long, colorful feathers and tons of little metal pins. A few Oktoberfest and Dunkels are available at Das bar (Prost!), of course, but this festival also features a craft area for tons of fantastic local souvenirs, a small carnival, and a kid’s entertainment area. Literally a sausage fest, Wurstfest history goes back to 1961, when, according to the festival’s website, the city meat inspector honored links with a special event. Now a yearly ten-day party, the celebration features heaps of sausages in different styles served on a stick or

with a pretzel. To complete the feast, vendors offer savory treats like potato pancakes with applesauce, pork chops on a stick, and even delicious German pastries for dessert.
SPLASH AT SCHLITTERBAHN Opened in 1979, the f lagship Sch lit terba h n in New Brau nfels boasts 70 acres of thrilling water luges, boogie boards, twisty slides, relaxing swim-up bars, lazy rivers, heated pools, kiddie areas, and more. Fed by spring water from the Comal River on the original West Section of the park, the entire playground is a tidal wave of family-friendly fun. Visit Blastenhoff, Surfenburg, and Tubenbach in the East Section of the park for the newest rides and book a stay right in the Schlitterbahn resort to get day passes to the park included in your nightly rate. The park usually opens after the first week in April.
EXPLORE THE UNDERGROUND AT NATURAL BRIDGE CAVERNS The underground caverns at Natural Bridge are breathtaking. It’s a little humid, and the air thins slightly, but that’s not what we mean. INGREDIENTS: 1 Tbsp. olive oil | 4-6 chicken thighs, bone-in | ½ red onion, chopped | 2 cloves garlic, minced | 4 carrots, peeled, sliced | 1-2 preserved lemons, deseeded, sliced | 1 tsp. ground ginger | 1 tsp. ground turmeric | 1 tsp. smoked paprika | ¼ tsp. ground cinnamon | ¼ tsp. cayenne pepper | 4 cups chicken stock | 1 cup pitted green olives | ½ cup chopped fresh cilantro | ½ cup chopped fresh parsley | 1 Tbsp. honey | Salt and pepper to taste DIRECTIONS: HEAT the olive oil in a large tagine or Dutch oven over medium heat. BROWN the chicken, skin side down, until golden, set aside. ADD the onion and cook until softened about 5 minutes. ADD the garlic, ginger, turmeric, cinnamon, paprika, and cayenne pepper and cook for 1 minute more. STIR in the olives, preserved lemons, carrots, cilantro, parsley, and honey. ADD chicken stock. BRING to a simmer and cook for 5 minutes. PL ACE the chicken into the tagine and arrange it in a single layer. COVER the tagine and simmer for 1 hour or until the chicken is cooked through. SERVE the chicken tagine with couscous or rice. GARNISH the chicken tagine with chopped fresh cilantro and parsley.

TIPS & TRICKS: You should be able to find masarepa in a local Latin grocery or online. If necessary to substitute, use instant polenta (not cornmeal). Arepa can be filled with many different toppings and can be stuffed by only cutting ¾ way through each arepa after cooking.
AREPAS (OPEN FACE) WITH AVOCADO & TOMATO S E R V I N G S : 8 | P R E P : 1 5 M I N . | C O O K : 1 5 M I N . TOTA L : 3 0 M I N .
INGREDIENTS: 2 cups pre-cooked cornmeal (masarepa) | 1 tsp. salt | 2 cups hot water | 4 Tbsp. butter | ½ ripe avocado, mashed | ½ tomato, diced | ½ lime, juice squeezed | ¼ cup chopped cilantro | Salt and pepper to taste DIRECTIONS: WHISK together the cor nmeal and salt. SLOWLY add the hot water, whisking constantly until a smooth dough for ms. MIX TURE should be moist but not stick to hand s. COVER the bowl with pla stic wrap and let the dough rest for 10 minutes. DIVIDE the dough into 8 equal pieces. ROLL each piece of dough into a ball and then press down into a circle about 4 inches in diameter. HEAT a large skillet over medium heat. ADD 2 tbsp but ter, then add the arepa s to the skillet and cook for 2-3 minutes per side or until golden brown. WORK in 2 batches, adding the rest of but ter. MASH the avocado in a separate bowl. Add lime juice, cilantro, salt, and pepper. STIR to combine. TO SERVE, split open the arepa s and top them with the avocado mixture and diced tomatoes.
